It’s been another week of earnings over here at NRN and the editors have prepared remarks on the second quarterly earnings, focusing on two brands with the biggest news: Wendy’s and Sweetgreen. Wendy’s announced that it would be downsizing its partnership with Reef after last year proclaiming it would be opening 700 new ghost kitchens with the brand. On the other hand, Sweetgreen, much like companies in the tech sector, laid off 5% of its corporate staff. The team discussed these bits of news and how they impact the industry. Plus, the team talked about Chipotle’s latest workplace saga. After a months-long investigation, New Yor City Mayor Eric Adams and city officials came to an agreement with Chipotle to give 13,000 workers $20 million over scheduling and labor violations. This is the largest settlement of this nature in New York City’s history. The team discusses how this news could impact the whole industry. This week’s interview is Matt Harding, executive chef of Piada Italian Street Food, who spoke with Joanna Fantozzi about the future of the brand.

Matt Harding is the Senior Vice President of Culinary and Menu Innovation at Piada Italian Street Food. Piada is a premium fast-casual concept offering guests Piadas, Chopped Salads and Pastas.Prior to joining Piada in 2015, he attended the prestigious Culinary Institute of America in Hyde Park, New York. From there, he spent time in Washington, D. C. working for the InterContinental Hotel Group, and in San Francisco where he worked for Campton Place, Splendido, Palio D' Asti and the Stanford Court Hotel. In the years following, he relocated to Germany to head up the Steigenberger Hotel's California Cuisine restaurant in Bad Greisbach, the southeast region of Bavaria.After taking time to travel and experience the cuisines of 26 countries, Chef Matt put down roots in Columbus, Ohio where he served as the Executive Chef at Lindey's. In 1999 Matt opened the first Brio Tuscan Grill for Bravo Brio Restaurant Group and oversaw its growth to 120 restaurants during a 21-year tenure with the company.

For our final COEX interviews, NRN editors Holly Petre and Sam Oches spoke with two culinarians in the food industry about what they see as future trends ahead for the industry. Matt Harding of Piada Italian Street Food, with 42 restaurants based in Columbus, Ohio, spoke with Petre about the new store opening in Houston and the expansion of the regional brand. “Many people would define [Piada] as the Italian version of Chipotle…but we want to be the next Piada,” said Harding. Harding spoke about the new menu innovations at the restaurant that include new salmon entrees with fresh squeezed lemon and fresh ingredients as well as how they’ve been impacted by the supply chain woes. Oches spoke with Nicole Votano, formerly the head of culinary and concept development at REEF, about what she sees as the current and future food trends in the industry and how to find trends through social media and travel. Some trends Votano pointed out include: Plant-based foods for meat-eaters; To-go and delivery food space will have a major focus; Food profiles will go heavily Asian and Latin; and Hybrid food types to not eliminate anyone from the equation. After nearly a decade as a practitioner at JB Hunt, Kenco Logistics, and IBM, Alex Scott went back to school for his PhD before returning to the world of academia to dig into transportation and policy research as well as teaching. Alex is currently an Assistant Professor of Supply Chain Management at Michigan State University. To start their discussion Chris Caplice asks Alex to share his key takeaways from three of his previous research projects based on actual datasets (versus theory). The duo then digs into Alex’s latest award-winning research on the results of the ELD mandate which went into effect in December 2017, “Did the Electronic Logging Device Mandate Reduce Accidents?” In this study, Alex and his research partners dug into the FMCSA numbers since the mandate took effect to understand if driver safety had improved (or not).
