Today, we're going to look at the average American diet and determine what may happen if you start eating like a cow. For the last 200 days of a cow's life, it's fed a high-starch diet and given minimal exercise. According to the food pyramid, most of our diet should come from starch. The average American consumes 65% to 70% of their calories from starches. Starches are actually hidden sugars. In fact, ultra-processed starch is worse than sugar and will raise your blood sugar more than glucose. There are 2 types of corn: field corn (dent corn) and edible sweet corn. Dent corn is used to fatten cattle and to make products such as ethanol, corn flour, modified food starch, modified corn starch, and maltodextrin. It's also used to make corn oil, one of the seed oils. Not only do the refined starches act like sugar in the body, but they're also GMO. This means they contain traces of glyphosate. The average American has been eating like a cow for quite some time. This is why we see obesity, fatty liver, heart disease, and more. Cows are meant to digest grass, not grains. Grass is fermented with bacteria in a cow's stomach, and the fiber feeds its microbes. When a cow is fed grains, the microbes produce an excess amount of acid, causing acidosis. This can lead to infection and isn't very healthy for the cow, so they're fed antibiotics to compensate. Stop eating like a cow! Avoid ultra-processed starch and choose grass-fed, grass-finished beef.

Today, we're going to talk about the hidden dangers of starch. Some ultra-processed foods may not have sugar but are packed with synthetic starch. Many synthetic starches can potentially affect your blood sugar even more than sugar. When you repeatedly raise your blood sugar, you will eventually develop insulin resistance. Over time, your fat cells can no longer store fat, and energy is stored inside the organs or as visceral fat. Ultimately, you lose the ability to control your blood sugar levels and can develop diabetes. Starches are hidden sugar! Even products labeled sugar-free contain starches that can cause more damage than sugar. Synthetic starches do not contain protein, fat, or fiber, all of which help buffer blood sugar spikes. Consuming starches can also deplete your body of essential nutrients such as vitamin D. This can cause significant inflammation, decreasing vitamin D's ability to work in your cells. Vitamin B1 is vital for your body to burn carbohydrates. Synthetic starches deplete vitamin B1 and zinc, leaving you tired and unable to create energy in the body. Synthetic starches feed the pathogenic microbes in your gut. They can also contribute to small intestinal bacterial overgrowth (SIBO). Modified corn starch is added to food as a thickener or carrier of flavors. Maltodextrin is typically added to food as a filler. It's also sometimes added to protein powders as an energy source. This is incredibly damaging to your cells and mitochondria.

Today, I'm going to tell you about 7 foods to avoid, along with some healthy alternatives. 1. Liquid sugar Soda, juice, and high-sugar beverages deplete your body's vitamin and mineral reserves and contribute to insulin resistance. If you like soda, try Zevia zero-sugar soda instead! 2. Processed cheese Pasteurized cheese products can't be called cheese if they contain less than 51% cheese. Processed cheeses typically contain skim milk, canola oil, milk protein concentrate, modified food starch, whey protein, maltodextrin, preservatives, and salt. Choose real cheese instead! 3. Protein bars Many protein bars are worse than candy bars! They're often made with soy protein isolates and casein, and can contain 30 to 47 grams of sugar per bar! This number doesn't include the starches, which are also sugar. Protein bars are usually sweetened with highly processed sweeteners such as rice syrup, corn syrup, and tapioca syrup. Some are sweetened with sucralose, an artificial sweetener made from a chlorine compound. Try boiled eggs, cheese, and meat jerky for quick protein. 4. Seed oil mayonnaise Almost every mayo available lists soy oil as its first ingredient. Soy oil is a seed oil that's highly processed using solvents like hexane. It's high in omega-6s, which can be highly inflammatory. Look for mayo that is made with avocado oil and zero seed oils. Chosen Foods mayo and Primal Kitchen mayo are much better options. 5. Sweetened, flavored yogurt Seventy percent of the yogurt people buy is sweetened, flavored yogurt. This yogurt contains more sugar per ounce than ice cream! It also contains artificial colorings and flavorings. Opt for plain whole-fat grass-fed yogurt from A2 protein cows. For an even better option, try whole-fat kefir from grass-fed cows, sheep, or goats. 6. Soy protein Soy protein is a cheap, heavily processed protein found in many foods. It negatively affects your gut and liver. Opt for whole protein sources such as meat, eggs, fish, and seafood. 7. Modified starches Starches are chains of sugars, often used as fillers. Starches cause a more significant spike in blood sugar than sugar! Consume natural starch from butternut squash, beets, plantains, and purple potatoes.

Today, I'm going to tell you the truth about sugar and the effects of sugar. Doctors and large agencies like the Sugar Association have recently denied that sugar consumption could be dangerous for your health or that it could have any implications for your cardiovascular system. A similar tactic has been used by tobacco companies before they admitted that cigarettes were deadly. The average person consumes 23 teaspoons of sugar daily, but could they also be consuming hidden sugars? Hidden sugars are found in products that claim to contain zero sugars. Many ultra-processed foods, such as chips, Cheez-Its, and Goldfish, contain no sugar but are full of starches. Starches have a higher glycemic index than sugar, so they can cause a more significant blood sugar spike. Heavily processed starches are not like the starch you'd find in a potato or rice. Starches like maltodextrin, modified food starch, or modified corn starch can harm your blood sugar and health. If you include starch in a person's daily sugar consumption, the average person consumes around 75 teaspoons of sugar each day! High-sugar diets cause you to deplete your nutrient stores until they are gone. Sugar also causes oxidative damage without the antioxidants to protect you, ultimately leading to chronic conditions, including diabetes, Alzheimer's, inflammation, and skin problems. Processed foods are often fortified because they are so devoid of nutrients. Synthetic vitamins sprayed onto processed foods are not an alternative to whole foods! Stop eating sugar and eliminate starches from your diet. This can reverse the cycle of disease, lower blood sugar, and reverse a fatty liver. Your body will also be able to burn its own fat through ketosis. Ketones are a much better fuel for the heart than glucose.

Today, we're going to talk about the most powerful group in the food industry—the four companies control 90% of the grain trade. This includes products made from corn, soy, wheat, sugar, and rice, which comprise about 68% of the average person's calories in the United States. The 4 following companies are the middleman between farmers and food corporations: 1. Archer Daniels Midland 2. Bunge 3. Cargill 4. Louis Dreyfus There is a lot of corruption in the food industry. Many “junk food brands” also own organic and natural brands, pet food, and vitamin and supplement companies. Starches, sugars, and seed oils are the main ingredients in almost all ultra-processed foods. The sugar is used to keep you wanting more, seed oils are repurposed waste, and starches are a chain of sugars used as a filler. Starches cause more of an insulin spike than sugar. 1. Accepting the wrong health advice as fact Just because someone is a doctor doesn't mean you should trust them blindly. 2. Depending on protein powder for protein Protein powder is incomplete compared to animal protein. It doesn't offer the vitamins and minerals needed to stay healthy. 3. Treating symptoms and ignoring the cause This is the main problem with the medical system. Healthcare practitioners prescribe medication to fix a problem instead of addressing the root cause. This is especially problematic when treating chronic disease because if you get off of the medication, the problem does not go away. 4. Focusing on salt reduction to reduce high blood pressure Instead of focusing on salt reduction, which will cause weakness and other problems, focus on increasing potassium. Potassium keeps your arteries healthy and flexible. 5. Choosing unsaturated fats over saturated fats Unsaturated fats like seed oils are highly refined and are in almost every ultra-processed food. Today, I'm going to share some of the not-so-common reasons why you might be struggling to lose weight. Insulin is at the heart of a slow metabolism. Insulin is triggered by sugar and other foods that act as sugar in the body. Ultra-processed foods like chips and Cheez-Its have 0 sugars but contain carbs with very little fiber. They also contain starches—strings of sugars connected together. Starches act like sugar in the body, but worse! They are higher on the glycemic index, so they cause a higher blood sugar spike than sugar. Seed oils can also cause problems with insulin, affecting weight loss. Stress and lack of sleep can also affect weight loss. So, how do you fix an insulin problem? •Reduce sugar and starch consumption •Stop snacking •Exercise •Get more sleep It takes 24-48 hours to get into ketosis. If you have a glass of wine one night and then just one piece of bread the next, you are not going to be in ketosis. Sometimes, your eating plan is working, and you just don't know it yet. If your hunger is gone and your energy levels are high, your diet is working; you just need to give it more time. Overtraining, poor sleep quality, and certain medications can also interfere with weight loss. In this podcast, we're going to talk about some of the side effects of consuming too much sugar. Some of the well-known side effects of sugar include fatigue, brain fog, belly fat, carb cravings, and cavities. Is there a difference between sugar and carbohydrates? A carbohydrate consists of sugar, fiber, and starch. Starches are called polysaccharides, meaning many sugars or multiple sugar molecules connected together. Starches raise blood sugar levels significantly more than sugar. Starches like maltodextrin, modified food starch, and modified corn starch have a much higher glycemic index than sugar. Here are 7 surprising signs that you're consuming too much sugar: 7. Reduced collagen Reduced collagen will result in loose, wrinkled skin and premature aging. 6. It's Native American Heritage Month and to honor my ancestors I whipped up some traditional ingredients using some modern cooking methods, even the use of mayo on my steaks. Yes, I used mayo, and it came out great! I have been researching our upcoming podcast pilot episode and recently stumbled upon an exciting food trend. The trend is the use of mayonnaise in place of oil for searing meat. Yes, you can re-read that statement, I said mayonnaise. At first, this struck me as very odd and made me slightly uncomfortable because who would put mayo on a perfectly good piece of meat? I dug a little deeper into the proposed science behind the “why” and I was surprised at the results. An article from the LA Times explains, “Mayonnaise is an emulsion, which means you have small droplets of oil surrounded by egg yolk, and that has a couple of really cool properties.” They go more in-depth, “This emulsion allows the oils in the mayonnaise actually to stick to the food, unlike plain oil. Oil and water don't mix, which is why it's so hard to get the fat to adhere to foods you want to grill, particularly meats.” This process, I learned, is not limited to grilling. I slathered a couple of Antelope steaks in a mayo spice mixture and tossed them in a piping hot cast iron pan.  Read the written version of this recipe as prepared by Justin Townsend Rate this Podcast  Listen to our other podcasts here Buy our Small Batch Wild Food Spice Blends  About Hominy: Hominy is basically dried corn kernels, also known as maize in much of the world, that have gone through a process called nixtamalization, or an alkaline treatment.  So…. dried corn kernels, that's easy enough; but what is nixtamalization? Nixtamal is a word that comes from the Nahuatl language, a portmanteau meaning lime ashes and corn dough. The process of nixtamalization involves cooking and then soaking dried corn kernels in an alkaline solution, usually lime water, which causes a number of chemical reactions to take place in the corn.  During the process, the cell walls in the kernels, which are full of alkaline-soluble hemicellulose and pectin, begin to break down, softening the outer hull. Starches inside the kernel expand and gelatinize, helping the corn to be ground much easier and hold its shape as a dough.  Many proteins and nutrients are also unlocked in the process, making them available for absorption by the human body.  After treatment, the hulls are removed from the kernels and the corn gets washed to remove any unpleasant flavours. From there, the corn, now hominy or nixtamal, can be dried, frozen, or canned. Dr. McDougall was on the podcast on Episode 151, and we took a look at his storied life and career as a pioneering physician and talked about his discoveries that informed his unwavering practice of a starch-based diet. In this episode, Rip dives in on very specific topics to get his opinions on procedures like mammograms and colonoscopies, bone density scans, blood pressure medications and other pills, as well as treatments for hormone-related diseases like male pattern baldness, endometriosis, body odor, bad breath, and more!  Dr. McDougall has been in practice for almost 50 years and, if there's everyone who has earned the right to state their researched opinions, it's him. Yes, he has strong opinions about modern medicine, but his point is clear and simple.
