The Golf Kitchen concept was initially born at a meeting at Sebonack Golf Club in Southampton in 2010. With some solid ideas, Diana DeLucia, created her first book and proof of concept titled Golf Club World, Behind the Gates which published in 2013. The recipes and culinary stories proved to be very popular and thus the Golf Kitchen book concept was realized. DeLucia traveled the USA and the world to uncover some of the finest Private Golf and Country Club and Resort teams. The first Golf Kitchen book was launched at Winged Foot Golf Club in Mamaroneck, New York and hosted by Executive Chef Rhy Waddington and a star-studded line up of Private Golf and Country Club Chefs from the USA and abroad cooking a food and wine tasting menu for the members and guests that will always be a night to remember. A similar event quickly followed at Cassique at Kiawah Island Club, South Carolina which was hosted by Executive Chef Doug Blair and once again included a collaboration of an elite group of chefs from Private Golf and Country Clubs from the USA and abroad. Winged Foot has a storied history of hosting national championship golf on their two A.W. Tillinghast-designed courses. Winged Foot has hosted six U.S. Opens including the 2020 United States Open Championship which saw Bryson DeChambeau win his first major title, the 1940 U.S. Amateur, the 1949 Walker Cup, and a PGA Championship on their West Course. Retailers in the golf industry define success at the end of a season in many ways. Did we hit our retail sales or gross margin dollar target for the year? Did our members and guests like the products that came with our biggest investment in a specific brand, and ultimately did that brand sell well for us? One of the most common metrics used is full price sell through which is the percentage of units that sold at full price. Full price sell through varies from Club to Club, but a good industry standard is around 60 percent for the intended life of a given product, meaning a savvy retailer expects to sell the other 40 percent of units on markdown. Remember, the longer an item stays on your shelves the more money it is costing you because the space that those products are occupying could be given to different items with stronger sell-through rates. Also, dead stock ties up your open to buy dollars as well meaning that you cannot order fresher, better products until you sell through what you have now. Monitor your sell-through rates and keep your Golf Shop fresh and engaging for your members and guests to improve your bottom line and the guest experience at your Club. Customer journey mapping in the club environment is a way to visualize the member or customer experience, and it's about how your guests interact with your business and enjoy the experiences that you create and deliver for them. Your goal in mapping that journey is to remove the obstacles and make the process efficient, intuitive, and aligned with their expectations, wants, and needs so that their entertainment and enjoyment goals are not only met, but far exceeded! Simply put, the more seamless and memorable of an experience you can create, the better the customer experience will be. This process of customer journey mapping creates an overview of the member or guest experience at your club and maps out how guests will move through and interact with the various touchpoints your club provides all the way from arrival to departure. Customer journey mapping is especially useful across both the iteration and refinement process of creating your designed guest experience as new elements are designed and older processes are refined or eliminated which allows you find new and improved ways to ‘wow' your members and guests. Essentially, it allows you to identify opportunities to improve and enhance the overall customer experience that you and your team are delivering to your members and guests.
