A new cookbook from “Binging with Babish” creator Andrew Rea walks home cooks through mastering basic skills and recipes in the kitchen. Rea joins us to discuss Basics with Babish: Recipes for Screwing Up, Trying Again, and Hitting It Out of the Park. CARBONARA Italian dishes are regularly bastardized here in America, and carbonara is far from an exception. Bacon, peas, mushrooms, garlic, even scallops have invaded this simple Roman staple, and you know what? Who cares. Put what you want in your carbonara, just don't serve it to a purist (or post it on the Internet) if you don't want to catch an earful. I will not debate, however, that far and away the best expression of carbonara is the properly executed genuine article. Eggs (or just egg yolks for added richness and color) are practically whipped into an emulsion with pork fat and Pecorino Romano, creating what is perhaps the richest sauce in the pasta lexicon. The sauce's rich, complex flavor is largely furnished by guanciale, a difficult to find cured pork jowl. Luckily, the much more widely-available pancetta is a fine substitute! SERVES 4 TO 6 3 large eggs 1 large egg yolk 4 ounces of finely-grated Pecorino Romano or Parmigiano-Reggiano cheese (or 2 ounces of each!), plus more for serving Kosher salt and freshly ground black pepper 1/2 pound guanciale or pancetta, diced 1 pound dried linguine In a large, high-walled sauté pan, bring 2 quarts water to a boil, just enough in which to comfortably cook the pasta. In a liquid measuring cup, combine the eggs, egg yolk, cheese, 1 teaspoon salt, and 2 teaspoons pepper. Whisk or beat with a fork until evenly combined. Set aside. In another large sauté pan, combine the guanciale with 1/4 cup water and cook over medium-high heat until simmering. Continue to cook until the water is evaporated and most of the fat from the guanciale has rendered out, anywhere from 5 to 10 minutes. Meanwhile, add the pasta to the boiling water and cook for 1 minute less than the suggested cooking time on the package. Drain, reserving 1 cup of the pasta cooking water. Discard all but 3 tablespoons of fat from the guanciale, lower the heat, and add the pasta along with 1/4 cup of the reserved pasta cooking water. Cook, tossing, until the pasta is evenly coated in fat. Take the pan off the heat and allow to cool for 10 seconds if it's sizzling loudly. Add the egg and cheese mixture, immediately and vigorously stirring it into the pasta, taking care not to let any of the egg sit in one place for too long. Stir in more pasta cooking water, 2 tablespoons at a time, until the desired consistency is achieved. Season with more salt if necessary and serve with extra cheese grated over the top. Note: Try the (Michelin-starred chef and master of pasta) Luciano Monosiglio method—it's fun! Put the eggs and cheese in a blender and slowly stream in a half cup of pasta cooking water while the blender is running. Throw a hunk of guanciale in there if you really want some pervasive pork flavor, followed by 2 tablespoons of reserved fat from the pan. Blend until smooth and add back to the pasta in the hot pan, cooking over low heat until thick.

Ça me fait penser que je ferais bien un épisode pour vous présenter ces show de qualité. Ou pas, vous me connaissez, j'ai toujours un truc à redire. Bref, 90% du temps, ils parlent de kosher salt comme si c'était le sel parfait miracle youpie super. Dans cet épisode, on va non seulement apprendre ce que c'est, du kosher salt, mais on va aussi un peu démystifié cette mode, cette trend du kosher salt. Donc, Kosher salt, ça veut dire sel Kasher, j'aurais dû commencer par là. Kasher est l'adjectif qui se rapporte à la cacheroute. Et la cacheroute, c'est l'ensemble des règles alimentaires du judaïsme. C'est là que vous trouverez que le porc est illicite, que vous ne pouvez mélanger la viande et le lait, etc…On a déjà fait un épisode là dessus si vous voulez en savoir plus. Le kosher salt tire son nom du fait que, historiquement, il était utilisé pour son efficacité dans la préparation de la viande casher. Bref, ce kosher salt est vanté comme être le meilleur, et on voit ces youtubeurs américains en mettre partout en lieu et place du sacro-saint sel de cuisine. Dans l'eau des pâtes, dans leurs ragouts, etc… Alors qu'a t'il de spécial notre kosher salt ? Et bien rien. C'est du gros sel non iodé en fait, c'est tout. Alors, le gros sel a une propriété bien particulière : il draine mieux l'humidité des aliments. Si par exemple vous devez dégorger une aubergine ou une côte de boeuf, il faut mieux utiliser du gros sel, donc du kosher salt car l'action de drainage est meilleure. Les grains plus gros extraient plus rapidement l'humidité de la viande, ce qui fait partie du processus casher. D'où le nom. Hormis ça, en mettre dans l'eau de cuisson des pâtes ou dans son mac and chesse n'a pas plus d'intérêt qu'avec du sel de cuisine classique. Désolé messieurs les youtubeurs, mais vous êtes victime d'un mythe. Par contre, il y a bien des sels aux saveurs différentes, la fleur de sel, le sel rose, le sel bleu, le sel noir mais je vous laisse digérer tout ça et je en parle une autre fois. I am joined by Jessica Opon. Jess has been working in post production for several years now. Starting out as an assistant editor for Defy Media in LA, she worked her way up to being an editor at Vice Media in New York, where she was a piece of the group of “Charlottesville: Race and Terror”, which won an Emmy. She also became an integral part of the production process as a shooter and producer. Now working as a freelancer, her main focus is editing, but brings her knowledge of producing and shooting to her work. She is an editor for the incredible cooking channel, Binging with Babish, starring Andrew Rae, her partner. She was also a fellow dancer, and you can tell that her background as a professional dancer becomes immediately apparent in the delicate, expertly choreographed stories she weaves behind both the camera and the editing desk. Absolutely loved chatting with Jess. She's such a wise and beautiful person. 隨著做自媒體的人越來越多,網路內容的競爭也越來越激烈,那我們到底要如何提高觀眾對你的黏著度?並且增加流量與點閱率呢?今天我要和你分享 打造高流量 的「 3E 原則」,他們分別代表的意思是什麼?我也會做一些案例來輔助說明喔! 延伸閱讀:「 IKIGAI 人生的意義」為何這麼受歡迎?製造爆紅內容的5個配方 收聽本集音頻: 本集聽眾回饋: 記得訂閱我們的節目,並到 iTunes Store上為節目打星評分留言,和大家分享你的看法,讓更多人看到佐編茶水間 打造高流量 今天要來介紹做內容規劃有一個很紅的技巧叫做 3E 原則,他們分別是: Educate教育性 Entertain娛樂性 Engage參與性質內容 我們都知道做內容創作時要秉持著這些原則才會吸引人,然而很多時候,做內容行銷做久了偶爾會忘記這些原則,導致我們變得更容易一股腦、一頭熱地栽進自己想做的主題裡,卻沒有考慮到對觀眾來說,這到底有什麼吸引力,現在我們就來聊一聊這三個原則的做法和他的案例。 #1 Educate 有教育性質的內容 有教育性質的內容代表你在分享的東西有啟發性、有含金量,有知識或技術可以學,或者有觀點能提供參考價值。 我個人認為,做有教育性質的內容,某方面來說都還滿有票房保證的,所謂票房表證指的就是能夠有一定的觀看量,畢竟會來看你的內容的人,代表著他們有一定的需求,就是因為他們特別想要學習理財、健身或者是塔羅占卜,才會來收看你的內容並且期望能從中萃取一些知識。另外,從 2019 年開始,網路上有越來越多的學習資源、線上課程,很多人也患了學習成癮的疾病,一直想要學東西,覺得自己沒有聽到一些新趨勢、新消息、新工具就沒有安全感,因此市面上一定有一群消費者是專門在尋找乾貨、尋找知識的,這也是為什麼有那麼多人都會將內容以教學的形式呈現,例如你可以看到許多網紅除了有在接業配之外,也開始教人家怎麼拍影片、修照片等等。 理財推薦頻道:柴鼠兄弟 投資理財的雙人組頻道,他們分享的東西很紮實有時候也挺有難度的,因此每當我看他們的節目時,都會有一種真的有學到東西的快感, 美妝穿搭推薦頻道:Lydia Tomlinson 她是一位英國女生,其實我平常並不會特別去看這種生活或打扮類的影片,但從他的影片裡,我真的可以獲得一些搭配衣服的好點子,這雖然並不是很深度的知識或技巧,不過如果你是走比較生活類的主題,也許你也可以朝啟發思維、獲得靈感的切入點,去思考怎麼將你的內容用教學的性質去符合觀眾的需求。 想要做出教育的內容,有兩個比較簡單的開始方式: 步驟法:只要將當前的題材做個順序統整,觀眾就能以比較有系統的方式去消化內容。舉例說明:假設你的頻道與美妝保養有關,比起介紹產品,你可以簡單的為保養程序列出步驟。例如要先用化妝水、精華液、再上乳霜產品,你也可以順便解釋一下為什麼要使用這樣的順序,也許是因為化學物質的分子大小不同,所以吸收的效果也會不一樣。這樣一來,僅管是非常生活化的內容,也能夠加上一些科普小常識在裡面。 歸納法:以歸納來說方式就會更簡單,例如 2020 年必看的五本好書、成功人士的五個習慣等等。以成功人士的例子來說,我們就可以簡單列出積極、早起、閱讀、目標明確、謙虛等等,這種簡單歸納的方式就是一種內容呈現手法,我們可以再依照你所歸納出的方式,去做更深入的延伸說明,例如你就可以仔細解釋積極是什麼樣的定義到底要如何做到積極。 因此我相信各行各業都有他可以更深度專研的學問,如果一開始不知道要怎麼樣把內容用教學式的性質來呈現,或許可以試試看先由步驟法或歸納法開始著手喔! #2 Entertain 娛樂性質的內容 這樣的內容顧名思義就是會讓觀眾覺得好笑、逗趣或者被娛樂甚至是被療癒。 早期 Youtube 節目剛開始盛行時,最容易獲得高點閱率高流量的內容通常都是搞笑、惡整或無厘頭類的內容,最主要的原因是大家上班都很累,下了班之後如果還要再特別花腦力去思考或去學習,就沒有辦法充分放鬆。因此,早期的 Youtube 是娛樂內容居多, Podcast 可能是學習內容居多,但這幾年稍微有了一些轉變。 娛樂推薦頻道:Lily Singh 他是一位講話速度極快而且內容非常有梗的加拿大 Youtuber ,也是少數我會一直觀看而且還笑個不停的創作者,他通常會分享一些與生活或時事有關的主題,總是能讓你看了很有共鳴而哈哈大笑。 料理推薦頻道:Babish Culinary Universe 這是一個我難得覺得很幽默的美食頻道,這位Babish是一位節目主持人同時是主廚,很會煮也很會拍影片,他總是能夠用節奏很快的方式來帶入有趣的旁白,配上很美味的畫面就讓人不禁想要一直看下去,而且就像他的節目名稱一樣,你會一集接著一集看下去。 推薦IG帳號:街頭故事,bailee_story 畫家叫李白,他的內容不是特別搞笑,有時候甚至會是一些比較沈重的故事,但是因為他特別的繪畫方式和貼近人心的故事,可能也會讓你覺得看了很開心或很感動。 在娛樂性質的內容裡,我認為有一個關鍵要素就是你一定要做自己,千萬不要很刻意的去搞笑,不然那就會像是打腫臉充胖子,你自己也會做的很累。在你的節目中適時地加上一些幽默感,確實能成為觀看時的調劑,但是,假設你本身不是一個非常外向或活潑的人,我不覺得你一定要用很耍寶的那種形式才能討觀眾歡心,相反的,就以 Babish 為例,他其實很少在他的煮飯影片中露臉,他通常都是用 Voiceover 的形式配上搞笑台詞,有點像是用聲音說故事、說笑話的概念。 我們要如何做出生動有趣的內容呢? 其實這個就有一點難倒我了,因為我自己本身並不是一個特別知道要如何做娛樂內容的人,但是我相信想要嘗試娛樂內容,我們也可以簡單地把它分為前置與後置兩種方式,前置的意思其實就是事前的準備,包含畫面的呈現方式、講稿、表演方式、表情、道具、場景等,會出現在畫面上的內容,都叫做前置作業。前置作業的設計比較屬於個人的製片能力和設計能力,當然這個與經驗和技術專業也有關聯,如果在前期比較困難的話,像是有些 Youtuber 可能也會讓自己的小寵物入鏡,就能營造一種親民、幽默的趣味感,像這樣的感覺就算不是你本人在特別搞笑,也一樣有機會讓你的觀眾更加的投入。 而後置的部分,可能攸關到剪輯技巧,以及內容呈現的方式,例如:我們可以加上一些有趣的音效畫面特效,或者是放大一些人物表情做出比較誇張的節目效果等等,都有機會讓原本比較平淡的內容變得更加的活潑。例如:我前陣子做了一隻小木屋開箱的影片,那一支影片其實蠻正經的,也沒有什麼有趣的內容,但是後來我先生把我的影片拿去做了一點惡搞配上比較好笑的英文字母對白,就讓原本沒有在搞笑的影片,變得更好笑。 https://youtu.be/_dDK0FfX6kU 因此,想要做出趣味內容,我們可以先思考前置內容能不能在編寫腳本時就加入一些有趣故事,或是用後製來增加節目效果,當然,娛樂性不一定只能好笑,怪奇的或可愛的內容也有一定的娛樂效果哦! #3 Engage 有話題、有參與感的內容 我自己對於Engaging content的解讀是具有話題性、值得討論的觀點、近日熱話、時事甚至是具有爭議性的議題,就像是休傑克曼在 The Greatest Showman 裡說的:「人類總是會對稀奇古怪的事情產生好奇心,這就是人類的一種天性」,那我所指的並不一定要是馬戲團等級的奇特內容,有的時候像是最近的時事、美國總統大選、新冠疫情最新動向,這種與我們有切身關聯的內容都可以是一種讓我們更有共鳴、更參與其中的內容。 時事討論推薦頻道:志祺七七 我偶爾會去挑選我覺得有趣的主題來收看,例如:中美貿易戰到底在吵什麼?或者是蔡阿嘎的兒子生日時辦的展覽有什麼可以改善的地方,都是一種我認為滿有趣甚至是僅有這麼一次才會拿出來討論的話題。 韓國文化生活推薦頻道:Hi A Day 這是一個在講韓國文化和生活旅遊相關的主題,主持人台灣妞和喜娜有一個特別的單元叫做「韓國真人真事怪談」,我其實有點害怕看鬼片或兇殺案的內容,但是那一系列的主題真的是會讓人很不小心就一集接著一集看下去,尤其是主持人台灣妞的口條很不錯,講案件非常的清晰而且他們搜集的資料都很完善,看這一系列的內容就有種在看藍色蜘蛛網的感覺,就是會讓你有種「我不想要再看了」但就還是一直看下去的莫名其妙感,而且你仔細觀察就可以發現 Hi A Day的怪談單元的觀看率幾乎是其他影片的五~十倍觀看率,可想而知,人類對於特別的話題是多麽的無法自拔。 如果你想要製作這種比較 Engaging 的內容,我覺得他算是比較吃主題設計和內容規劃,但是參與也可以是以另一種方式呈現,一種讓你感到很莫名其妙就被吸住的感覺。 日本料理推薦頻道:HidaMari Cooking 他就是以一種完全沒音樂、沒說話、沒露臉的方式的煮飯節目,比起我上面說到的 Babish 搞笑做菜內容, Hidamari 的畫面移動速度非常地緩慢又超級安靜,反而製造出一種很奇特的反差感,我甚至會在心情不好的時候去看他做菜,內心就有一種被療癒的感覺,是一種很溫柔地撫摸感,讓人覺得很想一頭栽進去,繼續看下去。 有參與感的內容有沒有比較簡單的起步方式? 我認為我們也可以往兩個方向著手,第一個是夠痛的,第二種是極端的內容。如果你有在接觸內容行銷,你一定聽過痛點這個字,痛點代表著你的觀眾內心所擔憂的不安或想解決的需求,例如:第116集的來賓 Tiffany 是一…
