These are examples, yet choices are endless.   •  brussel sprouts: cut off tough end and cut in half   •  bell peppers: cut into chosen pieces; discard pith and seeds   •  cauliflower: cut into 1/2 inch slices - OK if you have small pieces and larger pieces and even crumbs   •  carrots: cut on diagonal about 1/2 inch slices   •  tomatoes: cut in half if large and put flat side down, if cherry - leave whole   •  purple cabbage: cut off tough end only and slice roughly 1/2 inch slices   •  onions: any color, stem and root end removed, quartered and peeled   •  summer and winter squash, peeled if needed and 1/2 inch slices•  1/4 - 1/2 tsp Kosher salt•  1/4 tsp pepper•  1 - 2 tsp Olive OilFor Green Sauce:•  4 pressed cups washed greens and hard stems/veins removed (cilantro, kale, parsley, spinach, arugula as examples.•  3/4 cup olive oil•  2 tsp lemon zest (from about 2 lemon)•  2 Tbsp lemon juice (from about 2 lemons)•  1 Tbsp red or white wine vinegar•  1/4 - 1/2 tsp Kosher saltFor topping (optional)•  1/2 cup Pomegranate seedsMethod:Heat oven to 425FPlace all vegetables in a large bowl. Drizzle vegetables with measured Olive Oil and rub with hands to make sure well coated. Sprinkle with 1/4 tsp salt and pepper.  For roasting: Place vegetables on baking sheets lined with aluminum foil or parchment paper, single layer Roast for 10 minutes, and then set timer at 5-minute intervals until desired doneness (goal is some brown bits/caramelization, and heartier vegetables such as cauliflower, cabbage, carrots, winter squash and brussel sprouts to be fork tender on inside.) Tis the season! During the holidays we often gather with friends and family to enjoy delicious food and great company, but sometimes we may feel tempted to choose foods that aren't as healthy for us. Robin Gould, a Registered Dietitian with CoreLife Adventist HealthCare shares some tips to keep us on track and make healthy food choices during the holidays. What are some ways we can make healthy food choices? It's important to enjoy the special foods you like most during the holiday season, but it's good to have a healthy balance. Food is fuel for our bodies and each meal is an opportunity to support your wellness. These tips will help you strive for balance while spending time with your loved ones. • Don't make large portions. Reduce the ingredients to reduce the leftover temptation. • Eat a balanced plate. Make your plate colorful. It should include lean protein, carbohydrates and more fruits or vegetables to receive all the health benefits. • Rethink your drink. Holiday drinks, such as apple cider or hot chocolate, contain high amounts of sugar. Consider replacing them with herbal teas or flavored water to stay hydrated. • Keep up your exercise routine. Squeeze in a couple of jumping jacks, squats or wall pushups, or go for a brisk walk outdoors with family after your meal. • Enjoy yourself in moderation. The holidays only come once a year. If you indulge a little more than you anticipated on your favorite treats, that's okay! One meal won't make or break your health goals. How can we stay safe when gathering for the holidays? Being fully vaccinated is the best way to minimize your risk of COVID-19 during the holidays, as well as the those who are high risk and those who are not eligible yet. Wearing a mask and social distancing are still great strategies when gathering indoors. It's also best to try to avoid crowds or poorly ventilated spaces. If you have symptoms or are sick, do not host or attend any gatherings. Vegan Pumpkin Pie Yield: 1 Standard sized pie Prep Time 10 Minutes Cook Time 40 minutes Total Time 50 minutesThis vegan, gluten-free pumpkin pie has al the classic pumpkin pie flavor without the guilt. Ingredients 1 (15 oz.) can pumpkin (not pumpkin pie fillings) 1 cup coconut milk 1/3 cup maple syrup 2 tablespoons brown sugar 1 tablespoon pumpkin pie spice 3 tablespoon organic cornstarch 1⁄2 teaspoon sea salt 1 prepared and par-baked almond flour pie crust or favorite 9-inch pie shell Dairy-free whipped cream, for serving Instructions Preheat the oven to 350 degrees F. In a medium-sized mixing bowl, whisk together the pumpkin, coconut milk, syrup, brown sugar, pumpkin pie spice, cornstarch, salt, and vanilla until very smooth. Pour into the par-baked pie crust and carefully transfer to the oven. Bake for 35-45 minutes, until the pumpkin pie filling, has set. Be sure to check halfway through baking and cover the crust edges with foil or a crust shield if they are getting dark. It’s okay if it still jiggles a bit, it sets while it cools overnight. Remove from the oven and let the pie cool completely. Transfer to the refrigerator to set up overnight. Serve chilled with dairy-free whipped cream. Notes: Paleo Option: You can use arrowroot in place of the cornstarch, though the consistency won’t be quite as perfect. Sub coconut sugar for the brown sugar or omit it. This recipe makes one standard 9-inch pie. If you are using a store-bought crust, you’ll want to blind bake the shell first, so you don’t end up with a soggy crust. The holidays are fast approaching and the decisions you’ve made about sticking to healthy holiday eating habits will be tested. You know they will. So what are you going to do? How can you handle the conversations and pressures in a way that enriches your life instead of filling it with stress? This episode shares what we’ve learned in talking with family and friends about the things we eat, don’t eat, and why. We trust that you’ll find some helpful tips here to help you stick to your healthy holiday eating commitments. Outline of This Episode [0:54] The holidays, family, food, weight gain, and stress [3:20] A holiday conversation that can be applied to any time of the year [6:40] It was a several year process for us to move to what we describe [9:12] The power of making the holiday a one day thing [11:54] Navigating new directions with family and friends [13:40] The power of preemptive conversations to explain your choices [16:25] You’ll be surprised how family might adapt to your dietary needs [18:10] When your actions are congruent with what you say, it’s powerful [21:50] When you go to holiday parties, bring something you know you can eat [26:16] 3 words you can use in difficult situations [28:10] Find ways to connect with people in ways other than around food [32:14] Think about the situations ahead before you get into the situations Are your actions congruent with who you are and what you say? It’s important to start at the beginning. Healthy holiday eating only happens because it comes from a deeper place, a place of identity out of which your resolve flows. You have to ask yourself the hard questions that reveal your true level of personal integrity. Are your actions congruent with who you are and the words you say to explain your decisions around eating? If you decide to gorge because “It’s the holidays,” your family will likely not take you seriously at all - and it’s not their fault. Listen to learn how a focus on personal integrity has enabled us to decide on the things we will say and the way we will approach the push-back we could receive from family or friends during the holidays. And more importantly, learn how we’ve been able to grow in our commitment, little by little every year. Preemptive conversations about healthy holiday eating go a long way Too often we walk into the minefield of family gatherings during the holidays with no preparation. We know that people will look at us sideways when we don’t eat certain foods, or that Aunt Mabel might even say something about it - in front of everyone. Wouldn’t it be great if we knew exactly what to say and do when those things happened? The good news is that you CAN know exactly what to say or do - because you can decide what those things are ahead of time. During this conversation, we discuss the things you can say to your family when they question your holiday eating decisions and explain a few strategies of how to avoid the conflicts that can so easily arise. If you don’t make a big deal about your healthy holiday eating, nobody else will None of us like to be preached at by people who think they know better than we do. And though your convictions about healthy holiday eating may be best from a health perspective, the way you talk about it could come across as preaching to your family members and friends. Janell points out that if you don’t make a big deal about your decisions, nobody else will. Just be casual - play it cool. When people bring up the fact that you refused the Grandma's legendary chocolate pie, just tell them that you’ve discovered that for right now, sugar and gluten are not the best for you. If they continue to question your decision, change the subject. Refuse to get into a contentious situation about the issue and you’ll find that everyone else follows suit. Listen to learn how we have handled this over the years. The 3 magic words: No, thank you The holidays can be hard when it comes to food. Especially if you are just starting out with new healthy holiday eating habits. You can make great gains if you’ll allow yourself to drop the fear about what others might say and adopt three simple, but magical words. “No, thank you.” Say it genuinely, with a smile - the next time you’re offered something you don’t really want or know you shouldn’t have at this point in your journey. It’s disarming and it enables you to stick to your convictions without a lot of explanation that could open a can of worms. We’ve found this to be a very helpful tool in our toolbox. You can do it. Jenny Schatzle from the Jenny Schatzle Program reminds us that we are in the Holiday Season and we need to deal with it. The all or nothing mentality doesn’t work. We need to take the pressure off and be healthy while still having fun. From her studio in Santa Barbara, Jenny is starting a global Movement that changes the way people see themselves. The program focuses on fitness and nutrition as a base, but also looks at the community you create and the behavior that stops you and holds you back. At the Jenny Schatzle Program, the weight loss is the bonus, the life change is the promise. Jenny moved out to Santa Barbara as a student and signed up at Golds Gym to workout. After being the loudest and most dedicated attendant in the group fitness classes, the owner offered to teach Jenny how to run classes. She then realized she wasn’t walking the walk she was teaching and created the Jenny Schatzle Program that helped her to get back to feeling whole. The program teaches people how to love who they see in the mirror and find a deep internal happiness that is not wavered by the actions of others.13 Holiday Tips for Staying Healthy 1. Know your triggers-If food is your trigger, step away from the food table. Grab one plate of food and take it on the other side of the room to have your conversation. 2. Plate Order-First plate, vegetables and greens-Second plate protein-Third plate can be your starches and foods you want to try out. 3. Wait 20 Minutes before Having Seconds-Set a timer 4. A Glass of Water and Food first.-Alcohol lowers our inhibition. Ounce you are buzzed choicesare compromised. Drink some water and eat food first. 5. Go for Low Calorie Drinks-Create a Mocktail. Bubbly water and a splash of cranberrywith a lime.-If you are going to drink wine, stick to one glass.-Go for red wine over the sugary whites-Instead of a margarita, have tequila and lime juice. 6. Adult Peer Pressure is Real!-We tend to take health advice from unhealthy people to makethem happy-Don’t take advice from someone who doesn’t care if you arehealthy. 7. Be Present While Eating-How will the food I’m shoving in my mouth make me feel?-Do I feel hungover just from what I ate? Make better choicesnext time. 8. Don’t Eat Your Stress-Visiting family can be stressful. Look for positive outletslike working out versus indulging in unhealthy foods-Don’t add the guilt and shame from eating unconsciously toyour stress 9. Treat Yourself and Lower Stress-You deserve to spend some time and money on yourself to lower stress-Get a gym membership-Treat yourself to a massage 10. Start the day with a 10 Minute Workout-You will be less likely to eat crap-You will start your day feeling accomplished 11. Put Yourself First-It’s not selfish. When you are at your best, others benefit.-People aren’t going to like you more/less the more you do forthem. 12. Embrace Your Health-Being healthy is a gift, not a punishment.-Where you put your focus will become your focus.-If you focus on hating your workouts, you will hate theworkouts-If you focus on being kind to yourself and you will feelloved. 13.
