Host Laura Reeves is joined by Kira Hoang and Dan Khanh Tran to discuss Phu Quoc Ridgebacks and their efforts to build a club and registry for the indigenous breed of Vietnam. Photo Red River Kennel.[/caption] Developed on an island off the coast of Vietnam, the Phu Quoc Ridgebacks join the Thai Ridgeback and the Rhodesian Ridgeback as the only known “ridged” dog breeds. Tran notes that most of the breed's known history is from French explorers who brought them to Europe. Native people on Phu Quoc island have a myth about the breed, that the dogs were born from stone dogs that guard the local temples. They are still utilized on the island as home guardians and independent hunting dogs. [caption id="attachment_12274" align="alignright" width="334"] The breed is medium sized, short coated and comes in a variety of colors. Photo Red River Kennel.[/caption] “Their hunting is different from modern dogs hunting,” Hoang said, “because they're independent thinkers, so they don't need their hunter to actually go with them to hunt. I've actually watched videos of them where they're chasing this pig …you've got three that are chasing this pig and then you've got two that have now split off to go and chase it and (corner) it on the other side. They're thinking and communicating with themselves to go and do these roles. They'll assign themselves roles, which is what I was told by a lot of the breeders when they do go hunt with them … that the dogs will go and do their own roles and they'll distinguish them amongst themselves. The hunter never has to tell them what to do. “I think a good description is just like easy going, that's kind of like the breed characteristic is that they're easygoing island dogs. They'll go hunting with you all day or they'll stay at home with you all day kind of thing. There's so much versatility to the dogs that the people of Vietnam really, really like.” Hoang traveled to Vietnam earlier this year and collected DNA samples from more than 100 dogs, mostly PQR but also other indigenous Vietnamese breeds, to add to the databases at Wisdom Panel and Embark. We want it to be as available and accessible, but we want it to stay true to the breed that is in Vietnam.” “We also want to make sure we're doing it right,” Tran said. “You know that our breed that is so important to us is not just having its history recorded, but it's also that we're breeding for better. In “Blessed Egg Rolls and the Evolution of Rockport, Texas,” Gravy producer Evan Stern takes listeners to the small town of Rockport, Texas, which hugs the shores of Aransas Bay on the state's Gulf Coast, about 35 miles northeast of Corpus Christi. There, he visits Saint Peter's Catholic Church, founded by Vietnamese arrivals in the early 1980s, and whose congregants host a monthly fundraiser selling such dishes as bun, egg rolls, and shrimp. Following the collapse of Saigon, in the aftermath of the Vietnam War, hundreds of thousands of Vietnamese, Laotians, and Cambodians fled the Indochinese Peninsula to seek refuge in the United States. While a great many of these people famously resettled and established enclaves in cities like Houston and New Orleans, seeking work in fishing and shrimping, others moved to and impacted smaller, less diverse communities on the Gulf Coast. For Gravy, Stern explores the challenges of resettlement and this community's evolution. We hear from congregants including Trang Kelsey, who found comfort in Rockport's oysters and fish that reminded her of her home island, Phu Quoc. Lyly Nguyen shares how the popularity of her family's cooking among Rockport High's football team—pho, lo mein, egg rolls—inspired them to open the successful restaurant, Hu Dat, which now claims three locations in Texas. Stern also examines the racial tensions following this mass migration. Noted environmentalist and fourth-generation fisherwoman Diane Wilson, who lives and works up the coast in the town of Seadrift, remembers how misunderstandings between residents and newcomers over misplaced crab lines and unspoken rules gave rise to conflict. Lyly Nguyen recalls harassment and violence following a 1979 territorial dispute that kept her home from school for a week. Finally, Stern speaks to Julie La Pam, a shrimper in Aransas Bay; seafood market owner Flower Bui; Saint Peter's choir director Tam Nguyen; and Father Tung Tran. All proudly call Rockport home and remind us that churches—and communities, and towns, and cities, and nations—are made of people before brick and mortar.

In the same month, Singapore accelerated its Vaccinated Travel Lanes and Cambodia made travel easier for visitors than anywhere else. This week, Gary and Hannah rewind to November 2021 – the month that reignited travel in South East Asia after 20 months of lockdowns and labyrinthine travel restrictions. Thailand and Singapore claimed the headlines, although their reopening strategies contrasted notably. Cambodia made the fullest reopening move, but garnered less media attention. Cambodia surprised everyone recently abandoning their phasing in of tourism to fully reopening the country to travelers. They're even paying for the rapid test on arrival! That's two countries in Southeast Asia that are now fully opened to travelers. This week also saw the first tourists to arrive in Vietnam in 20 months. Nha Trang, Da Nang/Quan Am, and how Phu Quoc are hosting international travelers on fixed itinerary travel packages. It's exciting to see the countries of SEA start to welcome back tourists. I do believe the industry will not be fully confident in the opening of all services until the whole region is open and all categories of tourists can be accomodated. In this episode we'll also go back to Okinawa, Japan and take a walk down Naha's famous Kokusai Dori Tourist Street. With her roots and beginnings sprung in the Minsk scene she's the resident of сфера (sphera), a project focused on a multi faceted approach of curating diverse headliners in unusual locations, creating great events with a small but sound crew of Belarusian creatives which took over the local underground scene. It inflamed the passion to electronic music in her, and becoming a DJ was just a next step. With this steam, she has since left Belarus for Asia, where she's been dropping her signature minimalistic sound from the islands of Phu Quoc, Vietnam to the cities in the north, and in China. After a short time based in Hanoi, she's laid sets at the city's finest clubs. @manekinekoo

SANDRA MANN, photo: Tom Kauth Sandra Mann is one of the most renowned artists and photographers of Germany. In her cross-genre oeuvre - she employs a wide range of artistic forms of expression such as photography, installations, sculpture, and video - she conceptually addresses the relationship between people themselves and between people and nature, the environment, the animal world, and gender. Her work and teaching is defined by an exploration of the fundamentals of photography, imagery, and image perception. She also curates exhibitions in and outside Germany. She is a member of the international curator network Qipo and works as a jury member for photography and art competitions. Alongside various other prizes she got scholarships such as the Stipendium der Universitätsstiftung Augsburg, the Stipendium der Deutschen Künstlerhilfe, the Helsinki-Reisestipendium des Kulturamt and the Goetheplakette of the city of Frankfurt am Main. She was 2016/17 Artistic Ambassador of Stiftung Palmengarten und Botanischer Garten and since 2017 she is Artistic Ambassador of the Keep The World Foundation. It's not very often we get to have a direct relationship with the actual manufacturers of the Asian products that we use. And it's not very often we think of these Asian ingredients to be of the highest quality and standards. Well, our guest today, Danny Tran, co-owner and founder of Son Fish Sauce is trying to change that narrative. His story teaches us that as the more we look for opportunities, the easier it is for those opportunities to find us. Life took him across the world back to Vietnam, and many failures until the fish sauce business found him to expand its reach to the world. Danny's perspective on Vietnam and our culture is contradicting to how our elders view it, but hopefully, through the quality of his product and his passion for exposing the richness of Vietnamese culture through its native products, we can all appreciate the value of what Vietnam brings to our world in cuisine.

Chef Tu David Phu is a first generation Vietnamese-American with a rich culinary background. An alumni of highly regarded kitchens (such as: Daniel, Acquerello and Chez Panisse) his cooking reflected a wide range of cooking cultures - from the American culinary greats to classical European traditions. But his roots were quite different. His family hails from the Island of Phu Quoc, accredited as the birthplace of fish sauce in Asia. Consequently he has family roots in Award Winning Fish Sauce Production, Hung Thanh 1895. Pilgrimages back to Vietnam were often. After a decade of cooking, he began to immerse himself in the practices, ingredients, techniques, and flavors of Vietnamese cuisines. Revisiting his favorite childhood dishes through the memory of taste, he started to cook the cuisine of his Mothers' generations-old wisdom handed down grassroots-style. In 2016 Chef Tu began garnering press and accolades with his weekly pop up dinners “AN - a Vietnamese Dining Experience.”; San Francisco Chronicle named him 2017 Rising Star Chef , featured contestant on Bravo's Top Chef Season 15, Host for ABC’s Taste Buds: Chefsgiving, nominated for a James Beard Award. What would it be like if Vietnam qualified for the tournament? Our interview guest is Howard Limbert (25:46), former head of the British Caving Association and one of the leading experts on Vietnam's cave systems. He is based near Phong Nha-Ke Bang National Park, home to Son Doong, the world's largest cave, which he helped map. We talked about his extensive experience in the country, as well as why tourism in Phong Nha has thus far been an environmental success story, unlike areas such as Phu Quoc and Sa Pa.
