A global survey has revealed that Australian teens are spending an average of 49 hours a week on digital devices. Nearly one in five spends at least 40 hours scrolling through social media or playing video games. So you have been making the rounds lately because you have this diet. You sort of created the somewhat controversial, but I love the name of it, 'cause I've always been a big fan of French food, and that is The Croissant Diet. So maybe you could tell us a little bit about your background, how you came to start experimenting with this stuff and how you got interested in The Croissant Diet part. The Croissant Diet and French Paradox Brad Marshall: Sure. And so my... Well, my background dietarily is I've been keto a lot of my life, but I also went to the French Culinary Institute back in the late '90s, I guess, in New York City. And so, as I've been a keto adult, and knowing that that works and seeing that it helps people, I've had to struggle knowing that at the same time, the traditional French diet where they're combining starch with butter, seems to be keeping people thin as well. And I'm a food historian, and I love looking at the dietary history of people in New York State who were mostly dairy farmers back in the day. And looking at people in New York City, even into the '50s and '60s, when you look at those old photos, you can see that everybody is... Almost everyone is universally slim. And not even that they're not fat, but they're really skinny. And you can look at menus of the day and food trends and USDA data, and everyone was combining starch and butter and meat and potatoes, and they stay lean. And then something changed and people started to get fat. And so my thought is that, what changed? Brad’s work is based on his understanding of molecular biology, his love of food history and cooking and his experience in agriculture. To that end he has a genetics degree from Cornell University and a Culinary Certificate from The French Culinary Institute. After college he did cancer research at Memorial Sloan-Kettering and did bioinformatics for The Berkeley Drosophila Genome Project before leaving professional science. For the previous 15 years he has raised rotationally grazed hogs and run a retail butcher shop and USDA inspected meat processing plant. Brad has written extensively about meat processing and meat science including Disastrous Trends In American Bacon. He is also a student of culinary history and historical diets. He goes deep down a rabbit hole in the middle of the episode on the electron transport chain and goes into some pretty esoteric stuff. I hope we don’t lose anyone for these 12-14 minutes. In this part two episode with molecular biologist Brad Marshall, Dr. Anthony Gustin dives into the science of fat storage and what you can do once your metabolism goes out of whack from consuming too much vegetable oils and sugar. As Brad explains, it’s not just as simple as removing these items from your diet, although that is a great first step to take. Want to know how to motivate boys?Toss out your outdated beliefs about boys and men, says Maggie Dent, Australia's "boy champion" and author of From Boys to Men: Guiding Our Teen Boys to Grow Into Healthy, Happy Men. "Our boys aren't these tough, unfeeling humans," she says. "They've got incredibly tender hearts, and with appropriate guidance they can grow to shine."Boys Don't Want to FailBoys don't want to disappoint their parents. Or themselves. They don't want failing grades, lost homework, and dozens of uncompleted assignments. It may seem that way -- otherwise, they'd just do their work, right? But the reality is young, tween, and teen boys are still growing; they are still developing their organization and time management skills and sometimes (Ok, often), they fall behind. Nagging and browbeating them is not helpful. ("Of course that's not going to bring out the best in our boys," Maggie says.)"We've got to be careful that we don't treat our boys harshly," Maggie says. Instead, "we really need to build understanding so we can support them and help them navigate the world." Yet in many places, shame and punishment are still the primary tools used to "motivate" boys.Motivating BoysThe neurobiological changes of male puberty can actually affect boys' motivation -- and explaining that fact to young boys may prevent some negative self-talk that could otherwise further thwart their motivation.Helping boys understand that relevance of school assignments and house rules to their lives can also increase their motivation. A boy who knows why something is important to his life (and how it will help him with things that matter to him) is more likely to follow through than a boy who doesn't understand why you want him to do something that seems absolutely irrelevant to him.Boys may also need adult assistance to break down overwhelming, seemingly insurmountable tasks into smaller bits. Instead of telling a boy with failing grades to "bring up your grades," work with him to identify one subject to focus on. Together, develop a plan to pull up his grades in that one class. Support and encourage his efforts, and celebrate his achievements.
