Outsourcing food production is not only foolish but downright irresponsible, considering how vital food is to our health and well-being. In this episode of the Primal Shift Podcast, I'll explain why growing your own food — as opposed to blindly trusting faceless corporations with your nourishment — is crucial for truly healthy living. In short, many staples of the standard American diet are produced in ways that deeply degrade their nutritional value (and in some cases, actually make the food harmful).  For example, store-bought chicken is often bathed in chlorine and contains high levels of polyunsaturated fatty acids (PUFAs) from the birds' diet, leading to inflammation in your body.  Pasteurized dairy, stripped of bioactive ingredients and beneficial bacteria through the pasteurization process, amounts to junk food.  Raw honey isn't exempt either, as it's often contaminated with microplastics and chemicals from plastic foundations and treatments used in commercial beekeeping.  Even the best store-bought pastured eggs have been washed in chemicals, and the porous eggshells can allow residues to seep into the eggs you consume. I've always been skeptical of the seed-oil theory of obesity. Perhaps this is bad rationality on my part, but I've tended to retreat to the sniff test on issues as charged and confusing as diet. My response to the general seed-oil theory was basically "Really? Seeds and nuts? The things you just find growing on plants, and that our ancestors surely ate loads of?" But a twitter thread recently made me take another look at it, and since I have a lot of chemistry experience I thought I'd take a look. The PUFA Breakdown Theory It goes like this: PUFAs from nuts and seeds are fine. Deep-frying using PUFAs causes them to break down in a way other fatty acids do not, and these breakdown products are the problem. Most of a fatty acid is the "tail". This consists of hydrogen atoms decorating a backbone of carbon atoms. Each carbon atom can make up to four bonds, of which two have to be to other carbons (except the end carbon which only bonds to one carbon) leaving space for two hydrogens. When a chain has the maximum number of hydrogen atoms, we say it's "saturated". These tails have the general formula CnH2n+1: For a carbon which is saturated (i.e. has four single bonds) the bonds are arranged like the corners of a tetrahedron, and rotation around single bonds is permitted, meaning the overall assembly is like a floppy chain. Instead, we can have two adjacent carbons form a double bond, each forming one bond to hydrogen, two bonds to the adjacent carbon, and one to a different carbon: Unlike single bonds, double bonds are rigid, and if a carbon atom has a double bond, the three remaining bonds fall in a plane. This means there are two ways in which the rest of the chain can be laid out. If the carbons form a zig-zag S shape, this is a trans double bond. If they form a curved C shape, we have a cis double bond. The health dangers of trans-fatty acids have been known for a long while. They don't occur in nature (which is probably why they're so bad for us). Cis-fatty acids are very common though, especially in vegetable and, yes, seed oils. Of course there's no reason why we should stop at one double bond, we can just as easily have multiple. This gets us to the name poly-unsaturated fatty acids (PUFAs). I'll compare stearic acid (SA) oleic acid (OA) and linoleic acid (LA) for clarity: Linoleic acid is the one that seed oil enthusiasts are most interested in. We can go even further and look at α-linoleic acid, which has even more double bonds, but I think LA makes the point just fine. Three fatty acids, usually identical ones, attach to one glycerol molecule to form a triglyceride. Isomerization As I mentioned earlier, double bonds are rigid, so if you have a cis double bond, it stays that way. Mostly. In chemistry a reaction is never impossible, the components are just insufficiently hot. If we heat up a cis-fatty acid to a sufficient temperature, the molecules will be able to access enough energy to flip. The rate of reactions generally scales with temperature according to the Arrhenius equation: v=Aexp(EakBT) Where A is a general constant determining the speed, Ea is the "activation energy" of the reaction, T is temperature, and kB is a Boltzmann's constant which makes the units work out. Graphing this gives the following shape: Suffice to say this means that reaction speed can grow very rapidly with temperature at the "right" point on this graph. Why is this important? In this podcast, we're going to talk about the absolute worst food for your heart! Here are some of the side effects: •Primary driver of heart disease •Creates inflammation inside the arteries •Consumption directly correlates with heart disease •Creates oxidative LDL inside your arteries •Increases the risk of developing metabolic syndrome •Causes lipid peroxidation •Increases the risk of clotting •Creates oxidative stress This food is an industrial product that is heated five times, contains added chemicals, and is devoid of anything living at all. The food we're talking about is seed oil! Vegetable oil is one of the most commonly used seed oils and isn't really made of vegetables at all. Seed oils are generally composed of corn, cottonseed, canola, or soy oil. Vegetable oil is an unsaturated fatty acid, so it's very unstable and susceptible to oxidation. Light, air, oxygen, and temperature can all cause seed oils to oxidize. Seed oils are in so many of our foods. They're used in cooking but also used in salad dressings, condiments, and in almost all ultra-processed foods. Most of the information available to the public tells us that polyunsaturated fatty acids (seed oils/PUFAs) are not bad for us. Two popular studies on PUFAs are The Finnish Mental Hospital Study and The Los Angeles Veterans Administration Study. Both of these studies have several flaws. They weren't randomized, and there were many other variables, like participants on medications and those who smoked. Check labels to avoid seed oil consumption. Condiments and salad dressings often contain seed oils, so opt for versions without, or you can even make your own. Use butter, olive oil, coconut oil, avocado oil, and lard for cooking instead of seed oils. Seed oils are too high in omega-6 fatty acids. Typically, you want a 1:1 ratio of omega-3 and omega-6 fatty acids. When omega-6 fatty acids are too high, it can cause inflammation and other issues. They do not acutely cause oxidative stress, but their polyunsaturated fatty acids (PUFAs) are more vulnerable than any other macronutrient to oxidative damage. Oxidative stress can increase because of nutrient deficiencies, toxins, infections, other sources of inflammation, alcohol, or smoking, and it will inevitably increase as a function of aging. As oxidative stress increases, more PUFAs in the tissues mean more damage. At least 0.6 milligrams of vitamin E should be gotten per gram of PUFA in the diet, but vitamin E cannot fully protect against PUFA, so their intake should be moderated to the very low levels needed, as obtained by eating fatty fish once or twice a week, eating eggs daily, and eating 4-8 ounces of liver per week. Additional secondary problems with them include residual solvents and heat damage prior to intake, but the main issue is that we do not want to increase our tissue PUFA content more than needed. Mike says: Hey Robb, Its really common lately, in the ancestral / carnivore / animal-based echo chambers, to hear about pufa being a problem, but I'm curious if this is legit, or if the Paul Saladino's of the world should be saying ‘oxidized pufa' every single time they simply say ‘pufa'?? I know polyunsaturated fats are relatively fragile to oxidation (if that makes sense), but are all the pufa's we eat really oxidized? And if not, do you think the non oxidized pufa are really a problem?? Thanks Salt and insulin resistance Hi Robb and Nicki, I am curious of the relationship between salt and insulin resistance. I have heard you say that extra salt will simply give gi side effects in a healthy person. My problem is that i am "prediabetic" My sugar is relatively normal during the day, depending on what I eat, it will go in the 160s, though my fasting blood sugar is often 110-120. I fast for 10-14 hours a day (T R E) and i am mildly overweight. I am 6' and 210 lbs. I am very active doing remodeling as a hobby and firefighter/ paramedic for a job however I do not really "work out". I try hard to have decent sleep but the 24 hr schedule for work makes that hit or miss. Is there a concern for too much salt with insulin resistance? Thanks for sharing all of your knowledge!! Next stop, HRT? Adam says 44 yo male, 6' 210lbs, been weight training consistently for 25 yrs. Mtn bike, run - pretty active. Been struggling with sleep for last two years and for the past yr have been having lower energy, mood swings, lack luster workouts and most recently lower libido. No particular diet except do my best to avoid added sugar on a daily basis. Blood pressure is perfect, cholesterol is in the right ranges per GP guidelines. Thyroid testing ok, cortisol seems inline(14.6 ug/dl) Last Glucose test showed 87 mg/dl - only red flags seem to be elevated iron /ferritin levels which I'm trying to remedy with monthly blood draws. Otherwise eat lots of meat and vegetables- probably 3500 calories +- daily. Supplement with creatine and whey protein. Considering trying HRT as my total testosterone has been consistently under 400 for the last two years (388 this week) and free was at 6 ng/dl. Am I not sleeping cause of low T or do I have low T cause I'm not sleeping? Not aware of any dietary issues or allergies and not sure what to do next. For instance, both french fries and cigarettes have the same amount of crotonaldehyde. However, it has been cultivated specifically for use as food. The cultivation of an oil seed makes it more oily. Olives have become more oily over time; the same goes for peanuts. You don't need to treat peanuts with harsh chemicals to extract oil. Dr. Cate recommends unrefined peanut oil. There are a lot of antioxidants in there that stabilize the PUFAs during cooking. Peanut oil that is refined is okay because it's better than seed oils; however, it doesn't have much nutrition, and it's not as heat stable. If Dr. Cate had to recommend one cooking method, it would be to cook your food in tallow. Vegetable Oils Are Worse Than Smoking Cigarettes The toxicity begins and ends with the beginning and end of your cigarette. Vegetable oils will end up in your body fat; this adds a whole other layer of metabolic impacts beyond the direct toxic effects. Vegetable oils are worse than sugar too. Sugar and high fructose corn syrup are full of empty calories. When you break down sugar, your body can't tell where the molecules come from. Those empty calories will turn into normal body fat. Humans have carried normal body fat around for a long time. Sadly, many people walk around with 40% PUFAs in their body fat. How Can You Avoid Seed Oils While Eating Out?  Ask them to cook your food in natural butter, not butter oil. Ask them for real olive oil if they don't have real butter. If they don't have butter or olive oil, they can cook your food using a different method, like steaming. Then, it would help if you took out the carbs. You can get a taco salad at Taco Bell without the shell. The shell has loads of vegetable oils in them. When you go to Taco Bell for salad, you can top it with meat, cheese, and avocado. Ben will tell the waiter that he is allergic to vegetable oils so that the restaurant staff will take the request seriously. Questions and Answers How can we release the PUFAs from stored fats in our bodies?  The more you burn your body fat, the more it will happen.  Fasting will accelerate the process. Stop snacking between meals and eat foods that give you sustainable energy. What about essential oils?  Traditional nuts and fruits have good fatty acid profiles.  Essential oils won't get absorbed through the bloodstream if you use them on your skin.
