Our guest today is Beth Donaldson, quiltmaker, quilt book author, and Associate Director of the Quilt Index www.quiltindex.org an online repository of quilt information housed at MATRIX: Center for Digital Humanities & Social Sciences at Michigan State University (https://matrix.msu.edu/),East Lansing, Michigan. Born and raised in suburban Detroit, Beth made her first quilt in 1974. She taught quilting beginning in the 1980's and has written two books on quilting, Block By Block, and Charm Quilts and co-authored two others, Quilts and Human Rights and Quilts and Health.She's taught, lectured and run quilt retreats…and in 1997 got a job in the quilt collection at the MSU Museum where the Quilt Index was developed.Beth has since retired from the MSU Museum but still works on the Quilt Index which now contains 96,860 entries.Beth has two adult children, one grandson and she and her husband of 45 years make their home in Lansing, MI. Hello Beth and Welcome to Sew & So(2:05) Beth's mom and sister both sewed…Beth learned from them and especially her7th grade Home Economics class. This first quilt had 5 later! After 5 years is collapsed under its own weight. Favorite quilt…1873 “We Wish You A Merry Christmas Mrs. Haft!” (2:56) 1974 as a high school junior, Beth and her friends created their first quilts.(5:15) Beth is deeply involved in the quilting community starting in 1984 with the Kansas City Quilt Guild. Elected VP…she served for a month until the President left, and she stepped up to run the guild. “When you volunteer, you make friends!”  (6:50) Beth talks about the special moments she holds from her teaching. Quilters may not say yes…but they sure know what they don't like!(8:00) Beth explains machine quilting as-you-go.(9:43) Beth taught classes in her sister's historic hotel in Petosky, MI. You're a business owner - Congratulations!!  In stage 4, there needs to be a mindset shift. You are no longer just doing this little side hustle, you are an entrepreneur! I will never forget when a  friend said to me that I was a home organizer. That was it!! The common thread of all my side hustles was some aspect of home organizing. But I identified as a stay at home mom. However, she was right and that's when my mindset shifted because now my unique talents had an identity. Did you know that 39.1% of all businesses are owned by women? Those women, on average, are 42 and have been in business for 11 years. The most common reasons people start new businesses are to pursue a passion, seeking financial freedom, and to increase flexibility in their life.  Do you do this? Now that your household is counting on this income, you need to get the math straight. The trap a lot of us fall into is still thinking like a W2 employee. Before we got a $2000 paycheck and all of that was for our house. Now, as an entrepreneur, you need to account for your business expenses AND taxes. So if your business had $500 in expenses and you need to save $500 for taxes, all your house really gets is $1000. In stage 4 you may need to evaluate your services or product offerings to make sure you are working smarter not harder. Because you are both the business owner and the admin, it can make it challenging to hit income goals. Entrepreneurs As an entrepreneur, you are officially dedicating time outside of your W2 employment and all your time is no longer for household tasks and leisure.  This can include volunteer/charity work where you are dedicating your time to benefit people outside your home. And the longer you are in this work, the more you will narrow down the services or products you want to offer, keeping the ones with the best money exchanged for your time. That's the beauty of entrepreneurship, flexibility. You also have flexibility in your time.  This can be a double edged sword because since you are likely working from home, all your household tasks are there, begging for your attention.  When you go to your W2 work they don't expect you to clean the bathrooms. But at home… How to Organize Administration and Track Profitability And you may think your business isn't taking that much time. But you probably aren't tracking how long it takes for your administration tasks. Just like in your home, you use the Sunday Basket® to get it all done, you need a Friday Workbox® at work to get everything done. You are wearing a lot of hats in your business now. There are 4 types of work I teach you about in the Friday Workbox® and they are color coded.  The pink slash pockets are a safe place for ideas you have for the business, future products or services, and personal development you'd like to consider. The purple slash pockets are for projects with deadlines or products that are making money. With all of your paid work is plenty of invisible unpaid work too. And all of those tasks fall into administrative work which is in green slash pockets. Administrative work is bookkeeping, invoicing, emails, leads, tracking expenses, monthly P&L, and more. And blue is for the team we will talk about in stage 5. In stage 4, it's time to legitimize your business by organizing all of your tasks and creating an LLC. Administration is the key in stage 4. One of the inspirations for me to pursue my PhD was “The Secret of Home Economics” by Danielle Drelinger and I got to interview her for this episode. Danielle and I were able to discuss some of the topics but, honestly, you gotta read the book!!  Danielle wanted to write this book, because she covered education as a journalist. She knew she wanted it to be about education, include all races, all genres, all economic classes, and cover history. Thus was born “The Secret History of Home Economics”! Origins of Home Economics Pre World Wars  The first thing I wanted to discuss was the role of home economics pre-wars. From the 1800's leading up to the wars, home economics was really for any person, AKA not gender specific. Home economics was more the actual tasks and how labor intensive they were due to lack of electricity, running water, and staff.  That staff was often immigrants and black women once slavery had ended. A black student I know, from a different PhD program, joked that they have always done laundry. Not even a question to outsource it, black women remember were slaves first but then hired help. But even in those days, it was common to outsource your laundry. It was outsourced to locations that had running water and other conveniences. Importance of Home Economics During the Wars - Science of Food The discussion shifted more towards home economics during WWII. It was during this time that women entered the work force in America. Home economics was teaching these women how to cook and maintain their homes with the additional demands of working. Women were creating clothing patterns to make work clothes and teaching clothes how to mend and make do due to limited supplies. They were also experimenting with food to keep their families fed and feed our soldiers. Home economists wrote cookbooks for each arm of the military. The Angels of Bataan, planted to supplement prisoners of war rations in the Philippines. At home, they had victory gardens to supplement rations too. Canning discovered through home economics was discovered and became popular to ensure food supply.   And the industrial revolution brought home appliances to help with labor intensive tasks like laundry and ovens that had temperature regulation. Along with conveniences came higher expectations. This is where I pointed out that I am working on the definition of housework because some of the “male tasks” seem more to me like “household ownership”. And it's peculiar how the definition of home economics became mostly a woman's role after the war.  The Deliberateness of Stay At Home Mom Depiction The men had come back, they fired a majority of the women, and men were back to work. Now stay at home moms were in charge of emotionally supporting their children and the care of their upbringing and all the text books reflected that. “Kids need their moms and moms need to be available all the time.” It was then I realized that I have a degree in Family and Consumer Sciences but the only thing that schooling taught me was early childhood education! The bureau of Home Economics that once was making patterns for adjustable bib overalls for women in the workforce was now selling patterns for shopping coats for women to wear while shopping for groceries.  How Should We Move Forward?  Danielle feels strongly and I agree that the name should be changed back to Home Economics. A majority of people Danielle speaks to feels this is a class that should be added back to the curriculum of school - to teach basic life skills. And considering all of the subdisciplines, we should be offering a more holistic teaching of home economics; like eating healthy more affordably and consuming more responsibly. “We have a hard time just wanting what we want.” Transformational Freedom is my driving force through personal development and unapologetic gumption to pursue the things I want. Our houses are holding us back. When we feel like we are taking care of our primary role of household manager, spouse, and parent, then we feel free to pursue what we want. 4 Generations of Ambitious Women When you have a great grandmother who gets her teaching degree because it's the only degree a woman can get, you learn to succeed despite limitations. She went on to run a floral shop, a restaurant, and a gift shop which is definitely not what other women were doing those days. AND she divorced her husband! And then you have a grandmother who gets her Home Economics degree because again, limitations. And see her and her husband start a student loan - ish business, you see an example of a woman not waiting for permission. But then goes on to set an even greater example when she remarries and starts up a home economic kit mail order business of sorts out of her home. Like how did people order? She figured it out because it's what she wanted to do. And a mother like mine. She was so focused on business. She started The Fine Line out of our basement and created cases of clothes she bought one weekend in NYC. She did that for 6 years and then sold it for a profit.  Didn't Get Permission, I Went After What I Wanted Which gave me the gumption to start my own babysitting business. The examples of women in my life I saw growing up didn't wait for permission to pursue what they were uniquely created to do. I didn't wait for permission or see someone else doing it. No, I paved my own path to filling up my summer calendar with baby sitting positions. I saw a need and solved a problem for moms who needed to get tasks done and take care of themselves per my suggestion. I used my unique skills of loving children to make money on my terms.  Transformational Freedom At Organize 365® we say “As you let go of one thing, you are open to receiving the next. Add in the egg, vanilla, flour and milk. Mix, pour into a small (20cm) cake tin then cook for 15-20 mins.Melt extra butter, add extra sugar and as much cinnamon as you want then spoon that over the top of your cute and teeny cake. When we think of the industrialization of America and the rise of electricity, we're printed to think about people in cities and factories, where machines and assembly lines abound. We think of Charlie Chaplin tangled up in conveyor belts and cogs in the movie Modern Times. We think of electric motors, coal mining, steam engines. But electricity transformed another area almost as much as it transformed the city or the factory… and that area is the house. And because of that there's one really key demographic that's impacted by electricity perhaps more than any other: women. Electrification prompted a redefinition of house work and those who did it, according to scholar Rachele Dini. She wrote a book called “All-Electric Narratives,” which focuses on how advertising and literature represent electricity and electric appliances in the home.  Rachele says that the change in expectations for women and housework can be charted through advertisements: for instance, General Electric sponsored “Gold Medallion” campaigns in women's magazines that recognized homes with all-electric “automated” kitchens. These adverts always showed sparkling clean kitchens and promised less labor for the housewife… but, the truth is, in actuality, more women were doing more labor on average. This is because there were fewer adults in each household to share responsibilities as nuclear families became the norm: husbands were now generally expected to go to work to support the household through their wages and women were generally expected to shop, cook, clean, and manage the household. What had once been the work of multiple adults, perhaps including extended family members or hired cooks or maids, now, in most middle- and working-class nuclear families, became the job of one woman: the so-called housewife. In fact, a whole new discipline emerged during the period of industrialization: Home Economics. You're probably most familiar with it as a middle school elective class where you learn how to care for an egg as a practice in parenting. But in the twentieth century, home economics was a serious science.  “No one really appreciates what a degree in home economics is, until you look at a college notebook,” says Hal Wallace. They did “laboratory experiments on how foods for example, caramelize, when they're heated, or how the proteins might rearrange in an egg as it's been heated…. There is a lot of science involved, real science involved with this.” At that time, home economists were concerned not just with how to teach others to cook, clean, and care for a household, but also with how to teach them to be smart consumers of new electric technologies, like electric stoves, toasters, and coffee-makers.  The U.S. government hired home economists to promote the formation of rural electrification when they kicked off the “Rural Electric Circus.” They toured shows in rural communities across the South and Midwest where they taught audiences how to skillfully place lightbulbs, or launder shirts in a new dryer, or cook scrambled eggs on an electric stove. The shows were both educational and promotional: teaching new technologies and encouraging these residents to form electrical cooperatives to access them.  Katie Jane Fernelius reported and produced this episode. Dreux Barra, proprietor of C'est Tout Dried Trinity Mix, joins Discover Lafayette to discuss the idea behind his product and its evolution. A humble man who is a joy to be around, Dreux and his wife, Monique, have built a home-grown company which has unlimited potential to corner the market in the U. S. and abroad. Dreux is frugal and conservative, and pays cash for the products needed to produce C'est Tout's wares. "There is no need to go into debt to grow a company organically," Dreux says. Pictured: Dreux and Monique Barra of C'est Tout Dried Trinity Mix. Born and raised in Lafayette near the Saint Streets area, Dreux describes himself as "Just a camp cook....not a chef." Dreux is employed by day with Signal Security of Lafayette, a local security guard service. Monique works full-time with C'est Tout. In the summer of 2016, Dreux found himself with way too many bell peppers left over at the end of an abundant season in his home garden. Not wanting to waste produce, he used his experience in drying beef jerky to dehydrate the bell peppers along with some onions he had on hand. He then had a revelation: there was no dehydrated Cajun Trinity product (onions, celery and bell peppers) on the market anywhere. Experimentation and determination led to such a delicious blend of dried onion, celery, green onion and yellow onions that his friends encouraged Dreux to jar/preserve the mix to share with others. To ensure quality as he finalized the product, he asked his mom for her opinion one day as they ate lunch at a local assisted-living facility where she resided. His mom was an LSU grad who majored in Home Economics and knew a thing or two about proper balance in foods and how they should look. Dreux's mom's advice ended up playing an instrumental role in the success of C'est Tout as she advised him to add red bell peppers to the mix saying, "Every food item must have color, texture, taste and you're missing a little color. You need a little red." Dreux says "And don't you know, the red bell pepper adds both color and sweetness, along with improved flavor." This also provided a different take on the offerings from the fresh "Cajun Trinity" offered by local outlets. This beloved Cajun Trinity of onions, red and green Bell Peppers, and celery (and garlic in one version of C'est Tout) springs to life when combined with hot liquid. Four tablespoons of the trinity mix result in one cup of vegetables when one cup of boiling water is added. With a stable shelf life of two years with no preservatives, C'est Tout is definitely a must for every serious chef's pantry. Dreux originally offered C'est Tout at the Moncus Park Farmer's Market in 2017, and still finds this a wonderful place to market their product. At the taping of this show in mid-December, Dreux and Monique would be working their 47th Saturday at Moncus Park in 2023! They also participate on the first Saturday of each month at the Delcambre Farmer's Market which Dreux says, "are real cooks who are showing up to buy the $3.00 per pound shrimp off the boat." Dreux and Monique Barra, husband and wife, are hard-working partners, with Monique working full-time in packaging and shipping the product. It is a manual process to fill the bags while utilizing machinery that precisely measures the product. Orders ship within twelve hours of being placed. Dreux never envisioned selling to local stores. He thought online and farmer's market venues would be a dream come true. But after a visit at Heleaux's Grocery on Verot School Road with then manager, Paul, who fell in love with C'est Tout and ordered many cases of the product, Dreux realized there was a local demand. Today, the product may be bought locally at Champagne's Grocery, Rouse's, Fresh Pickens, Nunu's, Louisiana Hot Stuff, and other vendors. 99 % of online sales of C'est Tout products go outside of Louisiana.
