Me and Derek, our resident bourbon expert, explore more aspects of the bourbon world, including brand loyalty, the cost of collecting bourbon, and the emotional connection people have with their favorite brands. We talk about 'taters' (bourbon enthusiasts who wait in line for rare bottles and collect them without opening) as well as some other bourbon slang, such as the 'angel's share' (the alcohol vapor that evaporates from the barrel during aging) and the 'devil's cut' (the bourbon that soaks into the wood of the barrel). What about a "fake tan," a reference to distillers adding artificial caramel coloring to bourbon to make it appear like it has aged longer. We also discuss bourgon related topics like the difference between whiskey and bourbon, the use of flavorings and finishes, the importance of glassware, and the moonshine. We cover a lot, and I can tell you that it brought up another idea for our next episode: History Lessons from the Bourbon World. Takeaways The bourbon world is more complex and involved than expected, with a wide range of brands and information to explore. Brand loyalty is common among bourbon enthusiasts, who find emotional connections to their favorite brands. Collecting bourbon can be costly, especially when seeking rare and limited-edition bottles. The 'angel's share' refers to the alcohol vapor that evaporates from the barrel during aging, while the 'devil's cut' is the bourbon that soaks into the wood of the barrel. There are discussions about the possibility of distillers adding artificial caramel coloring to bourbon to make it appear aged longer. Bourbon is a type of whiskey that must meet specific legal requirements, including being made in the United States and aged in new charred oak barrels. Welcome back to another Industry Night with Nycci Nellis. Still taking you on my travels through Italy! The sites, the sounds, the conversations, the wine and the food — so I'm gonna take you on a quick tour of Como: -Stayed just outside Bellagio in the town of Lezzeno in the new hotel, Filario -Spent the morning walking the streets of Cernobbio, shmying around the gorgeous grounds of The Villa D'Esta. Followed by a 3 hour lunch on the terrace restaurant. It was like being in a movie! -Gluttons that we are we went to the Michelin-starred Mistral that evening in the Grand Villa Serbelloni — so many table side preps, including a house made ice cream. The staff was so lovely and had such a generous spirit. We just had a wonderful time -A Private boat trip through the lake to get a lakeside view of all the beautiful Villas -Loved walking around Tremezzo and another lakeside lunch this time at The Grande -Walking around Bellagio AND another delish dinner at Forma & Gusto So here's the thing about Como — it is gorgeous and the views are unlike anything we have ever seen. David and I both agree that we ate well — though you are not going to Como for the food and again, the sites were stunning. But we are definitely ocean people and not Lake people. Sardinia is more our speed Now that is the past — let's talk the now. I have been out and about as much as I can and I did check out the new menu at Chang Chang — amazing ah-mazing offerings. Peter Chang and his team are turning out some of the best Sichuan in town. Protip get the tofu skin — ohmygoodness so good AND I did dine at the very hot and good luck getting a rez El Presidente. Stephen Starr's latest is visually spectacular. DC has nothing like it. And the service is classic Starr! Amazingly kind, thoughtful and prompt. There are still some kinks to work out as far as the food goes but I am optimistic. Ok! On to today's show. So back in the Summer I had Philippe Massoud Chef/Owner of ilili restaurants - that's ilili NYC & ilili DC- on Foodie And The Beast. It was the first time we met and his story was so engaging that I thought — I have got to go deeper with this restauranteur on Industry Night. So if you don't know, Philippe Massoud is the Chef/Owner of ilili restaurants, founded in 2007 in New York. Chef Philippe came to New York as a refugee from Lebanon in his teens and founded ilili as an homage to his country, with the menu featuring dishes recreated from his childhood memories. His immigration story and his culinary trajectory and how he brought the dishes of his childhood to the East Coast is one worth diving down deep for — Chef! (and he doesn't only bake bread - he also sings Bread!)Tune in to this episode to hear Heidi say, "I, like you, thought that [the Von Trapps & Narwals] were fake..."---Follow along from your own kitchen:Scottish Shortbread RecipeTraditional, adapted by Jeff McClellan from various sources Ingredients1 cup packed brown sugar (I reduce to 2/3 cup; still plenty sweet)1 lb. butter, softened4-4.5 cups flour (half white flour; half oat flour) Directions 1. In a large bowl, cream softened butter and brown sugar until light and fluffy.Most recipes use white sugar; I use brown sugar; I also reduce the amount of sugar to 2/3 cup just to limit my sugar. 2. Add any desired flavors or mix-ins.Tradition would keep it to the three ingredients, but you can spice it up if you wish.Flavorings (add before the flour): maple, almond, cinnamon, vanilla (about a teaspoon, depending on how strong you want the flavor)Mix-ins (add after the flour): dried fruits, nuts (perhaps chocolate chips?) 3. Add 3-3.5 cups of flour a little at a time and mix well.In early days, shortbread would have been made with oat flour; later wheat flour replaced oat flour.I like to use a combination of half white flour and half oat flour. For the oat flour, I put a bunch of oats in the blender and grind them up. The oat flour makes the cookies a little more dense, increases the crumbly texture a bit, and adds a slightly nutty flavor.If you use all oat flour, the cookies will be gluten free. 4. Turn onto a floured surface and knead well, adding enough of the remaining flour to form a soft dough. 5. Roll to 0.5" thickness and form into desired shapes and texture.There are three traditional shapes, but the firm dough will hold any shape well:Fingers are made by forming a large rectangle from the dough and cutting it into strips about 3" x 1"Petticoat tails are made by shaping the dough into a large circle and then cutting it like a pie; you can pinch the outer edge to give it a scalloped edge.Rounds are just small circles of dough.Add decorative texture by pricking the cookies with a fork to make holes; some people use molds to shape the cookies. 6. Place the shortbread pieces 1" apart on ungreased baking sheets. 7. Bake at 325° for 30-40 minutes or until the cookies are lightly browned. Flavored water is super easy to make and a fun drink for the summer. Using filtered water make a big difference. I have a Reverse Osmosis system, but a Brita Pitcher works great. What container do you want to use to make the water? Mason jars work well, or you can use an ice tea pitcher or a water infusing pitcher or water bottle. Flavorings are super easy and there are lots of options. Some of my favorites are: Mint Lime Mojito- made of mint leaves in lime juice Orange- Sliced oranges are added to the water. Lemon Ginger- Chop 2 inches of fresh ginger and add it to 1 gallon of water with large pieces of the lemon zest (use a vegetable peeler to get the very outer part of the lemon) Bring the water with the zest and ginger in a large saucepan to a boil and turn off the heat. Let the water cool to room temperature and add the juice of 1 lemon. Strain out the ginger and zest and chill. Cucumber- add sliced cucumbers Watermelon mint- Add chunks of watermelon and mint leaves. Strawberry Basil- Cut off the green stem and cut the strawberry into several pieces. Add several chopped strawberries and a few fresh basil leaves. You can make homemade “Gatorade” or electrolyte water by adding 1 teaspoon coarse Celtic Sea Salt and 2 teaspoons of honey to 1 quart of flavored water. It is best to use room temperature or warm water to help the salt and honey to dissolve, then you can chill it. Today's Guest: Danny Ronen Founder of DC Spirits; co-owner of the award-winning bar Academia in Austin, Texas; partner at Unlimited Liabilities; and spirits educator and trainer at Liquid Kitchen. WHAT IS GENEVER? Genever (pronounced juh-NEE-vuhr) is a complex spirit with a rich history. Every genever is unique, with its own recipe and flavor, and created using artisanal processes. However, by law, all genevers must: contain malt spirit (made from wheat, rye, barley, maize, oat, buckwheat, and/or triticale) and juniper berry be a distilled spirit made from natural ingredients (such as grains and botanicals) ALL GENEVER Amount of malt spirit: min. 1.5% of the alcohol volume Amount of sugar: max. 20 grams per liter Colorings: possible, but only with caramel Flavorings from juniper berries and possibly other botanicals and malt spirit Alcohol percentage: min. 30% In addition, NEW STYLE GENEVER A younger/newer style that originated more recently with a lower malt spirit content and usually more botanicals Amount of malt spirit: min. 1.5% up to max. 15% Amount of sugar: max. 10 grams per liter Color: none Alcohol percentage: min. 35% In addition, OLD STYLE GENEVER The old or traditional style, with a more pronounced grain flavor due to more malt spirit Amount of malt spirit: min. 15% up to 100% Amount of sugar: max. 20 grams per liter Color: from light yellow through to darker brown (depending on ageing) Alcohol percentage: min. 35% Since January 15th 2008, genever (also officially known as jenever and genièvre) has had its own Protected Geographical Indication, meaning that it is geographically protected by the European Union, just like Scotch whisky and Cognac. This gave genever its own ‘appellation,’ and product that carries the name genever can now only be made in Belgium; Holland; the Nord and Pas-de-Calais departments of France; and the North Rhine-Westphalia and Lower Saxony regions of Germany. Genever is considered one of the most versatile and interesting spirits, because: It offers a variety of flavor that is rarely found in other distilled spirits. It can be rich in botanicals — predominantly juniper but also, for example, coriander and angelica. At the other end of the spectrum it can be full of malt and the dark aroma of years spent in wooden casks. The variance in the balance of juniper, malt spirit, botanicals, distilling, and blending techniques allow an enormous diversity of flavor: from aromatic, zesty, and fresh like gin, to earthy, malty, and rich lie, whiskey. Genevers have been made for more than 500 years, yet the industry remains a source of constant experimentation, and innovation. Genever has existed since the middle ages and was initially used in a medicinal capacity. Later, it came into fashion for recreational usage in the Lowlands of the Netherlands, and in the 17th century became the country’s national drink. In the early 19th century, the Dutch began shipping the spirit to the U.S. as there was a large population of ex-patriates living there. This coincided with the increasing popularity of cocktails, and in 1880, approximately one in four cocktails in America were made with genever. Following two world wars and Prohibition, however, though genever remained the national spirit of the Lowlands, it disappeared from the world stage. Since the beginning of the 21st century classic cocktails have soared in popularity and the demand for genever has returned. The genever category is now growing once again, particularly driven by cocktail bars around the world.
