Mark Orsi's Cacio e Pepe Recipe Looking for a simple pasta to pair with Italian wine? Mark shares his recipe for cacio e pepe, the classic Roman pasta made with Parmigiano-Reggiano and black pepper. Ingredients 2 tablespoons whole black peppercorns 4 1/2 cups finely grated Pecorino Romano, plus more for serving 1 1/2 cups finely grated Parmigiano-Reggiano 1 pound dried tonnarelli Directions1) Bring a large pot of water to a boil. (Do not add salt) 2) Meanwhile, in a very large nonstick skillet or pot set over high heat, toast the peppercorns just until fragrant. Let cool, then grind or crush very coarsely. Reserve 1 teaspoon for serving. 3) In the same skillet or pot, combine the cheeses and remaining pepper. Add 1 ½ cups warm water and stir to make a thick pecorino cream. 4) Add the pasta to the boiling water and stir. Keep the heat very high until the water returns to a boil, then stir again and adjust the heat as needed to keep the water bubbling. Set a timer for 8 minutes. 5) Set the pecorino cream over very low heat. 6) When the timer goes off, scoop out about ½ cup of the pasta cooking water and set aside. Taste the pasta and continue cooking until the pasta is done to your liking. 7) Drain pasta very well (this is important, as adding too much hot water can cause the cheese to clump) and add to the pecorino cream. Use tongs or two forks to stir, turn and toss the pasta in the sauce over low heat until the cheese melts and the sauce becomes sticky. Don't add any water yet, just keep tossing. To test, squeeze a drop of sauce between your thumb and finger. When the sauce is thick and forms strings like glue, it is ready. 8) If it starts to dry out, add cooking water, 1 tablespoon at a time, and toss thoroughly before adding more. Twist the pasta into a nest, if desired. 9) Dust with additional pecorino and the reserved pepper. 10) Serve immediately with a glass of Italian wine, preferably Orsi Hugo Spritz Recipe For another taste of Italy at home, make a refreshing Hugo Spritz with Prosecco, elderflower liqueur and fresh mint. Ingredients 4–5 fresh mint leaves ½–1 ounce elderflower liqueur, such as St-Germain 4 ounces chilled Prosecco 1 ounce club soda or sparkling water Ice Lime wheel or lemon slice for garnish Instructions Place the mint leaves in a large wine glass. Gently press the mint with a muddler or spoon to release its aroma. Fill the glass with ice. Add elderflower liqueur, followed by Prosecco and club soda. Stir gently. Wir fahren von der Überholspur bei „Drive of Champions“ ab und es werden weiter alle Regeln der StVO gebrochen – wXw „Broken Rules 2026“ steht vor der Tür! Zunächst werfen wir wie immer einen Blick zurück auf die jüngste Veranstaltung der wXw – „Drive of Champions“ liegt zwar bereits einen Monat zurück, doch trotzdem gibt es genug zu besprechen. So sahen wir Zoltan, welcher seine wXw European Championship erfolgreich gegen Kuro verteidigen konnte. Die Main Show wurde mit einem spannnenden 4-Way Match zwischen Axel „Axeman“ Tischer, Dennis „Cash“ Dullnig, Dieter Schwartz und Katsuya Murashima eröffnet, in welchem die wXw Shotgun Championship auf dem Spiel stand. Mit Kanji und Orsi waren zwei europäische Talente der Women's Division zu Gast und lieferten ebenfalls ab. Besonders gespannt waren wir auf das 3-Way Elimination Tag Team Match, in welchem Planet Gojirah (Robert Dreissker & Marc Empire) ihre wXw World Tag Team Championship gegen Greedy Souls (Brendan White & Danny Jones) und CSI (Luca de Leone & Nordino) aufs Spiel setzen mussten. Anschließend wurden wir Zeuge eines unerwarteten Dog Collar Matches zwischen Dani Luna und der inoffiziellen wXw Women's Championesse Jane Nero. Mit Eddie Kingston besuchte uns auch ein internationaler Star, welcher vielen von AEW und ROH bekannt sein dürfte. Ein weiterer Weltstar fand mit Jun Akiyama den Weg in den wXw-Ring, er tat sich mit dem „Gold King“ Ahura zusammen, um gegen The Cowboy Way (1 Called Manders & Thomas Shire) anzutreten. Der Höhepunkt des Abends: das wXw Unified World Wrestling Championship Match zwischen Titelverteidiger Elijah Blum und seinem Herausforderer Laurance Roman. Viel wichtiger war jedoch das, was nach diesem Match passierte und einen Grundstein für die nächste Oberhausen-Show „Shortcut to the Top“ legte… David (aka VidDaP) und Julian (aka justxjulez) haben die Show live vor Ort gesehen besprechen in diesem Podcast, ob sie eher positiv oder eher negativ zurückblicken und was uns bei „Broken Rules“ erwarten könnte. Vendégünk volt Ollé-Németh Orsolya, aki nemrég az MVGYOSZ és az Informatika a Látássérültekért Alapítvány munkatársaival látogatta meg a SightCity névre hallgató óriási kiállítást, amelyet minden évben Németországban, a nemzetközi vásárairól is híres Frankfurtban rendeznek meg. Az expón kizárólag látássérült emberek részére megalkotott eszközöket, szolgáltatásokat, megoldásokat vonultatnak fel a szervezők. Legutóbbi műsorunk elején hallgatói leveleinkből szemezgettünk, ezt követően pedig stúdiónkba invitáltuk vendégünket, Ollé-Németh Orsolyát, az MVGYOSZ szakmai vezetőjét. Orsi legfőképp azért látogatott el hozzánk, hogy megossza velünk élményeit, tapasztalatait a frankfurti SightCity kiállításról, amelyen az idei évben részt vett. A SightCity bizonyos mértékben hasonlít az itthon rendre megrendezésre kerülő LESEK-re, ahol szintén látássérült emberek részére fejlesztett eszközöket és szolgáltatásokat ismerhet meg az érdeklődő. Nemzetközi kiállítás lévén azonban jóval impozánsabb annál, tekintve, hogy általában három napig tart, rengetegen látogatják, és több emeletnyi hely áll rendelkezésre a körülbelül 150 kiállítónak portékáik bemutatásához. Vendégünk a beszélgetés során azokról az érdekes eszközökről mesélt, amelyeket látogatása során volt alkalma megismerni, kipróbálni. Többek között szóba került egy olyan komplex rendszer, amely a hagyományos fehérbotot egészíti ki, legfőbb funkciója pedig, hogy intelligensen azonosítsa azon akadályokat, amelyek nem a földön vagy a padlózaton, hanem annál magasabban helyezkednek el, például faágak, jelzőtáblák, nyitott ablakok, így szimpla botozással nem lehet észrevenni azokat. A Rango nevezetű fejlesztés képes felhasználóját értesíteni ezen akadályokról, és azok elhelyezkedéséről is, akár 3D térbeli hangjelzésekkel. Orsival beszélgettünk egy másik eszközről is, amely egyre kifinomultabban képes tapinthatóan ábrázolni grafikai elemeket, például geometriai alakzatokat, esetleg rajzolt tartalmakat. Mindemellett téma volt például egy rendkívül hasznos, összecsukható vágódeszka, de a kevéssé átgondolt fejlesztések közül beszéltünk rezgő fejpántról, amely akadályok beazonosítására lehetne alkalmas, vagy épp fehérbotozáshoz fejlesztett kesztyűről is. Mindemellett arról is szó esett, hogy Németországban, az USA-ban, tehát a jellemzően tőlünk nyugatabbra lévő országokban milyen szerepet vállal az állam a vak emberek eszközökkel történő ellátásában, és milyen támogatásokat biztosít a látássérültek részére.

Yet this intimate relationship between households and banks is relatively recent. In this episode of the New Books Network, I speak with Orsi Husz, Professor at Uppsala University, about her book Bankminded: Banks as Intimate Agents of Everyday Life in Welfare State Sweden. The book traces how, from the late 1950s onwards, banks gradually became embedded in the everyday routines of ordinary people. Through wage accounts, credit cards, financial advice, and identity documents, financial institutions reshaped how households handled money—and how they thought about finance itself. Drawing on rich archival research, Husz shows that this transformation was not simply a story of technology or markets. It involved cultural shifts around class, gender, morality, and identity, as well as the surprising role of the welfare state in expanding everyday banking. The result was what she calls the “bankification” of everyday life—a process that laid the groundwork for the financialised world we inhabit today. Yet this intimate relationship between households and banks is relatively recent. In this episode of the New Books Network, I speak with Orsi Husz, Professor at Uppsala University, about her book Bankminded: Banks as Intimate Agents of Everyday Life in Welfare State Sweden. The book traces how, from the late 1950s onwards, banks gradually became embedded in the everyday routines of ordinary people. Through wage accounts, credit cards, financial advice, and identity documents, financial institutions reshaped how households handled money—and how they thought about finance itself. Orsolya (Orsi) Lazar is an urban forester, an ISA Certified Arborist and a Pennsylvania (PA) Certified Horticulturalist in Sustainable Landscapes. Her unconventional path to forestry began with a Master's Degree in Ecology and a Master's Degree in Molecular and Cell Biology. She has over 20 years of experience in landscape design and management, project management, and education.Orsi became the first Community Tree Specialist at Pennsylvania DCNR's Urban and Community Forestry Program. She helps shape this growing program to better serve communities by building trust, identifying opportunities, and finding creative solutions to challenges. She works with municipalities and non-profits toincrease tree benefits, manage costs and risks, and creates green spaces that suit people's needs.She is a member of the Pennsylvania Landscape and Nursery Association and is in the group that is working on updating the PA Certified Horticulturist study manual.Orsi has taught gardening and tree care for diverse audiences, including workforce developmentprograms. Many local parks have benefited from her technical assistance and plant donations. She created a tree inventory and installed hundreds ofbotanical signs at Merion Botanical Park as a pro bono contribution to her own community. Her “Responsible Gardening” Facebook group helps local gardenersconnect and share sustainable, evidence-based practices.When not in the garden or a park, she enjoys teaching tricks to her border collie or is on the dance floor practicing ballroom and Latin dancing.
