Rita Marta, a member of the Martha family (https://marthasgroup.com), gives a tour of their old cellars in the Douro Valley. The walls of the main house date back to 1727, although they have been reconstructed over time. The family has been in the grape-growing business since then, but only started making wine in the early 19th century. They initially sold their grapes and later began selling their own bottled wine in 1970. The family primarily focuses on producing Tawny ports, which are traditionally more popular among Portuguese families. They also have French casks from Bordeaux that they use to age their ports and spirits. The estate is located in a narrow part of the Douro Valley and has olive trees strategically placed on the mountains to help with water absorption. The Martha family is currently in the fifth generation of running the business, which produces port wines, Douro wines, and spirits. Visit the Nacional Vineyard of Quinta do Noval with Austin Beeman in Portugal. The Nacional vineyard at Quinta do Noval in Portugal is considered one of the most important vineyards in the world. It survived phylloxera which devastated European vineyards in the late 1800s. The plot is the only survivor of the disease in the Douro Valley, and the reason for its resistance is still unknown. The vineyard is home to a traditional field blend of Portuguese grape varieties, including Touriga Nacional, Touriga Franca, Tinta Cão, and Souzão. This week we welcome Richard Bruno from Vinum Cellars. Richard pursued his interest in wine by going into the restaurant business in 1985. Working with Master Sommelier Larry Stone at Rubicon Restaurant in San Francisco as a waiter and bartender gave him the opportunity to taste rare and exciting wines from around the world; he also learned a lot about making the right decisions. It almost seems that Richard and Brian lived parallel lives for a while and most likely at least drank in the same places. But with plans to become a winemaker, Richard then UC Davis to learn Viticulture & Enology in 1994. While at Davis Richard met Chris Condos, where they bonded over their love of Chenin Blanc and other obscure grape varietals. They wanted to do things differently so in 1997 they started Vinum Cellars on credit cards and the help of friends & family. Theo Zierock on the Dolomites, Teroldego, and the Vineyards of Agricola Foradori Episode #84 of Understanding Wine with Austin Beeman Agricola Foradori is located in the Piana Rotaliana, a 700 hectare region in Italy surrounded by the Monte di Mezzocorona, the Grandos, and the Adige Valley. The region is known for its unique soil composition, formed by the accumulation of ice and snow during the last ice age and the subsequent melting of a glacier, which washed sand and various types of mountain stones, including dolomite and porphyry, onto the land. The soil in the region varies in its intensity and thickness, with some areas having a higher density of stones and others having a more sandy substrate. This diversity in soil composition results in distinct characteristics in the wines produced by Agricola Foradori, with those grown in denser soil tending to have more density on the grapes and less fruit, but also denser fruit, and those grown in sandy soil having lighter, crunchier, and juicier wines with less density. The acidity and variety of the grapes also play a role in the aging potential of the wines produced by Agricola Foradori. Hailing out of Los Angeles, Randall Grahm attended college in Santa Cruz. A stint at a wine shop in Beverly Hills woke Randall to the allure and magic of wine, sending him to UC Davis to study Plant Science, and an itching obsession with Pinot Noir. Randall made his way back to Santa Cruz and, as they say, the rest is history. He started Bonny Doon Vineyard in the early ‘80's and made a sharp turn from Pinot Noir to becoming a California pioneer of Rhone varietals with his iconic Le Cigare Volant. Randall recently sold Bonny Doon and launched a new project called the Language of Yes with none other than the Gallo Family. Randall's other obsession is his interest and work in the expansion and expression of new varietals in California. We released single vineyard Pinots from each of our estates for the first time in our history. In spite of the changes, nothing has changed. Randall Grahm, one of California's most innovative vintners, founder of Bonny Doon Vineyard and Popelouchum is the guest of Looking Into wine.We started by talking about his early days. After three years studying philosophy at Santa Cruz University, and completing a winemaking degree at UC Davis, Grahm acquired a vineyard site at Bonny Doon in the Santa Cruz mountains. His first dream was to make Pinot Noir, but he soon realised that it was too warm on the mountain. He then moved to Syrah with a great deal of success. Grahm recalls how it was to work with the grape in the 70s, and how difficult it was to find good cuttings.Continuing with Rhône varieties Grahm started to grow Grenache and Mourvedre. ‘I thought that if I blended those grapes maybe something good would be produced’, his beliefs were well-founded. In 1984 he produced the first vintage of the wine with which he will forever be associated, Le Cigare Volant (the story of the name features in the interview). Cigare, a blend of Grenache, Mourvedre (Since 2017 changed to Cinsault), Syrah, and other classic Châteauneuf grapes. During his high time, Randall produced more than 30 wines on any given vintage. I ask which wine he was most proud of and impressed by the quality. His writings constantly return to the concept that has dominated his life: the search for a true vin de terroir, not a vin d’effort.Randall's accolades are as numerous as the risks that he took over the years, including producing one of the first dry roses of California in the 90s, staging the "funeral" of Mr Bouchon aka Cork, using Demijohns (all the reasons are discussed in the interview) and he even managed to be interviewed by Oprah. We then discussed his latest project Popelouchum (Poh-puh-loo-shoom), a "New World grand cru" experimental vineyard in which Grahm hopes to breed 10,000 new grape varieties. He explains how he's using natural cross-breeding to find a variety that is 100% suited to the growing condition of the site. The project will take generations and so the restless experimentation continues. We will have to wait a long time to see the results of the San Juan Bautista project but whatever sort of wine it produces it will be nothing less than interesting. And Grahm will be that much closer to his goal of creating a true vin de terroir.Randall Grahm is truly a maverick winemaker that has inspired many others in California.

Featured Chat - Cider & Wine Safari w/Randall Grahm at Popelouchum Randall Grahm Popelouchum, the Bonny Doon Vineyard estate is located just outside of downtown San Juan Bautista, California. There are 280 acres or is it 400 acres? I’m not sure, nor do I think that it matters, at least not to this story. And there have been lots of stories about Popelouchum since Randall Grahm purchased this swath of land that rises from a low lying plain, bordered on one end by the San Andreas Fault, to a high mountain top back in 2011. This chat isn't so much about Popelouchum, though it provides a magnificent backdrop. This chat is an intimate conversation that covers at least 4 bottles drunk during this recording and the highs and lows of being in the business of both wine and cider. Perry Pears at Popelouchum I had asked to tour Popelouchum, because who wouldn't want to see Randall's vision for terroir based wine, and to share with him a bottle of 2017 Cormé made by French cidermaker, Eric Bordelet. This chat opens with us discussing Cormé which is also known as Sorbus Domestic a.k.a. Service Tree. Then we move onto discussing Bordelet’s cidermaking technique. Perhaps it was the Cormé that inspired Randall to announce that he thinks he may have cracked the secret to Bordelet’s technique for making such fine ciders. You won’t know if it is truly an unveiling of Bordelet's technique unless you try your hand at what Randall offers as a possibility of uncovering Bordelet's secrets. The conversation then moved onto branding and sustaining one's brand. This podcast episode is a repeat of the show from March 22, 2017, with Tim Bell, winemaker at Dry Creek Vineyard. (This week's live radio show has been pre-empted by a Golden State Warrior's basketball game on our home station KSRO.) The first tasting is a Rosé from Bonny Doon Vineyards in Santa Cruz. Dry Creek Vineyards was celebrating their 45th anniversary (last year when the show was recorded). Today they will celebrate with tastings of their Chenin Blanc, Sauvignon Blanc, a Zinfandel and a blended red. First, Dan Berger opens a bottle of A Proper Pink, a rosé produced by Randall Graham, owner and “king for life” of Bonny Doon Vineyard in Santa Cruz. It is a slightly sweet Rosé, made with 69% Tannat and 31% Cabernet Franc. Dan explains that to make Rosé you have to get the skins out of the juice pretty quickly. Steve asked Tim Bell to describe how he got into the wine business. He grew up in Southern California and worked for the Liquor Barn chain and got interested in wine. He studied winemaking at UC Davis, graduated in 1994 and did an internship at Gloria Ferrer, then worked at a few different wineries including Freemark Abbey, for 10 years. Now he has been at Dry Creek for 6 years, since 2011 In 2017 Dry Creek Vineyard was celebrating the 45th anniversary of their first vintage and we will taste these Dry Creek Vineyard wines: Chenin Blanc: Dan says this is the best Chenin Blanc he has ever tasted. Chenin Blanc to be popular in California but today only a few thousand acres of it remain, mostly for jug wine. It is dry, has beautiful melon fruit and subtle spices of green tea. Dan points out that chilling this wine covers the sugars and gives it a weightiness from the sugar which shows up as texture rather than as sweetness. Sauvignon Blanc: Dry Creek Vineyard planted the first Sauvignon Blanc in Dry Creek Valley. The pioneers tried different vines to see what varieties were appropriate for each region. Dan tells that when David Stare planted Sauvignon Blanc in the 1970s, it reminded him of the Loire Valley. He and Robert Mondavi adopted the name Fumé Blanc for the wine. Tim Bell says that the Loire Valley was David’s inspiration. Some other grapes that go into its blend and Dan says the aromatics are fascinating, with hints of chamomille. Tim also tastes ripe limes. This variety has a tendency to show its distinctiveness based on the weather and soil where it is planted. For this reason, some regions give green herb flavors while others do not. When talking to somelliers in restaurants, Dan discovered that that patrons who ordered Sauvignon Blanc ended up spending more money on their checks because they would order two bottles. Steve asks Dan to sum up the history of Dry Creek. When David Stare planted Sauvignon Blanc, he discovered it was an ideal place for it to grow. Pedroncelli was another pioneer, with Zinfandel. The Dry Creek area was important for home wine making during Prohibition. Since in certain states it was illegal to make wine even at home, they shipped “wine bricks” with “warnings” saying, “do not add 30 gallons of water and some sugar or else this will ferment.” 2014 Old Vine Zinfandel: This grape ripens unevenly and Tim says this contributes to its unique flavor. Dan finds flavors of black pepper and mocha, not woody, but cocoa-like and black cherry and raspberry. Steve finds that it is smooth, and doesn’t "slap him in the face" like some Zins. Dan says there is a handful of California Zins that deliver this kind of fruit in the $60 range, but this one sells for $38, a great bargain. 2013 The Mariner, a Bordeaux-inspired blend. Part of what sets wine apart from other drinks is the ritual surrounding it. It approaches a ceremony when you pop open a bottle. Especially when there's cork involved. A cork closure is unique to wine (for the most part) and it requires a special tool to open it, elevating the whole process that much more. But Randall Grahm thinks cork is ruining wine. Grahm, the owner of Bonny Doon Vineyard in California, has made it his life's work to kill the cork. Grahm bottles all of his vineyard's wine in screw caps, and in the early 2000s, he staged an event that would leave its imprint on the wine industry for years to come: a funeral for cork. In this episode, we explore why Grahm is so vehemently opposed to cork--and why his innovative ideas about cork might be behind the times.
