Une mère philippine, un père français, une enfance entre Paris et l'Asie. Deux manières de se mettre à table, deux manières de se construire. C'est au lycée, dans l'appartement de sa mère, que Tatiana commence à cuisiner pour ses amies sans savoir que c'est déjà tout elle.À 21 ans, elle débute l'école Ferrandi. Un premier stage qui se termine avec un tendon sectionné. Puis un bistro dans le 15e, le Meurice, l'Astrance de Pascal Barbot. Les grandes maisons pour apprendre vite, sortir solide et comprendre ce qu'on ne veut pas. Et le Baratin, une soirée par semaine, le vin nature, la joie bruyante. Un souffle qui ne la quittera plus.En 2014, avec sa sœur Katia, elles ouvrent le Servan. La carte est pensée deux jours avant l'ouverture. Ce qui sort est hybride, métissé, pas simplement de la cuisine française traditionnelle comme elle l'avait imaginé. Mais cela a du sens finalement. Trois mois plus tard, un prix du Fooding. Puis l'ouverture d'une deuxième adresse Double Dragon, la cuisine philippine assumée, les travaux, le four à barbecue et un lieu qui leur ressemble enfin.Un épisode sur ce qu'on construit quand on a la chance de ne pas le faire seule. Sur ce qu'on gagne à ne plus chercher à être autre chose que ce qu'on est. Dans cette troisième et dernière partie, Tatiana Levha revient sur ce qui a construit le Servan dans la durée, sur l'ouverture de la deuxième adresse Double Dragon et sur ce que ça fait de jongler avec tout cela en même temps.Au Servan, la large carte s'impose comme un choix sincère, à rebours des menus uniques qui dominaient l'époque. Les wontons au boudin noir sont à la carte depuis le premier service et n'en partiront pas. Ce métissage qui ressemblait à une improvisation le soir de l'ouverture trouve très rapidement du sens.Vient ensuite Double Dragon, ouvert huit ans après le Servan, qui échappe d'abord à ce qu'elles souhaitaient faire de leur deuxième lieu. Trop rapide, trop bruyant, la cuisine philippine noyée sous des codes empruntés à d'autres. Les gens demandent du pain. Elles tâtonnent. Puis elles remettent tout à plat : les travaux, un four à barbecue, une carte réellement philippine, des réservations et une cadence acceptable. Une adresse qui leur ressemble enfin et qui les réconcilie avec leurs origines.Une dernière partie sur ce qu'on gagne à ne plus chercher à être autre chose que soi. Et puis l'Astrance avec Pascal Barbot. Là, c'est autre chose. Une toute petite cuisine, 25 couverts, les produits sélectionnés avec soin sont livrés le matin et rien ne se perd. Tatiana découvre ce que cuisiner veut vraiment dire. Elle y reste jusqu'à ce que ses deux canaux carpiens lâchent.En parallèle, il y a aussi le Baratin où elle festoie. C'est là-bas qu'elle comprend qu'on peut allier l'exigence et la joie, que la blanquette peut être sexy et qu'un bistro bruyant peut être un endroit sérieux. Une perspective qui va tout changer.En novembre 2013, avec sa sœur Katia rentrée de Londres, elles signent pour ouvrir le Servan. Elles s'occupent de la démolition avec des amies. On Horde side, Raid Team Kiddie Aggro is now 6/9 in Heroic Voidspire, having out punched the Double Dragons and then sending the Lightblinded Paladin trio bubble hearthing to the Shadowlands. Noob Raid completed the first three bosses in The Voidspire on Normal, and Dankinia’s death count is up to 11. Tetsemi- The next patch for Midnight arrives April 21, bringing new World content such as Void Assaults in Eversong Woods and Zul’Aman as well as Decor Duels – a Hide and Seek challenge that players will queue for. It’s also a busy time for WoW Holidays. Noblegarden ends April 13, Children’s Week arrives April 27 – which may be awkward as Outland orphan Salandria is now an adult NPC in Silvermoon – and Volunteer Guard Duty takes place April 28. Player Housing Endeavors have reset. Fortuna now has Mechagnomes (with miscalibrated hens that jump on your head), Salus has Drakthyr, and Virtus has Ethereals. Consortium won the Alliance side vote. C'est à ce moment là que Tatiana comprend qu'elle ne pense qu'à manger et cuisiner. Elle entre alors à l'école Ferrandi, malgré les réticences de sa mère.
