Larry Keener, CFS, PA is President and CEO of International Product Safety Consultants Inc. and an internationally regarded microbiologist and process authority in the food industry. His areas of expertise range from applied food microbiology to the development and application of novel preservation technologies. Mr. Keener is a 2013 Fellow of the Institute of Food Technologists (IFT), a Board Certified Food Scientist by the International Food Science Certification Commission, and a 2018 recipient of an International Union of Food Science and Technology's (IUFoST's) lifetime achievement award for his work in microbiology and food safety. He is also the recipient of Food Safety Magazine's 2026 Distinguished Service Award. He is a past president of IFT's Nonthermal Processing Division and a two-term past president of Tuskegee University's Food and Nutrition Sciences Advisory Board. He is also a past co-chair and founding member of the Global Harmonization Initiative (GHI). This Day in Legal History: Lincoln's Second InauguralOn March 4, 1865, Abraham Lincoln delivered his Second Inaugural Address as he began his second term as President of the United States. The speech came during the final weeks of the Civil War, when Union victory was increasingly likely but the country remained deeply divided. Instead of celebrating the nearing end of the war, Lincoln used the moment to reflect on the deeper causes of the conflict. He identified slavery as the central issue that had brought the nation into war, describing it as both a legal institution and a moral injustice embedded in American law for generations. Lincoln noted that both the North and South had participated in a system that allowed slavery to endure within the nation's constitutional framework.In one of the address's most striking passages, Lincoln suggested that the war itself might be understood as divine judgment for the nation's long tolerance of slavery. He observed that slavery had existed in the Americas for centuries and reflected on the possibility that the immense suffering of the war was a form of punishment for that history. Lincoln famously stated that if divine providence willed that the war continue “until every drop of blood drawn with the lash shall be paid by another drawn with the sword,” then such judgment might still be just. This reflection framed the war not simply as a political conflict but as a reckoning with a deeply rooted legal and moral wrong.Lincoln's remarks also pointed toward the constitutional transformation already underway through the pending Thirteenth Amendment to the United States Constitution. Congress had passed the amendment earlier in 1865, and it awaited ratification by the states. If adopted, it would permanently abolish slavery across the United States and fundamentally alter the constitutional order. Lincoln's speech emphasized that the war's conclusion would also mark a legal turning point, ending a constitutional system that had protected slavery. At the same time, he called for reconciliation in rebuilding the nation, urging the country to move forward “with malice toward none.” Only months later, the Civil War ended and the Thirteenth Amendment was ratified in December 1865, permanently outlawing slavery in the United States.The House Oversight Committee has asked several high-profile figures to testify about their connections to Jeffrey Epstein as part of a broader investigation into how the federal government handled the case. Those requested to appear include departing Goldman Sachs Chief Legal Officer Kathryn Ruemmler, Microsoft co-founder Bill Gates, and Apollo Global Management co-founder Leon Black.The request to Ruemmler comes shortly after she announced plans to step down from Goldman Sachs and after Justice Department records brought renewed attention to her past communications with Epstein. Emails show that she sought career advice from him while exploring a move from Latham & Watkins to Facebook in 2018 and referred to him in messages as “Uncle Jeffrey.” The correspondence also mentioned gifts she received from him. The idea is simple: if the charge is treated as a property-style fee instead of a sales tax, it could fall into a category that allows taxpayers to make greater use of their federal SALT deduction. Supporters frame the proposal as middle-class tax relief and a way to reduce the amount of federal revenue flowing out of California. But while the policy is clever, its practical benefits would be limited and uneven.The proposal follows a familiar strategy used since the 2017 tax law capped SALT deductions: when one type of tax becomes less deductible, lawmakers try to redesign the tax structure so the revenue flows through a category that remains deductible. California's approach focuses on vehicle purchases, where sales taxes are currently difficult to deduct for many residents. Kia ora,Welcome to Wednesday's Economy Watch where we follow the economic events and trends that affect Aotearoa/New Zealand.I'm David Chaston and this is the international edition from Interest.co.nz.Today we start with news today is all about commodity prices. Silver has jumped sharply, gold and platinum are up, copper is at a record high, and both nickel and aluminium have surged too. Tin is at a three year high. Lithium is on the move up again too after a two year slumber.It's not only hard commodities. The overnight global dairy trade auction surprised to the upside. A small gain was anticipated but in the end we got a +6.3% rise in USD terms, +6.5% in NZD terms. There were gains across the board, but the largest was for WMP (+7.2%), followed by SMP (+5.4%). There follow a worrying string of declines that set in from August, Elevated buying from China was a key driver, but that was on top of sharp increases in demand from the Middle East.The +6.3% rise in USD was the largest since March 2021. The +6.5% rise in NZD was the largest since September 2022. Despite these encouraging signs, overall prices are now only back to early December levels. The rises will be welcome, but on their own are unlikely to alter any farmgate payout prices. Today's recovery will need to be sustained. Don't forget, prices in USD have fallen -22% from May 2025 even after today's lift.In the US, the S&P Global services PMI for the US retreated back to a modest expansion in December after the good expansion the previous month which was revised lower. This metric is now at an eight month low. New business growth dropped to its lowest in 20 months as inflationary pressure bit harder.Meanwhile, the Logistics Manager's Index retreated for a second consecutive month in December. It was the slowest expansion in the logistics sector since April 2024, with the majority of the downward pressure coming from inventory and warehousing markets. Transportation costs rose more than expected.Total vehicle sales in the US rose to a 16 mln annual rate in December, up from a 15.6 mln rate in November. A year ago they ran at 16.9 mln annual rate, so a -5.3% decline.In China, total vehicle sales have not yet been announced, but it is very likely they exceeded 36 mln in 2025 with growing strength in the past six months. That will be +14.6% higher than their 2024 level.China equities hit a decade high in Tuesday trading.Meanwhile, an historic climate shift is bringing record rainfall to China's northern regions, overwhelming unprepared cities and upending agriculture, while leaving the traditionally lush south parched.In Europe, food giant Nestle is recalling infant formula after serious contamination concerns.The UST 10yr yield is now just on 4.18%, up +2 bps from this time yesterday.The price of gold will start today at US$4487/oz, and up another +US$45 from yesterday and heading back up toward its end of year record high. Silver is up sharply to US$81.50/oz and a new record high, and platinum is also back up sharply at US$2430 and also almost at its end of year record high.American oil prices are down -50 USc from yesterday at just over US$57.50/bbl, while the international Brent price is now at just under US$61.50/bbl.The Kiwi dollar is down -10 bps from yesterday, now at just on 57.8 USc. Against the Aussie we are down -40 bps at 85.8 AUc. Against the euro we are unchanged at 49.4 euro cents. That all means our TWI-5 starts today just on 61.8, and down -10 bps from yesterday.The bitcoin price starts today at US$92,515 and down -1.7% from this time yesterday. This episode features Prof. Yvan Vandenplas MD PhD from the University Hospital Brussels and Vrije Universiteit Brussel (Belgium), speaking about the science on probiotics and prebiotics in infant formula. Over the past 20 years in this field, awareness of the importance of the gastrointestinal microbiota has grown, and biotics have been employed to try to shape the gut microbiota of infants formula-fed to resemble that of breastfed infants. In particular, human milk oligosaccharides (HMOs) are prebiotics that are shown to change the microbiota composition, although the clinical benefits of these changes are not yet clear. What clinical benefits are achievable for infants who receive formula with added probiotics or prebiotics? Looking closely at the trials, it's evident that probiotics and prebiotics are associated with a decrease in infections and antibiotic prescriptions, but researchers need to use these as primary endpoints in their trials to increase the strength of the evidence. In a recent European Society for Paediatric Gastroenterology Hepatology and Nutrition (ESPGHAN) recommendations paper, the probiotic recommendations were challenging because for each specific probiotic intervention the group had difficulty finding two clinical trials with a similar design, limiting their ability to make conclusions. Prof. Vandenplas says more trials need to be done independently to strengthen the evidence. Long-term outcomes from probiotic or prebiotic supplementation in infant formula are possible as well, but much larger longitudinal trials are necessary to establish these outcomes. Story at-a-glance The infant formula industry has almost 100 billion dollars in annual sales. This was accomplished by unscrupulous marketing that trained doctors and parents to discard breastfeeding and tricked them into believing infant formula is "safe and effective" Infant formula is full of corn syrup and seed oils, which cause metabolic dysfunction and excessive weight gain. Remarkably, that weight gain has been normalized, making it possible to diagnose normal children as "underweight" and thereby push formula on them Infant formula is full of seed oils due to a 1980 law requires infant formula to be full of seed oils (due to a 1963 study that concluded those fats were essential for infant development). Since then, a mountain of evidence has emerged showing they're quite harmful, but no one ever got around to updating the 1980 formula requirements. RFK Jr. is thus the first H.H.S. Secretary ever to attempt to address this colossal mistake In contrast, breast milk (in conjunction with a nutritious maternal diet) is one of the healthiest substances an infant can consume, providing a myriad of benefits including developing the infant's brain, gut, and immune system, decreasing many serious diseases, enhancing the critical mother-child bond, and reducing the mother's risk of many severe illnesses (e.g., cancer) Before the introduction of infant formula, mothers would often supplement their children's diets with animal milks. If raw, these milks can yield significant benefits to children, while in contrast, when pasteurized, they have many issues (e.g., they frequently create allergies and asthma)
