Kids can be ridiculously stubborn when it comes to eating vegetables, and when they are allowed to choose what to eat - cakes and cookies will win most of the time. Getting children to eat more vegetable can seem like an endless battle. There are advertisements for processed foods everywhere, often using children's stars and role models to promote the products. It is not so surprising that diabetes and obesity are becoming so prevalent.But fear not: there are some effective ways how to get your kids to eat more vegetables, given a degree of persistence and perseverance.Set an example - children learn by imitating their parents. If you want them to eat vegetables, you have to eat them too. Increase food rich in nutrients, plant-based food, vegetables, fruits, whole-grains, nuts, and so on in your diet. You cannot teach your kids to eat vegetables while you sneak in fries or burgers on the side. The kids will follow your behaviour because, although it may not always seem to be the case, parents are the biggest role model in their lives.Talk to them - communication is key. Talk to your children about why they should eat more and different vegetables. Explain to them that the nutrients in vegetables and fruits help to keep them well, grow stronger bone, and make the brain work better. You should also tell them that eating unhealthy food has direct consequences such as overweight, acne, and other problems.Get them involved - children have more interest in the meal if they are involved in its preparation. You can take them to the local market or grocery store, and also let them pick one or two vegetables to cook for the next dinner. Even better, you can also involve them in planting vegetables in the garden. Let them clean the vegetables, tear the salad leaves, mix the dressing. Helping to set the table will also encourage their cooperation at mealtime.Do not make them eat - if your child will only eat a few bites, leave him or her be and do not force them to finish up. Coercion, arguments and punishments only deliver a negative experience. If they have five bites today, maybe tomorrow they will have six bites. The aim is to have steady progress, and to encourage the children to try many different vegetables and fruits.Arrange the food to attract the kids' attention - You can cook a variety of vegetables and arrange them on the plate. Raw vegetables can be arranged to form a face, or a flower. Fruit can be cut into a fruit salad and served in cups. Food that looks attractive always goes down better!And just one last tip: if there are fresh, washed, cut up and nicely arranged fruits and vegetables on the table when the kids are home, they are more than likely to just go ahead and nosh on them by themselves without needing any special encouragement from you.

Tricia Cornell was my second farmers’ market cooking inspiration. Deborah Madison was my first and if I know anything, I know Tricia would be pleased that my brain works like that. First, “What would Deborah Madison, author of 14 books on local cooking do?” with this pile of green beans, and second … “What would Tricia Cornell, master of Minnesota veggie season and CSA seasonal cooking, do” with this stinking Kohlrabi? You see, Deborah Madison is the national icon for cookbook authors who cook local food nationally and Tricia Cornell is my Minnesota icon for cookbook authors who cook local food. They are both great companions when staring down a pile of seasonal vegetables. The cookbook that turned me onto Tricia was Eat More Vegetables, suggested by my first CSA. Her second book, Minnesota Farmers Market Cookbook also helped me make great food with produce I wasn’t always sure how to use up.I hope you enjoy the conversation and a recipe for Garlic Scape Pesto Pasta (it’s almost in season again). There is also a great Makers of Minnesota producer who makes a beautiful Escape Garlic Pesto that you can find at Lakewinds Coop from Seven Songs Organic Farm.Garlic Scape Pesto PastaFrom StephaniesDish.comServes 2Ingredients6-8 garlic scapes ¼ cup pine nuts½ cup extra-virgin olive oil¼ cup Parmesan cheese1/4 cup basil leaves1/4 cup Italian parsley2 teaspoons lemon zest3 tablespoons fresh lemon juice1 teaspoon kosher salt8 oz spaghetti pastaInstructionsPestoPlace the garlic scapes in a food processor and pulse for 30 seconds.Add the pine nuts and olive oil and pulse for 45 seconds.Scrape down the sides of the bowl.Add the Parmesan cheese and pulse until the ingredients are combined.Add the basil, parsley, lemon zest, lemon juice, and salt, and process until reaching the desired consistency.PastaBoil water in a medium saucepan. Cook your pasta according to the package directions.Before draining the pasta, reserve 1/4 cup of the starchy pasta water.Drain the pasta and put it back in the pot.Toss in the pesto and mix with the pasta until thoroughly coated.Use the reserved pasta water to thin the sauce if it’s dry.Finish everything with a big squeeze of lemon juice, salt and pepper.Corn PuddingFrom Eat More Vegetables by Tricia CornellServes 4Ingredients2 tbsp butter½ medium onion, minced1 tsp kosher salt½ jalapeño pepper, seeds and ribs removed, thinly sliced (optional)3 cups corn kernels (about 3 ears)4 eggs, separated½ cup grated cheese (2 ounces; fontina is a good choice)InstructionsHeat oven to 350 degrees F. Grease a 1.5-quart soufflé pan or other deep baking dish. Melt butter in saucepan over medium heat. Soften onions in butter, with salt, about 5 minutes. Do not brown. Add jalapeño, if using, and cook until fragrant, about 1 minute. Stir in corn kernels. Remove from heat and let cool to room temperature.Beat egg whites to stiff peaks. In a separate bowl, beat egg yolks until smooth. Stir cooled corn mixture and cheese into egg yolks. Fold in beaten egg whites. Slide into prepared pan. Tricia Cornell was my second farmers' market cooking inspiration. Deborah Madison was my first and if I know anything, I know Tricia would be pleased that my brain works like that. First, “What would Deborah Madison, author of 14 books on local cooking do?” with this pile of green beans, and second … “What would Tricia Cornell, master of Minnesota veggie season and CSA seasonal cooking, do” with this stinking Kohlrabi? You see, Deborah Madison is the national icon for cookbook authors who cook local food nationally and Tricia Cornell is my Minnesota icon for cookbook authors who cook local food. They are both great companions when staring down a pile of seasonal vegetables. The cookbook that turned me onto Tricia was Eat More Vegetables, suggested by my first CSA. Her second book, Minnesota Farmers Market Cookbook also helped me make great food with produce I wasn't always sure how to use up.I hope you enjoy the conversation and a recipe for Garlic Scape Pesto Pasta (it's almost in season again). There is also a great Makers of Minnesota producer who makes a beautiful Escape Garlic Pesto that you can find at Lakewinds Coop from Seven Songs Organic Farm.Garlic Scape Pesto PastaFrom StephaniesDish.comServes 2Ingredients* 6-8 garlic scapes * ¼ cup pine nuts* ½ cup extra-virgin olive oil* ¼ cup Parmesan cheese* 1/4 cup basil leaves* 1/4 cup Italian parsley* 2 teaspoons lemon zest* 3 tablespoons fresh lemon juice* 1 teaspoon kosher salt* 8 oz spaghetti pastaInstructionsPesto* Place the garlic scapes in a food processor and pulse for 30 seconds.* Add the pine nuts and olive oil and pulse for 45 seconds.* Scrape down the sides of the bowl.* Add the Parmesan cheese and pulse until the ingredients are combined.* Add the basil, parsley, lemon zest, lemon juice, and salt, and process until reaching the desired consistency.Pasta* Boil water in a medium saucepan. Cook your pasta according to the package directions.* Before draining the pasta, reserve 1/4 cup of the starchy pasta water.* Drain the pasta and put it back in the pot.* Toss in the pesto and mix with the pasta until thoroughly coated.* Use the reserved pasta water to thin the sauce if it's dry.* Finish everything with a big squeeze of lemon juice, salt and pepper.Corn PuddingFrom Eat More Vegetables by Tricia CornellServes 4Ingredients* 2 tbsp butter* ½ medium onion, minced* 1 tsp kosher salt* ½ jalapeño pepper, seeds and ribs removed, thinly sliced (optional)* 3 cups corn kernels (about 3 ears)* 4 eggs, separated* ½ cup grated cheese (2 ounces; fontina is a good choice)InstructionsHeat oven to 350 degrees F. Grease a 1.5-quart soufflé pan or other deep baking dish. Melt butter in saucepan over medium heat. Soften onions in butter, with salt, about 5 minutes. Do not brown. Add jalapeño, if using, and cook until fragrant, about 1 minute. Stir in corn kernels. Remove from heat and let cool to room temperature.Beat egg whites to stiff peaks. In a separate bowl, beat egg yolks until smooth. Stir cooled corn mixture and cheese into egg yolks. Fold in beaten egg whites. Slide into prepared pan. ColoRectal  cancer (CRC) is the second most frequent cause of cancer DEATH in the United States.  The Most Frequent Cause of Cancer Death is…… Lung Cancer. This year, an estimated 145,600 adults in the United States will be diagnosed with colorectal cancer. According to Cancer.net…… an estimated 51,020 of the 145,600 adults will die this year…..due to ColoRectal Cancer. When colorectal cancer is found early, it can often be cured. CURED Nation! This is due to improvements in treatment and increased screening….. which finds colorectal changes before they turn cancerous and cancer at earlier stages. Medicare Part B offers TWO Preventative Screening Tests The First…. Is a Fecal Occult Blood Test “Fecal Occult” Blood Test is just a scary way of saying….. “ Looking for Blood in your Poop.”  The test ONLY detects the “presence” or “absence” of blood in your stool. The test does not indicate potential sources of bleeding and it does not “Diagnos” disease. “Fecal” means……“Stool” or “Poop”….and…. “Occult Blood” means you can’t see the blood in your stool with the “naked eye,” so….. the specimen is sent to the lab for a closer look. Blood in the stool may indicate polyps…. or it may indicate cancer in the intestine or rectum….though not all cancers or polyps bleed. If blood is detected through the “Fecal Occult Blood Test,” additional tests may be needed to determine the source of bleeding as well as “diagnosing” an ailment or disease. Blood in the stool could also mean Hemorrhoids….which are swollen veins in the lowest part of your rectum and anus. Sometimes the walls of these blood vessels stretch so thin….. that the veins bulge and get irritated, especially when you poop! Straining while pooping is a major factor in Hemorrhoids.  EAT more Fiber Nation! Eat More Vegetables….try Metamucil or Miralax. Straining to poop is not good. Drink more water! You should try to drink at least 96 oz. a day. I use a 24oz bottle I fill 4 x a day….. to get my 96 oz of water. You can do it. It’s important. Hemorrhoids can cause itching & pain.  Hemorrhoids can also bleed. There are several types of Fecal Occult Blood Tests, I’m going to discuss the “newer version,” which is called a “ Immunochemical Fecal Occult Blood Test,” (aka iFOBT or FIT) The IFOBT or FIT test is less of a mess and easy to administer. Typically, you have a “spoon-like” device to collect the sample of stool and you place the device into a collection container then seal it. You either return the collection container to your doctor’s office, or you mail it. There are no dietary restriction with the iFOB-IT and the test can be performed on any random sample of your stool. Your Doctor will review the results and there are just two options: Negative Result, which means no blood was detected in the stool sample you provided. OR…….. Positive Result, which means blood WAS detected in the stool sample you provided.   This type of test ISN’T ALWAYS accurate. Your fecal occult blood test could show a negative test result when cancer is present (false-negative result) if your cancer or polyps don't bleed. If you had the test to screen for colon cancer and you're at average risk — you have no colon cancer risk factors other than age — your doctor may recommend waiting one year and then repeating the test.  If you have a “positive result,” You may need additional testing — such as a colonoscopy — to locate the source of the bleeding. Under Medicare…… The Fecal Occult Blood Test…. can be given ONCE every 12 months if you’re 50 or older, at ZERO Cost to you.        Now….. let’s take a look at Mult-Target Stool DNA Tests. You will know the “Multi-Target Stool DNA Test” more commonly known as “ColoGuard.” ColoGuard …….   addresses several barriers to colorectal screening. Patient concerns with colonoscopy. Include…having to schedule a separate and lengthy appointment at the testing facility. The need to undergo a “Stay Close to my Bathroom” bowel preparation the exposure to sedation or anesthesia……and the discomfort associated with an invasive imaging process…. Of sticking either the “colono-scope” during a colonoscopy or a flexible sigmoud device up your butt.   By comparison, the “Multi Target Stool DNA” screening test is a noninvasive, “multi-marker”, stool-based ColoRectal Cancer screening test….. that detects altered De-oxyribo-nucleic Acid (DNA), , as well as a fecal immunochemical test (FIT)… for blood released from cancer and precancerous lesions of the colon. The presence of fecal hemoglobin….. even in the absence of elevated DNA markers…..can lead to a positive result given the weighted nature of the Multi Target Stool DNA algorithm. Patients may collect and mail stool specimens from their homes with no bowel preparations and no dietary or medication restrictions.   Medicare covers this at-home multi-target stool DNA lab test…. once every 3 years…if you meet ALL of these conditions:   You’re  between the age of  50-85. You show NO CURRENT symptoms of colorectal disease including, but not limited to one of these: Lower gastrointestinal pain Blood in stool Positive Guaiac fecal occult blood test….which is an older version of the Immunochemical Test… where you “smear” stool onto a TEST Card with a wooden applicator or brush. The Guaiac test has dietary restrictions and you are required to collect “TWO” or more samples from the same Stool Sample for the test. Much Messier than the Immunochemical Fecal Blood Occult Test. OR…… A Positive Result from a Fecal Blood Occult Test ALSO    YOU NEED TO BE….. at average risk for developing colorectal cancer, meaning: You have no personal history of  (adenomateous ) polyps”  which are …..  a common type of polyp. They are gland-like growths that develop on the mucous membrane that lines the large intestine. They are also called adenomas: You have no personal history of  … colorectal cancer, or inflammatory bowel disease, including Crohn’s Disease and ulcerative colitis. OR…… You have no family history of colorectal cancers or adenomatous polyps, familial adenomatous polyposis, or hereditary nonpolyposis colorectal cancer.   If you meet the above criteria….. You pay nothing for this test if your doctor…. or other qualified health care provider accepts Medicare.   So that’s the difference between Multi Target Stool DNA Tests vs. Fecal Occult Blood Test.   If you haven’t had one of these preventative tests, speak to your primary doctor and get one. With Hanukkah, Christmas and New Years creeping fast around the corner the extra 3, 5 up to 10 holiday pounds will start creeping just as fast! So when I sent my weekly check-in email to my 2019 transformation challenge test group clients I wanted to make sure they had 4 easy strategies to help them conquer holiday parties and peer pressure at the office to eat "Mary's cookies".  This is the challenge group where I'm paying THEM $50 if they lose 10 pounds by Jan 4th and many of them are down 4-6 pounds already after 3 weeks, but I know the next 3 weeks will be extra challenging! Here are 3 ways to accelerate your results in the next 3 weeks... 1.) Start increasing your daily cardio- you need to move more. If you eat more, you have to move more. It's that simple. Start aiming to hit 500 or even 1000 reps of a daily cardio movement (jumping jacks, mountain runners, bicycle crunches) or a minimum 15 minute walk after dinner every night. No time to workout? At least do your daily cardio for the next 21 days!!! 2.) Eat More Vegetables- include veggies AND a salad whenever possible for lunch AND dinner. The extra fiber will help your digestion, break down saturated fats, keep you full and decrease your appetite. 3.) Drink More Water- most of the time when you think you are hungry you are actually either a.) bored or b.) dehydrated. Aim for a minimum of 6 ounces every hour that you're awake each day. Water combined with vegetables will greatly decrease your appetite and late night cravings.  BONUS TIP- drink a protein shake and 20 ounces of water before every party or meal where you know you'll be tempted to eat bad foods. You'll be less likely to mindlessly snack and you'll get full much quicker if you do!

It's not often I read a book that is less than 100 pages long and I fold over and highlight nearly every page. But that was indeed the case when I read the book "", a book with a very simple title but a very wide range of practical plant-eating information I've never seen published elsewhere, including little-known superfood plants, why humans are like an upside down plant, how to make extremely nutritionally dense vegetable powders and much more. was written by the guest of this podcast: Dr. Tom Cowan. Dr. Cowan discovered the work of the two men who would have the most influence on his career while teaching gardening as a Peace Corps volunteer in Swaziland, South Africa. He read "" by Weston A. Price, as well as on biodynamic agriculture. These events inspired him to pursue a medical degree and he graduated from Michigan State University College of Human Medicine in 1984. After his residency in Family Practice at Johnson City Hospital in Johnson City, New York, he set up an anthroposophical medical practice in Peterborough, New Hampshire. Dr. Cowan relocated to San Francisco in 2003. Dr. Cowan has served as vice president of the Physicians Association for Anthroposophical Medicine and is a founding board member of the ™. Sometimes you just might crave something that’s a bit salty or sweet and vegetables don’t cut it and that’s fine, you don’t need to eat all vegetables all the time, you just need to eat more.  So here are some strategies I’ve used with clients or I myself use, to get the job done.
