Mark Waters from the Irish Cattle Breeding Federation (ICBF) is on this week's Beef Edge podcast to discuss the National Genotyping Programme which has recently opened for applications. The National Genotyping Programme is a collaborative initiative enabling Ireland to take the first step in achieving a fully genotyped national herd, based on a cost-sharing model between the Department of Agriculture, Food & the Marine, the beef and dairy industry and participating farmers.  Genotyping the national herd will provide a huge opportunity for both the dairy and beef industry to accelerate the rates of gain of our national breeding indexes (e.g. EBI, Eurostar & DBI), which will enhance farm sustainability & reduce carbon emissions. Mark outlines a number of benefits including:-       Labour-saving - farmers who sign up to the NGP will have exclusive access to Double Tissue Tags. By sampling animals at birth, farmers don't have to wait for button tags or hair-cards for SCEP or Pedigree Societies and then round up and bring in animals for sampling at a later stage. It is also much safer and easier to tag and sample newborn animals than more mature animals-       Cost - herds accepted into the National Genotyping Programme will genotype any remaining ungenotyped breeding stock FREE. From 2024 to 2027 (inclusive), farmers will be required to genotype ALL calves born at a reduced cost of approximately €6. (This is an estimate and includes the farmer's contribution of €4 towards genotyping, plus the additional cost associated with a double tissue tag and postage cost.). Herds participating in SCEP will only incur the €6/calf cost of those calves not counted towards their annual 70% SCEP genotyping requirement-       Parent verification - parentage errors (which currently sit at an average of 15% nationally) lead to incorrect Eurostar figures and create paperwork to correct once the animal is already registered. Huge cable theft on French railway disrupts Eurostar, TGV services

Eurostar services between the UK and the EU have been restored following a chaotic day of delays and cancellations, with dozens of TGV high-speed trains in northern France also affected. The major disruption was caused by the theft of more than 600 metres of railway cable near the city of Lille. Plus, the World Economic Forum dubbed the "Summer Davos" is underway in China, with trade tensions and conflicts casting a huge shadow over the event.

This week, Gary catches up with Stuart in Tashkent, the capital of Uzbekistan, to track back across his train and-bus route so far, which has taken him from Bali to Jakarta, Singapore, Malaysia, Thailand, Laos, China, Kazakhstan, Kyrgyzstan and Uzbekistan. Stuart describes the dramatic natural landscapes viewed from numerous train windows. A Kent secondary school is considering making all pupils wear trousers, following complaints about girls in short skirts.The head of The Whitstable School has sent a letter to parents about plans for a gender-neutral uniform.Alex Holmes states that local residents and businesses have complained about 'inappropriate skirt lengths' particularly when pupils are outside the school grounds.Also in today's podcast, there are calls for a review of the ban on the use of laughing gas, with one Kent councillor saying it's stopping people seeking medical help.Using nitrous oxide for its psychoactive effect has been a criminal offence since November 2023.A video has been released calling for the return of Eurostar services to Kent.It features local councillors, as well as tourism and business bosses, on why the international link is essential to the local economy. A Canterbury woman who had a stoma fitted after being diagnosed with a condition that stopped her going to the toilet properly is hoping to help others.Around 200,000 people in the UK are living with the bag on the outside of their body which collects waste from the bowels.More details have emerged about a Roman statue that was discovered near the A2 in Teynham.The effigy of sea god Triton was found during a dig for a new housing estate at Frognal Lane.It's hoped the revival of a Kent curling club will introduce new people to the sport across the south east.Fenton's Rink has undergone a big renovation, and is relaunching as the Tunbridge Wells Curling Club with a big focus on the community.

Today we're joined by arguably the most iconic female chef in the country in the legendary Sally Clarke, who's been the owner and chef patron at Clarke's in Kensington for over 41 years. Sally ironically failed her O level in cookery and yet has gone on to become one of the most successful chef and restaurant owners in the country. Clarke's is a London institution and the restaurant is the favourite of everyone from Mick Jagger to Bono - David Hockney to Paul Smith and all in between. In only her 2nd ever audio interview, Sally reveals how she fell in love with food through the books of Elizabeth David and her travels across France as a child. However it was when she headed to study at Le Cordon Bleu in Paris in the early 70s when she knew that this was going to be her life. Having worked at 3 of the most famous restaurants in the City she came back to London to work alongside Pru Leith at her cookery school, but within a year found herself moving to live in California to work at some of the greatest new age restaurants. It was here she met and fell in love with Alice Waters and Chez Panisse, and was inspired 5 years later in 1983 to return to London and set up Clarke's following in the same farm to table ethos and daily changing set menu as her culinary hero and friend. However, setting up a restaurant as a female head chef and owner wasn't easy in the early 1980s and we hear about; the disastrous problems she encountered, and rude sexist male customers and suppliers she had to deal with. We also hear about her friendship with Lucian Freud who used to eat breakfast and lunch at the restaurant everyday and how she had the privilege of being the last person ever to sit for him. Also, alongside the restaurant Sally runs an incredibly successful commercial bakery that sells over 90,000 handmade Mince Pies each year and beat all her Parisian competition to provide the pastries for the Eurostar.
