My mother was (and is) an excellent cook, and as a kid, I was her little shadow as she prepared supper each night. From her, I gained a deep, abiding love for magically transforming pantry items into mouth-watering family meals. I wanted to be a flavor scientist, But I also had a long and torrid affair with chemically-enhanced, laboratory-concocted “foods” that continued into my college years. At Berkeley, I majored in Nutrition & Food Science because I wanted to become a flavor scientist and create lab-concocted “Frankenfoods” for a living. (Not kidding.) At the time, the faculty was packed with world-class biochemists and food researchers — all of whom were strong advocates of the low-fat dogma. Like a sponge, I soaked it all in, and modified my diet accordingly. Steak and eggs were out; bagels and crackers were in. In the summer of 2010, I made the decision to go Paleo—and when I decide to do something, I commit all the way. I immediately cut out all grains, legumes, sugar, and processed food from my diet, and read everything I could about the science behind the Paleo diet. I quit doing all the crazy cardio and starting doing CrossFit. I was all-in. And you know what? I feel great! After working graveyard shifts for more than a decade, I'd been mentally and physically lagging—but once I changed my diet, I found that my energy levels improved significantly, and my moods were sunnier, too. I was a nicer mommy. Paleo's the only approach that's managed to improve my body composition and fuel me with enough energy to wrangle two small boys, hold down a full-time night shift job(I recently quit after 12 years of working graveyard shifts at the hospital!), cook for a houseful of hungry cavepeople, lift heavy(ish) stuff in the gym, and maintain a food blog. A half-year after switching to a Paleo approach to nutrition, I started Nom Nom Paleo to chronicle my culinary adventures. Since the fall of 2010, I've been regularly posting recipes and writing about how to stay Paleo when eating out. I offer kitchen tips and review my favorite cooking gadgets. I'm all about the lazy, so I'm always looking for shortcuts to deliciousness." At Berkeley, I majored in Nutrition & Food Science because I wanted to become a flavor scientist and create lab-concocted “Frankenfoods” for a living. (Not kidding.) At the time, the faculty was packed with world-class biochemists and food researchers — all of whom were strong advocates of the low-fat dogma. Like a sponge, I soaked it all in, and modified my diet accordingly. Steak and eggs were out; bagels and crackers were in. In the summer of 2010, I made the decision to go Paleo—and when I decide to do something, I commit all the way. I immediately cut out all grains, legumes, sugar, and processed food from my diet, and read everything I could about the science behind the Paleo diet. I quit doing all the crazy cardio and starting doing CrossFit. I was all-in. And you know what? I feel great! After working graveyard shifts for more than a decade, I'd been mentally and physically lagging—but once I changed my diet, I found that my energy levels improved significantly, and my moods were sunnier, too. I was a nicer mommy. Paleo's the only approach that's managed to improve my body composition and fuel me with enough energy to wrangle two small boys, hold down a full-time night shift job(I recently quit after 12 years of working graveyard shifts at the hospital!), cook for a houseful of hungry cavepeople, lift heavy(ish) stuff in the gym, and maintain a food blog. A half-year after switching to a Paleo approach to nutrition, I started Nom Nom Paleo to chronicle my culinary adventures. Since the fall of 2010, I've been regularly posting recipes and writing about how to stay Paleo when eating out. I offer kitchen tips and review my favorite cooking gadgets. He returns this week for more fitness talk. Here's some of what we discuss this week:-Fad diets such as Whole 30,the Cookie Diet, and Paleo - how hard it is to eat out on these diets and the level of food envy/fixation that go with them-Aside:While this recipe is probably not kosher according to most of these diets, it is good and relatively carb free, mainly consisting of a spaghetti squash, cheese, onions, and a few other basic ingredients:1 cube vegetable bouillonblack pepper to taste1 (15 ounce) can black olives, chopped1 cup shredded mozzarella cheese1 cup shredded Parmesan cheesePreheat oven to 325 degrees F (165 degrees C). Spray a baking sheet with a thin layer of cooking spray. Place squash halves cut side down on the baking sheet.Bake squash 35 minutes in the preheated oven, or until a knife can be easily inserted. Remove from oven, and cool.Meanwhile, spray a non-stick saucepan with cooking spray. Over medium heat, saute the onion and garlic until golden brown. Stir in tomatoes, basil, bouillon cube, and black pepper. Cook for about 15 minutes, or until you have a medium thick sauce.Remove squash strands with a fork, reserving the shells. Layer each half with a spoonful of the sauce, a layer of spaghetti squash strands, olives, and mozzarella cheese. Repeat layers until shells are full, or until all of the ingredients are used. Diana Rodgers is helping with bringing an end to the madness by embracing the traditional Registered Dietician education, whilst practicing everything she’s learnt through her interaction with real food pioneers Robb Wolf and Matt LaLonde. Diana has found that by working from within the system, with a credible certification, she’s likely to affect much more change in our current establishment nutrition policy. This isn’t her only concern though. Diana has also become a champion of sustainability. She’s fighting the good fight when it comes to paleo-bashers, and meat haters, who say this way of eating isn’t sustainable for our environment. As the owner of a working farm, Diana is here to show us just what it will take to not only eat for our optimal health, but also the optimal health of our environment. From her interesting perspective of nutritionist and farmer, Diana has some great insight into the Paleo State of the Union and where we must go from here.
