Today, I am blessed to have here with me Nina Teicholz. She is an investigative science journalist and leader in nutrition reporting who is challenging the conventional wisdom on dietary fat–particularly, whether saturated fat causes heart disease and whether fat really makes you fat. The New York Times bestselling author of The Big Fat Surprise. Teicholz also serves as Executive Director of The Nutrition Coalition, an independent non-profit group that promotes evidence-based nutrition policy. She is one of a new generation of researchers arguing that diets lower in carbohydrates are a scientifically sound approach for reversing nutrition-related diseases. For more than half a century, we've been told to eat a diet high in grains, low in fat, saturated fat (and cholesterol), but the last two decades of research have led a growing number of scientists to conclude that this diet, despite being rigorously tested, could never be shown to prevent any kind of disease. Teicholz's work also explains why this diet has remained official policy for so long: the roles played by crusading scientists, the food industry, and more. In this episode, Nina opens the show by explaining her obsession with studying fat. Nina realized that people were afraid to talk about fat because the food industry was pushing their agenda. Nina explains what was wrong in the 1950s, leading most people to believe that saturated fats and dietary cholesterol cause heart disease. During her research, Nina came across studies pointing out the flaws in a low-fat diet. However, so many scientists at universities were terrified to talk to Nina about fat. Why? Because people in the food industry were paid to give scientists a hard time. Nina realized there was something really wrong going on here that had such enormous implications. Nutrition science from the very beginning has been heavily influenced by the food industry. For instance, the vegetable oil industry wanted to go after people for attacking vegetable oils in any way. You see the same tactics happening today on social media. [08:55] Polyunsaturated Fats vs. Saturated Fats vs. Monounsaturated Fats Fatty acids are long carbon chains. Poly means many. Polyunsaturated fats have many double bonds. Each time there's a double bond in the chain, it kinks the chain. Some examples of polyunsaturated fats: Corn oil Safflower oil Sunflower oil Canola oil Monounsaturated fats are the same carbon chain but with one double bond. If you want to use oil, it's better to use olive oil because it only has one double bond. Saturated means that the carbon chain is statured with hydrogen, and there is no double bond. It is a flat chain, and it makes a solid like butter. Saturated fats are actually the best for cooking, and they're the healthiest for eating because they do not oxidize or cause inflammation. [17:55] What Went Wrong In The 1950s With Ancel Keys and President Eisenhower The idea that fat, cholesterol, and animal foods are bad for health began in the 1950s. The US was really in a panic over the rising tide of heart disease, which had been virtually nonexistent in the early 1900s. In the 1930s, heart disease became the number one killer. A panic started when President Eisenhower himself had a heart attack in 1955. Eisenhower's doctor was convinced by Ancel Keys that saturated fats and dietary cholesterol cause heart disease. Plus, Ancel Keys got his ideas adopted by the American Heart Association. Ancel came out with a statement saying to avoid saturated fat and cholesterol in order to prevent heart attacks. We are still dealing with this in 2021. [23:00] Why Are Seed Oils Approved by the American Heart Association? How is it possible for the American Heart Association to continue to ignore so much scientific literature? More than 20 papers published in the field have concluded that we got it wrong on saturated fats. There is no data to justify the authorities' limits on these seed oils. It's challenging to trust the government with our health when they recommend seed oils. [31:00] Sorry Vegans, Meat-Eating Is Healthy For Humans Nina did not know how controversial red meat was until she put a picture of it on the cover of her book. Sadly, many people think that if you eat meat, you're a bad person, you don't believe in climate change, and you're not doing your part to protect the climate. There's this moral revulsion that has been created against meat. Influencers in the spheres of science and public health have vilified one of the healthiest foods on the planet. Meat was developed by humans in order to have a convenient and cheap source of protein. [33:15] Myth: Meat Causes Diabetes Diabetes is caused by elevated blood sugars. Sugar causes elevated blood sugars, so do carbs. Where's the sugar in meat? It's just nonexistent. It's impossible that meat would cause diabetes. Red meat consumption has gone down around 28% since 1970. Whereas, diabetes has skyrocketed out of control. [34:15] Myth: Red Meat Causes Colorectal Cancer The WHO decided that red meat and processed meats cause colorectal cancer. This decision was based on these kinds of weak science called epidemiological or observational studies that show associations instead of causation. The data they used was self-reported dietary data, and we all lie about what we eat. There needs to be a more significant discussion about the bias against red meat. [38:30] Why People Are Pushing Vegetarian and Vegan Diets The animal rights movement does not want people eating animals. The Seventh Day Adventist Church has a religious belief that people should eat a vegan diet.Plus, the food industry has an enormous investment in plant-based foods. Also, many companies want to hop on the climate change bandwagon. Many vegan burgers have vegetable oils that are not healthy. [41:30] Myth: There's a Correlation Between Red Meat Consumption and Heart Disease The original reason that red meat was thought to cause heart disease was based the fact that it contains saturated fat and cholesterol. However, research shows that saturated fat and cholesterol do not cause heart disease. Therefore, foods containing saturated fat and cholesterol don't cause heart disease. The correlation between saturated fat, cholesterol, and heart disease has been more rigorously and extensively studied than almost any other scientific question in the history of nutrition science. [47:15] Which To Cut First: Smoking Cigarettes, Processed Sugars, or Vegetable Oils People smoked historically for hundreds of years tobacco, but they did not get cancer or heart disease until the introduction of sugar. Nina says that smoking is probably safer than processed sugars or vegetable oils. Between sugar and vegetable oils, Nina says that vegetable oils are safer. People who go low-carb will see massive improvements even if they continue to use vegetable oils. AND MUCH MORE! Today, I am blessed to have here with me Nina Teicholz. She is an investigative science journalist and leader in nutrition reporting who is challenging the conventional wisdom on dietary fat–particularly, whether saturated fat causes heart disease and whether fat really makes you fat. The New York Times bestselling author of The Big Fat Surprise. Teicholz also serves as Executive Director of The Nutrition Coalition, an independent non-profit group that promotes evidence-based nutrition policy. She is one of a new generation of researchers arguing that diets lower in carbohydrates are a scientifically sound approach for reversing nutrition-related diseases. For more than half a century, we've been told to eat a diet high in grains, low in fat, saturated fat (and cholesterol), but the last two decades of research have led a growing number of scientists to conclude that this diet, despite being rigorously tested, could never be shown to prevent any kind of disease. Teicholz's work also explains why this diet has remained official policy for so long: the roles played by crusading scientists, the food industry, and more. In this episode, Nina opens the show by explaining her obsession with studying fat. Nina realized that people were afraid to talk about fat because the food industry was pushing their agenda. During her research, Nina came across studies pointing out the flaws in a low-fat diet. However, so many scientists at universities were terrified to talk to Nina about fat. Why? Because people in the food industry were paid to give scientists a hard time. Nina realized there was something really wrong going on here that had such enormous implications. Nutrition science from the very beginning has been heavily influenced by the food industry. For instance, the vegetable oil industry wanted to go after people for attacking vegetable oils in any way. You see the same tactics happening today on social media. [08:55] Polyunsaturated Fats vs. Saturated Fats vs. Monounsaturated Fats Fatty acids are long carbon chains. Poly means many. Polyunsaturated fats have many double bonds. Each time there's a double bond in the chain, it kinks the chain. Some examples of polyunsaturated fats: Corn oil Safflower oil Sunflower oil Canola oil Monounsaturated fats are the same carbon chain but with one double bond. If you want to use oil, it's better to use olive oil because it only has one double bond. Saturated means that the carbon chain is statured with hydrogen, and there is no double bond. It is a flat chain, and it makes a solid like butter. Saturated fats are actually the best for cooking, and they're the healthiest for eating because they do not oxidize or cause inflammation. [17:55] What Went Wrong In The 1950s With Ancel Keys and President Eisenhower The idea that fat, cholesterol, and animal foods are bad for health began in the 1950s. The US was really in a panic over the rising tide of heart disease, which had been virtually nonexistent in the early 1900s. In the 1930s, heart disease became the number one killer. A panic started when President Eisenhower himself had a heart attack in 1955. Eisenhower's doctor was convinced by Ancel Keys that saturated fats and dietary cholesterol cause heart disease. Plus, Ancel Keys got his ideas adopted by the American Heart Association. Ancel came out with a statement saying to avoid saturated fat and cholesterol in order to prevent heart attacks. We are still dealing with this in 2021. [23:00] Why Are Seed Oils Approved by the American Heart Association? How is it possible for the American Heart Association to continue to ignore so much scientific literature? More than 20 papers published in the field have concluded that we got it wrong on saturated fats. There is no data to justify the authorities' limits on these seed oils. It's challenging to trust the government with our health when they recommend seed oils. [31:00] Sorry Vegans, Meat-Eating Is Healthy For Humans Nina did not know how controversial red meat was until she put a picture of it on the cover of her book. Sadly, many people think that if you eat meat, you're a bad person, you don't believe in climate change, and you're not doing your part to protect the climate. There's this moral revulsion that has been created against meat. Influencers in the spheres of science and public health have vilified one of the healthiest foods on the planet. Meat was developed by humans in order to have a convenient and cheap source of protein. [33:15] Myth: Meat Causes Diabetes Diabetes is caused by elevated blood sugars. Sugar causes elevated blood sugars, so do carbs. Where's the sugar in meat? It's just nonexistent. It's impossible that meat would cause diabetes. Red meat consumption has gone down around 28% since 1970. Whereas, diabetes has skyrocketed out of control. [34:15] Myth: Red Meat Causes Colorectal Cancer The WHO decided that red meat and processed meats cause colorectal cancer. This decision was based on these kinds of weak science called epidemiological or observational studies that show associations instead of causation. The data they used was self-reported dietary data, and we all lie about what we eat. There needs to be a more significant discussion about the bias against red meat. [38:30] Why People Are Pushing Vegetarian and Vegan Diets The animal rights movement does not want people eating animals. The Seventh Day Adventist Church has a religious belief that people should eat a vegan diet.Plus, the food industry has an enormous investment in plant-based foods. Also, many companies want to hop on the climate change bandwagon. Many vegan burgers have vegetable oils that are not healthy. [41:30] Myth: There's a Correlation Between Red Meat Consumption and Heart Disease The original reason that red meat was thought to cause heart disease was based the fact that it contains saturated fat and cholesterol. However, research shows that saturated fat and cholesterol do not cause heart disease. Therefore, foods containing saturated fat and cholesterol don't cause heart disease. The correlation between saturated fat, cholesterol, and heart disease has been more rigorously and extensively studied than almost any other scientific question in the history of nutrition science. [47:15] Which To Cut First: Smoking Cigarettes, Processed Sugars, or Vegetable Oils People smoked historically for hundreds of years tobacco, but they did not get cancer or heart disease until the introduction of sugar. Nina says that smoking is probably safer than processed sugars or vegetable oils. Between sugar and vegetable oils, Nina says that vegetable oils are safer. People who go low-carb will see massive improvements even if they continue to use vegetable oils. AND MUCH MORE! Professor Noakes was born in Harare, Zimbabwe in 1949. As a youngster he had a keen interest in sport and attended Diocesan College in Cape Town. Following this he studied at the University of Cape Town (UCT) and obtained an MBChB degree in 1974, an MD in 1981 and a DSc (Med) in Exercise Science in 2002.In the early 90s, Noakes teamed up with Morné du Plessis to drive the founding of the Sports Science Institute of South Africa (SSISA). The Institute was built to provide a facility that would primarily fund research in sports performance. The application of this research would provide sports personnel of all disciplines with the means to improve. Noakes and du Plessis also wanted to use it as a platform to build public interest in the country's top sports people and build state pride.Prof Noakes has published more than 750 scientific books and articles. He has been cited more than 19,000 times in scientific literature, has an H-index of 71 and has been rated an A1 scientist by the National Research Foundation of South Africa for a second 5-year term. He has won numerous awards over the years and made himself available on many editorial boards.He has a passion for running and is still active, running half marathons when he can. Today, I am lucky to have here with me, the CEO and co-founder of the Fasting Method Program, clinical educator, and researcher, Megan Ramos. Megan’s major role in the The Fasting Method is to facilitate the patient’s education on the Fasting Method dietary principles and counsel them on their fasting regimens. Megan, along with her colleague Dr. Jason Fung, believe that both what you eat and when you eat matter. The Fasting Method utilizes therapeutic fasting and time restricted eating protocols with their patients to help them reverse their type 2 diabetes and achieve sustainable weight-loss. They encourage their patients to eat real foods and adopt a low-carb lifestyle in addition to the fasting. Megan was diagnosed with non-alcoholic fatty liver disease (NALFD) at age 12, polycystic ovarian syndrome (PCOS) at age 14, and type 2 diabetes (DMII) at age 27. She reversed these metabolic conditions and achieve an 86-pound weight loss by incorporating intermittent fasting with a low carb diet, and is now passionate about helping others do the same. Megan lives in Toronto, Canada. She is a director of the nonprofit organization Public Health Collaboration Canada (PHC Canada), works on the editorial board of the Journal of Insulin Resistance and Team Diet Doctor. still getting sick Consumption of red meat, butter, and whole milk are down Consumption of grains and vegetable oils are up Ever since the dietary guidelines were introduced in the 1980s diabetes and obesity rates have exploded No one can prove that the guidelines caused these epidemics, but we have a body of science that show if people ignore the guidelines and eat high fat low carb they can manage and reverse their diseases suggesting that the guidelines are no promoting health Quote from Nina’s book: “But like lost languages, lost skills, and lost songs, it takes only a few generations to forget” It seems normal that everyone has a disease, but it’s not normal Challenging the idea of low-fat plant-based diets is extremely difficult because it is enshrined at the highest levels and there is a lot of corporate interest behind it The main ingredients in the grocery stores are sugar, grains, and vegetable oils Food only became medicalized in the 1950s when people were suffering from heart disease Diet-Heart Hypothesis introduced by Ancel Keys claiming that saturated fat and cholesterol would clog your arteries like hot oil down a cold pipe and that would lead to a heart attack The first dietary recommendation in the world was to limit saturated fat issued by the AHA in 1961 It wasn’t until 1970 that all fats were demonized and not just saturated fats The AHA recognized that they didn’t have all the answers but they couldn’t imagine any negative unintended consequences but in reality, the unintended consequences were two-fold By cutting down on saturated fats we shifted to PUFA vegetable oils which turned out to cause higher death rates from cancer Since 1960 we have increased carbohydrate consumption by 30% and have decreased fat since 1965 by around 30% and protein has stayed relatively constant They tested the diet-heart hypothesis after the dietary recommendations had already been made, and were never able to support it by science The majority of studies that couldn’t confirm any health benefits to low-fat diets were largely ignored and considered “silent studies” it was too uncomfortable for anyone to admit they might have got things wrong The Minnesota Coronary Survey study wasn’t published for 16 years because the researchers weren’t happy with the results since they didn’t support a low-fat diet for reducing risk of heart disease [29:51] The demonization of cholesterol has been one of the greatest mistakes in human history All of the trials that swapped out saturated fats for polyunsaturated fats showed increased death rates from cancer but they were so convinced that lowering cholesterol was the answer so they accepted it One of the scariest parts of her book was researching the detrimental effects of vegetable oils which didn’t even exist in the food supply until the early 1900s The types of fats in vegetable oils can replace the stable fatty acids in our cell membranes, there are significant effects of these fats on our health There are over 100 clinical trials showing the benefit of carbohydrate restriction We need to ask what diet can people stick to in the real-world The metabolic ward studies are flawed because they are short-term Type-2 diabetes is reversible [41:31] Nina tried to get media coverage on type-2 diabetes remission with a ketogenic diet and the on air doctor wouldn’t allow it because it contradicted everything he had been promoting over the years Institutions have been promoting low-fat diets for so long that people can’t go back on their word Much of the media are funded by pharmaceutical companies so ads aren’t going to promote lifestyle factors that can get people off their medications There is huge corporate investments in meat replacements Nina is open minded to the carnivore movement based on the nutrient density of animal foods and the various toxins that can be in plant foods We are moving in the right direction by removing the caps on dietary cholesterol and dropping language around low-fat diets We need better science and grass-roots movements to continue this paradigm shift We need our doctors to be educated on this because no one wants to feel like they can’t trust their doctor, and we shouldn’t have to [51:18] The foods that are in institutions are determined by the dietary guidelines [52:02] If you belong to a large medical practice, you risk medical malpractice if you teach people a low-carb diet if it’s not standard of care, until it’s included in the dietary guidelines its not available as an option The focus of the Nutrition Coalition is about doing proper science and reviewing it properly and not ignore science and if the science is done correctly and not ignored we can get answers The current dietary guidelines for vegetarianism, mediteranean diet, and DASH diet are supported by almost no evidence We are dealing with politics not evidence We need more people spreading this message because everyone shares in a different way Today's interview is with Nina Teicholz, the New York Times best selling author of The Big Fat Surprise, Why Butter, Meat and Cheese Belong in a Healthy Diet. This book is nothing short of revolutionary. For decades we have been told that saturated fat, namely butter, meat and cheese, have no part in a healthy diet. We have been led to believe that this recommendation was clearly based in high quality science. Well, Nina blew the lid off that fallacy. Her book shows how poor that research actually is, and shows why we should not demonize or avoid saturated fat. She also has a fantastic message that we should not be promoting a one-diet-for-everyone approach. Our baseline metabolic health, our heritage, our genetics, and so much more makes us all individuals, and each individual will respond differently to different diets. In this week’s episode of Food, Sex & Life for the Modern Woman, Tawnee Prazak takes us through her journey of developing an eating disorder during her college years, and how she came out of that, recovering into what she has become now: a Holistic Endurance Coach. We go over the damages a woman’s body goes through when she’s an endurance athlete with the typical nutrition plan. She talks to us about getting real with the voices in our head and overcoming them, healing our bodies with functional medicine, what a healthy diet plan for women will look like to reach fat adaptation. Functional Medicine and Endurance Sports Most of us are overtraining for what is healthy for us without the proper nutrition. It’s not just a matter of going out for a long run, and eating all our calories back with low quality foods. “We need to fuel to train, not train to fuel” This is Tawnee’s sweet spot. Working with clients to find out exactly where their bodies are at in terms of hormone health and gut health, and making the changes necessary to still participate in endurance sports in the best health. On the podcast, she goes over some of the tests that can be ordered online to get this process started. There is so much good information in this episode, you’ll want to listen in a few times. What is Fat Adaptation? First and foremost, this is not for someone who has not found hormonal balance or hasn’t dealt with their autoimmune symptoms. This is for someone in optimal health. In Tawnee’s words, this is the healthiest you can do for your body. It entails eating a lot of fat. And unfortunately, in the US we have been taught that fat is bad. There are evil fats out there, ie: donuts, twinkies, too much pizza, etc. And there are good fats, generally in the form of oils, ie: coconut oil. Fat adaptation is when the body uses fat for energy, rather than carbs or sugars. But we have to drastically reduce our carbohydrate and sugar intake to train the body to burn our fat instead. The bodies preferred energy source are carbs and sugars because they’re more readily available as glucose, whereas fat has to be converted into glucose in order to be burned for energy. Nina Teicholz: Thanks for having me. It’s good to be here. Guy Lawrence: It’s awesome. Very excited about today. It’s a topic that definitely fascinates us. We’ve had various people coming on the show, talking about all things, fat especially, and looking forward to getting your collective experience over the years and being able to share it with us and our audience. Yeah, it’s going to be awesome. So, it’s much appreciated, Nina. So, just to get the show started and the ball rolling, would you mind just sharing a little bit about yourself, what you do and your own personal journey for everyone? Nina Teicholz: Right. Well, I’m a journalist. I’ve been a journalist for decades. I live in New York City. And about a decade ago I sort of plunged into this whole area of nutrition. And that started because I was doing a series of investigative food pieces for Gourmet Magazine, which is a food magazine in the states. And I was assigned to do a story about trans fats, which are now famous, but back then nobody really knew about it. I wrote this story that kind of broke that whole topic open in the U.S. That led to a book contract and I started writing a book about trans fats. And then I realized that there was this whole, huge, untold story about dietary fat in general and how our nutrition polices seemed to have gotten it terribly wrong. And then after that it was decade of reading every single nutrition science study I could get my hands on and just doing this, like, deep dive into nutrition science. At the end of which I wrote this book called, or I came out with a book that was published last year, called “The Big Fat Surprise: Why Butter, Meat and Cheese Belong in a Healthy Diet.” That book has been controversial, but also successful. It became a bestseller internationally in, you know, it really was the first book to really make the case for why not only fat was good for health, but saturated fat. As an investigative journalist, I was sent on an assignment to write a restaurant review column. There was no food stipend, and the chef's didn't want to send out grilled chicken and sautéed vegetables. The chefs wanted to send out red meat, cream, sauce, and pate. This was my introduction to this way of eating. All of a sudden, I lost the stubborn 10 pounds I'd been struggling with and my cholesterol markers looked great! I wanted to try to understand the history of why we believe what we do about saturated fat—and those efforts culminated in “The Big Fat Surprise.” 1950's: The nation panicked over the epidemic of heart disease—it was the #1 killer. A scientist name Ancel Keys proposed that saturated fats were the dietary culprit. He was a charismatic, forceful man who got his hypothesis into the American Diabetes Association. There were NO SCIENTIFIC TRIALS to back his hypothesis. His theory was based on epidemiological studies in seven countries that were cherry-picked to support his hypothesis. · He deliberately avoided countries like France, where they consume a diet rich in saturated fats but enjoy very low rates of heart disease. · PLUS, he went to Crete during lent—when they were abstaining from meats and rich foods! · There were no clinical studies to follow up his studies. After 50 years of following recommended low-fat diet guidelines, we are sicker than ever with a skyrocketing heart attack rate. What they've been telling us is wrong. We subsequently have clinical trials proving that Ancel Keys' hypothesis is not supported. Unfortunately, as a culture, our ingrained ideas are more from advertising than science. Suddenly, we were told to eat unsaturated fats like vegetable and grain oils instead of saturated fats like butter and lard. Why? 1948: $1.7 million went into the coffer of the American Heart Association from Proctor & Gamble. The edible-oil producing company sponsored the AHA's radio show and continues to back this authoritative body—which continues to recommend vegetable oils over butter and lard. Big Food has been very wise about steering the conversation about nutrition in this country. In fact, one VP of a big edible-oil company was quoted as saying, “If you pay $25,000 for a University study, you can ensure it will say what you want.” While you can't totally rig a study, you can sway it so you don't look so bad, or so that your product looks more favorable than it should. Why was the American public so easily steered into believing that just-invented foods like soy milk and soy hamburgers would restore our health? We had just landed on the moon. The science mindset was prevalent as we reevaluated what it meant to be a human being. All of these new things were “invented,” so they must be good. Faith in scientific invention left Americans open to these ideas. Women's magazines told housewives to ditch the “old way” of doing things, to put away lard and butter with the spinning wheel and grab a can of Crisco made by scientists in a sparkling factory instead! As a nation of immigrants removed from our traditions, we were quick to leave our heritage behind. The reality is that fats have been prized over time, and many scientists have proven over and over again that diets higher in fat are beneficial to health. · The Inuit consumed a diet comprised of 70% - 80% saturated fat, and they had no diabetes or heart disease. · According to George Mann's research, the African Massai consumed a diet of primarily blood, meat, and fat. The electrocardiographs of 400 Massai men revealed almost no traces of heart attack. The nutritional expert community became so closed to any ideas other than the idea that fat and saturated fat were bad for you, that the idea became enshrined as dogma so early on that any opposing idea was shunned. Ancel Keys would literally call people names in print when they disagreed with his theory, so much so that nutrition became a blood sport. Scientists with opposing viewpoints lost their research grants and were shut down and discredited. He would smear their names so they couldn't work in their field. By the 1980's, critics of Ancel's anti-fat theory ceased because to criticize was professional suicide. Honest, open debate was silenced. George Mann, who studied the Massai, was a critic and it cost him his research grant. So, what did we eat before the 1940's? There's a common misconception that we were primarily a plant-eating people. This theory was based on really bad data. In fact, we ate: · 3 – 4 times more red meat · 3 – 4 times more butter · 5 – 6 times more lard Vegetables were considered so nutritionally poor that they were not worth growing—they were a luxury. Before we could import kiwi and avocado, where were we getting our fruits and vegetables? Unless you were living in a tropical climate, fruit and vegetable consumption was season and sparse. “Historical facts move you to rethink this idea that returning to a plant-based diet is a good idea.” What role do vegetables and greens play in a healthy diet? Once we decided to cut meat, cheese, butter, dairy, and eggs out of our diet, that created a vacuum, a big empty space on the plate of the American diet that had to be filled with something. That's where the drive to eat more fruits and veggies came from. Saying that a vegetarian diet is off-based is one thing, and it's another to say that vegetables aren't part of a healthy diet. In fact, there are people who are incredible endurance athletes who are on a plant-based diet. From the scientific perspective, the reason diets of all different kinds work for people is: Most diets say to cut out sweets and desserts. Just by cutting out sugar, high fructose corn syrup, flour—just by getting rid of those things, everybody can lose weight, look better, and feel better. This is the basic starting point of why diets work. Bodies of large rigorous clinical trials show that a high fat (50%+) diet is better than low fat in terms of markers like diabetes, obesity, and heart disease. You can lose more weight on this kind of diet and lower those markers. Yes, you should eat fruits and vegetables, but you have to be mindful about how many carbs they are adding! Some fruits are high in sugar, and some starchy vegetables are high in carbohydrates. If you are a naturally lean person, you can do a lot more with your diet—you have a lot more leeway. But if you're obese, or someone fighting diabetes or heart disease, you are more sensitive to carbohydrates so you have to be careful about them in your diet. The science has been reevaluated: Saturated fats were unfairly accused of causing heart disease. They do not cause heart disease. The foods that we've been avoiding are nutritionally dense, depleting us of: folate, selenium, zinc, iron, vitamins A, D, E, K and fat-soluble vitamins. Evidence supports the benefit of bringing these foods back into our diet. Part of the problem is the word “fat.” We use it for so many bad things. What we don't often realize is that sugar is stored as fat, but dietary fat is used as energy. Nina, what are you eating? Eggs, bacon, sausage, cheese, nuts, leftovers, hamburgers, stews with bone broth, vegetables, chicken, fish. Generally speaking, no pasta or breads around the house. It's harder for women to eat more fat because there's a phobia about it. What would you say to women who want to change to a high-fat diet? It's so delicious and you're not hungry! Many women have succumbed to the constant obsession with calorie-counting. Here's the paradox: “The more you shift to protein and fat, the less craving you have for other foods!” For women, it's such an ugly handmaiden to be worried about food all the time. It's wonderful to be free of that. To lose weight on a low-fat diet, a woman has to consume less than 900 calories per day. That's deprivation. To have the government saying, “Here's our solution for you: Starvation,” that's no acceptable. What are you up to and where can we find you? The nutritional expert community became so closed to any ideas other than the idea that fat and saturated fat were bad for you, that the idea became enshrined as dogma so early on that any opposing idea was shunned. Ancel Keys would literally call people names in print when they disagreed with his theory, so much so that nutrition became a blood sport. Scientists with opposing viewpoints lost their research grants and were shut down and discredited. He would smear their names so they couldn't work in their field. By the 1980's, critics of Ancel's anti-fat theory ceased because to criticize was professional suicide. Honest, open debate was silenced. George Mann, who studied the Massai, was a critic and it cost him his research grant. So, what did we eat before the 1940's? There's a common misconception that we were primarily a plant-eating people. This theory was based on really bad data. In fact, we ate: · 3 – 4 times more red meat · 3 – 4 times more butter · 5 – 6 times more lard Vegetables were considered so nutritionally poor that they were not worth growing—they were a luxury. Before we could import kiwi and avocado, where were we getting our fruits and vegetables? Unless you were living in a tropical climate, fruit and vegetable consumption was season and sparse. “Historical facts move you to rethink this idea that returning to a plant-based diet is a good idea.” What role do vegetables and greens play in a healthy diet? Once we decided to cut meat, cheese, butter, dairy, and eggs out of our diet, that created a vacuum, a big empty space on the plate of the American diet that had to be filled with something. That's where the drive to eat more fruits and veggies came from. Saying that a vegetarian diet is off-based is one thing, and it's another to say that vegetables aren't part of a healthy diet. In fact, there are people who are incredible endurance athletes who are on a plant-based diet. From the scientific perspective, the reason diets of all different kinds work for people is: Most diets say to cut out sweets and desserts. Just by cutting out sugar, high fructose corn syrup, flour—just by getting rid of those things, everybody can lose weight, look better, and feel better. This is the basic starting point of why diets work. Bodies of large rigorous clinical trials show that a high fat (50%+) diet is better than low fat in terms of markers like diabetes, obesity, and heart disease. You can lose more weight on this kind of diet and lower those markers. Yes, you should eat fruits and vegetables, but you have to be mindful about how many carbs they are adding! Some fruits are high in sugar, and some starchy vegetables are high in carbohydrates. If you are a naturally lean person, you can do a lot more with your diet—you have a lot more leeway. But if you're obese, or someone fighting diabetes or heart disease, you are more sensitive to carbohydrates so you have to be careful about them in your diet. The science has been reevaluated: Saturated fats were unfairly accused of causing heart disease. They do not cause heart disease. The foods that we've been avoiding are nutritionally dense, depleting us of: folate, selenium, zinc, iron, vitamins A, D, E, K and fat-soluble vitamins. Evidence supports the benefit of bringing these foods back into our diet. Part of the problem is the word “fat.” We use it for so many bad things. What we don't often realize is that sugar is stored as fat, but dietary fat is used as energy. Nina, what are you eating? Eggs, bacon, sausage, cheese, nuts, leftovers, hamburgers, stews with bone broth, vegetables, chicken, fish. Generally speaking, no pasta or breads around the house. It's harder for women to eat more fat because there's a phobia about it. What would you say to women who want to change to a high-fat diet? It's so delicious and you're not hungry! Many women have succumbed to the constant obsession with calorie-counting. Here's the paradox: “The more you shift to protein and fat, the less craving you have for other foods!” For women, it's such an ugly handmaiden to be worried about food all the time. It's wonderful to be free of that. To lose weight on a low-fat diet, a woman has to consume less than 900 calories per day. That's deprivation. To have the government saying, “Here's our solution for you: Starvation,” that's no acceptable. What are you up to and where can we find you?
