Reedy discusses how Instagram and TikTok have changed our food culture and listeners share their favorite recipes that they first saw online.  BIRRIA TACOSDahianna | @_cookingwitdServes 6It was the Instagram post heard 'round the world in 2018, when an L.A. influencer posted a picture of his dinner from a neighborhood quesabirria taco truck. Almost instantly, influencers were scouring their own 'hoods for birria tacos, clamoring for that perfect shot of glistening, griddled tacos being dunked into Styrofoam cups full of dark pools of chile-infused goodness. Talk about gussying up #tacotuesday. Demand skyrocketed, with influencers piquing our interest for a dish that, prior to 2018, was barely known to most outside of Mexico. Birria tacos started popping up on Mexican restaurant menus across the country, and food bloggers began posting recipes for DIY tacos and Frankenfoods like birria ramen. This recipe slow simmers dried guajillo, ancho, and arbol chiles with garlic, onion, oregano, and cumin to out-birria the rest.HASHTAG PAIRING: #birriatacos #tacotime #whenidipyoudip #tacoboutawesome #birriaiswhyimbrokePHOTO TIP: With brownish foods like tacos, add pops of color with onion, cilantro, and lime 2 pounds boneless beef chuck roast6 cloves garlic5 dried guajillo chiles, stems and seeds removed5 dried chiles de arbol, stems and seeds removed4 dried ancho chiles, stems and seeds removed4 bay leaves½ medium white onion½ carrot1 tablespoon beef or chicken broth1 tablespoon dried oregano1 tablespoon ground cumin1½ teaspoons sugar1 teaspoon kosher salt12 yellow corn tortillas3 cups grated Chihuahua, Oaxaca, or Monterey Jack cheeseChopped white onion, chopped cilantro, and lime wedges for servingIn a large pot or Dutch oven, combine the beef, garlic, chiles,bay leaves, onion, carrot, and 6 cups of water. Bring to a boil overmedium heat, then simmer for 30 minutes. With a slotted spoon or skimmer, remove the garlic, chiles, bayleaves, onion, and carrot and place in a blender. Add about ½ cupof cooking liquid and puree. Add the broth, oregano, cumin, sugar,and salt and blend until thoroughly combined. Strain through afine-mesh sieve back into the pot with the beef and the remainingcooking liquid. Stir to combine, cover, and cook over low heat until the beefshreds with a fork, about 3 hours. Transfer the beef to a cutting board, allow to cool slightly, andshred it with two forks. To make the tacos, heat a cast-iron griddle or skillet overmedium-low heat. Dip a corn tortilla halfway into the broth in thepot. Place on the griddle and top with ¼ cup cheese and about½ cup shredded meat. Add 1 to 2 tablespoons of broth to thegriddle, fold the taco, and cook until the cheese melts and the meatsizzles. You can make several tacos at a time. When ready to serve, ladle broth into small individual bowls fordipping and top the broth and the tacos with chopped onion andcilantro. Serve with lime halves on the side.

Obviously let me know if someone else said this better Summary Formal overly-intellectual academese is bad. But using your 'cute' inside joke name for things is potentially worse. It makes people cringe, sounds like you are trying to take ownership of something, and excludes people. Use a name that is approachable but serious. The problem. Where did the term 'FOOM' come from, to refer to AGI risk? I asked GPT4: [!ai] AI The term 'foom' was coined by artificial intelligence researcher and author Eliezer Yudkowsky in his 2008 book titled "The Sequences". Yudkowsky used the term to refer to a hypothetical scenario where an artificial general intelligence (AGI) rapidly and exponentially improves its own intelligence, leading to an uncontrollable and potentially catastrophic outcome for humanity. The term 'foom' is a play on the word 'boom', representing the sudden and explosive nature of AGI development in this scenario. Another example: 'AI-not-kill-everyone-ism' Analogies to fairly successful movements: Global warming was not called ''Roast", and the movement was not called "anti-everyone-burns-up-ism" Nuclear holocaust was not called "mega-boom" Anti-slavery was not called ... (OK I won't touch this one) How well has the use of cute names worked in the past? I can't think of any examples where they have caught on in a positive way. The closest I can think of are "Nudge" (by Richard Thaler?) ... to describe choice-architecture interventions; - My impression is that the term 'nudge' got people to remember it but made it rather easy to dismiss others in that space have come up with names that caught on less well I think (like "sludge"), which also induce a bit of cringe "Woke" I think this example basically speaks for itself. Tea-Party movement This goes in the opposite direction perhaps (fairly successful), but I still think it's not quite as cringeworthy as FOOM. The term 'tea party' obviously has a long history in our culture, especially the "Boston Tea Party. What else? I asked GPT4 when have social movements used cute 'inside joke' names to refer to the threats faced? The suggestions are not half as cute or in-jokey as FOOM: Net Neutrality, The Umbrella Movement, Extinction Rebellion (XR), Occupy Wall Street (OWS) I asked it to get cuter... [1] Prodding it further... Climategate, Frankenfoods, Slacktivism ... also not so inside-jokey nor as cringeworthy IMO. Prodding it for more cutesy more inside-jokey yields a few terms that barely caught on, or didn't characterize the movement or the threat as a whole.[2] Thanks for listening. (01:20) Hey guys, this is Stu from 180 Nutrition, and I am delighted to welcome Darin Olien to the podcast. Darin, how are you mate? Darin (01:28) Hey, man. Stoked to be here with you. Hanging out on the deck. Ready to rip. Stu (01:36) You look super comfortable, and I love the sunshine in the background as well. For all of our listeners that are not watching this through YouTube, Darin's sitting outside on a super comfortable reclining chair. Looks like you got a pool in the background, and the sun is shining on the hills. I would like to be where you are right now. Darin (01:54) It's pretty great. And like we said before the recordings, very similar to Byron Bay. Stu (02:00) It is, we are surrounded by nature, and blessed with a great climate as well, couldn't be any happier. But first up, for all of our listeners that may not be familiar with you, or your work, I'd love if you could tell us a little bit about yourself, please. Darin (02:17) Oh man. Where do you begin? I think the early passions showed up when I was in sports, and going through awkward teenage times, and realized, "Oh, I have a lot I can do for myself." And started understanding that nutrition played a role in how I felt, and certainly at that time how I looked, because you're this insecure 16 year old. But really, the sports, and really trying to be the best I could in that. And that's where I really excelled, and realizing that exercise, and nutrition played a massive role. From 16 to 18, I gained 50 pounds of muscle, and was playing US football in high school, and college, and basketball, and track, and things like that. And then to cut through, playing college football is where I beat out a bunch of guys that on paper, should have beat me out, but my tenacity beat them out. (03:41) But then I got injured. Getting injured threw me into this contemplative place in college, where I was like, "Okay, what do I want to do with my life?" And these worlds collided, where I was injured, and I couldn't get better to play anymore. I turned my attention towards physiology, kinesiology, nutrition, and things like that, and realizing that this body, and this experience here was... And having a body was... Made sense to learn about it. I didn't really know what the career was going to be, but at least it started me getting excited. And then really cutting through. I learned more of... I went into rehabilitation, a little bit. And out of school. And then got into nutrition, and hooked up with some doctors. And then nutrition started becoming. And then functional food, before it was in term. I started formulating with stuff. And then the more I looked at incredible foods and compounds, the more I wanted to go and see for myself these foods, and how they were grown, and who was growing them, and where they came from. And that started what's termed as, the superfood hunting side of myself. (05:19) And then for a good 15 years, I was running everywhere. Learning from the business side of it too. From the business side of it, how do you actually take this novel thing, or this mushroom, or this adaptogen? How do I formulate with it? How do I help the business side of it? How do I work with these indigenous people? How do we make it scale? And then that came, I started formulating for some companies, and Beachbody became a big place where I could put my passion. I developed a lot of products for them. And then I think the excitement of, and also the reality of seeing the world in that way, it always became, it's not just about the food, or the supplement, it was about the environment. It was about the indigenous people. It was about the cultures. And so these worlds was coming together in all of these other passions that started. Cut to getting to do a TV show, getting to learn from experts in the environment. The world expands as you gain more knowledge, as you gain more wisdom, as you learn. Y Stu (06:57) It's been a journey. It sounds like it's been a hell of a journey. And I think for our listeners as well, that haven't put the pieces of the puzzle together. If they've seen the Netflix docuseries, Down to Earth, they would get a better insight into you, and the shenanigans that you get up to, and all the stuff that makes your brain, or excites your brain as well. But I remember I watched that when it first came out, and I thought, "This guy looks strong, he looks vital. I want to know what he does," because I'm a child of the seventies, and the eighties. I was born in 72, so I'm 50. And a little bit like you, I'm driven to want to live my best life, because the world as we know today, it throws so many roadblocks at us. In terms of crazy Frankenfoods, and environmental pollutants, and toxins, and social media, and all this stuff that can side track us. (07:55) But we just get this one life, and we are exposed to this fantastic journey on a beautiful planet that offers so much. I love the fact that I'm talking to you, because you've done so much of the stuff that I would love to do, and find out all of the secrets from a lot of the elders around the world that have truly embraced the world in its natural state. For our listeners, you're the superfood hunter. You've written a book called, SuperLife. You've got a gazillion hours and pages of content and assets online, and they can dig deep into that. I think the one thing that I'd like to ask, and almost cut to the chase, and dive into the cliff notes is, how do you eat then, today, given the fact that you've got a myriad of experience, and you've probably tried, and tested, and experimented on yourself through a whole barrage of foods, and nutritional principles. What is your philosophy around nutrition look like right now? Darin (08:59) Certainly, that's why I wrote SuperLife book, because it was so much of my philosophy. Even though they wanted me to write a book on super foods, I said, it's really the foundation of how you live. That's super important, and then you add things to it, or take away in the terms of, like you said, the toxins, and being aware of those things. The book has these pillars, but to summarize, on the one hand, the body is always seeking balance, and we're seeking balance. The ironic aspect of that is, are we ever? From her, I gained a deep, abiding love for magically transforming pantry items into mouth-watering family meals. I wanted to be a flavor scientist, But I also had a long and torrid affair with chemically-enhanced, laboratory-concocted “foods” that continued into my college years. At Berkeley, I majored in Nutrition & Food Science because I wanted to become a flavor scientist and create lab-concocted “Frankenfoods” for a living. (Not kidding.) At the time, the faculty was packed with world-class biochemists and food researchers — all of whom were strong advocates of the low-fat dogma. Like a sponge, I soaked it all in, and modified my diet accordingly. Steak and eggs were out; bagels and crackers were in. In the summer of 2010, I made the decision to go Paleo—and when I decide to do something, I commit all the way. I immediately cut out all grains, legumes, sugar, and processed food from my diet, and read everything I could about the science behind the Paleo diet. I quit doing all the crazy cardio and starting doing CrossFit. I was all-in. And you know what? I feel great! After working graveyard shifts for more than a decade, I'd been mentally and physically lagging—but once I changed my diet, I found that my energy levels improved significantly, and my moods were sunnier, too. I was a nicer mommy. Paleo's the only approach that's managed to improve my body composition and fuel me with enough energy to wrangle two small boys, hold down a full-time night shift job(I recently quit after 12 years of working graveyard shifts at the hospital!), cook for a houseful of hungry cavepeople, lift heavy(ish) stuff in the gym, and maintain a food blog. A half-year after switching to a Paleo approach to nutrition, I started Nom Nom Paleo to chronicle my culinary adventures. Since the fall of 2010, I've been regularly posting recipes and writing about how to stay Paleo when eating out. I offer kitchen tips and review my favorite cooking gadgets. Bio I've always loved the sights and smells of the kitchen. My mother was (and is) an excellent cook, and as a kid, I was her little shadow as she prepared supper each night. From her, I gained a deep, abiding love for magically transforming pantry items into mouth-watering family meals. I wanted to be a flavor scientist, But I also had a long and torrid affair with chemically-enhanced, laboratory-concocted “foods” that continued into my college years. At Berkeley, I majored in Nutrition & Food Science because I wanted to become a flavor scientist and create lab-concocted “Frankenfoods” for a living. (Not kidding.) At the time, the faculty was packed with world-class biochemists and food researchers — all of whom were strong advocates of the low-fat dogma. Here are 7 ways to detox from the areas where toxins are likely to be impacting you the most.   1 - Foods: Nutrient void, chemical laden, processed “sub food” have little nutrient value and are keeping us overweight, addicted, inflamed and frustrated with the way we look and feel. Imagine how you’d feel if you detoxed from “Frankenfoods” that were loaded in chemicals and stripped of their vital nutrients? Imagine how you’d feel if you detoxed from products high in sugar, the unhealthy fat found in trans fats, vegetable oils and hydrogenated oils? How would you feel if you detoxed from an addiction to soda, candy or caffeine? Consider how much better your body would perform without the steroids and antibiotics found in most dairy or if you eliminated GMO’s (genetically modified organisms) from your eating plan? What we eat is at the root of what’s creating health and wellness or illness and disease. If your diet is filled with unhealthy chemicals, preservatives, sugar and more, it’s impossible to look, feel and perform at your best. So what do you include? Include: Whole, real, nutrient-dense foods. Choose to not eat anything from a package or box. If it has a label, check to see if there are ingredients that sound like a lab experiment and consider what these ingredients are doing once they’re inside of you! Become a savvy label reader or better yet, stick to things your grandmother would have cooked with or would have recognized as food. Do you think she would have added Butylated Hydroxyanisole (BHA-added to prevent spoilage) to her apple pie or would she just have encouraged you to have a slice when it was fresh out of the oven? 2 - Products: Cleaning products and beauty products can be loaded with harsh chemicals and detergents. They can contribute to long-term health effects, such as cancer, asthma, reproductive disorders, hormone disruption, and neurotoxicity. The sudsing agents found in chemicals like diethanolamine (DEA) and triethanolamine (TEA) can form nitrosamines, which act as carcinogens that penetrate the skin. So what can we do? Include: Greener options and products that are chemical free.  Think about it: If it says “danger”,  “poison” or “hazardous to humans and domestic animals” on the label isn't that a sign we shouldn’t be using it? 3 - People: If you surround yourself with people who are negative, critical, judgmental and pessimistic, can you really be surprised if you feel deflated, depleted and uninspired? If your group is gossiping about the latest breakup, spending their time complaining about their lives (while doing nothing to improve it) or criticizing others for what they have (while they may secretly want those same things) is it any wonder why you may feel stagnant, unmotivated and not feel very good about yourself? So what do you do? Include: Surround yourself with people who are supportive, inspiring, loving and kind. Join groups with like-minded positive people, network to expand your circle and steer clear of the naysayers and energy vampires. Can’t find these positive, like-minded people? Start reading and learning about inspiring people, then find out where others who read these same books and learn from these same people hang out. Maybe there’s a conference, class or online forum? It’s been said that we’re the 5 people we spend the most time with. Find those that uplift you, support you and encourage you to be the best and highest version or yourself and watch your best self emerge. 4 - Media (TV, print): Any media that has you feeling tense, anxious, fearful and afraid is keeping your stress response turned on and will create physical, mental and emotional wear and tear. Is it really necessary to know about the celebrity club fight, plastic surgery or cheating partner? These images do nothing to boost our confidence, self-esteem or personal development while having us feel “less than”, not as beautiful, not as wealthy or not good enough in some way. Include: Commit to watching or reading any media that promotes a healthier, happier you. There are plenty of channels where you can learn how to cook, decorate, learn about a different culture, striving entrepreneur or heroic story. What we feed our minds, we become so be careful about what you’re allowing into your awareness, into your subconscious…and into your life. 5 - Thoughts: Negative thoughts like I’m so fat, dumb, lazy or unlovable keep us safe, stuck and small. Is it any wonder why we’re not going for that new opportunity, why we’re not speaking to that potential partner or why we’re accepting less than we deserve because of the negative self-talk we play in a continuous tape-loop in our head? So what can you do? Include: Commit to including more empowering thoughts like: “I’m working towards a healthier body each day”, “I’m smarter than I give myself credit for” or “I’m not lazy, I just don’t like doing that task!” Think better and bolder thoughts and you’ll become better and bolder. 6 - Water: So many chemicals can be found in our water and if that’s not bad enough, think about this: medications, toxic cleaning products, waste and other things we shouldn’t be having are polluting our water too. What can we do to detox from this dangerous waste? Include: Use a water filter-whether it’s a filtered water bottle, filtered water pitcher or an entire home filtration system, the more clear, clean, filtered water you use, the better. 7 - Sleep: Loud or stimulating TV, chaotic or cluttered surroundings as well as light coming from your alarm clock, computer and phone can all disrupt deep, restorative and rejuvenating sleep. How can you detox from a toxic bedroom? Include: Make your bedroom calm, serene, cool, dark and comfortable. A hot bath, warm cup of chamomile tea, scents like lavender on your pillow can help too. Create a sleep ritual and commit to getting the sleep you need to feel energized, focused and refreshed. Detoxing from the toxins in your life will encourage some allergies to clear up, better sleep, weight loss (toxins are stored in fat cells), better overall health, greater energy, improved immune function, glowing skin, a healthier digestive system and so much more. “Dr. Hyman, I’ve recently gone gluten-free, and I’ve seen tons of replacements for traditionally gluten-laden foods,” a writer recently emailed me. “I’m a little suspicious, but are any of these choices healthy?” We are all aware that “gluten-free” has become a major buzz term. Restaurants proudly offer options like gluten-free bread, and even mainstream supermarkets have whole aisles dedicated to the trend. Nearly everyone has jumped on the gluten-free bandwagon. I don’t recommend this to everyone – not at least until you understand a few facts … and here’s why. As a doctor who treats sick patients, I find that gluten often is a major cause of digestive, autoimmune, weight, mood and neurologic problems. While one would think that I would be 100% pro gluten-free, I want to be clear that there are some downsides to this trend. The biggest problem with demonizing a food substance is caused by the food industry. In a nutshell, this industry manipulates basic foods items and turns them into “Frankenfoods.” It does this by removing naturally derived ingredients and adding in other bad stuff to make up for loss of taste, consistency, etc. Witness the past popularities of, say, low-carb or fat-free diets and the so-called healthy fake foodstuffs that manufacturers invented to replace the foods containing the maligned ingredients. Go gluten-free, but do it correctly.

I'm a gearhead and believe in buy once, cry once for quality, but don't know whether the Ironmasters would be more than I need despite the space savings. I have exceptional upper body strength and have enjoyed heavier lifting over the years, but get bored easily and enjoy a lot of variation to keep me motivated. The difference in price between these two options is not as big a deal as getting something that I can get maximal use of over the years. What would you recommend? It is a very interesting read. I teach a unit on evolution, and nutrition, and my degree is in biochemistry so the book is a nice fit. Of the many interesting things I came across, was the mention of artificial sweeteners elevating insulin levels. Is this true? Also, will stevia have the same effects? Andrei asks: Hi Ben, what do you think about compression gear? Do they really work? And what's best, compression calf guards, compression socks, compression tights? Do you really need different ones for recovery or training? And are you using any? Zach J asks: I injured my shoulder doing dumbbell swings improperly late last November. It's healing, but it's a long, slow process. Just when it starts feeling pretty good, something I do will set it off again and it will hurt for a few days. Most recently, I was able to get into a pool and a couple laps of breast stroke made it ache for a few days. It handled the crawl alright though. My question is what are some ways I can a) speed healing of the rotator cuff, and b) still get a good, effective upper body workout without putting too much strain on that shoulder. Seems like every good upper body exercise (presses, rows, flies, etc) all stress the rotator cuff to one degree or another. Dale asks: In he stated that plastic bottles leach chemicals into the water in the bottle. He also stated color made a difference on how much chemical is leached. My bottle says it's bpa free. Josh Cox asks: I recently got a ton of tests done from a naturopathic doctor as I was constantly feeling lethargic, having sleep problems, as well as having a noticeable decline in my training performance (power output/low heart rate). Everything came out great except for my testosterone levels which is the main reason I got testing done. I had a hunch they were low (10.5 on a scale of 9-30). I also had an excessive amount of AST enzymes being produced (47 on a scale of 8-35). I'm only 22 years old and am currently training for some Ironman 70.3's, putting in around 20hrs a week. I'm pretty sure I hit a phase of overreaching/over-training, so I took a few days off due to the symptoms I described above. Anyhow, the doctor prescribed me to try out coconut oil an flaxseed oil for three months to see if that would help increase my testosterone and decrease my inflammation. I also bought some tribulus to, possibly, help as well. Is there anything else you would try if you were in my shoes? P.S. I know you're an advocate of high intensity training, but I have some extra time at the moment so long sessions work fine for me. Dr. John Bohstedt connects the dots in his discussion of Food politics: what everyone needs to know by Robert Paarlberg. His passionate interest in the politics of hunger is both historical and modern. As a University of Tennessee history professor, his research revealed hundreds of food riots during the Industrial Revolution. Today’s struggles over food are again making headlines. “As they did 250 years ago, the social drama of riots brings on stage political forces, conflicts and actors we may not have recognized,” he says. Dr. Bohstedt thinks most Americans are probably unaware of the offstage dramas of food politics, dramas that are brought to light in the book Food politics. “Paarlberg shows us how politics shapes our food chain—from abundance to obesity to E. coli to organic foods to farm bills to Freedom fries. Paarlberg raises important questions such as, how do our farmers—and the ‘American food regime’—and ethanol—and our menus—affect hungry Asians and Africans? Is ‘food aid’ a blessing or a curse? Why doesn’t ‘free-trade’ doctrine cover food? What about those ‘Frankenfoods?’ What might sustainable farming look like? Are we approaching the abyss of chronic food crisis or the sunny fields of the green revolution? Food is such a basic driver of human affairs,” says Bohstedt. “As I studied food riots in early modern England, I found that customary episodes of crowd violence were a form of bargaining between the common people and their rulers, indeed a first draft of the welfare state. We hear a lot about Genetically Modified foods, or Genetically Modified Organisms – GMOs. But what exactly are they, and why should we bother worrying about them? We would like to review what GMOs are with our listening audience, about how they are changing our relationship to food, and what we can do to take control of the types of foods we eat. First, let’s answer the question; ‘what are genetically-modified foods?’ When you hear someone use the term, “Frankenfoods”, there’s a good reason. Genetically-modified foods take genetic material from one organism and put it into another. This gives the organism – plant or animal – characteristics that it didn’t have before, which your body will not recognize and to that end, will create a disease state.

Nancy Kress (award winning science fiction author) is our featured guest. Robert Paarlberg is a professor of political science at Wellesley College and an associate at the Weatherhead Center for International Affairs at Harvard University. His principal research interests are international agricultural and environmental policy. His latest book, Starved for Science: How Biotechnology Is Being Kept Out of Africa, explains why poor African farmers are denied access to productive technologies, particularly genetically engineered seeds with improved resistance to insects and drought. In his Food for Thought lecture, Rob discuses why, after embracing agricultural science to become well fed, those in wealthy countries are instructing Africans — on the most dubious grounds — not to do the same.
