Gần 1 năm đã trôi qua kể từ khi chính quyền lần đầu phong tỏa đất nước chống đại dịch Covid-19, nước Pháp vẫn chưa thoát ra khoải vòng xoáy dịch bệnh, kéo theo đó là các biện pháp tái phong tỏa, giới nghiêm, hạn chế nhiều hoạt động kinh tế - văn hóa - xã hội. Các nhà hàng Pháp điêu đứng vì bị đóng cửa, hạn chế giờ mở cửa suốt nhiều tháng. Các nhà hàng ẩm thực sang trọng được gắn sao cũng không phải ngoại lệ. Thế nhưng, chính trong những giai đoạn gần như bế tắc đó, nhiều nhà hàng, đầu bếp có sao đã có những ý tưởng mới mẻ, dù không phải lúc nào cũng dễ thực hiện và mang lại nhiều lợi nhuận, nhưng có thể góp phần duy trì phần nào hoạt động của nhà hàng, giữ mối liên hệ với thực khách quen thuộc, thậm chí là thu hút được thêm những nhóm khách hàng mới. Ẩm thực cao cấp và hộp giấy Bán hàng cho khách mang đi vốn không phải là phương thức kinh doanh quen thuộc của các nhà hàng có sao. Các đầu bếp có sao thường chỉ quen phục vụ thực khách thưởng thức tại chỗ, món ăn được bày biện tinh tế, trang trí đẹp mắt, trong trong khung cảnh nhà hàng sang trọng, lịch lãm … Thời « tiền Covid-19 », chắc chẳng mấy đầu bếp có sao có thể tưởng tượng những món ăn do họ chế biến lại có thể được đựng trong những chiếc hộp giấy để giao cho khách. Thế nhưng, với Covid-19, thực tế đã cho thấy dường như không gì là không thể xảy ra. Bán hàng cho khách mang đi, giao món ăn đến tận nhà thực khách, khách hàng đặt món trên mạng rồi trực tiếp đến nhà hàng nhận món ăn (click and collect), hay thậm chí là khách hàng đặt món, rồi lái xe đến nhà hàng, chỉ cần ngồi yên trong xe hơi và đầu bếp sẽ mang món ăn ra tận xe giao cho khách (drive gastronomique) … đã trở thành những phương thức bán hàng được nhiều nhà hàng có sao lựa chọn ngay từ đợt phong tỏa đầu tiên hồi mùa xuân 2020. Trả lời đài France Info ngày 04/05/2020, đầu bếp có sao Nicolas Carro của một khách sạn tại thành phố Carantec, tỉnh Finistère, vùng Bretagne, cảm thấy rất hài lòng được phụ vụ thực khách theo phương thức « drive gastronomique » : « Thậm chí tôi còn cảm thấy xúc động. Vậy đấy ! Một phần chúng tôi có thể làm quen với khách hàng của chúng tôi. Điều đó khiến chúng tôi phấn khởi. Chúng tôi cần có tinh thần phấn chấn đó để tiếp tục, cũng như để lấy lại động lực và nhất là để mang lại động lực cho khách hàng của chúng tôi ». Vậy còn thực khách của nhà hàng cảm thấy thế nào về dịch vụ « drive gastronomique » của nhà hàng có sao ? Ngồi trong xe hơi chờ nhận món ăn, một nữ khách hàng lớn tuổi hài hước, hào hứng chia sẻ : « Đây là lần đầu tiên chúng tôi có thể thưởng thức những món ngon tuyệt vời mà lại có thể thoải mái liếm thức ăn dính trên ngón tay, trong khi trên người mặc bộ đồ thể thao, lại còn có thể gác cả chân lên bàn nữa chứ ». Còn một khách hàng khác nhận xét : « Đó là một đầu bếp xếp hạng sao và ông ấy bán các món ăn có giá cả phải chăng đối với tất cả mọi người trong giai đoạn khủng hoảng này, vì thế tôi tin rằng mọi người đều muốn tranh thủ thưởng thức ». Với giá thực đơn chỉ 25 euro, có rất đông người sành ăn tìm đến dịch vụ của đầu bếpNicolas Carro. Đầu bếp Nicolas Carro đã hợp tác với hai đầu bếp khác trong vùng. Vốn dĩ 3 người đều làm việc trong một chuỗi khách sạn trong vùng Bretagne, nên ban quản lý chuỗi khách sạn dành cho 3 đầu bếp một khu bếp ở thành phố Brest, tỉnh Finistère, để nấu nướng. Chỉ trong buổi tối 03/05/2020, tổng cộng 350 suất ăn đã được bán ra, một con số không hề nhỏ trong giai đoạn phong tỏa đợt 1. Còn đầu bếp hai sao Michelin, Jean Sulpice, chủ nhà hàng Auberge du Père Bise bên bờ hồ Annecy, thành phố Annecy, nhà hàng có sao đầu tiên của vùng Haute-Savoie, gần biên giới Pháp - Thụy Sỹ, triển khai phương thức bán hàng cho khách mang đi ngay từ đợt phong tỏa đầu tiên hồi mùa xuân năm 2020, nhấn mạnh : « Đối với tôi, ẩn chứa trong những chiếc hộp đựng đồ ăn này là cả một nghệ thuật nấu ăn hoàn toàn mới, thực khách mua về chỉ cần hâm nóng lên rồi thưởng thức. Đó là những món ăn mà chúng tôi đã nghĩ ra, thử nghiệm và thưởng thức … rồi chúng tôi đúc rút kinh nghiệm thành những lời khuyên để hướng dẫn thực khách cách làm nóng món ăn thế nào cho ngon nhất, như thể họ đang được thưởng thức món ăn ở nhà hàng vậy ». Đối với đầu bếp có sao Benjamin Delpierre, nhà hàng Atlantic, thành phố Wimereux, vùng Boulonnais, thách thức không phải là nấu ra các món ẩm thực cao cấp mà là chế biến ra món ngon phù hợp với việc đóng hộp cho thực khách mang đi : « Không phải lúc nào cũng có thể làm như vậy, bởi vì thiếu bầu không khí phục vụ ở nhà hàng, thiếu nét điểm xuyết ở bước hoàn thiện cuối cùng, nhưng mà đây cũng là một sự lựa chọn : hoặc là không có gì, hoặc là có được chút ít. Chúng tôi không thể sử dụng nhiều kỹ thuật nấu nướng nhưng chúng tôi vẫn có thể chế biến khá thành công các món ăn bán cho thực khách mang đi ».  Khi các đầu bếp có sao cùng chung tay ghi dấu ấn trong một món Để tạo nét phá cách, nhiều đầu bếp có sao ở các nhà hàng, khách sạn khác nhau đã « bắt tay », hợp tác, nhưng không phải là mỗi đầu bếp chế biến một món riêng mà họ chung tay, đóng góp tài năng vào cùng một món ăn. Trường hợp của đầu bếp Tony Régnier, nhà hàng L’Ilot Vert, thành phố Boulogne-sur-Mer, và đầu bếp Benjamin Delpierre là một ví dụ. Không cần phụ bếp, hai đầu bếp hạng sao tự mình làm mọi công đoạn trong căn bếp để phục vụ thực khách những món ăn, dù là để trong hộp giấy để mang đi, nhưng vẫn rất ngon miệng, ngon mắt. Ông Tony Régnier cho biết : « Hai chúng tôi cùng chuẩn bị cho một món. Vậy đấy ! Thực sự là chúng tôi đã cùng đóng góp vào đó sự thành thạo khéo léo chung của chúng tôi, nhưng nhất là chúng tôi góp vào món ăn bản sắc riêng, ý tưởng riêng của mỗi người để làm thực khách hài lòng (…) Chúng tôi nhận ra rằng khi làm việc cùng nhau kiểu như thế này thì cũng rất dễ vì chúng tôi có những nền tảng chung do đều được học hành, đào tạo, sau đó mỗi người đều có nét điểm xuyết nhỏ mang bản sắc riêng, có thể là với một hương thơm đặc biệt trong một loại sốt hoặc cũng có thể là một loại gia vị … » Như vậy là chỉ trong một món ăn, thực khách được thưởng thức tài nghệ không phải chỉ của một mà là hai đầu bếp đều được gắn sao, điều không dễ có, trong khi vào thời dịch bệnh, các nhà hàng có sao thường phục vụ thực khách với giá phải chăng hơn rất nhiều so với bình thường. Cơ hội tiếp cận nhóm thực khách mới Nữ đầu bếp hai sao Hélène Darroze của nhà hàng Joia, quận 2, Paris, chọn món bánh kẹp burger làm món chủ đạo cho phương thức bán hàng « click and collect », khách hàng đặt món trên mạng và đến nhà hàng nhận món mang đi. Du nhập đến Pháp từ nước Mỹ cách nay hơn 40 năm, bánh kẹp burger từ món ăn bình dân ở các quán ăn nhanh (fast food) vài năm trở lại đây đã trở thành món ăn được thực khách Pháp ưa chuộng, kể cả tại nhiều nhà hàng cao cấp kiểu truyền thống. Nhà hàng Joia phục vụ khách món bánh kẹp burger chất lượng, nóng hổi, đựng trong một loại hộp giấy có khả năng giữ bánh nóng được lâu, cho đến khi khách về đến nhà, với giá 15 euro. Trong thời Covid-19, món bánh kẹp burger được bán cho khách mang đi đã góp phần thu hút đến nhà hàng Joia rất đông thực khách, và đáng chú ý hơn là họ thuộc nhóm thực khách trẻ tuổi hơn so với nhóm thực khách truyền thống của nhà hàng thời « tiền Covid-19 ». Đây là một bất ngờ đối với đầu bếp hai sao Hélène Darroze : « Rõ ràng đây là một nhóm khách hàng mới. Nhiều thanh niên đến nhận bánh qua ô cửa sổ. Họ đến nhà hàng chúng tôi vì với họ mức giá như thế là có thể chấp nhận được. Như vậy là cánh cửa mở ra cho họ đến với chúng tôi. Đó là một điều tốt. » Mỗi ngày nhà hàng Joia có vài trăm khách đặt món, nên trên đài France Info ngày 12/11/2020 (trong đợt phong tỏa thứ 2), đầu bếp Hélène Darroze cho biết phương thức bán hàng mang đi kiểu này là có lãi. Nữ đầu bếp hai sao khi đó cho biết nhà hàng vẫn duy trì bán hàng cho khách mang đi kể cả sau giai đoạn phong tỏa. Còn đầu bếp ba sao Laurent Petit, tại Annecy, ngày 29/01/2021 chia sẻ trên đài France Info : « Chúng tôi vẫn giữ phản xạ, công cụ và cách thức làm việc. Nhờ thế mà, bất chấp mọi chuyện, chúng tôi đã có thể phục vụ thực khách món ăn trông rất hấp dẫn về thị giác và được đặt trong một chiếc hộp giấy (…) Điều lý thú trong câu chuyện về phương thức bán hàng click and collect và bán hàng cho khách mang đi là chúng tôi mang nghệ thuật nấu ăn 3 sao đến nhà quý vị và như vậy là nghệ thuật nấu ăn 3 sao đã được phổ biến rộng rãi ». Phải xoay xở với những phương thức nấu nướng, kinh doanh mới để tồn tại trong mùa đại dịch không phải là điều dễ dàng với các nhà hàng, cho dù là những nhà hàng ẩm thực danh giá có sao, thế nhưng nhiều đầu bếp danh tiếng vẫn không quên nghĩ tới việc nấu những món ngon mang đến các bệnh viện, trung tâm y tế để động viên khích lệ nhân viên y tế, lực lượng trên tuyến đầu cuộc chiến chống dịch. Chẳng hạn, các 5 nhà hàng có sao ở gần hồ Annecy, thành phố Annecy, đã chung tay chế biến món ăn mang đến cho y bác sĩ ở trung tâm y tế Annecy. Họ gọi đó là sự « trợ giúp ẩm thực ». Chủ nhà hàng hai sao Auberge du Père Bise, đầu bếp Jean Sulpice, nói một cách hình ảnh : « Chúng tôi đã quen với lửa. Bây giờ đến lượt họ, nên chúng tôi phải đỡ đần cho họ ». Khi đầu bếp có sao đích thân đến tận nhà phục vụ thực khách Sau những giai đoạn phong tỏa, nhiều đầu bếp có sao còn « tiến xa hơn » trong công cuộc chinh phục khách hàng thời dịch bệnh, không quản ngại ngần đến tận nhà khách để chế biến những món ngon mang dấu ấn riêng của họ và phục vụ thực khách tại gia theo đúng phong cách phục vụ riêng của nhà hàng, khách sạn. Đương nhiên chi phí cho đầu bếp sẽ là khác « một trời một vực » so với phương thức đến nhà hàng đặt món mang về nhà ăn. Theo tuần báo Pháp Le Point, đầu bếp ba sao Christophe Bacquié của khách sạn Castellet, tỉnh Var, người đoạt giải thưởng Meilleur Ouvrier de France năm 2004 (cuộc thi dành cho các thợ tay nghề cao tại Pháp), ngay từ sau đợt phong tỏa hồi mùa xuân 2020 đã khai trương chương trình « Đầu bếp tại nhà quý vị », sẵn sàng vượt quãng đường có thể lên đến 100 km để đến nhà khách hàng, chuẩn bị những món ngon thượng hạng ngay trước sự chứng kiến của họ, với giá 280 euro/thực khách với điều kiện bữa ăn phải có ít nhất 4 thực khách, vào bữa trưa hoặc bữa tối, từ thứ Tư đến Chủ Nhật hàng tuần. « Quý vị không thể đến nhà hàng thì đầu bếp sẽ đến tận nhà quý vị » là khẩu hiệu của đầu bếp một sao Frédéric Doucet. Vị đầu bếp này thì chỉ nhận phục vụ tại gia cho các thực khách sống trong bán kính 50 km quanh nơi ông làm việc, khách sạn - nhà hàng Charolles, tỉnh Saône-et-Loire, với giá 150 euro/bữa, từ 4-8 thực khách mỗi bữa. Trong khi đó, đầu bếp hai sao Olivier Nasti, thành phố Kaysersberg, tỉnh Haut-Rhin, người đoạt giải thưởng Meilleur Ouvrier de France năm 2007, nhận phục vụ khách hàng tại gia hàng ngày, mỗi ca phục vụ 3 giờ đồng hồ, với giá 185 euro/thực khách, trong phạm vi 4-10 thực khách/bữa. Trong mùa lễ tết cuối năm 2020, dịch vụ đầu bếp tại gia được nhiều gia đình kinh tế dư giả chào đón, bởi họ vừa được quây quần trong không khí gia đình ấm cúng, vừa được thưởng thức món ngon đặc biệt với phong cách phục vụ sang trọng như ở nhà hàng, khách sạn … Để đỡ tốn kém hơn, nhiều người chọn dịch vụ đặt món rồi mang về nhà ăn. Riêng bữa Giáng Sinh 2020, nhà hàng phục vụ các món ấm thực cao cấp được chế biến sẵn Dalloyau, Paris, đã đạt kỷ lục 2.000 đơn đặt món. Còn đơn đặt món cho bữa tất niên Dalloyau nhận được cũng tăng 8% so với năm 2019. (Tổng hợp France Info, France 3, Le Point)

Sarah Jane Morris in conversation with David Eastaugh In 1982, Morris joined The Republic as lead singer they received enormous publicity from the music press including cover stories with NME and City Limits and a documentary for Granada TV. But the band was deemed too political for radio play, with the exception of Capital London. The Republic were signed to Charlie Gillett's Oval Records Ltd and released an EP entitled Three Songs From The Republic and two singles entitled "One Chance" and "My Spies". Success did not follow and the band split up in 1984. Morris then sang with The Happy End, a 21-piece brass band named after Bertolt Brecht, Elisabeth Hauptmann and Kurt Weill's musical play. Playing a circuit that included Brighton's Zap Club and the Edinburgh Festival Fringe, The Happy End explored protest music from Africa, Ireland and Latin America on a way that emulated Charlie Haden's Liberation Music Orchestra. Morris explored her more theatrical side on Brecht/Eisler's There's Nothing Quite Like Money and Brecht/Weill's Pirate Jenny from The Threepenny Opera. The Happy End released two albums on the Cooking Vinyl label with Morris. Following a successful Edinburgh run in 1986, Morris then decamped to chart success with The Communards. Morris found fame initially with the Communards, who are best known for their hit "Don't Leave Me This Way". Morris featured prominently on many Communards tracks, her low and deep vocal range contrasting with Jimmy Somerville's falsetto. She has also recorded as a solo artist, releasing albums since 1989. These have enjoyed most popularity in Italy and Greece. Morris also contributed to the opera The Fall of the House of Usher (1991) by Peter Hammill and Judge Smith, singing the part of the chorus.[1] She also sang the part of Mère Ubu on the Pere Ubu album Long Live Père Ubu! (2009), which features songs from Bring Me The Head of Pere Ubu, David Thomas's theatrical adaptation of Alfred Jarry's Ubu Roi. She recorded an album of John Martyn covers with guitarist Tony Rémy in 2019 entitled Sweet Little Mystery.
