Summer Holidays!Lenten Hymns are my main preoccupation at the moment. I have a special bunch of Masses around the feast of the Annunciation this year.Turns out there are quite a few arrangements of Audi Benigne Conditor on CPDL.org, some of them for 3 parts and designed to alternate with the chant. I love this hymn. It's one I didn't know back when I assembled A New Book of Old Hymns.Back to the Little Office, January is still Christmas time or Office 3. The feast of the Purification of the Blessed Virgin Mary, now known as the Presentation of Jesus, 2nd February is the last day for Office 3. The beginning of the changeover to Office 1 comes at the end of Compline. Instead of finishing with the Christmas antiphon Alma Redemptoris, you change to the next antiphon, Ave Regina Caelorum. Then the next hour, Matins, is Office 1.I often describe Ave Regina Caelorum as the Lenten antiphon, though that isn't strictly accurate. Purification to Sacred Triduum is a better description, but it's a bit more wordy. So this change doesn't catapult us into Lent or even Septuagesima. Septuagesima Sunday falls on 16 February this year, so your last Alleluias happen at None of Saturday 15 February. From Vespers Saturday 15 February, use the “Laus tibi Domine” options.With regard to my own Little Office PDFs and reprints, a keen reader found that I had left out the third collect for Compline, so that has been remedied. With Chardonnay, you can choose whether it'll be a beautiful, unoaked, austere, minerally Chablis-style, or a big butter kiss, butter bomb, or anything in between. The Renziger Chardonnay is right in the middle of the teeter-totter. Biodynamic has some baggage to it, whereas regenerative farming takes the farming part of biodynamics, which is incredible. Organic farming is simply the elimination of chemical inputs. All it does is replace all that biological capital back into the soil. So the land never goes fallow. It's constantly being fed back. Farming is resource intensive. Regenerative farming means giving back so the land is not just restored, it's better than before the farming started. What does it mean to be part of a family brand of wine? Chris calls critter brands and concept brands that are developed by market research whiteboard wines. A family brand is inherently tied to a family and its name. Chris notes that his father burned the boats in the Roman tradition so to speak when he sold his business and uprooted his family and traveled 3,000 miles to start the winery. In developing the winery, all they had was each other and had to lean on each other through all the challenges from tough finances to wildfire. But they stayed together and as Chris notes, he was hosting Christmas dinner with 50 family members this year.   About Chris Benziger Chris Benziger was still in high school when he and his family moved from White Plains, New York, to California wine country. He quotes Gandhi: “First they ignored him, then they laughed at him, then they fought him, but then he won.” Today, in every single winery, particularly in Sonoma, Napa, Mendocino, Monterrey, and the counties that have very high prestige, every one of these wineries has some form of a sustainability program today. The Benziger family eventually realized that sheep were the answer to their challenges. They got a big flock of a special type of sheep called a Dorper. Their little cloven hoofs push debris down, like leaves, eliminating mildew pressure, so no mildecides. They eat the grasses underneath the vine, eliminating the need for herbicides like RoundUp. And they fertilize as they go which helps with microbial growth.  Chris says that even though it sounds odd to be putting cow dung in a horn and burying it in the ground, they're making a plant probiotic. That manure attracts microorganisms in the soil, and they're just small enough that they can fit through a cow horn. This is unbelievably healthy for the plants. In conventional farming, you water and feed the plant from the top. You're delivering everything at the surface so the roots stay at the surface. Biodynamics tells the vine, Hey, you've got to earn a living. We don't water or fertilize it. Now the roots do what they want to do, and go down into those different layers, find their own sources of moisture and nutrition, and that's how we get a better, more terroir-driven wine.   About Chris Benziger Chris Benziger was still in high school when he and his family moved from White Plains, New York, to California wine country. Rodrigo's interest in organic farming began at the Universidad Catôlica in Santiago, where he wrote his thesis on organic pest control. This paper led him to work with some esteemed leaders in the world of organic grape growing, including Alvaro Espinoza, Alan York, Ann Kramer, and Paul Dolan and Mike Benziger. After working as Director of Winemaking at Benziger he returned to Chile In 2012. Huneenus Vintners hired Rodrigo to convert four Chilean wineries and vineyards to organic and biodynamic farming. Next working for the Huneenus family at Quintessa in Napa Valley. But his time working in Sonoma made him think about all the mountain vineyards that he wasn't familiar with, which is when Far Mountain was conceived.  "Far Mountain, describes the vineyard sites we work with and the greater settings in which those vineyards lie. There is a beautiful symmetry in these places, in that they are not only special sites for wine growing, but places we are physically drawn to because of their splendor." Clark Smith has a Noam Chomsky story to tell. Clark Smith is in the studio for California Wine Country with Steve Jaxon and Dan Berger. Today he tells his MIT stories and more. The Clark Smith MIT story begins with his first two years of college, at Massachusetts Institute of Technology. This podcast episode is from the portion of the live show where Clark tells his personal story. Clark' last appearance on CWC was this episode of last March. The rest of Clark's conversation with Steve and Dan is about the wines he brought in today, so that has its own podcast episode, here. Clark Smith dropped out of MIT after two years and we finally hear the story today. At MIT, the senior faculty teach the Freshman courses. So he had Noam Chomsky for Linguistics, Francis Crick for microbiology, and several others. The trouble came when he had to declare a major at the beginning of his junior year, after earning straight As his first two years. He wanted to create his own major that combined science and art in some way. Today, that is a common practice in universities but at that time, he was not able to do it. So he dropped out thinking he would take a year to figure it out. The One-Way Cross Country Trip That is when Clark and a friend drove across the country and he ended up getting a job in a wine shop in Oakland. Someone asked him about a bottle of Paul Masson Emerald Dry wine. He didn't have the answer, so he started tasting the wines, eventually all of them. There were 250 wineries in the US and he visited a lot of them, maybe “all” of them. One day while visiting a winery he told his wife, that this was his calling. He is happy to have found the art plus science angle he was looking for. After that, he completed the BS and MS programs at UC Davis. Then he helped found RH Philips winery and he started his WineSmith consultancy. Click the logo to visit Davis Bynum Wines. When he was working for Benziger, their owner needed to find non-alcoholic wine. So he bought a reverse osmosis machine. One of the big problems of winemaking up to the 1970 was how to get rid of VA, Volatile Acidity, i.e. vinegar. In 1960 the average wine in California was 18.5% ABV, mostly Port and Sherry but that was before enough people learned how to really do it. Dan Berger and Clark Smith. Clark Smith returns to California Wine Country with Steve Jaxon and Dan Berger today, to talk about pairing wine with music and other vinous subjects. His last episode was this one on December 8, 2021. He talked about his book on pairing wine with music. His website, called Who Is Clark Smith dot com, explains all about his consulting practice and his writing. His other website, called WineSmith Wines dot com, is all about his winemaking, including his use of many unusual grapes and winemaking techniques. Finally, Clark's website about wine and music is called Pairing Wine and Music dot com. Clark Smith returns to California Wine Country today for the sixth time. He was actually our guest seven years ago, on the first podcast edition of CWC with Steve Jaxon and Dan Berger, here on March 15, 2017. To celebrate the 2017 start date, Dan Berger has chosen a 2017 bottle from his personal cellar, to open and taste on today's show. It is a 2017 Zinfandel from Ridge Vineyards. It all started with Mateus Rosé When Clark Smith came to California, there were only about 250 wineries in the United States. The average alcohol of a California wine in the 1960s was 18.5%, but by 1970 the average had dropped to 11%. "Everyone wanted to make Blue Nun knock-offs." Steve Jaxon's first experiene with wine was Mateus Rosé. (They had a catchy jingle on their radio and TV ads.) Clark admits that half of the wines he sold in the 1970s  were "crap" but "we have cleaned up our act" since then. This dark angry music from the Doors matches the dark angry 2013 Cabernet. The opposite of that music would be Beer Barrel Polka, which played against the same wine, ruins the wine. "Wine is liquid music," says Clark. He and his colleague Don Blackburn were consulting to Benziger in the 1990s. Originally, it was Don that demonstrated the pairing of music and wine to Clark. They are tasting a wine made with a grape called Norton, which was a native American grape, not a European strain. Doctor Norton discovered it in the 1800s and he gave his name to the grape. It is popular in Missouri and Virginia, where it grows. They will taste this wine against the Bing Crosby song, Moonlight Becomes You. Winesmith makes wine from about 12 different vineyards in California and one in Kansas City. Clark coaches about another 120 wineries spread out all over the world. Clark and Dan were both involved in the website Appellation America which was an attempt to produce a complete catalog of American wine production. Chris Benziger comes from a long line of family working in the beverage business, starting with his grandfather smuggling Canadian whiskey into America on a tugboat during prohibition. But it was his oldest brother Mike who realized so much great wine was coming out of California and convinced his entrenched New York City family to move across the country and start a winery in Northern California.All this happened when Chris was just 15 years old and after helping the family build the farm and then going off to college and working for many years in another career, he was wooed back to the winery to become a partner where he was instrumental in making Benziger a bio dynamic winery, which stopped using pesticides and chemicals to grow their grapes. Chris got married, had a family and knew that he would be dedicated to Benziger Wines for the rest of his life. Then the unthinkable happened, his older brother was diagnosed with what was likely terminal cancer and the family and partners decided to sell the winery without consulting Chris. Lisa Amaroli, winemaker, Benziger Family Winery This podcast show is originally from August 19, 2020, featuring Lisa Amaroli, winemaker, and Chris Benziger, from Benziger Family Winery. (Due to a schedule pre-empt for an Nba game, there is no new CWC show this week.) Lisa Amaroli, winemaker at Benziger Family Winery, and Chris Benziger both join Steve Jaxon and Dan Berger on California Wine Country. Chris' family founded the winery in the early 1970s and Lisa Amaroli has been their winemaker since 1999. Chris Benziger tells the family story. His grandfather was a bootlegger during Prohibition. After WWII, he came back, legitimized his liquor distribution business, then Chris' eldest brother Mike moved to California to the Livermore Valley for a winery called Stoney Ridge. They called it the reform school for grapes, they used fruit that nobody else wanted. His brother and father decided to go into the wine business and the whole family moved from New York City to Sonoma. They bought an old ranch that had been vacant since Prohibition. Their success started with the 1981 Sonoma County Harvest Fair. It was Dan Berger's first wine competition as a judge. The family made Chardonnay, Sauvignon Blanc and Cabernet. In a big surprise, they won the sweepstakes, N.1 with Sauvignon Blanc and 2nd with the Chardonnay. This put them on the map. Dan finds that their Sauvignon Blanc is a lot like a white Bordeaux. It has so much acid, a 3.03 pH so it needs the contact with lees to build creaminess. Dan says that SV made like this is a rare treat. Instead of green herbaceous flavors, you get stressed vines, so you get more minerality and steeliness from the variety. It's unusual to have mountain-grown SV. Lisa lived in Heidelberg and visited France enough to fall in love with their practices of food and wine. Back in the US, a friend encouraged her to go to college and she attended Sonoma State studying Biology and Chemistry. Instead of medicine she found that she might find work in the wine business and got a job working for Kerry Damskey. (Kerry Damskey was on California Wine Country on this episode in March of 2018.) He put her to work sampling grapes and she was hooked. She has taken lots of classes at UC Davis and has had lots of mentors over the years. She's glad that the Benzigers let her make their commercial brands with total trust and nothing but support. "It's been a really great experience to be a woman winemaker at Benziger." They are tasting a 2017 which was a fire year. Chris lost his house to fire, but managed to save some bottles from his wine collection by throwing them into the swimming pool before evacuating. Chris calls Chardonnay the blank canvas of wines, in that it can come out many different ways depending on how it is grown and treated.

Amber created The Anxiety Lab, a monthly membership program full of courses, workbooks, speakers, and educational content to help people manage their anxiety. First, we dive into talking about racism in a therapy setting, Amber speaks about her switch to telehealth, and then Amber reveals the inspiration behind The Anxiety Lab. Plus, Amber explains why we need to stop doubting ourselves; we can execute our great ideas and help even more people outside of the therapy room. Meet Amber Benziger Hey, I'm Amber, a Licensed Professional Counselor and Certified Clinical Trauma Professional in the state of New Jersey. I am a therapist, an advocate, a feeler, and a flawed human.  My goals are to create an environment for women to come, explore and process their feelings; and heal from their troubles while growing in self-compassion and self-worth. I'm no stranger to anxiety and perfectionism and through my own journey of self-exploration, I fell in love with the therapeutic process. When I'm not in my therapy chair I'm a busy mom of two, a runner, a french bulldog enthusiast, and an avocado toast connoisseur.  I curse too much, I find solace at the beach, and I love spray painting stuff. Speaking About Racism In Therapy As a Black therapist, Amber thinks it is imperative for her to discuss racism and advocate for equality because of her unique perspective. A larger majority of Amber's practice is women of color. Lately, Amber has seen a lot of racial trauma and a lot of anxiety around the election. Racism isn't something new. However, it does have a spotlight on it. So, Amber is talking about much more in her practice than she ever has before. It is critical to hold space for racial issues still, primarily because they haven't gone away, and people still have those concerns and worry. Racism isn't a trend, it's something that has always been there, and it seems like something that will always be around. Switching To Telehealth Before the pandemic, Amber had one or two clients online, but her practice was basically in the office. So, during the pandemic, Amber had to make that switch to telehealth, like many practitioners. She was worried about how that transition would go, and luckily, her clients were fantastic. Plus, Amber has just seen her practice grow incredibly in the past few months with the pandemic. She even has a waiting list and has turned people away. However, it's a struggle for Amber because she wants to help people who are having a hard time. Sometimes, it can be heartbreaking to turn a client away. That's why Amber created her membership service, The Anxiety Lab. The Anxiety Lab The Anxiety Lab is a monthly membership program full of courses, workbooks, speakers, and educational content to help manage your anxiety. The program is accompanied by a private online Facebook community where you can interact with Amber and your peers. Amber created it because it was something that she felt like she needed during the pandemic. During Covid, living under the same roof with kids and spouses can be really stressful, and Amber became really anxious herself. Then, Amber started getting a bunch of calls and a bunch of people reaching out to her through social media platforms about working with her. That made Amber feel even more overwhelmed and stressed out. So, she had the idea of creating The Anxiety Lab. Creating A Membership Program Amber is not a technology person. So that was the part that overwhelmed her. As practitioners, we're always questioning if we know how to do all this next-level stuff. So, Amber did a lot of research, and she decided to use the platform Kajabi. It is great for membership services because it allows Amber to put the courses on there, and it allows for the community aspect. That way, Amber doesn't have to use a different tool, and she can do everything on Kajabi. It will even let you send out email marketing; it's like a one-stop-shop for everything you need to create a membership program. Marketing Your Membership Program Amber will market a lot through her social media platforms, specifically Instagram. Amber will make connections on Instagram with other therapists and private practice owners. Plus, she jumps on Instagram Live with people who have a larger following. In addition, Amber dabbles with Facebook Ads; it's something that she still needs to learn more about. Overall, Amber utilizes a lot of word of mouth to get people to The Anxiety Lab. Plus, her therapist friends have been a lot of help when it comes to spreading the word. Lisa Amaroli, winemaker, Benziger Family Winery Lisa Amaroli, winemaker at Benziger Family Winery, and Chris Benziger both join Steve Jaxon and Dan Berger on California Wine Country today. Chris' family founded the winery in the early 1970s and Lisa Amaroli has been their winemaker since 1999. Chris Benziger tells the family story. His grandfather was a bootlegger during Prohibition. After WWII, he came back, legitimized his liquor distribution business, then Chris' eldest brother Mike moved to California to the Livermore Valley for a winery called Stoney Ridge. They called it the reform school for grapes, they used fruit that nobody else wanted. His brother and father decided to go into the wine business and the whole family moved from New York City to Sonoma. They bought an old ranch that had been vacant since Prohibition. Their success started with the 1981 Sonoma County Harvest Fair. It was Dan Berger's first wine competition as a judge. The family made Chardonnay, Sauvignon Blanc and Cabernet. In a big surprise, they won the sweepstakes, N.1 with Sauvignon Blanc and 2nd with the Chardonnay. This put them on the map. Dan finds that their Sauvignon Blanc is a lot like a white Bordeaux. Lisa Amaroli says their estate properties are all bio-dynamically farmed. It has so much acid, a 3.03 pH so it needs the contact with lees to build creaminess. Dan says that SV made like this is a rare treat. Instead of green herbaceous flavors, you get stressed vines, so you get more minerality and steeliness from the variety. It's unusual to have mountain-grown SV. Lisa grew up in Sonoma County in a conservative family where the sons were supposed to go to college and the girls were supposed to marry. She instead went to live in Europe, lived in Heidelberg and visited France enough to fall in love with their practices of food and wine. Back in the US, a friend encouraged her to go to college and she attended Sonoma State studying Biology and Chemistry. Instead of medicine she found that she might find work in the wine business and got a job working for Kerry Damskey.  (Kerry Damskey was on California Wine Country on this episode in March of 2018.) He put her to work sampling grapes and she was hooked. She has taken lots of classes at UC Davis and has had lots of mentors over the years. She's glad that the Benzigers let her make their commercial brands with total trust and nothing but support. "It's been a really great experience to be a woman winemaker at Benziger." They are tasting a 2017 which was a fire year. Chris lost his house to fire, but managed to save some bottles from his wine collection by throwing them into the swimming pool before evacuating. Chris calls Chardonnay the blank canvas of wines, in that it can come out many different ways depending on how it is grown and treated. Benziger Family Winery is well represented at Bottle Barn. It's unusual to have mountain-grown SV. Lisa grew up in Sonoma County in a conservative family where the sons were supposed to go to college and the girls were supposed to marry. She instead went to live in Europe, lived in Heidelberg and visited France enough to fall in love with their practices of food and wine. Back in the US, a friend encouraged her to go to college and she attended Sonoma State studying Biology and Chemistry. Instead of medicine she found that she might find work in the wine business and got a job working for Kerry Damskey.  (Kerry Damskey was on California Wine Country on this episode in March of 2018.) He put her to work sampling grapes and she was hooked. She has taken lots of classes at UC Davis and has had lots of mentors over the years. She's glad that the Benzigers let her make their commercial brands with total trust and nothing but support. "It's been a really great experience to be a woman winemaker at Benziger." They are tasting a 2017 which was a fire year. Chris lost his house to fire, but managed to save some bottles from his wine collection by throwing them into the swimming pool before evacuating. Chris calls Chardonnay the blank canvas of wines, in that it can come out many different ways depending on how it is grown and treated. Benziger Family Winery is well represented at Bottle Barn. A Virginia native, Martin was present at the inception of what is now considered one of that state’s premier wine producers, Boxwood Estate Winery, in 2005. As Executive Vice President of Winery Operations, Martin’s job was to oversee all facets of production, sales and marketing of Boxwood’s award-winning whites, rosés and Bordeaux-style red blends. Martin’s forward thinking led directly to Middleburg having its own wine identity separate from the more generic Virginia designation, making her well suited to again start from scratch with Oceano Wines. Jancis Robinson noted Martin’s marketing savvy in her book “American Wine.” Marbue Marke earned his enology degree from Davis and, subsequently, added to his academic resume with an MBA from Sonoma State University. His practical experience began at J Winery in Sonoma, followed by a series of moves, each adding another piece to the puzzle that is winemaking. At Cosentino Winery, he learned about the rarefied world of high-end Napa wines. He was then a barrel enologist at R.H. Philips. For two years, Marke was charged with cooperage studies, an offshoot field that many winemakers are not experienced in. During a stint at Benziger, he was immersed in that family’s heightened concern for soil and winemaking purity. From there, Marke made a seemingly counterintuitive jump to Gallo. He reasoned that it’s always a good idea to revisit the basics of one’s craft, and given Gallo’s depth and breadth of resources, it was the perfect place for him to hone all of the skills associated with the production process. But perhaps the most pivotal move he made, at least in terms of his future connection to Oceano, was his decision to sign on as John Caldwell’s winemaker. That Marke began working with Caldwell turned out to be prophetic for Rachel  . She met Marke by way of her very own connection to Caldwell. She sourced the plant material for Boxwood Estate Winery’s first vineyard block from him. Marke has since taken over as the Director of Winegrowing at Italics Winegrowers in Coombsville, one of Napa Valley’s cooler climes and another serendipitous similarity with Spanish Springs Vineyard. Subscription-based newsletter Beer Business Daily reported that Credit Suisse analyst Kaumil Gajrawala pegged the transaction at under $100 million.According to financial services firm Cowen, Ballast Point sales are down 32% year-to-date.Brooklyn Brewery Restructures U.S. Sales StaffBrooklyn Brewery has restructured its U.S. sales team in an effort “to better reflect the realities of the current U.S. beer market,” the company announced this week.“Simply put, craft brewers have been putting too many resources into hand selling, and have been under-investing in the marketing and brand building sides of the business for too long,” the company said. “In some markets supplier reps outnumber distributor reps, with craft brewers continually adding staff and creating a headcount race that isn’t sustainable. Brooklyn, which sold a 24.5 percent stake to Japan’s Kirin Brewery in October 2016, acquired undisclosed minority stakes in both craft breweries.Constellation Brands CFO Named New CEO of Canopy GrowthCanadian Cannabis company Canopy Growth Corporation announced today the appointment of David Klein as CEO, effective January 14, 2020.Klein has served as the chief financial officer of Constellation Brands since mid-2015. Klein’s appointment as chief executive comes just two months after he was named chairman of the Canadian cannabis company’s board of directors. He will step down from his CFO role at Constellation upon assuming the Canopy CEO role.Canopy Growth and Constellation Brands have been intertwined since the New York-headquartered beer, wine and spirits company made its first investment of $191 million in the cannabis company in October 2017. All in, Constellation Brands has invested $4 billion in Canopy Growth for a 38% ownership stake in the company.The move comes a week before THC-infused beverages and edibles will become legal in Canada on December 17.Klein’s ascension to CEO follows a turbulent run for Canopy as the company’s financial results continued to underperform. Canopy announced in June that co-founder and co-CEO Bruce Linton had stepped down as CEO. Rudolf Steiner, who lived from 1861 to 1925, is remembered and revered as a prophet of renewal, asking and answering the question how do we create systems, protocols, and procedures that works alongside what nature provides humans? I’ve learned all of this since visiting the Benziger Family Winery; a beautiful family farm in the Sonoma Valley. The Benziger family winery website describes biodynamic farming as "when you eliminate all the artificial crutches, you learn to trust your instincts and to trust nature’s ability and capacity to make a great wine." How might that apply to humans? When you eliminate all the artificial crutches, you learn to trust your instincts and to trust nature’s ability and capacity to make a great human being. But losing the artificial crutches is not without risk. It's almost guaranteed you'll fall and what you learn when you get up from that fall is called integrity. When you have integrity you have an internal structure so there is no need for something artificial to prop you up. No crutches. Chris Benziger carries the tradition of his family’s winery into the next generation, with all of Benziger’s releases certified sustainable, organic or biodynamic. John Concannon is an advocate for environmental stewardship and sustainability. As a fourth generation vintner, he is hoping for a future as bright as his family’s rich legacy: from bottling the first petite sirah in 1961 to importing key cab clones from Chateau Margaux in 1893 that are now found throughout California. Plus, Chris and John stick around to help with this week’s customer Q&A about wine in cans.

In the mouth it's a fruit bomb, jammy, chewy and lip smacking good. Slick and sappy with mild tannins and a delicious, long savory finish. 20% new american oak 583 cs $25 - $29  2011 Mas Des Dames La Dame Imported by Vintage 59 and farmed organically by Lidewij van Wilgen. AOC Coteaux Languedoc/ 20%Syrah, 50% Grenache, 30% Carignan.  On the nose, blackfruit, mulberry, earth, leather and herbs.
