Lave muito bem as sardinhas comágua corrente quando terminar de limpar.Ou peça para limparem em suapeixaria de preferência! Eles fazem isso.Pique os legumes do escabeche desardinha. As cebolas, os tomates, os pimentões (opcional) e os alhos. Misture num bowl junto com asalsinha. Outra opção é cortar os legumes em rodelas para dispor em camadas napanela.Retire as sementes dos tomates edos pimentões antes de picar.Numa panela comum ou de barrocoloque um fio generoso de azeite e monte as camadas do escabeche: primeirocoloque uma camada dos legumes picados e tempere com um pouco de sal e pimenta,depois coloque uma camada de sardinhas abertas ao meio, e regue com um pouco deazeite.Dica: Modere a quantidade de salentre cada camada, para que esta receita de sardinha escabeche não fiquesalgada.Tempere as sardinhas com sal,pimenta e colorau.
