Bottura's restaurant career began in 1986, he later worked with Alain Ducasse in Monaco and at El Bulli. The Italian chef Massimo Bottura may be a big dreamer, but he's also a firmly grounded-in-the-earth operator. Based in Modena, Italy, Bottura is famous for his three-Michelin-starred restaurant, Osteria Francescana, which has twice held the top spot on the World's 50 Best Restaurants list. He also runs Food for Soul, a nonprofit dedicated to promoting social awareness about food waste and world hunger. With its first Refettorio opened in 2015, Food for Soul now runs a network of 13 Refettorios around the world—from Paris to San Francisco to Naples—designed to serve people in need via food-recovery programs. In 2019, with his wife, Lara Gilmore, he also opened Casa Maria Luigia, a hospitality concept in the Emilian countryside that became the jumping-off point for their new recipes-slash-interiors book, Slow Food, Fast Cars (Phaidon). George Webber is a dedicated Sonoma Historian. We have many of Lidia's cookbooks, however this recipe was not in any of them! We're pretty sure this recipe is only from one of her many cooking shows. Mix wellTransfer to a baking dishIn the same mixing bowl add the sliced cherry tomatoes, the rest of the olive oil, salt & peppermix well, and add to the top pf the potatoes. sprinkle vegan parm on top. Bake at 450F for at least an hour or until the potatoes are tender. You could par cook the potatoes first to shorten the cooking time. If you do, bake at 425F.Support the show

What are you doing in our pantry? Where’s Marta?” I spoke slowly and methodically, hoping that panic wasn’t evident in my voice. “Oh, hi, Willow. I was hoping to see your mother. Marta’s upstairs vacuuming.” I didn’t mention Gabby and prayed Marta wouldn’t reappear and mention her either. “How’d your father’s signing go today?” “It was canceled. Daddy had to go to New York City to meet with his agent and a film producer. They’re turning his new book into a movie.” Her jaw tightened. “But I still don’t know why you’re in our kitchen.” “I couldn’t help checking out your mother’s impressive ingredients. I’m in awe of her talent.” My lies were going to catch up with me soon. “Are you here alone?” “Of course.” If Gabby was found, things would get worse. I hoped she’d overhear our exchange and head for the car. “Your mother keeps a well-stocked pantry.” “That’s right. Mother said you were a chef.” Willow gave a smug smile. “She must have been jealous of you. She can barely manage to turn on an oven without help.” I was surprised to hear her admit it. “You’re not a fan of her show?” Willow shrugged. “It’s all right. Mother gets paid a ridiculous amount of money for doing nothing. She hates to cook. You know how some mothers bake cookies with their kids?” “Yes.” How I yearned to do that someday. “Not my mother,” she said in annoyance. “I made cookies with Marta instead. She’s the one who has taken care of me since I was a baby. Mother was always too busy trying to be in the limelight. The high society princess. Wife of a famous author. No time to be a parent. Honestly, I’m not quite sure why she even bothered to have me.” “Why are you telling me this?” It seemed weird that she’d share all of this intimate information with a stranger. It also sounded like she resented Sylvia. “Why not? It makes no difference if you or the entire world knows. I’m sick and tired of being their puppet. As soon as I turn twenty-one and get my trust fund, I’m out of here. They’re both so self-centered they couldn’t care less what happens to me.” “I’m sure that’s not true.” I wondered if she knew about Daphne’s baby and decided to fan the flame a bit.

This week’s Feast Yr Ears features the incredible story of Franco Lania. As a troubled teenager trying to find his way, Master Chef Franco Lania says, “food saved my life”. Freshly out of high school, Franco’s father took him kicking and screaming to Kings Supermarket in Short Hills, New Jersey for a job. By the second week, Franco was enjoying his training where he discovered flavors and tastes that he never in his wildest dreams knew existed. Franco started to come alive. Through that job, he slowly but surely fell in love with food. Not only did he want to taste new things like ambrosia salad, he wanted to learn how to make them. Franco found his passion from which he later created the philosophy,“as you design your dishes and design your meals, you can design your life.” And design he did. Franco made his way to Le Cordon Bleu in London where he graduated with the_ Grand Diplôme_. Franco wanted to continue his quest for knowledge, so he attended the Master Course at the Italian Culinary Arts Institute in Costigliole d’Asti, Italy. Upon finishing his education, Franco’s culinary talent earned him the Sous Chef position at a new restaurant, slated to open in New York City. The job required that he take the Department of Health test for a food handler’s certificate. Franco arrived early at the World Trade Center on that beautiful, but tragic morning, September 11, 2001. Franco escaped, but the restaurant opening was delayed, and thus began a series of professional and personal hardships that sent him to the base bottom of his life. Franco could not even begin to think how he could move forward with his life, which left him subsisting on Pringles and orange soda. After a move to Miami, Franco took a job at a small Italian restaurant on South Beach that served delicious, simple food. He started to feel a nourishment that he had not felt in a long time. Franco was able to start orchestrating a plan. He realized his brain needed real food. Basic pasta. Chicken with onions. When he would make his chicken and onions dish, he discovered it was like therapy. The mouthwatering aromas enlivened him. He felt that he could face life again. Not only did the cooking act as therapy, it nurtured him. He carries that inspiration inside of him, and he shares it with his thousands of fans across the globe. Franco’s journey has brought him to the stoves at some of the most highly-acclaimed restaurants in the United States as well as Europe: La Grenouille, New York City; River Café, Brooklyn, NY; Pinot Bistro, Studio City, CA; Blue Door, Miami, FL; Dorchester Hotel, London, and the two Michelin-starred Sadler, Milan, Italy. His love for travel and cuisine lured him onto luxury cruise lines. On Oceania Cruises, whose culinary department is headed by the world-renowned Jacques Pepin, Franco was the first American to hold the Italian Chef position. He frequently appears as a guest chef on Celebrity Cruises’ transatlantic crossings. Through his unique experiences, Franco has attained the “marquee level” of a Certified Culinary Professional on land and at sea. Currently, Franco explores New Jersey’s diverse food culture through his show, Jersey Gems, airing on HomeTowne Television (HTTV); he is often the “Green Grocer” for their evening news. This week’s featured guest on Chef’s Story is Paul Bartolotta. In 1980, Paul graduated from the Restaurant and Hotel Management Program at Milwaukee Area Technical College. His cultural education began with New York restaurateur, Tony May, owner at the time of the Rainbow Room and founder of Gruppo Ristoratori Italiani, the international food society devoted to maintaining the traditions and standards of classical Italian colleagues. Initially instituted as a six-month tour of duty for Paul, this stint evolved into a seven-year education of the highest order. Working in some of the country’s most prestigious restaurants, the aspiring Chef studied all phases of managing a first class restaurant. Paul was Executive Chef/Managing Partner of Spiaggia, located in Chicago, from 1991 to 2000. He developed his culinary artistry in some of Europe’s most distinguished restaurants. Winner of the coveted James Beard Best Midwest Chef Award in 1994 and The James Beard Award for Best Chef Southwest in 2009, Bartolotta directed Spiaggia to every major national fine dining award. The honors include a Four Diamond Rating from the American Automobile Association, the Distinguished Restaurants of North America (DiRoNA) Award and numerous Critics Choice Awards from Chicago Magazine. Spiaggia has been honored with the prestigious Insegna del Ristorante Italiano del Mondo, presented to Chef Bartolotta by the President of Italy, Oscar Luigi Scalfaro, in May of 1997.
