Raised on the Red River near Hollis, Okla., Kent grew up working cattle with area cowboys and learned the art of cooking with his mother at a young age.  As opportunities arose, Kent cooked for cowboys on open fire across the U.S. which eventually led to numerous tv appearances on shows including Throwdown with Bobby Flay, Chopped Grill Masters and NBC's Food Fighters. Kent and Shannon continue to share the cowboy way of life to the world through their YouTube channel and cookbooks.

Today we are hosting the legendary groundbreaking celebrity chef Katsuji Tanabe. Katsuji comes from humble upbringings. Coming to America at 18 years old, Tanabe struggled to make ends meet. He lived a quaint life in Los Angeles where he shared a one bedroom apartment with his mom and sister; working multiple jobs to get by.  Chef Tanabe's big break came in 2005 when he was promoted to Executive Sous Chef at Mastros and was later asked to appear in PBS' “Cooking Under Fire.” Since then, he has appeared on multiple television shows including Top Chef, Food Fighters, and Chow Masters.  Throughout his rise to fame, Chef Tanabe stayed focused on his goal of owning world renown restaurants. Today, Tanabe owns 6 restaurants across North America with plans to open another in 2019. Chef Tanabe has mastered the art of Kosher Cooking and takes prides in the authenticity of his recipes. He also works with Rabbi's to ensure that the ingredients he is using are 100% Kosher. Katsuji found a sense of home in Judaism and the faith has brought him closer to his craft and his spirituality. Ederique's commitment to a more fair, sustainable, and equitable food economy was the cornerstone for her launching Taste the Diaspora Detroit, a celebration of the contributions of African Americans to American cuisine. She also serves as Lead Chef for Make Food Not Waste Upcycling Kitchen, and on the Detroit Food Academy team, where she teaches Detroit youth about culinary entrepreneurship. Elizabeth and Anna M. have a conversation with Alex Moore of DC Central Kitchen about food insecurity, the problem with public health messaging that puts too much emphasis on individual responsibility, and ways that we can all contribute to strengthening the impact of organizations like DCCK.  We discuss:  The different types of programs that DC Central kitchen’s (DCCK) runs and the ways in which these programs serve people in the community. How the DCCK program that runs kitchens in 16 DC schools was able to pivot to feeding students when the schools closed due to the pandemic. How has DCCK addressed the rise in food insecurity and the populations that have been most impacted. How public messaging that emphasizes individual responsibility often serves to stigmatize people, which is particularly true for populations who are food insecure. We discuss ways we can change this conversation to de-stigmatize food insecurity (and de-stigmatize bodies, especially larger bodies) in this country. Ways that we can all help in the fight against food insecurity across the country. Alexander Justice Moore is the Chief Development Officer at DC Central Kitchen. His book, The Food Fighters, chronicles DC Central Kitchen’s first twenty-five years on the front lines of hunger and poverty. He was appointed by DC Mayor Muriel Bowser to the inaugural DC Food Policy Council in 2016 and was named a DC Food Hero by ElevationDC. Moore holds a bachelor’s degree from Ithaca College and an M.A. from the Georgetown University School of Foreign Service. Today we’re talking to celebrity chef, Stuart O’Keeffe, to find out if choices in our kitchen layout and a few recommended tools can create a restaurant-worthy flow in our home kitchens. Stuart O’Keeffe is an accomplished celebrity and professional chef known for his healthy yet hearty meals. He first explored his passion for food while cooking alongside his mother in his native Ireland, then honed that passion into skill at the Dublin Institute of Technology where he earned a degree in Culinary Arts.  Chef Stuart has been trained around the world, cutting his teeth in Napa Valley and Bordeaux, France—both highly competitive culinary hot spots—before moving to Los Angeles. There, he works with some of the biggest names in Hollywood and has been seen on the NBC primetime series Food Fighters and OWN’s Home Made Simple. He has also starred in The Home Channel’s Stuart’s Kitchen, shot and produced in Ireland.  A Food Network darling, Chef Stuart has served as a judge on Chopped, starred in Private Chefs of Beverly Hills, and been featured on hit shows like Valerie’s Home Cooking. He can currently be seen co-hosting his new show Let’s Eat on the network and on QVC representing Circulon Cookware.  By the end of this class you’ll have ideas for creating restaurant-level efficiency in your home, some inside knowledge of the best tools for the job and inspiration to get cooking with your family. How can people bring a restaurant level of efficiency to their home kitchen? Any tips on layout or flow? Stuart loves a kitchen where the stovetop is on the island looking out, so you can converse while you're cooking. Stand in your space and imagine yourself cooking, and think about what's in reach. The magic triangle's a great place to start. Counter space is the biggest factor! If you have the option, get as much as possible. What are some knives you recommend? How often do you sharpen? Chef loves a company called Knife Aid. You can send your knives away and have them sharpened. You should be doing it at least twice a year. Chef likes Miyabi knives. What are a handful of kitchen essentials every home owner should have? Dutch oven, cast iron pan & a non-stick pan. Chef LOVES this Chop Stir. A good set of knives Are there any new appliances on your radar?  The Instant Pot and Air Fryer are great! What are some of your tips for feeding a crowd/entertaining in a small space? Keep it simple! A charcuterie board. A one pot meal like chili or short ribs +mashed potato. Stews, paella, anything where everyone can just scoop out of a big pot! What are your favorite pans? Cast iron Circulon Cookware What are some professional chef hacks everyone should know? Salt meat before putting in the pan, and pepper after. Always have a damp cloth under the cutting board so it doesn't slip. To keep your workspace clean- use the light system. If it's dirty stop, asses/slow down/clean up and GO! Repeat that cycle. If you're cutting vegetables to roast, have your roasting pans heating in the oven while you chop and then add them to the warm pan instead of a cold one. How can we get our kids excited about being in the kitchen? Let them chop vegetables or hold the whisk! Find the safe tasks and let them help! Your first cookbook is called The Quick Six Fix, which focuses on simple recipes with great ingredients. What are some items everyone should have in their pantry/kitchen at all times? Build a spice collection. San Marzano canned tomatoes Right Rice Oils Salt/Pepper Tomato sauce Frozen shrimp Homework: Go through all the cabinets in your kitchen and start organizing/make space. Start building your kitchen! Get good items and build slowly. It will spark your joy for cooking. Find a recipe, go shopping and then cook it! If you re the type of New Orleanian who "goes out" meaning you spend time in bars or music clubs and tend to see the same couple of hundred faces, some of whom you know by name and some of whom you just recognize Joe Armitage is a fellow traveler. Joe has been working in restaurants around New Orleans for, by his own reckoning, 30 years. And he s only 43. For about the same amount of time he s been playing in bands around town. So if you go out there s a fair chance you know Joe. Most recently you would ve known him as the manager of Sammich, the uniquely New Orleans take on a sandwich shop on Maple Street. Hopefully you enjoyed eating at Sammich and talking to Joe prior to reading this because, if you didn t know already, as of this week Sammich is no more. Joe s looking at his next incarnation as a swing of the pendulum back to the music side of his life. It might have been food and it might have been music that brought Joe and his plus one Aron Lambert together lo those 30 years ago when they were both starting out on a shared parallel food and music track. Aron s family owns and operates Preservation Hall and Aron plays in the vaunted NOLA royalty that is the Treme Brass Band.

This episode was the first one recorded after the passing of Satoru Iwata, so we spend the first part discussing the life of the late Nintendo president and where things go from here. Following that, an abbreviated New Business covers off Splatoon's last pre-update Splatfest, Tales of Graces f, and a collection of games including a unique puzzle game, DLC and walking simulators.Whatcha Watchin' deals with Food Fighters, the last comic book movie for a while (as Donald rejoices) in Ant-Man, and a couple of interesting animes in Noragami and K. Some of those are actually safe for work.Our Feature discussion was timed to the fact that this was going to be our third anniversary show based on a normal release schedule, so as usual we board the hype train for a look at the games we're excited for the rest of the year. Some have come out, some have hit their embargoes, and Donald may have picked games for dead systems in protest. There's also a brief bit of Listener Mail, though it is kind of hard to come up with a game that hasn't been remade. Our guest is Food Fighters contestant Annie Smith. Annie Smith is a stay-at-home Mom and married mother of three from Corona Del Mar, California. Formerly a psychologist, Annie discovered cooking was her own personal form of therapy after her daughter was diagnosed with a rare neurological condition called Rett Syndrome, which left her unable to speak, make a full range of facial expressions, eat, walk, or use her hands effectively. She hopes to win enough money on the show to purchase a speech-generating device that will allow her daughter to communicate.
