In the first hour of "Connections with Evan Dawson" on Friday, June 14, 2024, we talk with Assemblymember Josh Jensen about his takeaways from the 2024-2025 New York State budget.
Richard Sanford co-founded the Sanford and Benedict Winery and planted the Sanford and Benedict Vineyard. He founded the Sanford Winery, and he founded the Alma Rosa Winery, all in the Santa Barbara County of California.Richard discusses his sailing career, working in the merchant marine, racing boats recreationally, and as an officer in the United States Navy. He talks about his travels around the globe, both before and after his service in the Vietnam War. He reflects on his short time working in business and education, and then his segue to planting a vineyard in what became the Sta. Rita Hills appellation of California. That vineyard became known as the Sanford and Benedict vineyard, and Richard co-founded the Sanford and Benedict Winery with Michael Benedict to produce wine from that vineyard. They had realized that Santa Barbara County, with a transverse mountain range, offered opportunities for growing vines in areas cooled by winds coming off the Pacific Ocean.Richard remembers his introduction to wine and a bottle of Volnay, and his desire to plant Pinot Noir in the Sanford and Benedict Vineyard. He talks about the early days getting the vineyard going, in an area where Pinot Noir had not been planted previously. He discusses the geography and geology of the place, as well as the history of ownership there. Richard recalls converting a small barn into a winemaking facility, building the fermenters, and inviting his friends to harvest the first grapes from Sanford and Benedict. He also recalls the subsequent visit from the local sheriff. Besides the attention of the police, the activity at Sanford and Benedict also attracted interest from wine writer Robert Lawrence Balzer, who wrote about the wine being made near Lompoc.Richard talks throughout this interview about both the agriculture aspect and the business side of making wine. He notes that tax write offs were an impetus for the planting of many of the vineyards in Santa Barbara County in the 1970s. He talks about the difficulties of dry farming and of organic viticulture in that area. Richard recalls meeting his wife Thekla during a fun sail. And he talks about the tough breakup with his business partner Michael Benedict that would eventually lead Richard to found the Sanford Winery near to the original Sanford and Benedict Vineyard.Richard recalls the Small Winery Technical Society, and the other winemakers in the group, such as Dick Graff and Josh Jensen. He talks about the role that that group played in his own development as a winemaker, and the camaraderie that he found amongst a group of friends who were also competitors in the wine business. Richard thinks on that period with a lot of fondness. He also has a fondness for the period of time where he felt he was at the forefront of wine and food in California, meeting and sharing time with people like Julia Child and Robert Mondavi.Richard shares his memories of visiting Burgundy and meeting vigneron and winery owners like Vincent Leflaive of Domaine Leflaive, Jacques Seysses of Domaine Dujac, and Aubert de Villaine of Domaine de la Romanee-Conti. Steve Doerner is Winemaker Emeritus at Cristom Vineyards in Oregon.Steve discusses his shift from being a Biochemistry Major at UC Davis in the mid-1970s to his first Job working for Josh Jensen at Calera Wine Company. Steve arrived at Calera for the 1978 harvest, the first vintage for Pinot Noir at Calera. Josh had begun making wine at Calera in 1975, first planting a Pinot Noir vineyard in 1974. Josh hired Steve after a blind tasting test that included tasting a La Tâche. Steve worked at Calera for a total of 14 years. During that period of time, Steve met some of Josh's peer/friend group in Burgundy, a circle of people that included Jacques Seysses of Domaine Dujac.Steve recalls his early years working at Calera in its limited facilities, working highly physical harvests that left him questioning if this was really the career path for him. He talks about his early days tasting wine, mostly Zinfandel from California. He also talks about utilizing different fermenting techniques in response to certain winemaking tools, and his growing knowledge of the techniques being implemented in Burgundy by the likes of Jacques Seysses and others. Steve comes to the conclusion that in California in the 1980s, Pinot Noir was often treated like Cabernet in the wineries. He also concluded that this was problematic, and began teasing out the nuances of practical meaning from adages he heard in Burgundy.A serious accident left Steve questioning his relationship to his job, but his perception of his worked changed after his first trip to Burgundy. Steve encountered Jacques Seysses as an outsider to Burgundy who was actively experimenting with different ways of doing things with his winemaking. Steve developed a friendship with Christophe Morin, who eventually worked for many years at Domaine Dujac, and who later died in a motorcycle accident Although Calera was in an isolated location, Steve tasted fairly regularly with other top American vintners, including Dick Graff of Chalone, Jeffrey Patterson of Mount Eden Vineyards, and Ken Wright. Eventually Josh and Steve began to make white wine at Chalone, including from Chardonnay, Chenin Blanc, and Viognier. Josh brought back Viognier from France to the United States. And Steve recalls going to France to speak with vigneron in the Rhône Valley about Viognier. For the red wine from Pinot Noir, they contended with very low yields from the Chalone vineyards, with limited access to water. Steve leaves Calera and transitions to working at Cristom Vineyards in Oregon from 1992, encountering a supportive winemaking community in Oregon. He recalls his early days at Cristom, and his first harvests there. He talks about planting vineyards at Cristom, and how they went about it. He also shares his realization that over the years the ripeness levels in the vineyards have changed, and that he has been rethinking vineyard planting decisions that were made in the 1990s. He also believes it is now possible to achieve ripeness at higher elevations in their vineyards. He further asserts that keeping the vineyard yields low, with a lot of thinning, is less necessary than it once was.Steve discusses where Cristom is located in the Willamette Valley, inside what is now the Eola-Amity Hills AVA. He talks about the influence of wind from the Van Duzer Corridor, and also the Columbia Gorge. He asserts that lower humidity in the area implies lower disease pressure, and points out that due to the wind, fruit typically gets dry on the vine after rainfall in the vineyards. Steve notes that the soils at Cristom are primarily volcanic, and that they retain water due to their clay content. He contrasts this situation with the sedimentary soils that are found elsewhere in the Willamette Valley. Steve goes into detail about the ripeness levels in the vineyards, and how they have changed since the 1990s. He notes that more extreme vintages have occurred more recently. He talks about the differences between vineyard designate Pinot Noir wines from Cristom: Louise, Jessie, Eileen, and Marjorie.He talks about using less whole cluster for Pinot Noir at Cristom than he did at Calera, and how this affects the taste of the resulting wines. Steve speaks at length about different aspects of whole cluster use, including specifics of stems in the vineyard, in the fermenter, and in the taste of the final wines. He also considers the fashion for whole cluster winemaking more recently. He also addresses approaches to slowing down a Pinot Noir fermentation, and why that is important. He touches on cold soaks, and what they do to microbial activity. He notes that he is opposed to cold soaks, and also opposed to inoculating with yeasts. He explains his winemaking philosophy in approaching phenomenon like reduction. He talks about his approach to racking Pinot Noir, and how he tries to leave Pinot Noir alone during maturation in the winery.Steve talks about making Pinot Gris, Chardonnay, and Viognier in Oregon. He addresses how the climate during the vintage year affects the Viognier grape. He talks about flavor and ripeness vs. alcohol level in finished wines, and about alcohol levels of the wines at Calera and at Cristom. He generalizes about the climate conditions of Oregon and California, and draws a contrast between Burgundy and the growing conditions in both of those states. Saved from the brink of extinction just 50 years ago, Viognier (pronounced vee-ohn-yay), is a white grape that's native to the Northern Rhône in France – mainly the areas of Condrieu and Ampuis. The grape produces effusive wines with a strong aromatic character -- peaches, apricots, flowers, herbs, and ginger are common -- and when made well it has a medium body with a touch of acidity and a pleasant bitterness. This week we continue the grape mini-series (maxi series now?) by exploring this comeback kid and the pleasure it can bring when in the right hands. History Viognier's parentage is a bit ambiguous, but it is related to Mondeuse Blanche, which makes it either a half sibling or grandparent of Syrah (as MC Ice points out, we could definitely make a word problem out of this – it’s a brain twister to think about, but possible!). The grape is also tied to Freisa and may be related to Nebbiolo, both which are native to the Piedmont region of northwestern Italy. Viognier was once grown pretty widely in the northern Rhône but the combination of the phylloxera outbreak in the mid- and late-19th century, followed by WWI, the Depression, and WWII drove a lot of growers to cities and left vineyards abandoned. By 1965, only about 30 acres (12 hectares) of Viognier vines remained in France, and the variety was nearly extinct. In the mid-1980s, interest started to grow both in France and from winegrowers in Australia and California. Growing interest lead to more plantings and today the grape is grown in Condrieu, Chateau Grillet, and Côte Rôtie in the Northern Rhône, all over the southern Rhône for blends, the Languedoc in southern France, as well as in North and South America, Australia, New Zealand, South Africa, Israel, Japan, Switzerland, and Spain. Climate and Vineyard Viognier needs a long, warm growing season to fully ripen, but not so hot it develops excessive levels of sugar before its aromatic notes can develop. Viognier must get ripe to allow flavor to develop and that happens late, often after sugars develop. Viognier is a small thick-skinned berry with good resistance to rot. It does well on acidic, granite soils. Older vines – more than 30 or 50 years old are best for the grape. There are at least two clones of Viognier. The older, original one from Condrieu is highly aromatic and tight clustered. The other is healthier, higher yielding and looks and tastes different according to some. This clone, likely made at the University of Montpellier, is widespread in Australia. Winemaking begins in the vineyard – picking decision is vital: Pick too early and the grape has no flavor, and makes a flat wine. Pick too late the wine is flabby and oily. Must be ripe but not overripe, with lower yields. Although it is likely best to make the wine in stainless or neutral oak with perhaps some skin contact for a few hours before fermenting, the barrel fermentations, malolactic fermentations, and aging on lees can squash the unique flavor and scent of Viognier. Flavors and Styles Viognier is like peach, apricot, clementine, honeysuckle, chamomile, jasmine, thyme, pine, spice, ginger, crème fraiche, and honey with a full body and can be oily, or sometimes a bit bitter. It is low in acidity. When aged in oak it tastes like vanilla bean and with malolactic fermentation it is creamy and custard-like. It is almost always high in alcohol, with 14.5% ABV being common. The best Viognier from France often doesn’t age, and even loses aromas after a few years in the bottle. Some of the styles from Australia and the US, which have been aged in oak, last a few more years. The grape is often bottled as a single variety but can be blended with Roussanne, Marsanne, and Grenache Blanc. We didn’t mention this in the show, but the wine can be off-dry or even late harvest and sweet. Condrieu and Château-Grillet produce sweet wines in warmer years. Regions... France Northern Rhône: Viognier is grown as single variety in Rhône appellations Condrieu and Château Grillet on right (west) bank of Rhône River. In Côte Rôtie, winemakers can include up to 20% of Viognier though most growers add no more than 5%. Condrieu Includes seven communes along 14 miles, and makes wines that are usually dry, delicious young, and very aromatic wit structure. The area includes steep hillside vineyards, that face south-southeast to maximize morning sun, not hot evening sun. The soils are granite with a deep sandy topsoil called arzelle. This soil makes the best wine. Yields must be low, and picking must be after the grape has full aromatics. Top producers: Guigal, Rostaing, Delas, Pierre Gaillard, Vernay, Francois Villard Chateau Grillet This appellation is owned by one producer, it is a monopole. It is just 7.6 acres/3.08 ha on granite soil with mica – making the wines higher in acid. Vines are 80+ years old and although the area seems ideal, there have been problems with wine quality. Recently the owner of Château Latour of Bordeaux acquired the monopole; there’s hope for restoration of its former glory. Côte Rôtie We did a whole podcast on this area, but north of Condrieu is Côte Rôtie, a Syrah appellation that can include up to 20% Viognier in the wine (in reality it’s more like 5%). Viognier helps darken the color of the Syrah in co-pigmentation but it takes up valuable real estate so it’s not used as much as it could be. Other French areas: The southern Rhône, where it is blended, the Languedoc and Ardeche, where it makes serviceable Vins de Pays varietal or blended wines. Other Europe: Switzerland, Austria, Italy New World Australia Yalumba was the pioneer producer in South Australia’s Eden Valley in 1979. The Virgilius is their top wine (aged in oak). McLaren Vale, Barossa, Adelaide Hills, Heathcote, Geelong, Central Victoria, and more grow the grape, which is a challenge to growers because it stays flavorless for much of the growing season and then transforms into something delicious – patience is a virtue! One of the best uses for Viognier in Australia is its blends with Shiraz: Clonakilla (Canberra), Yering Station (Yarra), Torbreck (Barossa) United States California Viognier came in 1980s to California when John Alban (Alban Vineyards in Edna Valley), Josh Jensen of Calera (Central Coast), and Joseph Phelps (Napa), brought it into the United States in small quantities. The plantings and interest grew as a group of producers dedicated to growing Rhône varieties, called the Rhône Rangers, grew in numbers and popularity. Today California has more than 3,000 acres of Viognier. Yields are high compared to France, the wines can often be overblown if grown in too-hot weather but the greatest examples are full-bodied and rich. Top Producers: Tablas Creek, Crux, Qupé, Alban, Calera, Kunde Virginia Viognier is a signature grape of Virginia because the thick skins of the grape work well in the humidity and the diurnals of the mountains mean Viognier can ripen but maintain acidity over a long growing season. The typical VA Viognier has great fruit, slight bitterness, medium body and good acidity. Top producers: Barboursville, King Family, Horton Other US: Oregon, Washington (we mention ABEJA), Texas Around the World: New Zealand, South Africa, South America (Argentina has a lot, Chile some – all young plantings) Food: The wine is great with dishes that have rosemary, thyme, saffron, and creamy sauces. Mike and Cory Waller are brothers raised running around the hills of Hollister, California. After years of work, travel, and discovery, they find themselves crafting wines a mile away from each other in the Cienega Valley with Mike the winemaker of Calera Wines and Cory the winemaker for Eden Rift Vineyards. Cory grew up exploring the forests, canyons and river beds of the Cienega Valley. To this day, he knows the back roads of this remote appellation like few others. He counts local farmers, ranchers and fisherman in nearby Monterey Bay among his cadre of friends and colleagues. To describe him as non-interventionist winemaker would be an overstatement, for Cory possesses a strong point-of-view. While vine health is crucial, Cory favors the fruit of vines that struggle profoundly to produce smaller, yet clearly delineated yields. In the cellar, neutral vessels, native yeasts and varying degrees of stem inclusion, play a strong role in a wine’s elévage, as he prefers to transmit the voice of a site, over a heavily stylized approach. His mentors in wine include Tony Soter, Josh Bergstrom and Jim Prosser, of Oregon. He performed stages at New Zealand’s Neudorf and Martinborough Vineyards, and was Assistant Winemaker at the neighboring, iconic estate, Calera. A master of Pinot Noir, known for his terroir-driven approach to winemaking, Mike Waller has worked alongside legendary vintner Josh Jensen for more than a decade, helping to guide winemaking at Calera. Mike’s winemaking style honors the character and complexity of Calera’s six renowned sites on Mt. Harlan, which are the source for some of the New World’s most revered wines. In the winery, Mike captures the nuance of these grand cru-caliber vineyards to create sophisticated wines renowned for their layered elegance and aging potential.
