No guest this week. Just me in my kitchen. My interview laptop is still broken, so instead of talking to someone else, I'm talking to you. In this episode, I share the meal I make all the time but have never written down. It's not on my sites. There's no official recipe. It's just something I do when I want a treat of a dinner and don't feel like overthinking it. It's a pan-fried chuck eye steak on a bed of garlicky salad, and the salad gets tossed with the steak juices right from the pan. That's basically the whole trick. It's simple, really good, and exactly the kind of thing I make for just me or for me and Marty. I also talk a bit about the random kitchen wisdom that sticks with you, like how my grandmother always kept canned milk around, what I realized about shelf-stable milk when I was living in Belgium, and why UHT or evaporated milk just works better for me right now. It's a very me-centered episode. A little rambling, a little practical, and all about making dinner in a way that fits real life. Links:This is not the exact salad I make, but it's sort of close. I actually put red wine vinegar and a bit of olive oil in a bowl, use a rasp (micro plane) to grate in a clove of garlic, whisk, add spring mix, toss, taste, add more vinegar or more oil or more spring mix, toss, add coarse kosher salt, toss, taste. This is how I cook chuck eye steaks, sort of. I don't put butter in the skillet. Instead, I put grapeseed oil on the steaks themselves. I also try to season the steaks with kosher salt and a good sprinkle of garlic powder at least an hour before cooking them. If it's less than an hour, I skip the garlic powder because it won't have time to hydrate and tends to burn. This week on the HowToBBQRight Podcast, we're back from Nashville—and it was an absolute blast (00:27)! Malcom cooked at Heath's Smokehouse with Royal Oak and turned out some incredible food (04:21). Skirt steak might not be the fanciest cut of beef, but it makes unbelievable tacos (09:41). It's hard to beat a good old-fashioned dry rib, but Malcom took them to a whole new level (19:06). He also shares his favorite rib mop recipe and how to use it for maximum flavor (25:50). If you're planning to cook salmon, fire up your pellet grill and give this method a try (27:44). Everyone loves a great steak, but here's how to cook a pork chop that's even better than a steak (33:26). We tackle the age-old question: Are boneless wings really wings (39:35)? If you want to use chicken thighs instead of breasts for Dirty Bird chicken bites, here's exactly how to cook them (45:57).  Shoutout to Tom from CastingAndCookingBBQ for the great idea of making sausage and pimento cheese sliders (47:05). We talked about Dill Devils last week, but Tony took them to a whole different level (50:41). And finally, should you cook chicken wings straight from the freezer to the pit (53:20)?

How Restaurants Really Get Their Food: Distribution, Sourcing, and Trust with Tony Cuba & Chef Cody Tiner

Walk-In Talk Podcast

Most people think the restaurant industry starts in the kitchen. It doesn't. It starts with sourcing. With buying decisions. With what shows up at the back door. This week, Carl sits down with Tony Cuba, Buyer for Halpern's Steak and Seafood in Orlando, alongside Chef Cody Tiner, chef-owner of District South. Tony brings nearly 21 years of distribution experience to the table. From packing product on the warehouse floor to working in outside sales and eventually stepping into buying, he understands sourcing from both sides of the equation. Chef Cody Tiner brings 17 years of scratch-kitchen experience, classical training, Southern roots, and a deep commitment to community-driven hospitality. At District South, he leads a young team, breaks down whole fish and steaks in-house, and builds a neighborhood restaurant centered on quality without pretension. Together, this conversation explores: • How food actually moves from warehouse to dish • What buyers look for before product hits the floor • Why trust between distributor and chef is everything • How sourcing decisions shape menus more than people realize • What the next generation of chefs needs to understand about supply chain This is an inside look at the invisible system that supports every great plate. Because without distribution, there is no industry. And without trust, there is no distribution. Key Takeaways • Distribution is not transactional — it's relational • Great buyers understand kitchen pressure • Scratch kitchens depend heavily on sourcing consistency • Pricing, availability, and quality are constant tension points • Mentorship and next-gen leadership matter at every level of the industry • The supply chain shapes creativity more than most people realize Featured Guests Tony Cuba Buyer – Halpern's Steak and Seafood, Orlando Chef Cody Tiner Chef-Owner – District South Partner Mentions & Links RAK Porcelain USA – Professional tableware used in studio https://www.rakporcelain.com Metro Foodservice Solutions – Workflow and kitchen support partner https://www.metro.com Crab Island Seafood https://crabislandseafood.com Sustainable Supperclub https://sustainablesupper.org/ Operation BBQ Relief https://operationbbqrelief.org/ The Burnt Chef Project https://www.theburntchefproject.com/ Citrus America Citrus America: Perfect Juicers for Any Location Official Trade Show & Competition Partners

Road salt is a necessary evil during the winter. It is great for melting snow and ice but too much of it isn't great for the surrounding plants and animals. How much is too much and is there a happy balance between driver safety and environmental impact? That is what my guest in this episode has been studying for years and years. This episode my guest is Dr Sujay Kaushal, professor of Geology and Earth System Science at the University of Maryland as we talk about road chemicals and the surrounding environment. Tom Davis falls in love with our steak pie

Angela's hearty dish makes quite the impression! Tom Davis is an actor, comedian, podcaster, writer and proud south Londoner. Fresh from delivering the goody bag for Romesh Ranganathan, he settles in with us for a proper catch-up over a delicious pie.  Tom's latest tour, Spudgun, sees him return to the comedy circuit after a period away from the stage. You'll have seen and heard from him plenty in that time, though, with acting credits including Wonka and A Thousand Blows plus TV appearances on shows including A League Of Their Own and, of course, his weekly podcast with Romesh, Wolf & Owl.  Tom famously started out in comedy when he was working on building sites, but less is known about his time in the restaurant industry. He chats to us about his work in the kitchen, including a spell at The Connaught, which sadly didn't overlap with Angela's time there. The chat begins over sliced bread and a glass of Botivo with elderflower cordial and soda, before we hit the pie. Angela serves a steak pie, using a recipe by Diana Henry, with a gluten free version for Nick, all accompanied by a side of Savoy cabbage. The Waitrose wine experts have paired this meal with a glass of Norton Winemaker's Reserve Malbec.  Tom knows his food and possesses some excellent eating credentials, none more so than his completion of The Big Five eating challenge, as well as his unwavering passion for bread and potatoes. We also hear the loveliest story about Olivia Colman, which is always an excellent way to spend your time. Now, pass the Croydon croutons! You can watch full episodes of Dish on YouTube and on Spotify.  All recipes from this podcast can be found at waitrose.com/dishrecipes The recipe for steak pie was created for Waitrose by Diana Henry.  A transcript for this episode can be found at waitrose.com/dish If you want to get in touch with us about anything at all, contact dish@waitrose.co.uk Dish from Waitrose is made by Cold Glass Productions Learn more about your ad choices.
