Buttermilk breadrolls 450g bread flour 7g dried yeast 190ml buttermilk 60ml local rapeseed oil 1 heaped tablespoon castor sugar 1/4 teaspoon baking powder Egg yolk for brushing Stir yeast and 35ml of lukewarm water in a large bowl and leave for 10 minutes. Warm the buttermilk to blood temperature gently and add to the yeast mixture with the oil and sugar. Mix in the flour and baking powder to a soft dough and transfer to a floured surface. Knead for 10 minutes and place in a clean bowl rubbed with oil. Cover with cling or a damp tea towel and leave at room temperature for an hour. Knock back and divide dough into 4 equal pieces. Roll into balls and place on baking trays lined with baking paper - don't have them too close together as they'll rise. Leave for 30 minutes. Set oven to 200°c. Brush rolls with egg yolk and then bake for about 20 minutes or until the bottom sounds hollow when tapped. Cook on a wire rack. 500g rump steak 1 tablespoon oil for rubbing Seasalt Freshly ground black pepper 150g mayonnaise 2 teaspoons wholegrain mustard 1 tablespoon finely chopped gherkin 200g raclette slices or thin slices of cheddarRub the oil all over the rump and season with salt. Heat a pan until smoking and seal on both sides for two minutes. Lower the heat and cook to desired temperature. Season with pepper and rest for 5 minutes and slice thinly. Mix the mayonnaise with the mustard and gherkins Split the rolls and spread the mayo on to the surface.Arrange the beef over the top and then cheese. Bake in a 180oc oven until cheese has melted – about 10 minutes. Serve hot.
No guest this week. Just me in my kitchen. My interview laptop is still broken, so instead of talking to someone else, I'm talking to you. In this episode, I share the meal I make all the time but have never written down. It's not on my sites. There's no official recipe. It's just something I do when I want a treat of a dinner and don't feel like overthinking it. It's a pan-fried chuck eye steak on a bed of garlicky salad, and the salad gets tossed with the steak juices right from the pan. That's basically the whole trick. It's simple, really good, and exactly the kind of thing I make for just me or for me and Marty. I also talk a bit about the random kitchen wisdom that sticks with you, like how my grandmother always kept canned milk around, what I realized about shelf-stable milk when I was living in Belgium, and why UHT or evaporated milk just works better for me right now. It's a very me-centered episode. A little rambling, a little practical, and all about making dinner in a way that fits real life. Links:This is not the exact salad I make, but it's sort of close. I actually put red wine vinegar and a bit of olive oil in a bowl, use a rasp (micro plane) to grate in a clove of garlic, whisk, add spring mix, toss, taste, add more vinegar or more oil or more spring mix, toss, add coarse kosher salt, toss, taste. This is how I cook chuck eye steaks, sort of. I don't put butter in the skillet. Instead, I put grapeseed oil on the steaks themselves. I also try to season the steaks with kosher salt and a good sprinkle of garlic powder at least an hour before cooking them. If it's less than an hour, I skip the garlic powder because it won't have time to hydrate and tends to burn. Angela's hearty dish makes quite the impression! Tom Davis is an actor, comedian, podcaster, writer and proud south Londoner. Fresh from delivering the goody bag for Romesh Ranganathan, he settles in with us for a proper catch-up over a delicious pie. Tom's latest tour, Spudgun, sees him return to the comedy circuit after a period away from the stage. You'll have seen and heard from him plenty in that time, though, with acting credits including Wonka and A Thousand Blows plus TV appearances on shows including A League Of Their Own and, of course, his weekly podcast with Romesh, Wolf & Owl. Tom famously started out in comedy when he was working on building sites, but less is known about his time in the restaurant industry. He chats to us about his work in the kitchen, including a spell at The Connaught, which sadly didn't overlap with Angela's time there. The chat begins over sliced bread and a glass of Botivo with elderflower cordial and soda, before we hit the pie. Angela serves a steak pie, using a recipe by Diana Henry, with a gluten free version for Nick, all accompanied by a side of Savoy cabbage. Tom knows his food and possesses some excellent eating credentials, none more so than his completion of The Big Five eating challenge, as well as his unwavering passion for bread and potatoes.
