Happy New Year WeHoans! Yes, that term came up today during the interview with Jordan Ogron from Tesse today. Make sure to take a listen as he unpacks how this Sunset Strip gem has managed to stay fresh and reinvent itself more than once during the pandemic. Jordan Ogron has a very impressive history in the local hospitality scene including his GM position at Bestia DTLA. Tesse Restaurant located at 8500 Sunset Blvd is a dream come true for Jordan Orgron who teamed up with industry veteran Bill Chait and Chef Raphael Francois to realize his dream of owning his own restaurant. Although Chef Raphael uses the word “simple” to explain his food, and doesn't want to do Michelin Star food anymore, the cuisine at Tesse is undoubtedly due a Michelin star (or two) in Tracy and Maxine's opinion. They agree with Jordan that the dish that most surprises the palette is the Bucatini with Bone Marrow, Chef Raphael's take on a carbonara that is the number one selling dish that put Tesse on the map. That blue neon key is the sign for Boutellier Wines unique wine store concept from Jordan with a focus on wines you can't find elsewhere. Jordan drops the interesting data point on wine consumer behavior that approximately 97% on all wine sold is $15 or less a bottle. Boutellier's selection varies from $15 all the way up to very exclusive finds with a price tag to match. The wine shop is open from Wednesday to Saturday 12pm - 8pm and Sundays from 12pm - 6pm. Tesse Cafe that served as a bodega concept in the initial pivot also carries a selection of bottles from Boutellier with “focused shelves” of $20, $30 and $40 bottles of mixed sparkling, white, rose and red. Carly de Castro is a seasoned health and wellness advocate who started Pressed Juicery with one mission in mind: to make high-quality, nutrient-dense products that were convenient and accessible. After working a stressful career in film publicity in New York that was beginning to take a toll on her health, Carly moved back to Los Angeles and reconnected with childhood friends Hayden Slater and Hedi Gores, who both had similar revelations, and the trio founded Pressed Juicery in 2010. With zero formal experience whatsoever, they launched a business that has maintained its staying power and is still kicking ass. It can be done. Hear how Carly and her partners have navigated sometimes scary waters and maintained their position as retail darling of the juice biz and managed to find balance and harmony within the partnership as well. It’s kind of a juicy fairy tale.  After a brief discourse on potty training and Zoe’s theory on birth order and behavior, we got down to business.    ·     Carly’s path was not always wellness-forward. But when her Mom got sick while Carly was living in NYC and she started spending time taking care of her, Carly was learning to understand food-as-medicine and she herself getting super healthy, juicing. She did a BluePrint cleanse a few times (thanks, Carly!) but was surprised to not see anything like it locally in LA. She started making it at home for her mom and the seed of an idea was planted.    ·     After such an intense experience caring for her mom, Carly realized that LA was calling her back, and away from NYC. She decided it was time to harness the power she was feeling from her new health regimen and figure out how to share that power with the locals. The question was just how. Seeing BluePrint at Whole Foods in Tribeca made her realize it was indeed possible to do, and it brought her to tears. Us too!   ·     She teamed up with two friends who shared a similar vision for bringing wellness to the masses. The plan was there was no plan, just a drive and a passion and a healthy dose of hustle.    ·     A broom closet with a whopping 22 square feet was their first location. You can imagine investors drooling over their amazing revenues per square foot. They’ve since expanded to spaces that can hold actual people AND cleaning supplies—over 70 locations. Press on, gang!   ·     Pro tip: If the health department tries to pull some permit shizz and shut down your business, it’s super helpful to be pregnant when you show up in their office.   ·     Pricing their juice was a crap shoot that paid off. They didn’t have a magic formula, but the goal was to democratize juice and price it so that everyone has access to it. Their membership program was born out of this vision. So much birthing.   ·     Another discourse on the state of the healthy food market. Fun fact: we all love Paleo Puffs. We bought a shit ton of them at Erewhon, however did not find the much hyped Coconut Girl ice cream sandwich. Erica is still pissed about this.   Instagram: @PressedJuicery  Twitter: @PressedJuicery  Facebook: PressedJuicery  www.pressedjuicery.com

It was about eight years ago when Hayden Slater received the bad news: his startup juice company, Pressed Juicery, had been ordered to be closed following an inspection by the Los Angeles Department of Public Health. Slater and his two co-founders were newcomers to the food business and didn’t realize that Pressed, which initially made juice out of a local cupcake shop and whose first retail location was a broom closet inside of a yoga studio, lacked the permits necessary to operate. Devastated but determined to learn from the experience, Slater immersed himself in the business of food safety and juice manufacturing, building his own knowledge while also later hiring experts with deep experience in both fields. The learnings and expertise provided Pressed with an operational advantage over other juice companies and were key to fueling its growth, according to Slater, who joined us for a conversation included in this episode. Pressed Juicery is now one of the country’s biggest juice chains with 75 locations and a projected 2019 revenue of $75 million. The efficiencies derived from its operations have also helped the company achieve price points in line with mainstream consumer expectations, which Slater said has been an important goal since the beginning. “Starbucks has essentially trained the world that $5 is an appropriate price to pay for beverage. And my mindset was always, ‘if I can replace [coffee] beans with four to five pounds of produce, just think about the white space and the amount of hands we could get to and what a difference and impact that could make on people’s lives.’” Listen to our full interview with Slater, which includes more about the company’s origins and why building a retail experience around the brand has been so critical to its growth. Mike Ganino is a former Chief Operating Officer at one of the fastest growing fast casual brands and now leads his own training and consulting organization.   Mike is also a leading expert on building a great restaurant and hospitality brand with innovative training and speaking on culture design, people systems, positive leadership, and branding. Brands, Potbelly Sandwich Shop, ChowNow, USFoods, and Lettuce Entertain You Enterprises.  Today, he will tell us how he uses all these amazing experiences to help companies, leaders, and individual contributors embrace change, accelerate growth, and achieve breakthrough performance.     It All Started With Improvisation  His years in the ultra-competitive business industry has made Mike a master of improvisation; however, looking back, he said that his improvisation skills were probably developed even earlier than that -- back when he was a kid growing up in a low-income household where improvisation was not an option, but a necessary part of everyday life.  Developing the Language  Mike shares that he learned to figure out how to make the most of whatever he has at an early age -- eventually becoming so adept at it that people started approaching him for tips.   The problem was, it’s something that comes instinctively to him that he didn’t even know how to explain it. That’s until he stumbled upon a book that teaches what it calls the “Yes, And” mindset.   The “Yes, And” Mindset  Sometimes, we spend too much time worrying over how our words come across that we fail to connect with our audience. Mike said that’s what adopting the “Yes, And” mindset fixed for him.   Once he learned how to stop saying “No, I can’t. That’s not gonna work” and started saying “Yes, and? I’m listening” whenever something new comes up instead, opportunities he never thought were possible began opening up to him left and right. Those opportunities included public speaking.  Telling Your Story  Everyone wants to share their story, but not everyone wants to listen to other people’s -- and that’s why everyone keeps missing the point.  To really know how you can make an impact on other people, Mike said that you need to listen to what they say.  Ask questions. Ask them what they think of you, how you have helped them, and what else you can do for them. Make adjustments if necessary.   Sometimes, you won’t even realize your own potential until someone points it out to you.  Building Relationships  If there’s something that Mike has always been grateful for, it’s that he made a lot of great partnerships and connections. He admits that he’s always performed better when he works with a group, and this is why he’s so passionate about helping organizations to truly connect with their members.  Public Speaking Advice  Mike often gets asked what advice he can give to people who want to get into public speaking, and he said that there are three things that you need to remember: Celebrity, Expertise, and Skills. Courtney Reum wants food and beverage entrepreneurs to ask themselves one question: how can I make my company more ‘techable’? Reum is the co-founder of M13, a brand development and investment firm focused on “accelerating businesses at the nexus of consumer products, technology, and media.” Founded in 2016, M13 has investments in many well-known brands, including Lyft, Pinterest, Blue Bottle Coffee, Pressed Juicery and Snap. In an interview included in this episode of Taste Radio, Reum, who along with brother Carter launched M13 following the sale of their spirit brand Veev, spoke about his belief that the fundamentals for food and beverage business are evolving and, how companies can use technology to directly reach and better understand their consumers. “We’re getting so much data where it’s easier than ever to find your tribe, to get cohort data, that almost every brand its techable to some degree,” Reum said.
