We've got a classic restaurant news update on this week's Access Louisville podcast.Reporter Michael L. Jones is on the show to tell us about Byrdie's. James Beard-nominated Chef Jenner Tomaska and his wife and business partner Katrina Bravo opened Byrdie's, a new French-inspired bistro, in Louisville's NuLu neighborhood on Thursday, Dec. 12.Byrdie's is on the first floor of the Hotel Genevieve, located at 7300 E. Market St., which itself was just recognized by the Michelin Guide for its French-inspired architecture. The nearly 3,000-square-foot restaurant replaces Rosette's, an all-day restaurant that closed in August.We also chat about a new French bistro and boutique that's scheduled to open in the Clifton neighborhood in the spring. Ça et Là, which means “Here and There” in French, will be located at 1832 Frankfort Ave., near the American Printing House for the Blind. The new business will blend café culture, artisan imports, and affordable Southern French street foods, petits plats, and wines.Later in the show we chat about a possible revival for Chi-Chi's Mexican Restaurant as well as the relatively new Take Thai restaurant on Factory Lane. We also get into some retail news with updates on a new location for ALDI and Fresh Market. And we note that Carhartt is opening a retail location in Louisville. Season 3 of the Flavour Talks podcast kicks off with flavourist Nigel John Murphy. Nigel began his career over 40 years ago, after graduating in Food Technology, he began creating seasonings with a particular focus on learning the flavour of herbs and spices, progressing to join the largest seasoning house in the UK. Encouraged and taught by leading names in the industry and through several joint ventures, this culminated in the creation of the Quintessence range of seasonings. This success led to a position with IFF. After global positions as senior flavourist, several roles were developed for Symrise, Griffiths, Kerry and Mane, creating a huge range of expertise in all areas of savoury. Perfumers from Colombia and Sweden tell Kim Chakanetsa about inventing fragrances that evoke emotion and nostalgia. Adriana Medina is a Vice President Perfumer at one of the world's biggest fragrance companies, Givaudan. She grew up in Colombia and after a Masters degree in Cosmetic Science, she attended the Givaudan Perfumery School in Paris. Her creations include 3121 for Prince and Meow for Katy Perry as well as Bombshell for Victoria's Secret – one of the most popular perfumes in US for more than a decade. Born in Västerås Sweden, Maya Njie moved to the UK to study at the University of the Arts London. She started making her own fragrances as part of her art and as interest grew among friends and fellow artists she founded Maya Njie Perfumes in 2016. Alon's journey Alon was born and raised in Israel. He started his first business at fifteen, building and selling computers. His first real job was at Google, looking after the search quality for Hebrew and then working with their marketing team. He was the Founder of Google Partners, the Google partner program for their advertising business. He soon realized he loved working with technology and facing business and marketing challenges. So that is what he does today with Tastewise. People Alon can program, develop code, and write code. But he prefers working with people. Technology Alon is passionate about technology! Current developments with AI keep him awake all night long, thinking of ways to use AI to improve the food system. What is Tastewise? Alon founded Tastewise in 2018. It is an enterprise solution to help the world's largest food brands digitize and transform their slow and tedious methods of understanding consumers and their consumption preferences and become more efficient with their product innovation lines. So Tastewise is essentially a data platform that collects data points from every single food delivery app and recipe app across the web to allow organizations to find out what consumers eat and drink, to help them move their new product launches from a 90% failure rate to a 100% success rate. Alon's idea for Tastewise Alon's idea for Tastewise started with his family members sending messages to his mom each week on their family Whatsapp group, telling her about their constantly-changing dietary preferences for their Shabbat dinners on Friday nights so that she did not have to prepare dishes no one would eat. He realized that the same thing was happening in the food industry too, with people's diets changing constantly. The food industry is slow to adapt and change, so he saw a great business opportunity to help brands understand the trends related to consumers' constantly changing food preferences and get to know which dishes consumers are making with the products they buy. The most difficult part The most difficult part of Alon's work is applying artificial intelligence to the subtle nuances of a given situation to get to know what consumers actually want. The technology One part of Tastewise's technology involves collecting vast amounts of data. Another is making sense of all the data. The last part is visualizing and conveying the findings to users and helping organizations move in the right direction. The biggest challenge The biggest challenge to getting more acceptance, acceleration, and use of their new methodology has been explaining to end users why their data set is the right one. As two moody people who love scents, we're always curious to know why and how scent affects our moods, for good and for evil. There is indeed a science to mood manipulation through scent, and who should be the maestros of such power as the perfumers of Givaudan. It is all about smell this week as Aldo speaks to a real 'Nose'. We dive into the world of perfumes and talk about all the highs and lows of this very particular job with Ruth Mastenbroek, a life-long perfumer with her very own brand. Guest Introduction: The 1985 novel ‘Perfume' (or Das Parfum) from the hand of author Patrick Suskind is one of the best-selling German novels of the 20th century. The title remained on all success lists for about nine years, and received almost unanimously positive national and international critical acclaim. The book was translated into 49 languages and more than 20 million copies were sold worldwide to date. For the movie-lovers among us the book was also made into a fantastic motion picture in 2006 - but that as an aside. Now it is true that Perfume has a sinister streak but I think that is not why it was such a success. The novel fascinated millions of people as it explored the sense of smell and its relationship with the emotional meanings that scents may have. The ability to catch a scent, to define it, to tie it to an emotion and then having the skill to reproduce and sell it - is a true talent that not many people possess. My next guest excels in it. Ruth Mastenbroek has been a Perfumer - also dubbed a Nose - for over 35 years. She has been commissioned by countless leading scent makers, fashion brands and even Royal Houses to create fragrances for men, women and for the home. Throughout her career Ruth worked with many names such as Kenneth Turner and Jigsaw. She was responsible for the Life With a View collection and for the famous Grapefruit candle from Jo Malone. (fun fact: the actress Jennifer Lopez loved that candle so much, she bought 300 of them for her hotel room) Ruth graduated from Oxford University with a degree in Chemistry and started her perfume career as a sales assistant at the perfume department at Selfridge's. Her creativity, curiosity and knowledge of the periodic table led her to take on the perfume maker profession in the UK, the Netherlands and Japan - she was trained first at a big company - now called Givaudan - and in 2003 decided to start her own fragrance business. Meanwhile Ruth was also President of the British Society of Perfumers. In 2010, Ruth launched her own niche fragrance collection; her very own signature line to let her imagination run free. Giving life to her very own perfumes named: Signature, Oxford, Amorosa, Firedance and Dagian. Her fragrances are sold in many famous stores and outlets such as Fortum & Mason in London and Ruth Mastenbroek Perfumes has grown into a family business as her daughter Claire and son Nic have joined Ruth in making sure that the world can smell at its very best. When reading the descriptions of her perfumes on her website, Ruth herself sounds like quite the storyteller. I don't know much about fragrances but I guess she is right when she claims that perfumes tell a story over time.
