Das Leben wird so teuer, es ist der Wahnsinn. In den letzten Monaten sind die Kosten so krass in die Höhe geschossen, dass wir uns langsam wirklich fragen, wohin soll das alles führen? Aber man kann selbst auch was dagegen tun. Im Falle vom Schokoladenhersteller Lindt scheinen die Boykotte über Ostern erfolgreich zu sein. Lindt kündigt an, ihre Produkte im Preis zu senken. Zu viele Schokohasen sind vor Ostern in den Regalen stehen geblieben. Vor allem aber auch die reduzierten Hasen nach Ostern wollte keiner mehr haben. Das ist wieder einmal der Beweis, dass die Menschen, wenn sie sich mal zusammen täten, deutlich mehr Einfluss auf den Markt haben als man denkt. Wir kommen im Podcast auf eine wahnwitzige Idee. Eine Challenge, die uns vermutlich an den Rand des Wahnsinn treiben wird aber vielleicht steckt da auch extrem viel Potenzial zur Weiterentwicklung.

Nos fuimos de lleno con la saga del conejo de Pascua de Lindt, ese clásico envuelto en dorado con su lazo y campanita, para responder una pregunta que suena simple pero no lo es: ¿cuándo un diseño estacional deja de ser adorno y se convierte en identidad protegible?Hablamos de propiedad intelectual y derecho marcario aplicado a la vida real: distintividad, percepción del consumidor, marcas tridimensionales, trade dress, y el problema de reclamar exclusividad en un mercado donde “hay conejos por todas partes”. Giới chuyên ngành ẩm thực gọi đó là « Dubai Style » (Phong cách Dubai). Trên thị trường Pháp hiện nay, các sản phẩm làm theo kiểu Dubai trở nên phổ biến tại các siêu thị. Theo kênh truyền hình France 24, ngoài các loại sô cô la nhân quả hồ trăn pistachio, người tiêu dùng ở Pháp còn tìm thấy đủ kiểu bánh ngọt, kem đông lạnh, bánh quy, ngũ cốc giòn dành cho bữa ăn sáng, hay mứt cacao trộn hạt dẻ (phết bánh mì) với mùi hương giống như Sô cô la Dubai. Điểm chung giữa các sản phẩm này vẫn là giá cả. Khi được gắn hiệu « Dubai Style », mặt hàng vẫn có giá cao hơn nhiều. Để so sánh, một thanh sô cô la 145 gram hiệu Lindt được bán tại Pháp với giá trung bình xấp xỉ 10 euro, tức cao gấp bốn lần giá của một thanh sô cô la thông thường. Trên đà thành công của Dubai Style, nhiều nhà chế biến sô cô la tại Pháp đã bắt nhịp trào lưu, trong số này có ông Pierre Raulet, thợ chuyên làm bánh ngọt tại thành phố Strasbourg và hiện làm chủ của 7 điểm kinh doanh ở vùng Alsace. Theo ông Pierre Raulet, giá sô cô la kiểu Dubai tương đối cao, chủ yếu do thành phần chế biến cũng như công thức thủ công : « Tôi đã có ý tưởng làm sô cô la nhân pistachio từ vài tháng qua, khi nhìn thấy trào lưu này trên mạng xã hội, tôi nghĩ đã đến lúc mình nên bắt tay thực hiện. Hương vị của sô cô la kiểu Dubai ban đầu khá rõ rệt nhờ mùi hương tự nhiên của hạt pistachio (quả hồ trăn) kết hợp với hương thơm của kadayif, loại mì sợi nhỏ đến từ phương Đông. Sợi mì Kadayif có hương vị khá đặc biệt khi được rang giòn. Nhân sô cô la phải được trộn đều bằng tay kết hợp độ sánh nhuyễn của pistachio với độ giòn rụm của mì sợi nhỏ, tất cả sau đó được bao bọc bởi một lớp sô cô la đậm đặc, ngọt ngào. Cách làm sô cô la kiểu Dubai công phu hơn sô cô la thông thường, đòi hỏi thêm một số công đoạn. Nếu hoàn toàn được làm bằng tay, một nhà chế biến chỉ có thể làm khoảng năm mươi thanh sô cô la thủ công mỗi ngày ». Sô cô la theo kiểu Dubai không còn nhất thiết phải dùng hạt pistachio với sợi mì kadayif. Tại vùng Occcitanie, miền tây nam nước Pháp, cô Alice, chủ cửa hàng bánh ngọt « Ô gourmandises d'Alice » cho biết cô thường thay thế các thành phần chế biến bằng những đặc sản địa phương : « Chúng tôi dùng quả hạnh nhân đem nướng cho thật chín để tạo thêm hương thơm. Cách chế biến này giống như cách làm kẹo praliné. Mùi vị thơm như nhau, khác hay chăng là hạnh nhân chuyển sang màu nâu nhạt, chứ không có màu xanh lục như hạt pistachio. Để cho nhân chocolat thêm giòn, chúng tôi nghiền nát những miếng bánh quy rồi trộn thêm vào hạnh nhân xay nhuyễn. Loại bánh quy giòn ở đây là loại Croquants de Cordes, nguyên là một đặc sản của vùng sông Tarn, mà thủ phủ là thành phố cổ kính Albi. Ở đây, chúng tôi bán nhiều loại chocolat mùi hạnh nhân, mỗi thanh 200 gram, nhưng giá vẫn mềm hơn so với sô cô la Dubai ». Về phần mình, Nathalie, nhà quản lý tiệm bánh « Sweet Délices » gần thành phố Montauban, cho biết, ngoài sô cô la, cửa hàng này còn bán thêm các loại nhân hạt dẻ, hạt phỉ, hạnh nhân hay pistachio đựng trong hũ, có thể được dùng như mứt để phết bánh mì ăn sáng, nhưng cũng có thể được dùng như « nhân sô cô la » cho những ai muốn tự làm sô cô la kiểu Dubai ở nhà : « Đối với những người mới bắt đầu học cách làm sô cô la, việc tự chế biến các thanh sô cô la theo kiểu Dubai, vẫn khá dễ làm. Tại cửa hàng chúng tôi, có đủ loại thành phần dùng để chế biến : từ bột cacao khuấy tan để tạo ra nhiều lớp sô cô la, cho đến các loại nhân trộn sẵn và cuối cùng là đủ kiểu khuôn đúc để thợ làm bánh có thể tạo sô cô la với mùi vị và hình dáng tùy theo ý mình. Trào lưu tự chế biến sô cô la Dubai ở nhà rất được ưa chuộng, trở nên thịnh hành phổ biến nơi người tiêu dùng vì các thanh sô cô la tự làm, rẻ hơn nhiều so với các hiệu sô cô la Dubai được bán ngoài siêu thị ». Trong thời gian qua, mạng xã hội đã phát cuồng với những thanh Sô cô la « kiểu Dubai ». Tuy nhiên, loại sô cô la này không chỉ có nhiều đường mà lại hàm chứa nhiều chất phụ gia của ngành công nghiệp ẩm thực. Theo kênh truyền hình France 24, thành công của các sản phẩm « Dubai Style » phần lớn dựa vào chiến lược tiếp thị tài tình trên mạng thông qua những người có tầm ảnh hưởng, nhiều hơn là nhờ vào hương vị đặc biệt cũng như giá trị dinh dưỡng. Cũng như hầu hết các trào lưu phổ biến trên mạng, Sô cô la Dubai tuy có nhiều danh tiếng,  nhưng chưa chắc gì là một sản phẩm có chất lượng. Theo một cuộc khảo sát gần đây của cơ quan bảo vệ quyền lợi người tiêu dùng UFC-Que Choisir, trên 6 loại sô cô la kiểu Dubai, thành phần chế biến chính là hạt pistachio lại không nhiều như ta tưởng. Mặc dù giá sô cô la Dubai có thể dao động từ 85 euro (loại làm tại châu Âu) cho đến 200 euro một kílô (loại nhập từ vùng vịnh Ba Tư), nhưng lượng pistachio chỉ đạt mức 17% trên danh sách các thành phần chế biến. Riêng trên thị trường Pháp, hai hiệu phổ biến nhất vẫn là sô cô la Mardinni khoảng 65 euro một kí lô, nhập khẩu từ Thổ Nhĩ Kỳ và phiên bản Dubai Style của Lindt 80 euro một kí lô, sản xuất tại Thụy Sĩ, tuy không ngọt bằng các loại nhập từ Dubai, nhưng theo đánh giá của cơ quan UFC-Que Choisir, vẫn có quá nhiều đường, ăn rất dễ ngấy : sô cô la kiểu Dubai của Lindt chứa đến 46% đường, còn hiệu Mardinni có hơn 40%. Trong các thành phần chế biến, cuộc khảo sát cũng cho thấy sô cô la Dubai chỉ có từ 11% đến 17% hạt pistachio, phần còn lại là chất béo của bơ, dầu cọ, bột ngô, mạch nha lúa mạch, dầu lecithin trích từ hạt hướng dương hoặc đậu nành, chiết xuất tảo xoắn, vani nhân tạo và chất tạo màu lutein … Nhìn chung, theo cơ quan UFC-Que Choisir, sô cô la kiểu Dubai có nhiều chất phụ gia cũng như các thành phần siêu chế biến trong ngành công nghiệp thực phẩm, hầu tạo mùi và cho thêm màu.  Vào mùa lễ Phục Sinh, các hộ gia đình ở Pháp thường có truyền thống mua sô cô la để biếu tặng cho nhau. Dù thịnh hành trên mạng xã hội, nhưng dường như Sô cô la Dubai vẫn chưa có thể soán ngôi các quả trứng đơn giản bằng chocolat thường được bày bán vào mùa này. Giá trung bình của Sô cô la Dubai vẫn còn cao, trong khi giá trị dinh dưỡng lại chẳng có là bao, riêng mùi vị dường như chỉ hợp với những ai thích ăn các món cực kỳ béo bùi, ngậy vị « ngọt ngào ».

One week after the Channukah massacre at Bondi Beach in Australia, which left 15 innocent civilians killed, including a 10 year old girl named Matilda, and Chabad Rabbi, Eli Schlanger, and over 40 people injured, Alan Skorski interviewed Robert Gregory, CEO of the Australian Jewish Association. There were no punches pulled during the interview as Gregory put the blame squarely on the shoulders of Australian PM, Tony Albanese. "His apologies and insincere condolences are empty and too late!" Ever since the Hamas slaughter of over 1200 people in Israel on October 7, 2023, Islamist-inspired violent antisemitism has skyrocketed, while the government turned a blind eye. It was just under a year ago that we did a show about violent antisemitism in Australia that included: — A trailer filled with explosives and a list of Jewish targets discovered on Sydney's outskirts — Firebombing of a Melbourne synagogue, with one person hurt. Defacement of another with Nazi symbols and pro-Palestine graffiti — A Jewish childcare center set on fire — Three Jewish businesses torched — The former home of a prominent Jewish leader sprayed with graffiti — Cars defaced and windows smashed in areas where Jews live During the interview, Skorski and Gregory talked about reports from Sky News Australia giving the history of radical Islamist terrorism taking place in Australia, as the government made it policy to keep appeasing them. Even before October 7, Australia was seen as a welcoming country to people who came from dangerous countries with very anti-western values: On December 15, 2014, Man Monis, an Iranian refugee, took hostages at the Lindt chocolate café, killing 2. On June 5, 2017, Yacqub Khayre, a Somalian refugee, murdered a receptionist and held hostages at the Buckingham International Serviced apartments. And following October 7, 2023, The government issued visas to 3000 refugees from Gaza, and was welcomed at the airport by Home Affairs Minister, Tony Burke. "For too long," said Gregory, "the government of Tony Albanese ignored the warning signs and ignored the pleas from the Jewish community about the threats they were facing.” Like in America, under the Biden Administration, the leftist Australian government constantly tried to draw parallels between antisemitism and Islamophobia, even creating a government agency to combat both. To date, there are no examples of anti-Muslim violence having occurred in Australia. A number of Parliamentarians from the past and present have spoken out forcefully about the dangers of Islamist-inspired violent antisemitism, which was welcomed by the Jewish community. Albanese, on the other hand, has been jeered and made unwelcome by Jewish crowds memorializing the dead. Aujourd'hui, la Suisse est mondialement associée au chocolat de qualité. Pourtant, ce petit pays alpin ne cultive pas de cacao et n'a découvert le chocolat qu'assez tardivement dans son histoire. Alors comment expliquer qu'il soit devenu, au fil des siècles, l'un des berceaux du chocolat moderne ? La réponse se trouve dans un savant mélange d'innovation, d'industrie, de marketing… et de culture du goût.1. Une entrée tardive, mais décisiveLe chocolat arrive en Europe au XVIe siècle via l'Espagne, ramené par les conquistadors. Pendant longtemps, il est consommé sous forme de boisson amère, souvent épicée. Il faut attendre le XVIIIe siècle pour que le chocolat commence à se démocratiser et que les premiers artisans suisses s'y intéressent. La Suisse ne fait donc pas partie des pionniers du chocolat… mais elle va bientôt révolutionner sa fabrication.2. Des inventions suisses qui changent toutLe véritable tournant s'opère au XIXe siècle, lorsque les Suisses ne se contentent plus de transformer le cacao, mais inventent de nouvelles techniques qui vont redéfinir le chocolat.Tout commence en 1875, avec Daniel Peter, un chocolatier de Vevey, qui cherche à rendre le chocolat plus doux et plus accessible. À cette époque, le chocolat est encore amer et assez dur. Peter a l'idée d'y intégrer du lait condensé, un produit mis au point par son voisin et beau-frère, Henri Nestlé, pionnier de l'alimentation infantile. Cette alliance va donner naissance au premier chocolat au lait solide, plus onctueux, plus sucré, et immédiatement populaire. Ce type de chocolat devient rapidement la norme en Europe et conquiert le monde.Mais la texture du chocolat restait encore granuleuse. C'est là qu'intervient Rodolphe Lindt, chocolatier à Berne. En 1879, il invente la technique du conchage, un procédé qui consiste à malaxer lentement le chocolat pendant des heures dans une cuve chauffée. Ce processus, alors révolutionnaire, permet d'éliminer l'acidité résiduelle, de réduire la granulométrie des particules et d'ajouter du beurre de cacao pour obtenir une texture extrêmement lisse et fondante, jusqu'alors inconnue.Grâce à ces deux innovations – le chocolat au lait et le chocolat conché – la Suisse transforme un produit amer et rustique en une douceur raffinée et addictive. Elle impose une nouvelle norme de qualité, qui deviendra le modèle pour l'industrie chocolatière mondiale.3. Une industrie structurée et tournée vers l'exportTrès tôt, les chocolatiers suisses comprennent l'intérêt de l'industrialisation et de l'exportation. Des marques comme Cailler, Suchard, Toblerone, Nestlé ou Lindt se développent rapidement et partent à la conquête des marchés étrangers. Grâce à la qualité constante de leur production, à un emballage soigné et à une forte identité visuelle, ces marques s'imposent comme des références internationales.4. Un savoir-faire et une image soignéeEnfin, la Suisse a su cultiver une image d'excellence : propreté, précision, neutralité… Des valeurs que les marques suisses ont transposées au chocolat. Associée à des paysages alpins et à un art de vivre raffiné, la tablette suisse devient un symbole de qualité, de tradition et de fiabilité, renforcé par une réglementation stricte sur la pureté des produits.En résumé, la Suisse est devenue le pays du chocolat non pas grâce à ses plantations de cacao, mais grâce à des inventions décisives, une maîtrise industrielle hors pair, et une identité forte qui font encore aujourd'hui rayonner son chocolat dans le monde entier.
