Pizzeria menus can range from small and tidy to large and complex, but they've all got one thing behind them: research and development. In this episode of the Restaurant Operator Podcast, host Mandy Detwiler, editor of Pizza Marketplace, talks to Hisham Abdulfattah, partner and executive chef of Willow Street Pizza in Willow Glen and Los Gatos, California, about menu development.Abdulfattah said his first job was working in a kitchen washing dishes at age 14. He later moved on to prep and cooking at a taqueria."I fell in love with the atmosphere of a restaurant and the fast-paced environment," Abdulfattah said, adding he went to a culinary academy right out of high school. "I worked probably every position in a restaurant, including front of the house."During the pandemic, he got a loan and bought food truck, and one of his partners owned Willow Street Pizza, which he later invested in and now co-owns."There's something for everyone on their menu," Abdulfattah said. "Willow Street is a place where you can go and feel very comfortable and warm."To learn more about Abdulfattah's approach to menu development, click the link to listen to the podcast in its entirety.

We did here, and we thought we would share some photos from a special event that we did at Lowe Mill in Huntsville. We had a “hands - on concert.” We played a 45 minute set, and then we passed out about 35 bodhráns and taught the audience how to play a reel. They then joined us for a tune! Maureen R replied: "St. Patrick's Day is a family day, starting with donuts, then Mass at St. Colman, one of the oldest churches in Cleveland, that for decades had supported a largely Irish immigrant neighborhood. This Mass is the start of the day for the West Side Irish American Club. The dignitaries and club marching units from pipes and drums to tiny pom pom "Bridgies" march into the church with all the regalia of the annual St. Patrick's Day parade. Parts of Mass are read in Irish Gaelic, and familiar Irish songs and readings are shared. The lighting in the church is changed to green uplights and the hall is filled wall to wall with families in Irish sweaters and Irish pride. After Mass and the marching units parade out of the church, everyone heads to downtown Cleveland for the annual St. Patrick's Day parade, one of the largest of its kind in the U.S. and one of the only St. Patrick's Day parades that is always held ON the day. After the parade, families disperse to the many parties all around town. After marching in the parade, I will head off to entertain the crowds with my band, Ballinloch for the last performance of a two week non - stop Irish adventure."

Nate Morefield emailed some St Patrick's Day pictures: "Hey Marc, pictures are still trickling in, but attached are a few from 3/17 and 3/18. In terms of funny material, maybe our tune Another Drink might qualify? It's about a guy who's missing his ex, but mostly because he needs her to fix him another drink... Just a thought." Ben Doran emailed a St Pat's photos: "Hello Marc, thanks for the invite to share photos. Here's a couple from the Friday night Wild Hog in the Woods Folk Collective's St. Patrick's Bash - - featuring myself, Lisa Johnson (as Leafy Greens), and friends Casey Day and Greg Matysik. And for funny songs? We there's Makem/Spain Bros. "Mr. La DeDaDeDum", but a big bully for you if you can find the rare, "The Second Hand Trouser's I bought in Belcoo" written by Martin McConnell, I believe (brother to the excellent columnist/story teller, Cormac McConnell). Slan go foill." Melissa Wade of Wild Blue Yonder emailed some photos: "Great to hear from you, Marc! We did have a good - and very busy - St. Patrick's Day! We played three shows in three days, traveling through wind, rain and cold to several different towns. Happy belated birthday to you, as well!! Attached are a few pics from our celebrations. The posed shot is at Anakeesta Mountaintop Adventure Park in Gatlinburg, where we played on St. Patrick's Day. Taking our Irish Celtic music high up in the Great Smoky Mountains to entertain for the holiday was most fitting and special. And while the howling wind and blowing rain were less than pleasant, they gave us the sense of actually being in Ireland! Thanks again for writing, and for all you do for Celtic musicians! We love your show." Sean Malloy of Band o'Brothers emailed a photo: "Hey Marc! Happy Belated Birthday & St. Patrick's Day! Hope you had a wonderful time and a wonderful gig with your daughters. Attached is a picture of Band O'Brothers as we prepared to roll through the streets of New Haven in the St. Patrick's Day parade. We had a blast playing out songs for the joyful people along the parade route, and after we completed the parade route we even stopped our float outside a neighborhood bar to play a few songs for the revelers. We had a great day!"
