In this episode, researcher Dr. Katja Bartsch of Munich, Germany shares how she's been listening in on that conversation and tells us what it means for the women on our massage tables.  Dr. Bartsch is exploring an emerging and under-studied question in her research: how do female hormones — and the drop in estrogen through menopause — affect our connective tissues? Mit keinem Sommelier reden müssen, wenn man eine kleine Weinkartenangst besitzt, aber sich mit ihm austauschen zu können, wenn man einfach weinneugierig ist? Check! Willkommen im Bar.rique zu Bremen und willkommen bei Jannis Bartsch. Die Gastronomie war nicht seine erste Leidenschaft und wurde doch nach seinem Studium seine ganz große. Manchmal sind es gerade die Menschen, die nicht den geradlinigen Weg gegangen sind, die einem Beruf seine größte Tiefe schenken. Vielleicht, weil sie sich jedes Wissen selbst erarbeiten mussten. Vielleicht, weil sie nie den Luxus hatten, sich auf Selbstverständlichkeiten zu verlassen. Und vielleicht auch, weil sie sich die Fähigkeit bewahrt haben, Fragen zu stellen, wo andere längst aufgehört haben zu suchen. Bei Jannis verspürt man diese Neugierde, kombiniert mit Demut statt dem gewohnten Selbstverständnis, welches nicht selten aus einer Kellnerlehre heraus resultiert. Jannis Bartsch weiß, was er kann und über den Wein weiß, und doch bringt er den unverstellten Blick eines Menschen mit, der nicht nur lernen, sondern verstehen möchte. Dadurch entsteht oft eine ungewöhnliche Intensität – eine Verbindung zum eigenen Tun, die weniger aus Routine als aus echter Überzeugung wächst. Und verstehen möchte er ohnegleichen. Nicht nur den Wein, nicht nur die Gastronomie als solche, sondern auch die Gäste. Was für eine unglaubliche Gabe. Denn durch sein Studium, in Kombination mit seinem Weinlernweg und seiner noch jungen, aber intensiven Gastronomie-Erfahrung, erkennt er Zusammenhänge, die weit außerhalb der klassischen Denkweisen liegen. Am Ende erinnert Jannis Bartsch daran, dass Meisterschaft nicht allein aus dem Weg entsteht, den man gegangen ist, sondern aus der Tiefe, mit der man ihn gegangen ist. Und seiner war, ist und wird enorm intensiv.
