Mike Yardey: Europe's best railway restaurants

Saturday Morning with Jack Tame

If you're tripping your way around Europe independently, travelling by train is the incomparable transport mode of choice. It's the fast, efficient and faff-free way to travel, with the added bonus of depositing you in the absolute heart of dream European destinations. But across Europe, their grand and venerable railway stations also house some remarkable restaurant experiences – the real hidden treasures housed within these grand-scale transport hubs. So why settle for an underwhelming grab-and-go sandwich when Europe's busiest stations host some brilliant trackside brasseries and bistros? They're also a great way to herald your arrival or departure from some glittering destinations. More and more of these station restaurants have really upped their culinary game in recent years. So where should you go to sample some of the best in class? Starting in London, Booking Office 1869 is located within St. Pancras Station. As the name suggests, it was originally the vast ticket office for the station. Four years ago, the space was redesigned as a Victorian-style winter garden, with towering palm trees and plant-themed chandeliers. Each one of features 275 hand-cut brass leaves! Backed by exposed brickwork, a superb 22-metre-long bar, carved from marble and walnut. Dining? Expect British classics alongside nods to far-flung destinations. The Scottish charcuterie board is perfect for lunch. It's also a great spot for high tea. Paris? You cannot beat Le Train Bleu at Gare de Lyon. Dating back to 1901, this explosion of Belle Époque grandeur fast became a meeting place for artists, poets and playwrights, and the decor was inspired by the Mediterranean coast's most glamorous destinations. The walls are lined with priceless watercolour paintings, while chandeliers, gilt-framed mirrors, frescos and leather banquettes ramp up the luxury. Headlining the delectable menu, Provençal-style octopus stew and the roast leg of lamb, carved tableside. You may recall this is the restaurant from the Bean Movie, where Mr Bean had some trouble trying to swallow the king prawns. For a memorable first-class dining experience in Amsterdam, the Grand Café Restaurant 1e Klas is located by Platform 2 of the Centraal Station. It also embodies the timeless romance of rail travel, with the restaurant preserving its original look and elegant style of the 19th century. It was originally the first-class waiting hall. The extensive menu offers quick turnarounds, while the croquette and bitterbal tasting is very popular. True to the weird and eclectic Dutch sense of humour, a rather talkative cockatoo called Elvis, perched by the bar. Tripping to Spain? Estación Barcelona-Sants station is home to La Mundana. This recent Bib Gourmand recipient serves up masterful takes on Spanish, Japanese and French classics, tapas-style. Artistically plated, it's a stirring dining experience, but also sharply-priced and unpretentious. For steeply-priced posh nosh in Brussels, La Brasserie de la Gare Brussels Midi has earned the Michelin Guide's stamp of approval. But aside from the cuisine, it's the décor that is the big draw, with antique train lanterns, train timetables and railway workers' hats richly adorning the restaurant. For a bite that won't weigh too heavily on your wallet, whistle up some shrimp croquettes. If you're Itay-bound and find yourself at Stazione Centrale in Milan, check out All'AnticoVinaio. This exuberantly decorated eatery and its owner has become a Tik Tok sensation, with videos galore of him constructing his double-decker Italian subs. Made using the freshest schiacciata bread, sink your teeth into the ‘Favolosa' sandwich, which is stacked with salami, pecorino cheese, artichoke spread and spicy eggplants. If you're after a Golden Arches experience to blow your hair back, Nyugati Railway Station in Budapest, Hungary, is home to what is claimed to be the world's most beautiful McDonald's. It has just reopened after a tip-to-toe restoration to the 150 year old building. The antique lamps and painted stucco ceilings have been refreshed, keeping the vintage designs in place, including the huge glass windows that go around the entire building, as well as copper-covered light fixtures. Amid all the neo-Classical glory from the Hapsburg empire, the touch-screen ordering kiosks look curiously out of place. Finally, a newcomer to the star-factor scene of railway restaurants can be found in Athens at Rouf Station. Greek actress Tatiana Ligari founded Wagon Restaurant restoring several vintage train carriages - including the original dining car from the 1926 Simplon Orient Express. A century later, the carriage is a fabulous restaurant and bar once again. The evocative romance of rail lives on. Spending some time in some of these restaurants is virtually worth missing your train for. Grab a ticket to ride on the European railway network with a Eurail Pass. On popular rail routes, it certainly pays to make a seat reservation in advance. Lock in your rail plans ahead of your trip, by booking tickets or a rail pass to suit with Eurail direct. The mobile pass is the way to go. The Eurail app is easy to navigate, packed with helpful information and benefits, network disruption notifications, and enabling you to check timetables, lock-in and change bookings on the go, via your phone. www.eurail.com Mike Yardley is Newstalk ZB's resident traveller and can be heard every week on Saturday Mornings with Jack Tame.See omnystudio.com/listener for privacy information.

Mike Collantes started his culinary career inside Orlando's Fashion Square Mall, but he now counts himself among the exclusive ranks of Michelin-starred chefs. Collantes earned his Michelin Star in 2022 for his omakase restaurant Soseki in Winter Park. “After the Michelin Star, we're seeing international clientele and guests, as well as our local guests, but really put us on the map for what we've been doing here in Winter Park,” he said. The same year he won his Michelin Star, Collantes closed his first restaurant Taglish, a fast-casual Filipino concept that had three locations at its height. “As we got busier with the fine dining restaurants and other restaurants, our lease came up, and we decided to close that venture down, never to really open it again,” Collantes said. However, with the success of his fine dining restaurant, Collantes has had the ability to open several other restaurants around the greater Orlando area, including Sushi Saint, which was awarded a Bib Gourmand by Michelin. The award highlights high-quality food at reasonable prices. “Last year, November, we opened up our doors (to Sushi Saint),” he said. “There (was) no hand-rolled temaki bar in town. So it's a different way to eat sushi, utilizing still the same quality that we do at our fine dining and just making it a little bit more casual.” In addition to Soseki and Sushi Saint, Collantes is rapidly expanding his culinary empire. He recently opened a sake speakeasy, Bar Kada, next to Soseki. He is also planning to reopen Taglish inside the food hall that used to be The Hall on the Yard, which is now under new ownership. “Taglish is Tagalog in English — so good representation of not just traditional Filipino food. It's really the upbringing of everyone who's migrated to America and I would say it was my connecting point back to my culture, which, you know, I grew up here in the States,” Collantes said. Collantes also plans to open a French restaurant there as well, Chez Les Copain. The chef said it is something the area is lacking in. “We saw a big decline in French restaurants (in Orlando) in the past couple years. A lot of them have just closed up shop,” he said. In addition to all of his work in Orlando, Collantes is starting to work on some international ventures. “I've been doing consulting for the past year, year and a half, with other brands, and it brought me to this new concept called Kaimana, which will be opening this fall in Dubai,” he said. On the latest episode of Florida Foodie, Collantes talks more about the opportunities he's gotten since earning a Michelin Star. He also talks about the struggles that many restaurants are dealing with now as costs rise. Learn more about your ad choices. Visit megaphone.fm/adchoices

We have a lot to get to in this Chapter. First up it's a report on our trip to another of France's Most Beautiful Villages, Fourcès. There's more on the Paris Olympics. And we'll tell you all about the Michelin concept known as Bib Gourmand.

Rocca, located in the Tampa Heights neighborhood of Tampa, FL, is Chef Bryce Bonsack's love letter to the family who he worked for and lived with during his tutelage and pilgrimage in Italy. Showcasing fresh handmade pasta, mozzarella pulled tableside, and dry aged meats, Bryce creates an ever changing menu influenced by both classical recipes and modern techniques. A Tampa native, his culinary background includes multiple years of experience working in two Michelin-starred New York City restaurants -- Blanca and Corton -- and Rocca is his first restaurant as chef and owner. It received the first and only 10/10 rating from Tampa Bay Times' restaurant critic, and most recently, Bryce followed in his mentors' footsteps when Rocca received a highly coveted Michelin Star from the Guide in 2023, as well as a Bib Gourmand. The vibe is lively, the seasons and the local bounty are always represented on the plate, and the service is some of the best I've ever had. But the pasta? The pasta is magic.

You know that giant bin at Best Buy that carries all those DVDs? Think of this latest episode of the Happy Half Hour podcast like that bin. There's a little bit of everything. So, prepare for a lesson on machaca and Vietnam trivia. After finally being removed by Petco Park security, hosts Troy and David are back at the SDM office catching listeners up on all the food happenings around America's Finest City. The duo discuss the splashiest move yet from Consortium Holdings, the re-opening of the storied Lafayette Hotel on Monday, complete with bowling lanes, an even sexier pool, and Instagram-worthy restrooms. Zebra-prints, chandeliers, fringe, velvets, gaudy trinkets, reds, blues, greens—the new $31M hotel is straight out of a Moulin Rouge set. In food news, after starting out as a farmers market vendor, Smokin' J's has opened another location in the Gaslamp Quarter. Similar to their Poway location, the joint is providing customers with brisket, pulled pork, chicken, St. Louis ribs and enough TVs to satisfy Troy and David. Now that Michelin is finally paying attention to San Diego (thank you, Addison), North Park's Mabel's Gone Fishing received a Bib Gourmand and Troy shows his psychic abilities by predicting another star coming to town soon. (Days later, we learned of Valle being awarded its first Michelin star.) Saigon Coffee has opened their first brick-and-mortar in North Park, and just like Smokin' J's, it started as a farmers market vendor. Vietnamese coffee traditionally takes a long time to make, but Saigon uses special filters to speed up the process. “It's so damn delicious,” Troy says. Brine Box also recently opened in Oceanside as a little stand on the pier dedicated to great British food and zero-waste. And it's not all fried fare: shoutout to the seared albacore and Korean barbecue prawns. Other openings include SoiPB from Khwanta Osanai and Truffle in North Park. With a name like that, David says you can even expect the fungi to come shaved on ice cream. Finally, Phil Esteban has opened another White Rice, this time in Linda Vista. David and Troy end by discussing the closing of Sapporo's Anchor Steam in San Francisco. It feels a little too close to home now that Sapporo acquired Stone Brewing Co. Finally, in “Two People, Fifty Bucks,” David recommends the wings at The Regal Beagle. “Their blue cheese dressing was very obviously homemade,” he says. Troy praises National City's Mujer Divina and their excellent machaca. Stay tuned for next week's episode of Happy Half Hour and keep up with David and Troy by following them on Instagram. Swine & Sons looks very different today than it did when it first opened in 2015. “We opened up in April of 2015 and the thought was to be this provisions place and have this meat counter, and then do some sandwiches,” said chef Alexia “Lexi” Gawlak, the owner of Swine & Sons. “And we were thinking of this Bodega style — like grab and go — and that was the first day we were open and (by) about the third day, we were open, we had to completely change the concept because people were like, ‘What do you mean I can't order a sandwich and have it be custom' and people just didn't share our vision.” Gawlak originally opened Swine & Sons under the ownership of James and Julie Petrakis, who also own the Ravenous Pig. Gawlak had worked with them as the sous chef of Ravenous Pig when it first opened in 2007 but stepped back from the restaurant when she had her daughter. When Swine & Sons was opening, James Petrakis pulled her back on board to help helm what was supposed to be a provisions shop. “We overhauled the entire concept on about day three,” she said. “But that space that we were in — which is now the dentist's office — in the parking lot of Ravenous, it was a retail space and it just was it was not built for restaurant use. The plumbing told us that story every day up until the end.” Gawlak purchased the Swine & Sons brand from the Petrakis' in 2019 and moved the restaurant into The Local Butcher and Market, just down the street from the original location — 669 N. Orange Ave. This ended up being a shrewd move as the pandemic swept across the country in 2020. “That was a great move for the pandemic,” Gawlak said. “The butcher was so busy during the pandemic. They were breaking sales records, doing fantastic, and so that was great because we had a stream of people coming in and even when we had to close the dining room down, we had a healthy takeout business. I really think that that's why we made it through the pandemic, truly.” With the move, Swine & Sons also completely changed into a counter-service restaurant, specializing in Southern-inspired sandwiches and sides. The shift ultimately ended up earning Swine & Sons recognition from Michelin in the form of a Bib Gourmand award, which recognizes high-quality food at affordable prices. However, receiving the award did not go exactly as one might expect. “(An email) came to my inbox and it kind of started off, like, ‘Hey, you know, we're bringing Michelin to Central Florida. We're gonna have this party. You should come to the party.' And I was like, ‘Why?'” Gawlak mulled whether to go to the event, but ultimately forgot about it. “And then all the people start texting me, everyone's texting me — ‘Oh, my God, congratulations. This is incredible,'” she said. “I'm like, ‘What did we do? Yeah. So we won a Bib Gourmand. I was at home on the couch with my kids in my pajamas.” After that huge, if slightly anti-climactic, accomplishment under her belt, Gawlak moved her business one more time, but not very far. “October of last year, we had the opportunity to partner with Foxtail (Coffee) and move it up yet again. So I just I always joke like we're just gonna move a couple of blocks towards downtown Orlando every couple of years. We just keep going a couple more blocks,” she said. The new location, which Gawlak believes will be the business' forever home, sits at 1282 N. Orange Ave. “I think that this new partnership with Foxtail — it's been really, really good,” she said. On the latest episode of Florida Foodie, Gawlak shares more of her career in fine dining before taking over Swine & Sons. Sean “Sonny” Nguyen spent a lot of his childhood inside his family's restaurants. “I was brought to the restaurants with my parents, just out of like, you know, they needed to continue watching me,” he said. “So I was always in the back room. My aunts and uncles also owned restaurants, primarily Chinese buffets, and there would always be a back room where all the kids and cousins would be hanging out.” Nguyen — who owns Domu, along with several other restaurants — said he always had a love of cooking, but his parents actively discouraged him from working in restaurants. “Honestly, they hated it,” he said. “They were like, ‘You got to be a doctor, you got to be a pharmacist, you got to be a lawyer, you got to have a high paying salary. I understood where they were coming from. My parents came over in the ‘70s, on a boat, by chance and floated to the Philippines and were saved and brought over to America. So they were during that wartime. Communists took over (Vietnam). It was really tough for them and so I think they just wanted a better life and I understand that part.” Nguyen would work for the Bento Group from 2007 to 2016 when he first opened Domu at Orlando's East End Market. “I was opening the restaurants for (Bento) around the state and so I understood the project management side, the construction side, food costs, and all that — running the business side as well. So that's super important, not just to know how to cook, but also how to run a business,” he said. Nguyen describes Domu as a “neighborhood ramen shop.” “You're going to walk in and you're going to hear hip-hop music on. It's non-traditional,” he said. He added that Domu has a lot of rules set for itself, such as no reservations and no take-out. It's because we want to be able to manage the room, but we're looking at it as a standpoint of being able to take care of the customers and not overwhelming ourselves and making sure the team can keep up,” he said. Domu has proven successful. The restaurant has expanded to three locations and was recently recognized by Michelin with a Bib Gourmand award, which honors high-quality food at reasonable prices. Beyond Domu's success, Nguyen has also opened two new concepts in Orlando's Mills 50 neighborhood — Tori Tori, a cocktail bar serving Japanese-style bar snacks, and Edoboy, a standing sushi bar. On the latest episode of Florida Foodie, Nguyen talks about balancing multiple restaurants with his family life. Hosted by David and Nycci Nellis. On today's show: • James Simpson, beverage director and partner at Espita, authentic Southern Mexican food and drinks in Shaw, DC.; • Chef Adrienne Cheatham. For now, she's best known for being the runner up on season 15 of “Top Chef.” Or maybe she's better known as the chef de cuisine under Marcus Samuelsson at Streetbird, where she received a Bib Gourmand from the Michelin Guide. But … Chef Adrienne is about to be even better known after Tuesday, when her very first cookbook, “Sunday Best,” debuts. The title is inspired by the longstanding African American tradition of wearing your best clothes on Sundays for church services and gatherings, and the cookbook parallels this tradition, dressing up Southern/soul food in its “Sunday best;” • Jeff Fugate. He LOVES queso. So much so that he founded Empty Bowl Queso. He now has a small queso empire going, providing queso-maniacs with their daily fixes through stores across six states, including Maryland, Virginia and the District; • “Oodaalolly” is a time-honored expression of joy, surprise and delight. It's what inspires Swiss-Filipino entrepreneur and sixth-generation chocolate maker Hernan Lauber's many creations using Filipino cacao, ingredients, and flavors to make award-winning chocolate works of art, and have some fun doing it!

CHICAGO, IL — My guest today is Mark Steuer. Owner & Head Chef of Funkenhausen — a 2x Bib Gourmand restaurant located in West Town and my favourite dining establishment in the country. Mark and I have been talking about sitting down to do a podcast together for almost two and a half years. We met back in July of 2019 through one of Funk's excellent servers called Jesse and immediately hit it off. Life (and the pandemic) got in the way of us ever hitting record. But I'm honestly so glad it did. Mark and I have now had the time to build a fantastic relationship, making this podcast deeper, funnier, and more intimate than it ever could have been back in 2019. This episode is nearly 2 hours long and is split into two parts. The first hour takes place at Mark's house and the second after hours at his pride and joy of a restaurant — Funkenhausen — on a beautiful Fall Tuesday night in Chicago. Over a few glasses of Riesling, a dinner, some lone star and of course a drop of whiskey, we dive deep into Mark's story — how he started cooking, his European upbringing, his motivations, inspirations, mentors, stages, mistakes and biggest successes. We also touch on how we see hospitality evolving and why we're starting a dining club together in Q1 of 2022 — our stab at a Nouveau Chef's Table. So sit back, relax and pour yourself a glass of your favourite German wine. Without further ado, here's Mark Steuer. https://www.funkenhausen.com https://www.instagram.com/chefmarksteuer
