This week on The Whiskey Trip, Big Chief barrels into Northern Kentucky—a land where whiskey history runs thicker than molasses and the ghosts of rectifiers past still linger in the mash. He sits down with Bill Whitlow of Wenzel Whiskey, housed in a restored 1873 brick beauty that's equal parts heritage and hustle. Together, they toast to the long-overlooked rectifiers—those scrappy, bootleg-era blenders who kept the whiskey flowing when times were rough and barrels were rougher. First up: Wenzel's Sherry-Finished Bourbon. Aged four years, then wooed for three more in Oloroso casks, this 109-proof sipper hits with coffee liqueur, dark chocolate, and dried fruit that could charm a priest into sin. Then comes their four-grain wheated bourbon—65% corn, oats, wheat, and barley—with a 112.4 proof kick. It smells like breakfast in heaven (toast, honey, butterscotch) and finishes like dessert with a twist of lemon and a slap of white pepper. Finally, they light the fuse with the Rectifier's Rye—three 7+ year barrels of 95/5 rye, bottled at 114.4 proof. It's hot, sticky, and spiced like a love letter from the devil. Think hot honey, oak, molasses, and a finish of black licorice that hangs around longer than your in-laws. This episode is a whiskey-fueled nod to history's hidden heroes—and a damn good time. In the brewing and distilling industries there is a mutual appreciation of the craftsmanship, skill and process involved in creating these fantastic liquids. And today's guest, having worked and studied in both fields, is well placed to do just that. Earlier this month Glen Scotia, part of Loch Lomond Distillery, unveiled Glen Scotia 50 Year Old. Glen Scotia Elements of Campbeltown Release Number One: Air is described as an exceptional 50-year-old single malt which marks a pivotal moment in the distillery's history, as its oldest ever release.And this prestigious release follows on from the launch of Loch Lomond Whiskies 50-year-old single malt. These esteemed liquids have seen the light of day thanks to the stewardship of Michael Henry, a reputed distiller who has a background in both brewing and distilling. A whisky five decades in the making, Loch Lomond 50 Year Old is drawn from Loch Lomond Distillery's oldest reserves and is exclusively limited to 100 individually-numbered bottles worldwide. Distilled in 1973 in the distillery's unique straight neck pot stills, it uses 100% unpeated malted barley. It was then aged in a combination of refilled American oak casks, first fill bourbon casks and Oloroso sherry hogsheads. The maturation process was carefully managed by Loch Lomond Whiskies' master blender, Michael Henry, who joined Loch Lomond Distillery in 2007. And the distillery's oldest and rarest whisky casks remain exclusively under his personal care.In this episode, Michael talks us through in his involvement in this special project, he takes us through his career to-date and also shares what keeps him driven and inspired.

This is the weekly columnHalloween is next week, but if you are giving wine advice it's best to give your audience some time to act on it.First, I know of no decent pairing of wine with treacly sweet trick-or-treat candy. With somewhat less sugary candy, you can go with light, sweet wines. Wine must be at least as sweet as the candy.If the treat is dark chocolate, you have real options. Dark chocolate typically contains 50-90% cocoa solids. The higher the percentage of cocoa, the better to pair with wine. Vintage or ruby port, sherry, and marsala are classic fortified wine pairings. Non-fortified pairing wines include zinfandel, cabernet sauvignon, merlot, and New World pinot noir.If you are not part of the child extortionists plot, you can always enjoy the frivolity of an adult costume party and real wine pairings. Charcuterie boards work well with almost the entire panoply of wine. If you are enjoying a full regular meal, the usual food-wine pairings apply.When you get to dessert, dark chocolate is in play. With pumpkin pie there are several choices:• Mascatel sherry. Its honey, caramel, and raisin notes nicely pair with the pie.• California chardonnay. A full-bodied chard with plenty of oak, butter, and vanilla flavors will work especially nicely with pie crust.• Tawny port. Nutty and dried fruit flavors complement the pie.• Oloroso sherry. Sweet, nutty flavors match with autumnal flavors of the pie.• Late harvest gewürztraminer. Nutmeg, vanilla, and cinnamon flavors in this sweet wine complement spices in pumpkin pie.• Riesling ice wine. Sweetness and acidity work with the pie's rich, creamy textures.As with candy, the key is the wine must be at least as sweet as the pie. In fact, that is a good rule of thumb for all wine and food pairings.Now you are set for the last day of October ordeal or fun fest, however you roll. This single barrel of cask strength Angel's Envy finished in Oloroso sherry cask and bottled at 115.3 proof is a fruit and leather showstopper. Cinnamon candy on the nose with subtle red fruit and toffee. On the palate, traditional bourbon notes lead with leather, vanilla, apricot and chocolate, but from mod-palate on the sherry takes over imparting a very rich raspberry wine note that pairs PERFECTLY with the whiskey. Tasting Notes This classic Highland single malt is aged for 12 years in a combination of Oloroso and PX sherry casks, providing a fruit and sweetly cream driven malt with ginger cookie, dried red fruit, and orchard fruit. The malt has a touch of lemon curd, but the rich fruit takes over and leads to a balanced finish both malty and spicy.

Sherry is a complex wine with lots of terroir, tradition, and winemaking possibilities. In episode 495, we go over the stats on the region, the history, the terroir, and details on winemaking, including the solera system. We then describe the biologically aged wines – Fino and Manzanilla. Tasting Notes: Blood Oath Pact 9 is a blend of 16yr and 12yr old Kentucky straight bourbon along with a 7yr old finished in Oloroso sherry casks, bottled at 98.6 proof. Intensely lifted herbal notes on the nose with mint, pine, and honey emerging, some yellow fruit as well. On the palate, a very rich and warming center palate, exploding with orange fruit, leather, and spice. Best mid-palate intensity I've ever had in a bourbon. Extremely spicy finish with a touch of fruit at the end.

Brown Forman is an American company, best known as the owner of Jack Daniel's Tennessee Whiskey, and bourbon brands Old Forester and Woodford Reserve.But in 2016, it got into Scotch whisky in a big way, buying The BenRiach Distillery Company, which included three distilleries: Benriach of course, in Speyside; the famous Highlands distillery, Glendronach; and also in the Highlands, but somewhat lesser known, Glenglassaugh.Stewart Buchanan held his role since 2012, prior to which he was Benriach's production manager, so he has tremendous insight into these distilleries and the Scotch whisky industry generally.He was in Australia for the launch of Glendronach 50 Year Old, the oldest expression it's ever released.Distilled in 1971, The GlenDronach Aged 50 Years has quietly slumbered over five long decades in rare Pedro Ximénez and Oloroso sherry casks from the Spanish bodegas of Jerez in Andalucía.

This is the weekly newspaper column.Wine's love-hate relationship 3-15-2023Wine has a love-hate relationship to oxygen. Not enough oxygen when it is in the winery and wine can be reductive—engendering volatile sulfur compounds. Burnt match and rotten eggs are common odor descriptors. Too much oxygen and the wine tastes “tired” and eventually turns to vinegar.When wine lives in the Goldilocks zone—not too much, not too little oxygen—everything is just right.Oxygen begins to affect wine as soon as the bottle is opened. At first this is a good thing, helping release suppressed aromas and flavors. It is why allowing wine to “breathe” either in your glass or in a decanter or aerator can be a good thing.At first, almost all wine can benefit—or at least not be harmed—by the initial exposure to oxygen. But the clock is ticking. As days pass after opening, wine becomes less enjoyable. There are devices and storage methods to slow the decline, but as long as the wine is exposed to oxygen decline is inevitable.Wine spoiled by too much oxygen exposure can be identified by sight, smell, and taste. Spoiled reds take on a rusty brown color; spoiled whites turn yellow, gold, or dark. Spoiled wine will have aromas of fruit replaced with bitter, even acetone smells. If the nose gives you pause, pour the wine down the drain instead of into your glass.If you aren't sure about spoilage, you can always taste the wine. Spoiled wine will not harm you, but it also will not bring joy. It will taste unbalanced. It will have nuttier notes and subdued fruit flavors. Higher alcohol wines will taste more alcoholic.Different wines have different after-opening drinkability. Wines with lower tannins—grenache, pinot noir, gamay, for example—spoil faster. Wines with higher sugars—riesling—last longer. Wines with high tannins, acidity, and sulfites last longer. Oxidized wines—madeira, Oloroso sherry, port—will last the longest after opening because oxidation is part of the process of creating the wine.Box wine can last a month after opening, particularly if stored in your refrigerator. There are storage methods that replace oxygen in the bottle with inert gasses—Coravin, for instance—that extend the life of a bottle for years.As with almost all things with wine, if the wine tastes good to you days or weeks after opening, then enjoy.Last round: When I see names of lovers carved into a tree, I don't find it romantic. Well we're here, we're on time and it's our birthday. Caskheads is 3 years old (and a day) when this episode dropped, which is great because if we were in Scotland, if we were a distilled malt spirit and if we had been made matured and bottled meeting SWA regulations, we'd be a whisky. In this episode we talk about Hazelburn which is a triple distilled release by the Springbank distillery in Campbeltown. We discuss the two most important events to have happened in 1997 (Sorry if you were born then, but I think we all agree it goes: Lost world Jurassic Park, then Hazelburn being released for the first time, after that fight amongst yourselves). This episode marks the end of season two for Caskheads but we will be back for season 3 soon. Finally we review not one but two Hazelburn whiskies, the standard 10 year old release alongside the 2023 12 year old Oloroso sherry cask release and although I forgot to thank them in the episode, thank you to the Springbank distillery for making this whisky. The style that caught Steven's attention was the driest, Fino. If you're looking for a sherry to begin with, he suggests Amontillado. Yeast, referred to as "Flor", is used in the production of all wine. In biologically-aged sherries, this yeast is left in for years as the sherry ages, thus removing a greater amount of the wine's sugar, accounting for its striking dryness. Like Champagne, Sherry can only come from a designated region in southern Spain (The Consejo Regulador).Only 3 grape varietals are permitted for making Sherry: Palomino Fino, Moscatel, and Pedro Jiménez. Are you looking for a place to start with Sherry in cocktails? Use Fino or Manzanilla in a sour like a daiquiri in place of the rum or cut out half and substitute it in. Co-owner and Brand Manager, Donal O'Gallachoir, joins Pedro in the Whiskey Society this week to chat about Glendalough, an Irish Whiskey helping leading the charge in this new wave of Irish Whiskies that are coming to America.--From The Glendalough Website:The Glendalough Distillery was set up by a group of friends from Wicklow and Dublin with a passion for reviving the heritage of craft distilling in Ireland. In the 18th & 19th centuries there were over 200 licensed distilleries in Ireland and along with countless unlicensed ones produced diverse styles of poitín, whiskey, gin and even absinthe. Until recently that dropped to a small handful. After many an evening's banter and debate over why there weren't more craft distilleries in the birthplace of distilling, the friends convinced each other to leave the safety of their day jobs, head into the mountains and take a chance on something more meaningful (much like the man on the bottle, St Kevin). Together they built a craft distillery near their favourite spot in those mountains, Glendalough.Whiskey & Wood:A key influence on the flavour of our whiskey comes from the wood it has spent time in. There are countless nuances in how that wood effects and injects flavour, from the straightness of the tree or fineness of the grain to the size of the barrel or depth of the char. Somewhere between a lot, and most of the dominant flavours in whiskey come from the wood it has spent time in.There are countless nuances in how that wood effects flavour, from the straightness of the tree or fineness of the grain to the size of the barrel or depth of the char.Two of the main factors in how we choose our wood are: the breed of oak (where the wood is from), and the predecessor liquid (if it's a pre-loved barrel, what's been in it).As with most Irish whiskeys, ours matures in Bourbon barrels. But where we break with tradition is that we finish all of our whiskeys in a second, very different cask. These are selected especially to accentuate the flavours already inherent in a given whiskey.AMERICAN BOURBON BARRELSAs mentioned, our whiskeys do the bulk of their time in first-fill American white oak Bourbon barrels. These 200 litre casks lay the flavour foundation that has become the backbone of the Irish whiskey taste.Felled in Missouri at about 80 years old, they are milled, seasoned and coopered in Kentucky and filled with Bourbon.American oak casks impart a lot of flavour. Besides the fact that they've held Bourbon before we get them, the charred wood truly transforms new-make Irish whiskey. We use a level 4 "alligator char" which really brings the wood alive in terms of flavour.This adds that charcoal mellowness, the sweetness of vanilla and caramel that perfectly compliment the flavours already present in the spirit. They bring to the whiskey a beautiful golden hue, and smoothen it to a creamy mouth-feel.However we're always seeking out new flavours, the best oak around the world and other interesting casks.SPANISH OLOROSO SHERRY CASKSTo finish our Double Barrel, we use 500 litre Oloroso sherry butts made from European oak, felled in the ancient deciduous forests of Northern Spain. A tree must be about 120 years old before it's good for barrel making.The casks are lightly toasted rather than charred. So we get clearer wood flavours. Then there's the Oloroso. A dark, fruity and nutty fortified wine from Montillo, Spain, the Oloroso that seasons our casks is made from the famed Pedro Ximenez grape. After about 2 years of holding Oloroso, we then inspect and choose the casks.The intense flavours they bring get into our whiskey fast. Raisins, sultanas, candied peel, cinnamon, nutmeg, and Christmas pudding are all clearly discernible in the whiskey within 6 months, as the liquid turns from gold to amber.DUBLIN PORTER BARRELSFor our 7 year old single malt, it's Dublin porter barrels. Although these barrels are also ex-bourbon, they become a different beast once craft porter spends a year in them.We use barrels from the 5 Lamps brewery in Dublin. Their "Black Pitts Porter" is a rich, black beer with deep, dark flavours. Made with chocolate malt and roasted barley, the porter is rich and creamy with complex aromas and a smooth velvety texture.All of this gets into the oak and comes back out into our whiskey to accentuate the robust malts of both liquids. Flavours of cocoa from the porter mix with the citrus notes of the whiskey to result in dark chocolate orange flavours, with toffee and even coffee notes on the finish. It's an unusual and noticeably different whiskey, that you want to return to, often.JAPANESE MIZUNARA BARRELSFor our 13 year old single malt, it's the legendary Mizunara oak. Found in forests on the rugged, volcanic island of Hokkaido, the wood is very soft and porous with a tight grain, which is good for flavour but hard to cooper and prone to leaking. It has very high levels of vanillins that impart luxurious woody flavours fast.Ours is then brought to the south of Japan to air dry in Miyzaki before coopering at Japan's only independent cooperage. Here we personally inspect the wood before it's worked by Japan's oldest cooper. The casks are lightly charred and shipped as virgin barrels over 6,000 miles to us.Mizunara packs a punch of unique, exotic and exquisite woody flavours. Some say sandalwood, we'd agree, but that's just the beginning. It amplifies flavour and brings the mouth-feel to velvety proportions, it layers on extra vanilla, honey and even coconut.It makes for a pretty unique take on Irish whiskeyIRISH OAKProbably the rarest of all casks is Irish Oak. Before Ireland was known as "the emerald isle", it was known through out the old world as "the wooded isle". They say a squirrel could cross the whole country touching nothing but oak.In particular, Glendalough oak was famed for boat building as far back as Viking times (The largest Viking ship ever built was "The Sea Stallion of Glendalough"). Even the mountains that cradle the valley are named for the oak forests that covered them - Camaderry Mountain (Sliabh Céim an Doire, meaning "the mountain pass of the oak wood") and Derrybawn Mountain (Sliabh Doire Ban, meaning "the mountain of white oak")We're very excited and proud to play a part in bringing Irish oak back into use for aging Irish whiskey, helping to manage these ancient forests, and doing our bit for the regeneration of these beautiful, broad-leaf, deciduous woods.We are sourcing trees from within walking distance of the distillery to get to a truer taste of Wicklow Whiskey, using Wicklow barley and Wicklow water.
