Episode 114: In this conversation, Kate Kavanaugh sits down with author Chris Berdik to discuss his new book 'Clamor: How Noise Took Over the World and How We Can Take It Back'. They dive into the often-overlooked significance of sound in both our personal lives and the natural world. Chris shares insights into the biology of hearing, the impacts of hearing loss, and the pervasive issue of noise pollution—both for humans and wildlife. At its heart, it's about how sound connects us to the world at large and to one another. The discussion explores the evolutionary importance of sound, how our auditory experiences shape our connection to the environment, and the broader implications of noise on our well-being (and the importance of preventing hearing loss). They also touch on how sound can shift environments: from hospitals to neighborhoods. Ultimately, this conversation highlights the critical relationship between sound, human and environmental health, and community engagement in shaping healthier soundscapes.X: @chrisberdikWebsiteNewsletter Clamor: How Noise Took Over the World - and How We Can Take It BackResources Mentioned:Soundprint AppRelated Episodes: Episode 90: Sh*t, Shipping, and Blood: Upending Taboos and Exploring the Ignored with Rose GeorgeEpisode 72: Circular Economies and Linear Infrastructure: the Complex Interplay of Roads, Beavers, and Ecosystems with Ben GoldfarbEpisode 83: A Planetary Pulse of Connection: Exploring the Ocean, Science, and Beyond with Helen Czerski Episode 58: Exploring the Mystery + Embracing the Unknown with Fred ProvenzaSupport Kate: PatreonSubstackPayPal-Leave a One Time TipSponsored By:REDMOND REAL SALT: Use code MINDBODYSOIL_15 for 15% off at Redmond.lifeAffiliates:FIELD COMPANY CAST IRON: fieldcompany.com/kate_kavanaughBAHÉ FOOTWEAR: Use the code ‘Kate10' for 10% off. Episode 109. In this episode, I (Kate Kavanaugh) reflect on my personal journey with movement from a practical and philosophical standpoint all while weaving it into some of the bigger themes that we've been exploring on the podcast around how we move resources to our bodies and how that itself changes our movement. I start out with some historical context of movement and resources, the impact of sedentarism on our bodies, and the concept of shifting baselines in understanding how our bodies work. I share my experience with chronic illness and how movement has been a source of strength and resilience and how I've navigated continuing to move even, and especially, when it feels really hard. This is about the transformative power of physical activity–mentally, physically, and socially. I talk about my movement why–including health, aging, enjoyment, and, yes, even vanity. I talk a little about my home gym, scaling movement, and some tips for making yourself move when it feels hard. It's a lot of fun, it's thoughtful, a little heavy at times, but we can carry the load together!Find Kate: Instagram: @kate_kavanaughSupport Kate: PatreonSubstackPayPal-Leave a One Time TipResources Mentioned:On Muscle: The Stuff that Moves Us and Why It Matters by Bonnie TsuiLizette PompaSteph Rose, Phase 6Ben BrunoKara Duval, RangeDr. Susie Spurlock, Supple StrengthBest of Movement Focused Episodes:Episode 94: An Ecology of Movement with Katy Bowman Episode 68: One Foot in Front of the Other with Kate KavanaughEpisode 77: Our Relationship to Resources with Kate KavanaughEpisode 54: Staying Human is the Greatest Skill with Daniel VitalisEpisode 22: Building Strength from the Inside Out with Ashleigh VanHoutenEpisode 2: The Strenuous Life with Ed RobersonSponsored By:REDMOND REAL SALT: Use code MINDBODYSOIL_15 for 15% off at
Episode 106: In this conversation, Kate Kavanaugh and Kurt Gray--whose book, ‘Outraged!: Why We Fight About Morality and Politics' is out today--explore the themes of human nature, exploring the idea of humans as prey animals and how this evolutionary bent shapes our understanding of threats in modern society. It's an episode about how we view harm and threat in a modern social media era, how much divisiveness this has fostered, and how we might have conversations that bridge those divides. In it, they discuss the importance of storytelling in bridging divides and fostering empathy, as well as the vulnerability paradox that arises when trying to connect with others who hold differing views. They also explore Kurt's CIV framework (Connect, Invite, Validate) as a method for fostering meaningful dialogue. It's also a conversation about how much humans like going deep with one another–even if they think they don't. Last, and certainly not least, they ponder paradox themselves, and why humans might be prone to more binary thinking from an evolutionary standpoint. Episode 101: In this episode, I reflect on my journey over the past three years of podcasting, It's about being a human in process. It's about taking moments to let ourselves be fallow, to stop along the journey, lay out a blanket, and watch the clouds go by. I also discuss a concept I've been exploring for myself where “Ease = Effort + Flow” and how a little friction and push in life can give us the active ease we've been seeking. Ultimately, it's about the interconnectedness of existence and what it might mean to embrace aliveness and fun. It's short and sweet and I honestly have no idea what I'm doing in these solo episodes. Hey there are welcome to the wemove podcast. This week we continue Chris's conversations into the Nervous System. In conversations one and two of this series, the focus has been with experts in nervous system regulation in Irene Lyons and Dominik Koch. Both of whom Chris has worked with and learned from in his own explorations and practices in NS regulation, and understanding the way in which his body has processed injuries and events throughout his life.Whilst speaking to the experts is great, it only gets us part of the way there. Hearing other experiences of those who have been on the journey is also invaluable in understanding and making sense of the process, what is arising and how others are responding. And it was with this spirit Chris spoke to our next guest who kindly responded to sharing her thoughts and ideas on the Nervous System from personal experience to practical experience in her projects and businesses. Kate Kavanaugh is a butcher, regenerative farmer, nutritionist and walker, founder of Western Daughters butchers @westerdaughters alongside the Mind, Body and Soil podcast. The conversation follows two trains of thought, the personal experiences of discovering and regulating the Nervous System and the second, the intertwined relationship of our selves, the food we eat and the land we inhabit as it relates to the Nervous system. Kate explores this further on her instagram @kate_kavanaugh and in her podcast Mind, Body and Soil. Thanks for listening, from Chris and me. Our relationship to resources shapes the world. Our food, our clothing, our devices, our building materials and the infrastructure that underpins moving them from place to place. On this podcast, we've explored a lot around food as a resource - its impact on land and human health and some of the inputs and externalities of our food system. Now, I'd like to take a turn to explore some other resources and the ubiquitous, yet unseen, infrastructure that moves them to us and our waste products away from us. Coming episodes will be filled with this exploration and so I want to give us a little primer on why this became so interesting to me and why it matters. Have you ever woken up while you were dreaming, only to find that you couldn't move a muscle? Or, perhaps even more terrifying: have you woken up and felt a deep weight on your chest and sensed that an evil creature was pushing down on your chest? That, my friend, is the night hag--another name for sleep paralysis. I recently had a chance to chat with Kate Kavanaugh @katekavanaughmbs --a world famous butcher and host of the Mind, Body, Soil Podcast about the strange things that happen when we close our eyes at night. I've known Kate from a few interviews that we've done together over the years, and this is a re-broadcast of her show on my channel. In this solo episode, Kate dives into those spaces that are neither here nor there, the "in betweens", exploring the idea that when we set goals now (point a) for a place in the future (point b), the real gift is the process that unfolds in between. With that in mind, Kate explores the tension between not wanting to fall into the hustle and productivity-driven culture of goal setting but also enjoying, frankly, the process of evaluation and setting goals. This is also an exploration of Type 2 fun, that space between not enjoying something in the moment and enjoying it immensely looking back on it. There are some notes on words and how naming something can guide us and a little invitation for the new year and how to get on a waitlist for Kate's latest offering. Hey. It's Kate. I've been absent and I want to talk some about why and what it means to be in a challenging season of life. So often we hear from people once they reach the other side of challenge - but we rarely hear from them when they're in the thick of it. Well, I'm in the thick of it, and so this vulnerable episode is three parts: where I've been and what's going on, how I've been literally and figuratively putting one foot in front of the other, and where the podcast is going (hint: it's coming back! I need it and maybe you do, too.) This is a vulnerable episode that I'm a little waffly on releasing, but feel strongly that there is a call to share honestly. It is also an exploration of walking as a practice of moving through hard times. Why walking as exercise, as a practice, as a meditation? I answer all that and more in today's episode. What could possibly persuade someone to go from vegetarian to butcher? Kate Kavanaugh tells what shifted in her that led to this profound lifestyle and dietary change. Kate is indeed a butcher, and also a farmer, and the host of the Mind, Body, and Soil podcast, among other initiatives. Today, she shares insights on our place in the complex web of nourishment. Among other things, she conveys her realization that what we eat becomes us, in a very real sense; how the seasons affect the fat and protein on an animal's body; and how uncomfortable we feel with the death of animals…and just plain death, period. Kate also gets practical as she explains the process of processing (what happens to our meat before it hits our table) and how to find farms near us, wherever we live. Want to have your mind absolutely blown? Tune in to hear us interview Kate Kavanaugh, farmer, butcher, nutritionist, and overall badass! We heard Kate speak at the What Good Shall I Do Conference out at Roam Ranch and have had a total intellectual crush on her ever since. In this episode, we discuss why death is an essential part of the life cycle and how there is no such thing as a deathless diet. Kate describes in beautiful detail why we literally are what we eat and connects the dots between the microorganisms and minerals in our soil, the amino acids in meat, and the way that these nourish our bodies and connect us to a world much greater than ourselves. About Kate Kavanaugh: Kate Kavanaugh is a farmer, butcher, nutrition therapist, and host of the Mind, Body, and Soil Podcast. She saw first hand the power of meat to heal her own body and in seeking out farmers and ranchers raising meat with holistic practices, she found the power of meat to heal land, too. In 2013, she opened Western Daughters Butcher Shop in Denver, Colorado. Kate is now host of the Mind, Body, and Soil podcast where she is devoted to digging in deep with guests, finding the threads of what it means to be humans woven into this earth. This is a special live episode that was recorded in late June 2023 at the first-ever Old Salt Festival, which was held on the Mannix Family Ranch in Helmville, Montana. The Old Salt Festival is a three-day celebration of ranching, land stewardship, and wild places that features live Western music, wood-fired cooking, products from some of the West's most renowned artisans, readings and interviews with Western authors and poets, and in-depth discussions about conservation and land stewardship. The festival was a resounding success, so I'm thrilled to share one of the many conversations with you here. - The episode is a panel discussion titled "Rebuilding a Resilient, Regional Meat Supply Chain," featuring several of the West's leading voices in sustainable meat production and regenerative agriculture. In order of their appearance in the episode, you'll hear from Cole Mannix, President of the Old Salt Co-op; Kate Kavanaugh, owner of Western Daughters Butcher Shoppe and host of the Mind, Body, and Soil Podcast; Dan Miller, Founder of Steward; and Wyatt Nelson, President of Wild West Local Foods. As you'll hear, each panelist is deeply immersed in a different aspect of the meat production supply chain, and each of them brings a unique and wise perspective to the challenges facing producers and small businesses involved in meat production. - Many of you may already know, but the Old Salt Festival is a part of the Old Salt Co-op, a new, purpose-driven company that “provides meat raised with integrity from Montana landscapes its customers know and care about.” The Old Salt Co-op is working to rebuild the meat business in Montana, creating a sustainable business model that is beneficial to local ranchers, local consumers, and local economies– all while responsibly and effectively stewarding the lands that support agriculture. Rebuilding Montana's meat supply chain is no small feat, but with smart, purpose-driven people like Cole, Kate, Dan, and Wyatt working to find solutions, I think you'll be both inspired and encouraged. - To learn more about the Old Salt Co-op, you can go back to my first podcast conversion with Cole from February of 2023. And be on the lookout for another live Old Salt Festival episode, which I'll be releasing on August 8, 2023– that one will feature a conversation with famed western author David James Duncan followed by a reading from his new novel Sun House. - A huge thanks to Cole and the Old Salt team for inviting me to the Festival, and a huge thanks to the Mannix Family for sharing their stunning ranch with all of us. Thanks to Cole, Kate, Dan, and Wyatt for sharing their wisdom. And last but definitely not least, thanks to the one and only, always hilarious and energetic Bex Frucht for the amazing intro. We were blessed to sit down and talk with Kate Kavanaugh today, the founder of Western Daughters Butcher Shop in Colorado, the host of Mind, Body and Soil Podcast, and an overall badass farmer/butcher/woman - you're going to want to hear her story! The bulk of the conversation is centered around the idea that farming, butchering, and every step of the process of “farm to table” is not without hardships. Kate shares her own struggles keeping Western Daughters afloat, and brings up important considerations regarding the food and farming systems in America, and the struggles this not only brings upon the farmer, but the consumer. Learn how you can do your part to support local farmers with smaller, more realistic steps that go a long ways. We also talk about community, how most of us are seeking to “find our tribe” and feel a part of something greater, which involve the food that is placed at our tables. The importance of having conversations, being open minded, and finding individuals whom seek to evolve and expand their horizons with you cannot be overlooked. We hope you enjoy this candid conversation and we'll absolutely have Kate back on to talk more about her dietary influences and her perspective on healing. The average margin for farmers and ranchers in the country is only one and a half percent, making it challenging to create a sustainable system. However, connecting with our food and having an understanding of the whole lifecycle of an animal can help us achieve food stability. In a conversation with Kate Kavanaugh, the owner of Ground Work Collective, we learn about her passion for animals and the land, which led her to open Western Daughters Butcher Shoppe in 2013. Three years ago, she and her husband bought a farm in upstate New York where they practice regenerative agriculture. Kate is also a nutrition therapist and the host of the Mind, Body, and Soil Podcast. Kate believes that promoting both environmental and financial sustainability for farmers and ranchers is crucial. She and her team created the Ground Work Collective, which connects consumers with farmers and ranchers who use holistic land management practices. With over 2,000 farmers and ranchers on the site, Ground Work Collective ensures that each farmer meets their standards to the best of their ability. By sharing stories of farmers and ranchers with their customers and their meat's impact on customers, Ground Work creates a space where urban and rural environments can connect. In this episode, you will hear: The decision to eat meat in her 20s Supporting regenerative agriculture in the front range The local aspect of meat through Ground Work The importance of connecting with our food What is a soil food web? What it means to nourish our soil How we can scale regenerative farming Isolation vs. systems thinking Subscribe and Review Have you subscribed to our podcast? In this episode of Cylinder Radio, I talk to farmer, butcher, nutritionist and host of the Mind, Body and Soil podcast Kate Kavanaugh. I've been following Kate's content for a long time and have previously been on her podcast so I knew I wanted to have her on Cylinder Radio to share her amazing knowledge and wisdom with all of us. During the episode, we talk about how disconnected modern society has become from out food production and how this is strongly correlated with our general trend towards fragility. We discuss the horrors of factory farming and how regenerative agriculture is the way forward. How can we scale ethical farming to feed everyone? Does some animal life matter more than others? And what can we do to develop a mindset and lifestyle to be more connected and in tune with nature and reality? For our 50th podcast, we decided it would be a good time for us to speak candidly about where we have come from, where we are going, and where we are now with the project: not only as an update to those who have been following us for a long time, but as a way to introduce ourselves to everyone who is new to Death in The Garden. We discuss the creative process, and the challenges that come when one feels that they need to commodify themselves in order to stay “relevant” or to feel important. We talk about recognizing our personal limitations, and our awareness that growth and mastery take time, energy, and focus. We explain our current creative process with the film/book, and discuss how important it is for us to feel like we can put all of our energy into those long-form pieces. We discuss how the creative process is like a conception, a gestating, and a birth, and the death and fear that comes with that sort of transformation. We also talk about growth, collaboration, and where the project will go beyond the film and book. We also break down the ways that the podcast is going to change, namely through the introduction of a new series which will be entitled “A 30,000 ft. View with James Connolly.” James Connolly, who is not only our mentor and friend, is the producer of Sacred Cow and Death in The Garden. In these episodes, we will share new and interesting conversations about a myriad of topics that are part of the larger web of the transcontextual world we live in: from white supremacy, to effective altruism, to Davos men, and beyond. These episodes will include a conversational intro between the three of us, and then will follow into a interview James has hosted with an author, journalist, researcher, or artist who is an expert on whatever given topic. We're not going anywhere: we're just honoring our creative process, focusing deeply on the creation of the film series and book, and will be so happy and grateful to share writing and podcasts with you as our creativity and curiosity flourishes. Thank you all for being here.Editing: Jake MarquezMusic: “Love It If We Made It” by The 1975Mind, Body, & Soil with Kate KavanaughPlease check out the podcast we recorded with the amazing Kate Kavanaugh for her podcast: Mind, Body, & Soil. In this bonus episode of the show, hear Brandi in conversation with Kate Kavanaugh on the Ground Work Podcast. As Kate describes of the interview — "This episode is a long-form podcast between two people that don’t know how to be bite-sized. Often discussed through the lens of paradox where paradox is the answer and not the problem, and pleasure is found in the pursuit of all the questions. In it, Brandi discusses finding purpose in her life as a generalist for whom curiosity is always burning. We talk about aliveness as a North Star for purpose in that, according to Brandi, “Whatever wakes up aliveness is your purpose.” We talk about connection—both connecting disparate ideas and also what happens when we become disconnected and it manifests as illness in our bodies, divisiveness in our culture, and breakdowns in our ecology. Brandi shares about the role of religion in her life and her exploration of the intentional split between matter and the sacred, and how she is reintegrating them. We explore the idea of ‘living in the gift’ and how we can share our gifts with the world and how we can receive the gifts of others." We also talk about:– The intersection of eroticism + aliveness– Learning to stop cutting off pieces of yourself to belong– Holding complexity– Finding purpose in illness Find Kate and other Ground Work things here:Listen to the Ground Work PodcastKate's Instagram Get more This Plus That: Sign up for the newsletter.Join Ecotone, a community of belonging in our holy un-belonging.Get 1:1 creative consulting with Brandi. On this episode of “Death in The Garden,” we spoke with farmer, butcher, and brilliant fellow podcaster, Kate Kavanaugh. Kate is the founder of Western Daughters Butcher Shoppe, located in Denver, CO, creator of the amazing podcast called “Ground Work” which discusses and circumambulates three interconnected themes: mind, body, and soil, as well as a farmer based in New York. The way Kate sees the world is illuminating and refreshing, and we had an instant connection after our first conversation. This episode is one of many we hope to share with Kate. This episode travels into pretty controversial territory, where we openly discuss our thoughts about abortion, sex, and death and the role that these taboos play in our lives. We discuss what it means to be “resourced” enough to bear or raise children, the importance of choice, and how language informs (or misinforms) our understanding of these deeply challenging topics that pervade this current moment. We deep dive into what undergirds the debate between pro-life and pro-choice, which is fundamentally based around our conceptions of life and death. Where does life begin? When is death not a death, or life not a life? What are we avoiding when we ask these questions rather than sitting with the uncomfortable reality that death is part of life? We also discuss life and death in the context of a farm, we talk about the story of Adam and Eve in the Garden of Eden, how engaging with death can help us understand our place in the cosmos, and so much more. We met Econoalchemist in a small town in western Colorado back in July. Econo, as we call him, studies bitcoin and its applications in society, but he also helps explain how people can start using the groundbreaking technology today. His experience in bitcoin reflects his philosophies around sovereignty, personal responsibility, and freedoms. In Colorado, Econo spoke about the ethos of bitcoin and how it relates to the struggles ranchers confront daily. His ‘why bitcoin matters?' presentation quickly evolved from what bitcoin can do for society to what bitcoin can do for ranchers. And he eventually told the special story of one rancher in Colorado he had met over a decade prior named Vern Wagner. Vern battled legal and financial claims against him from the state from 2003 until 2018. The story Econo told sheds light on several topics relating to the food system, particularly the government's role in controlling food production, abuses of power, and defending yourself against the state. As you'll hear in our podcast with Econo, Vern spent 15 years fighting for his livelihood and managed to stand his ground. But, could bitcoin have secured him against this abuse of power from the State? What was the cost of all of the litigation imposed on Vern by the State? **SFuels saved us during this race and single-handedly got us to the finish line on Saturday. We're looking forward to continuing to experiment with low-carb endurance with a 70.3 Ironman in Waco in October. Last Saturday, August 22nd, The Meat Mafia drove to Houston to test our meaty willpower and physical limits. And boy, did we get more than we asked for. We ran the Habanero 100k Race, appropriately named since it starts at noon in Houston (about 100 degrees at the start). As you'll hear us describe, the race coordinators also thought it would be a good idea to lay down thousands of pounds of sand all over the course to make it more challenging.Luckily for us, we fueled really well (thank you SFuels) and felt great through the first portion of the race! In the winter of 2022, I had the pleasure of visiting Roam Ranch to attend a Bison Harvest. On that day, I met Taylor and Katie, and quickly became intrigued by their story of what brought them to Fredericksburg, Texas, to start (of all things) a Bison Ranch. The story begins with Taylor and Katie competing as competitive vegan endurance athletes and evolves from there. Within a short period, Taylor and Katie ran into serious health concerns and, based on a recommendation from a doctor, started eating meat. Their health troubles quickly went away, but new problems presented themselves. The couple had grown so aligned with their vegan identity they had started a successful vegan food company. If their community heard the news of them switching to eating meat, they'd be crushed. Taylor and Katie knew what they needed to do and the rest, as they say, is history. Here's what we covered in this episode:Converting from a vegan to an animal-based dietDeciding to sell to General Mills and start Force of NatureCreating a food system for optimal human and planet healthBuilding a legacy of land stewardship by sharing the message of regenerative agricultureLaunching his new podcast at Force of Nature called “Where Hope Grows”SPONSORS:Optimal Carnivore: Use the code "MEATMAFIA" to save 10% on all productsLiver is hard to come by and the quality, taste, and convenience make it challenging for most people to source properly. Kate Kavanaugh grew up eating a plant-based diet but turned to an animal-based diet to remedy her health problems. Now, Kate owns Western Daughters Butcher Shoppe in Denver, Colorado, and operates a regenerative farm in New York. Her butcher shop opened in 2013 and it’s a whole-animal butcher shop that sources 100% grass-fed and grass-finished beef and lamb from regenerative farms and pasture-raised pork and chicken. She’s using her farm in New York to experiment with raising low-PUFA pork and chickens. The Meat Mafia Podcast is a reader-supported publication. Kate Kavanaugh (@kate_kavanaugh) is a regenerative farmer, nutrition therapist, and butcher - she's seen firsthand the way that soil health mirrors human health and the impacts an animal-based diet can have on the ecosystem and human health alike. In conjunction with that, Kate built a farm finder where people can find regeneratively raised meat right near home. She also recently launched a podcast called the Ground Work podcast exploring the interconnected themes of mind, body, and soil. Kate Kavanaugh (she/her) is trying to figure out what it means to lay the groundwork. For herself, for human health and ecosystem health alike, for farmers, for the next generation, and beyond. After many years as a vegetarian, Kate’s health began to decline precipitously. She turned to meat for answers and found an entire world of curiosity before her. She noticed that through holistic management, farmers were working to restore ecosystems and grasslands with the help of ruminants. This seemed intimately connected to her own health journey and—curious to help restore the Western grasslands she called home through regeneratively raised meat—she opened a whole-animal butcher shop, Western Daughters, with her now-husband in 2013. Blending her knowledge of regenerative agriculture, nutrition, anthropology, health, and biology, Kate is now in the midst of yet another life change spurred on by meat. She moved to a farm where she grows almost all of her own food, lives with the rhythms of nature, and explores the question of what it means to lay the groundwork through her podcast—the Ground Work Podcast. When she’s not exploring the intersections of human and ecosystem health, you can find her playing with goats in the sunshine. In this episode, on the intersections of Meat + Health, we talk about: [08:02] The paradox of life and death: they can coexist together and one is required for the other. [22:39] The brilliant thing about ecology is that we are attracted to things that are more beautiful and taste better. [47:21] The difference between Kate’s view on agriculture and conventional agriculture. [57:29] Why contradiction doesn’t exist in the universe. [01:21:45] Life thrives in edge zones within an ecosystem. [01:30:48] Is the reason why so many people have health issues that we’ve replaced fat with sugar? [01:37:04] Kate and I both like complexity and nuance, which sometimes makes us exhausted people. [01:50:03] Death is not bad in nature. It strengthens the soil and our bodies. It’s all part of a bigger ecosystem. [01:55:51] Why Kate’s community and her new podcast, Ground Work, fill her up. Prefer to see this conversation instead? Watch the full episode on YouTube. [20:11] Allowing healing to sometimes be passive—letting it happen rather than making it happen. [22:11] Reclaiming your self-sovereignty when you’ve been outsourcing your healing to others. [31:00] Healing as a birthright—nature *wants* to heal, and humans are part of nature. [38:16] Our dental journeys, include dental cavitations, airway work, and sleep issues. and so much more. Ed's recent interview on the excellent new podcast “GROUND WORK with Kate Kavanaugh” – This episode is a little different-- it's me being interviewed by my friend and past Mountain & Prairie podcast guest Kate Kavanaugh. If you've been listening for a while, then I'm sure you remember Kate-- she's a farmer, butcher, and all-around interesting woman who co-founded Western Daughters Butcher Shop in Denver. - Kate recently started an excellent new podcast called Ground Work, which covers a variety of interesting topics, from soil to health to books to intentional living. Kate is unbelievably smart and insightful, and there's a ton of overlap between what I'm doing with M&P and what she's doing with Ground Work, so I'd encourage you to check out all of her episodes. There's a link in the notes. - Even though I'm still confused as to why anybody would ever want to interview me, Kate did and we had a fun conversation about everything from conservation to ultra running, reading to starting a podcast. We also talk a lot about my obsession with living what Theodore Roosevelt called the Strenuous Life, and how adopting that approach to life has been life-changing for me. - And speaking of the Strenuous Life, I just launched a new section on MountainandPrairie.com devoted to The Strenuous Life and offering ways for the Mountain & Prairie community to connect and collaborate in the spirit of "Living Strenuously." Rather than try to explain it in these episode notes, I'd encourage you to click over to https://mountainandprairie.com/strenuous-life/ to learn more about all the details. - Thanks for listening. Hope you enjoy this and all of Kate's podcast episodes. And I hope you'll be able to join some of the M&P community in our commitment to living the Strenuous Life. The health of land and the health of bodies are connected. Or as Kate Kavanaugh explains it's about mind, body and soil. Kate is a butcher, a farmer, a newly podcast host and more -- all existing within the regenerative ag space. As a butcher, she founded Western Daughters Butcher shop in Denver featuring local grass fed beef, pork and chicken from local regenerative farms. As a farmer, she raises low-PUFA (polyunsaturated fatty acids) pork and poultry (chicken, duck, and goose) focusing on feed and frequent rotation to optimize omega-3 content for the meat it becomes. As a podcast host the focus is on the interconnected themes of Mind, Body, and Soil. www.groundwork.com
Today's episode is both informative and fascinating! Georgia is joined by Kate Kavanaugh. Kate is an entrepreneur, farmer, butcher, nutritionist, and host of the Ground Work Podcast. Kate shares how she became a butcher, the benefits of grass-fed meat, and connecting with nature. She goes into depth about the importance of soil quality, the links between gut health, and how organ meats can be some of the best foods for your health. Kate explains how to humanely raise animals and support local farmers/ranchers. This is a needed listen, whether you are a meat-eater or not. In this inaugural solo episode, I cover my personal journey while weaving in the themes of mind, body, and soil that we'll explore in future episodes. I talk about how my curiosity around nature and the meat industry led me to a career in regenerative agriculture, the highs and lows of entrepreneurship, and how working with regenerative farms and seeing nature's incredible resiliency taught me about my own resiliency. This first episode is part my own human journey, part history of agriculture, and part the mirror that nature holds up for us to find our own nature. Welcome to season 2 of Focus on Health. During the second season of the podcast I hope to host conversations that shed light on topics such as workplace culture, self identity, work/life balance, interpersonal relationships, substance abuse, and any other challenges that hospitality workers may face. In this episode I chat with longtime friend, butcher, and farmer Kate Kavanaugh. In our conversation with discuss what it means to live in alignment, the decision that she and her partner Josh made to move away from their primary business in search of better alignment, how she's actively worked on returning to her health, how regenerative nature can be for our health, and so much more. Kate Kavanaugh set out on a mission to heal land, bodies, and communities through food ten years ago. She is the owner of a small butcher shop and grocery, Western Daughters, in Denver and a new farmer on a small farmstead in upstate New York. She is on a journey to connect with nature, experiment with regenerative agriculture and livestock raising techniques, and help others reconnect with practices that bring them back to health and vitality. Kate just launched Ground Work, where she wants to help connect people directly to their food through both a farm directory and a podcast where she muses about mind, body, and soil. In her spare time, she loves to cook, hang out with her goats, and go for long walks.
To Be Big in China Requires Playing by China's Censorship Rules (0:32)Guest: Stanley Rosen, Professor of Political Science and International Relations, University of Southern CaliforniaFresh back from a couple of exhibition games in China this week, NBA star LeBron James set off a fire storm with his reaction to a tweet that had set off an earlier firestorm. “You know when you're misinformed or you're not educated about something –and I'm just talking about the tweet itself –you never know the ramifications that can happen. And you know we all seen what that did.” The tweet was fairly short and quickly deleted. It was posted by the general manager of the Houston Rockets and it read “Fight for Freedom. Stand with Hong Kong.” China's communist government immediately condemned the tweet –it sees the Hong Kong protests as a violent separatist movement. The timing was bad, because LeBron's LA Lakers and the Brooklyn Nets were just about to head off to China for some pre-season games and a bunch of publicity to gin up support for the NBA in China–which is a really lucrative market for the league. Chinese companies pulled sponsorship from the NBA and team appearances were cancelled. Chinese TV networks refused to broadcast the games. The NBA apologized to China, but that's tricky because here in America we believe in free speech and furthermore, what the Houston Rocket's executive tweeted about supporting Hong Kong protesters is a pretty mainstream view in the West. And so, American media and entertainment companies are in a tough spot. The Chinese market is a gold mine, but reaping those profits means cooperating with China's communist censors. Butchers Aim for More Sustainable Meat Eating (20:45)Guest: Kate Kavanaugh, Cofounder and CEO of Western Daughters Butcher ShoppeA former vegetarian is the last person I'd expect to see behind the counter at a butcher shop carving steaks off a carcass. But that's Kate Kavanaugh's story. She's part of a movement the New York Times recently called “ethical butchering.” Kavanaugh says “sustainable” might be a better word. Crowdfunding Saves a Stretch of Pristine Wilderness in British Columbia (37:28)Guest: Andrew Day, CEO of the British Columbia Parks FoundationUp north of Vancouver, along Canada's Pacific coast, glaciers have carved narrow, finger-like fjords that are spectacular. One of them is sometimes called the “Yosemite of the North” because of its high cliffs and waterfalls. Princess Louisa Inlet is its actual name and recently a stretch of its shoreline went up for sale. Logging companies were eyeing it, until the British Columbia Parks Foundation stepped in with a bold plan. They were going to crowdfund $3 million to buy the land for preservation as a public park. With just three months to round up the cash, they did it. The Apple Seed (51:10)Guest: Sam Payne, The Apple Seed, BYUradioSam Payne from The Apple Seed shares a spooky story in honor of October. Increasing Recess Time (1:01:47)Guest: Lauren ZolkiewiczIn many school districts pressure to have kids perform well on exams has led to cutting time from other programs and activities –including recess. But some say that's a big mistake. In one of the largest school districts in the country one parent, who is also a high school teacher, has worked tirelessly to make a difference for her child and thousands of other children in one way: longer recess. Lauren Zolkiewicz is a mother and high school teacher who is passionate about free, unstructured play being built into the elementary school curriculum. Through her movement “More Recess MCPS”, she has begun a pilot program that has doubled recess time in six of her district's schools. Proving Einstein Right: The Daring Expeditions that Changed How We Look at the Universe (1:12:21)Guest: Sylvester James Gates, Jr., Theoretical Physicist, Brown Theoretical Physics Center Director, Co-Author of "Proving Einstein Right: The Daring Expeditions that Changed How We Look at the Universe"100 years ago, a total solar eclipse changed our understanding of the universe and made Albert Einstein famous. Up till then, Einstein was just an academic with some intriguing ideas about gravity. But a group of adventurous astronomers set out to test Einstein's theory of relativity. To do that, they needed to take pictures of the stars during total solar eclipses. And to do that, they had to travel to Russia on the brink of war and deep into the Brazil's Amazon jungles. Finally, on May 29, 1919, after eight years of failed attempts, astronomers captured the evidence they needed to prove Einstein was right.
Nick chats with Founder of Western Daughters Butcher Shop, Kate Kavanaugh. Recently, she was featured in the New York Times for her very interesting story of becoming a strict vegetarian in her youth to owning and operating a whole animal butcher shop in Colorado. This episode takes a few tangents into views on agriculture and domestic meats, some historical reasons why regenerative ag is a good idea. Kate also lays out some tips for hunters and hits us with some incredible meal ideas. Show Notes: Kate has love for Eastern Colorado and its prairie grassland heritage. Starting out with a brief history of the Dust Bowl during the Depression, she explains why livestock, like cattle, are an important part of a healthy, sustainable ecosystem. Her view of hunters is one of noble causes. We take on the full responsibility of death, and harvest from an animal who lived the way it wanted to. She applauds us for taking on the task of processing our own. Her background in Whole Animal Butchery is highlighted by her ability to know how to use different cuts. The Flatiron is a muscle of the shoulder that can be a very tender steak, along with the Teres-major. Both on a whitetail would be quite small, but a good challenge for anyone looking to improve their knife skills. In the dish breakdown, she prepares a “bavette” steak; a section from the flank or sidemeat. Instead of heading to the grind right off the bat, see if these cuts can be added to your treasured steaks and roasts. Instagram: @kate_kavanaugh @westerndaughters Webpage: www.westerndaughters.com
