We're back with part two of my conversation with Sam Shepard, a researcher and fellow nutrition enthusiast, about the science of energy production. Last week, we went in-depth on carbohydrates, so make sure you've listened to that one. Today, we're talking about the benefits (and drawbacks) of fat adaptation. So what exactly is fat adaptation? Fat adaptation is when your body uses fat as its main energy source rather than carbohydrates. This can be extremely beneficial for low-intensity exercise but causes issues when you're doing high-intensity session. For this reason, our goal should be metabolic flexibility, where our body can switch between fuels based on exercise intensity. This not only boosts endurance but also ensures that you're not overly reliant on carbohydrate intake during your races. Sam shared some strategies and advice for any athletes looking to train for fat adaptation. Fasted training, especially for low-intensity workouts, can push your body to become more efficient at burning fat. Think about where you can incoporate fasted sessions into your schedule. For instance, an easy morning run can be done before breakfast to encourage fat utilisation. However, this should be approached with care and potentially under the guidance of a sports nutritionist. Consistently training in this manner can improve your fat oxidative capacity over time without compromising performance. Adjust your carbohydrate intake based on your upcoming workouts. Higher-intensity sessions call for more carbs, whereas lighter training days might need less. This method, often summarised as “fuel for the work required,” allows you to maximise fat burning while still maintaining your body's ability to perform high-intensity efforts. Individual circumstances, including work and family commitments, should dictate training and nutrition strategies. Especially for women, considerations around stress and lifestyle factors are crucial when deciding on fasted training. Consulting with a sports dietitian can help tailor these strategies to your specific needs, providing guidance and understanding about why you're doing it and how to adjust on the fly. Looking ahead, Sam shared insights into emerging research areas, such as how body weight might influence the optimal carbohydrate intake during exercise and the potential role of gut microbiome in nutrient absorption. As exciting as the research is, it's still evolving which is another reason why it's so important to get a nutrition strategy that's individualised to meet your needs. Matt Williams utilizes a character-centric approach in creating and developing iconic television series, including Roseanne and Home Improvement. The Humanitas Prize and 6-time Emmy nominated Evansville native received graduate degrees in directing and acting, and embarked on a host of television commercials, as an actor, before realizing his talent and bliss as the driving force behind impactful, relatable film and television projects. After cutting his teeth as an actor (and de facto writer and re-writer) on the CBN soap, Another Life, Matt produced and joined the writing staff of The Cosby Show during its premiere season. It was there where he learned the relevance of inviting the audience to the family table — a concept that bore fruit with regard to the development of Roseanne. In the years which followed, Matt co-created and executive produced a number of television shows under the umbrella of Wind Dancer, the production company he founded with Carmen Finestra and David McFadzean, the latter whom Matt first met at University of Evansville, which include Home Improvement, Buddies, Thunder Alley and Soul Man. He directed and produced the films Where the Heart Is, starring Natalie Portman and Ashley Judd, about a young woman who delivers a baby in a Wal Mart after being abandoned by the latter's father in the parking lot, and her journey of growth and self-discovery which follows; and Walker Payne, which he also co-wrote, and starred Jason Patric, Bruce Dern, Drea de Matteo and the legendary Sam Shepard and premiered at the Tribeca Film Festival. The co-founder of Esther's Follies comedy troupe & club, an actor, singer and successful entrepreneur who undoubtedly helps to “Keep Austin Weird.” Esther's has kept audiences laughing for more than 47 years. The live comedy revue — part SNL with a Texas twist, part modern vaudeville and Magical Mystery Tour — is like nothing else on the national comedy scene. From political skewering to parody sketches to confounding magic acts. Shannon Sedwick launched her first enterprise, The Museum of Light, in 1970 in partnership with her husband Michael Shelton. A film series showing experimental short films on the UT campus where filmmakers were invited to speak about their work. That experience sparked an entrepreneurial fire in Sedwick & Shelton, so they went on to create a New Orleans-style restaurant and live music club with a funky Austin vibe called Liberty Lunch. Live music acts were performed in the backyard, and Sedwick and Shelton added entertainment with performance art pieces in between bands. The entrepreneurs' next venture was Phillies' Diner, where Sedwick recalls delivering sandwiches to customers by bicycle. Then came the Buffalo Grille, a jazz club and restaurant on West Sixth Street. Shannon cooked by day, and sang in a trio at night, where she fell in love with Sam Shepard when he came to their Sunday Brunch jazz jam with his bongos. This was followed by The Tavern where they completely renovated a historic building and brought the restaurant-bar back to life. They went on to open Esther's on a song, got a beer and wine license, and built a stage in the windows. It became an underground hit and has lasted over four decades giggling & skewering all the way.

The cover photograph for the second and final Richard Hell and the Voidoids album, Destiny Street features a woman standing in the background. For years, this woman was unfairly credited as "unknown woman." However, the truth is that the woman is Anne Militello, who would go on to become an accomplished lighting designer and professor and CalArts. Anne's journey began while working for the now infamous rapist Harvey Weinstein back when Weinstein and his brother were concert promoters in metro Buffalo. Seeking to leave The Nickel City but not yet prepared for New York City, she embarked on a five-day bus trip to San Francisco, packing a tin of pot brownies, which were completely consumed along the way. Upon arriving on the west coast, Anne leveraged her experience working with lights in college to gain work at a music venue. The manager who hired her was Sylvester, who later became a disco legend. One night outside the Magic Theater, she encountered a man dressed like a trucker who seemed to be out of place and ignored by her cohort of punker rockers. Feeling sympathetic, she struck up a conversation with him. The man told her he was a playwright and wanted her to read his new play, which she and really liked. The trucker turned out to be Pulitzer Prize winner Sam Shepard and they became great friends. With Shepard's encouragement, she relocated to New York City and immersed herself in the theater scene. Over time, Anne established herself as a world-renowned lighting designer, working with luminaries such as David Lynch, Tom Waits, The Wooster Group, and Lou Reed. Today, Anne resides in Los Angeles, where she operates Vortex Lighting.

Her multicultural and global experiences are instrumental in her work as an actor and humanitarian. Raised in Douala, Cameroon, her adaptability and captivating stage and screen presence are a fusion of her international heritage.She developed a strong sense of poise and confidence from her cultures, spiritual background, travels, and strong family ties around the world. She is an ardent athlete and loves to ride horses to Liberate her positive flow of energy. Chantal's diverse training, experience and professionalism as an actor gained her standout roles in Off-Broadway plays, TV and films. She played the lead role, Ella, in Sam Shepard's play. Curse of the Starving Class, directed by Jason Mc Dowell-Green.At U.S.C, Chantal spearheaded the initiative to diversify the MFA repertory, resulting in the production of the first black play, Twilight Los Angeles 1992. written by Anna Devere Smith. After this successful initiative, Chantal set into motion the plan to teach August Wilson classes in the U.S.C. MFA program: introducing Ruben Santiago Hudson and Michele Shay to help sustain the diversity initiative. During 2020, to support U.S.C's advocacy of Black Lives Matter, Chantal opened up the dialogue for a town hall discussion. The dialogue defined the inclusion process as an ongoing university priority, bringing together a wide range of stakeholders, including MFA alumni, current students, faculty and university leadership to add balance to the process.Chantal is a resident faculty member at Silva Arte e Danza musical theatre academy in Siracusa, Sicily and the founder and designer of Choobiz, a luxury shoe line made in Italy.

When a Promise Meant Something: Sean Penn's The Pledge November is the month of Rick Ramos and this week we continue - following Martin Scorsese's Killers of the Flower Moon and Walter Hill's Hard Times - with a look at Sean Penn's 2001 The Pledge. Featuring an underrated (and I would argue tragically underseen) Jack Nicholson performance that sidesteps all of the Nicholson tropes that we have become used to, Nicholson portrays Jerry Black, a police detective on the eve of his retirement who leaves his retirement party to investigate a young girl's rape and murder. He is quickly sucked into the horror of the crime and finds himself obsessed with discovering the truth and bringing the killer to justice. Penn's film takes all of the labored and tired tropes that have become standard for the genre and manipulates them in ways that make for a fresh directorial take. Featuring an all-star cast (that never screams of stunt casting) including: Sam Shepard, Helen Mirren, Aaron Eckhart, Patricia Clarkson, Michael O'Keefe, Vanessa Redgrave, Robin Wright Penn, Harry Dean Stanton, Benicio del Toro, Tom Noonan, and (an incredible) Mickey Rourke, the 2001 film is one that truly speaks to Penn's power and gifts behind the camera.
