Michael McCarty is the owner of two restaurants, Michael's in Santa Monica, which opened in 1979, and Michael's on West 55th Street in Midtown Manhattan, which followed a decade later. McCarty is truly the father of California cuisine, at the center of a culinary movement that produced top Los Angeles chefs like Jonathan Waxman, Mark Peel, Nancy Silverton, and many others. I had so much fun having Michael back into the studio, and he was happy to go over his deep history in the American restaurant scene. He also talked about his early days cooking in Paris, and how he ended up in Santa Monica and helped establish the legendary farmers' market there. It's Michael, the early years, in this amazing episode. Also on the show we catch up with Eater Chicago editor Ashok Selvam. He recently wrote about the revival of Charlie Trotter's in Chicago, and how Dylan Trotter is taking a big role in the rebirth.Do you enjoy This Is TASTE? A zombie movie for a second week in a row? Well, Matt loves zombie movies, and so does this week's guest Michael McCarty. Let Sleeping Corpses Lie (AKA Living Dead at the Manchester Morgue, AKA, Don't Open the Window, AKA Breakfast at the Manchester Morgue, AKA Zombi 3 sand many other titles) is a European zombie film that brings in the gut munching gore before Dawn of the Dead. Inspired by Night of the Living Dead the zombies in this film march and munch to their own tune. Part ghosts, part zombies, these living dead monsters defy the conventional zombie rules. This is an underrated zombie classic. Directed by Jorge Grau, starring Cristina Galbó, Ray Lovelock & Arthur Kennedy.

I'm your host, Allen Hall, along with my co host, Joel Saxum. This podcast has an interesting story behind it. Our first guest today is Candace Wood, Chief Operating Officer at Everpoint Services, which is based in Texas. Candace purchased the Little Pringle Wind Farm at an auction. Little Pringle Wind Farm is outside of Texas. Amarillo, Texas, and buying a wind farm at auction doesn't happen very often. And this is where the story takes an interesting turn. Candace and Everpoint made a decision about how to use this wind farm. Everpoint connected with the Idaho National Laboratory, cybersecurity experts, to use a portion of the turbines for cybersecurity. Research and testing. So from the Idaho National Lab is Michael McCarty, who is a cybersecurity research specialist and Megan Culler, who is a power engineer specializing in cybersecurity and resiliency, also from the Idaho National Laboratory. Megan, Michael, and Candice, welcome to the show. Candace Wood: Thank you. Thanks for having us. Michael McCarty: Thank you. Allen Hall: Alright, so let's start off with a little prequel and figure out how Candace ended up buying a wind farm. So you were at an auction Candace? Can you describe what happened where you decided to put down some money on a wind farm? Candace Wood: Everpoint Services, we are a end of life services company for renewables. So we primarily focus on decommissioning and demolition of wind turbines as well as solar assets. And we'd heard about this wind farm that had been abandoned since about So I was at the auction in August of 2017. Small farm, 10 units originally 2 megawatts each and heard that it was going up for auction. The county had seized the asset to try and recover some back taxes. I tuned into the option really with the intention of finding out who was going to purchase it and then pitching our services to them. Hey, we can come in and help you cut these things down. So I'm listening to the auction and the price point is going once going twice and I'm thinking gosh, that's Really not a lot of money. I mean we're talking, five figures and I thought well, let me just throw out a bid there and see what happens so I threw out a bid that was just slightly above what was about to be the winning bid and on behold I One, I bought the wind farm, so it was somewhat impulsive decision, which was both terrifying and exciting. In the immediate aftermath, what was interesting was once we looked into it a little bit more, we discovered that the interconnection agreement at the site was still in good standing. And once I actually finally got out there to look at it, because I did purchase the site unseen, I Never actually looked at it before. Once we got out there and looked at it, I thought, these turbines, they're not in such terrible condition, all things considered. And so we started looking into, okay what could we do? Maybe did we want to repower it?

Michael McCarty in my prison workshops, they say. “Storytelling, you're going to show us how to tell the Three Little Pigs?” I say, “Every living person has at least one story they need to tell. And (telling) that story will help them in their relationship with the people around them, and the world, and more importantly, with themselves.BIOMichael McCarty: Mother always told me stories. I began telling stories formally when I was in high school in Chicago (St. Ignatius) in the 60's, stories of Africa and the struggles of African-Americans for freedom. In 1992 I met Joel ben Izzy from Berkeley, CA who was introduced to me as a professional storyteller. “You mean to tell me that people pay you to tell stories!?” I asked. I picked his brain and vowed that I was going to become a professional teller too, and my motto would be “Have mouth. Will run it.” A week or so later I asked myself what would I do as a profession if I was independently wealthy. Tell stories, was my answer. So I went to my local library and began collecting folk tales from different countries and reading books about storytelling. One day the Young Adult Librarian asked me why I was getting so many books of folk tales and asked if I was writing a paper. When I told him that I was a storyteller he said that he had a group of teenagers that wanted to learn storytelling. Could I give them a workshop? I said sure. The workshop was a success. Thus began my career. And I've been running my mouth around the country and around the world ever since. In 1996 I initiated the GRIOT Workshop in Leimert Park in Los Angeles. This is a place where anyone can come and get assistance in developing their storytelling skills. This episode features a conversation with Chef John Ash, who for the past 40 years has been known in Sonoma and Napa as the Godfather of Wine Country Cuisine. His restaurant, John Ash & Company, helped to define what became known as California Cuisine back in the 1980's and 1990's. John, along with chefs like Alice Waters, Jeremiah Tower, Joyce Goldstein, and Michael McCarty, changed the way people cooked and ate across the entire country. Chef Ash has also written a number of award winning books, including the 1996 IACP Cookbook of the Year, From the Earth to the Table, and has just published a beautiful new book called The Hog Island Book of Fish & Seafood. On a personal note, John was the first important chef to serve Peter's bread in his famous restaurant, way back in 1988, which helped launch Brother Juniper's Bakery's successful run and paved the way for Peter's own writing career. He owes a deep debt of gratitude to John, not only for his early support and friendship, but for some of the most memorable meals Peter and his wife ever ate at John Ash & Company. Michael McCarty is a respected veteran music publishing executive with a successful track record in catalog acquisition, talent discovery, and business development. He was inducted into the Canadian Music Hall of Fame in 2019 for his significant impact on the Canadian music industry. Mr. McCarty is Chief Executive Officer of the Kilometre Music Group, and along with Gavin Brown and Rodney Murphy, a founding partner of the ground-breaking music rights management company whose mission is to reclaim the financial rewards of the multi-decade worldwide “Canadian music invasion” for the benefit of Canadian artists, investors and culture. Kilometre has partnered with Barometer Capital Management Inc. to form the Barometer Global Music Royalty Fund, a Limited Partnership with a targeted size of USD $200 million that will invest primarily in the iconic catalogs and music rights of Canadian creators, as well as signing and developing new song writers and artists. Kilometre has made three investments to date, which have resulted in their Fund acquiring portions of 10% of the 100 most streamed songs of all time. Highlights of the catalog include the Weeknd's “Blinding Lights”, “Save Your Tears” and “The Hills”; Drake's “Hotline Bling”, “One Dance”, and “Hold On We're Going Home”; “Closer” by The Chainsmokers, “Havana” by Camillo Cabello, “Circles” by Post Malone, and “Levitating” by Dua Lipa. Prior to forming Kilometre, McCarty was Chief Membership and Business Development Officer of the performing rights organization SOCAN, which is Canada's largest music institution, paying out approximately $450 million a year in royalties to songwriters and music publishers. At SOCAN he led a team of 40 people who were instrumental in building SOCAN's world class catalog, by repatriating and recruiting the “Who's Who” of the Canadian global hit makers such as Drake, The Weeknd, Shawn Mendes, Joni Mitchell, Jessie Reyez, Murda Beatz (Migos, Travis Scott, Drake), Frank Dukes (Camilla Cabello, Post Malone, Taylor Swift), Boi-1da, Noah “40” Shebib, Alessia Cara, and Murda Beatz. SOCAN's foreign revenue increased by 50% to over $90,000,000 CDN in the last four years, largely due to the success of this roster. Michael led the inaugural graduating class of Fanshawe College's Music Industry Arts program, and began his career as a recording engineer under the legendary record producers Jack Richardson (The Guess Who) and Bob Ezrin (Pink Floyd, Alice Cooper). At Richardson's legendary Nimbus Nine Studios, Michael worked on Pink Floyd's The Wall, with Neil Young, and was associate producer/engineer of The Kings hit single “This Beat Goes On/Switchin' To Glide”. Shifting to music publishing with ATV Music Canada, he worked directly with Michael Jackson following Jackson's acquisition of the Beatles catalog, spending 6 years with EMI in L.A., where he co-signed the group Wilson Phillips (Hold On). He was subsequently appointed President of EMI Canada, where he began an unprecedented 17 year run of success developing and signing artists such as Billy Talent, City and Colour, Sum 41, Three Days Grace, Matthew Good, Len, Moist, Nelly Furtado, and producer/writers Gavin Brown and Simon Wilcox. Prior to joining SOCAN in 2014, Mr. McCarty was President of one of the world's largest independent music rights companies, Ole (now Anthem), where among other achievements he acquired the catalog and futures rights of superstar hip hop producer Timbaland.

Michael McCarty & Gavin Brown discuss their new company, Kilometre Music Group, as well as the exploding market for song rights and Canadians' dominance on the music charts On the podcast this week, Mike is joined by Michael McCarty, who spent at the last seven years as the chief membership officer at SOCAN following a legendary career in music publishing, as well as Juno-winning producer Gavin Brown (The Tragically Hip, Billy Talent, Three Days Grace). The reason they’re on together is because, along with their colleague Rodney Murphy, they’ve launched Kilometre Music Group, a new music rights management company with the stated mission of reclaiming “the financial rewards of the multi-decade worldwide 'Canadian music invasion' for the benefit of Canadian artists, investors, and culture." Given some of the mega-deals that have made headlines recently, with major stars like Bob Dylan and Stevie Nicks selling their song rights, McCarty and Brown discuss this exploding market for songs, as well as why Canada has punched above its weight for decades when it comes to writing and producing chart-topping hits, the dominance of BIPOC songwriters and producers, what they envision KMG’s role to be, and more.
The food scene in the US was changing rapidly in the '80's and LA was the hub. Being a Chef was not a claim to fame in those days but restaurants like Michaels in Santa Monica was changing all that. Jonathan Waxman was at the forefront of this change. Trained in France and part of the original crew at Michael McCarty's Michaels, Jonathan has won numerous awards and opened numerous restaurants. Considered a Top Chef in any circle, meet Jonathan Waxman.

Born and raised in Los Angeles, California, Brooke Williamson has carved out an impressive résumé full of leading roles and professional achievement, such as being the youngest female chef to ever cook at the James Beard House and winning Bravo’s “Top Chef” Season 14 in Charleston. Although officially beginning her career at the young age of 17, Williamson always wanted to be a chef for as long as she can remember. “I love creating things that make people happy, and I’ve found that food genuinely does that,” she explains. Williamson began her culinary career as a teacher’s assistant at the Epicurean Institute of Los Angeles, followed by securing her first kitchen position as a pastry assistant at Fenix at the Argyle Hotel, under the tutelage of Michelin- starred Chef Ken Frank. Her undeniable star quality and concentrated creative energy brought her to Chef Michael McCarty’s nationally acclaimed restaurant Michael’s of Santa Monica, where she worked her way up from line cook to being their youngest sous chef. Desiring to travel and experience other restaurants, Williamson later staged at the renowned Daniel restaurant by Chef and Owner Daniel Boulud in New York City. Two years later, Williamson was appointed her first executive chef position at the notable Los Angeles restaurant Boxer. Following that, she opened the Brentwood eatery Zax as Executive Chef, where she began to develop her signature California-inspired cuisine—infused with local ingredients, global flavors and centered around the idea that simplicity goes a long way. While at Zax, she also met her husband and business partner Nick Roberts. The two opened their first independent venture together a couple of years later, Amuse Café in Venice, followed by Beechwood restaurant soon after, earning them the title of “Rising Star Chefs” from StarChefs in 2004. Although both are now closed, in 2009, the wife and husband team opened Hudson House, an elevated gastropub in Redondo Beach, followed by The Tripel in 2011, a modern American and craft beer dining destination in the neighboring beachfront community of Playa del Rey. During that time, Williamson became certified by The Court of Master Sommeliers, given her strong interest in wine that first sparked in the early 2000s after traveling extensively through France and Spain. In 2014, the culinary couple debuted a unique four-in-one-concept, Playa Provisions, featuring a grab-and-go marketplace, King Beach; an artisanal ice cream shop, Small Batch; a seafood dining spot, Dockside; and an intimate whiskey bar, Grain. In June 2015, Williamson and Roberts opened Tripli-Kit, a culinary-focused retail store, selling unique kitchen gadgets, cookbooks, and other cooking essentials. In October 2016, the duo debuted their fifth venture in Playa Vista, a fast-casual, Hawaiian concept called Da Kikokiko, celebrating Hawaii’s popular street foods, including poké, shave ice, and musubi. Most recently, the couple opened their second Small Batch artisanal ice cream shop in the family-friendly neighborhood of Mar Vista. Williamson won Bravo’s “Top Chef” Season 14 in Charleston in March 2017 and a few years prior was a runner-up on “Top Chef” Season 10 in Seattle, which catapulted her career. She’s also participated on other national shows like Bravo’s “Top Chef Duels,” Esquire network’s “Knife Fight” (where she took home the win), and starred as the host and mentor on MTV’s “House of Food.” During her day-to-day operations, she works alongside Roberts creating new menus, running the front and back of the house, and managing their multiple concepts. When she finds time outside of her many ventures, Williamson stays active by running, bike riding, and playing chase with her 9-year-old son, Hudson.

Her book follows the life of one diver, Young-sook, who also narrates the story. The theme this year was "The Power of Your Story"
Miles Thompson is the Executive Chef of Michael's Restaurant in Santa Monica, a mainstay in the modern Californian cuisine movement for almost 40 years, having acted as a springboard for the likes of Nancy Silverton, Jonathan Waxman, Brooke Williamson, Sang Yoon, and more. Originally from New York state, Thompson moved to LA over a decade ago to work in the kitchens of NOBU, Animal, and Sonofagun, respectively, before venturing out on his own to start the wonderfully-received pop-up series called The Vagrancy Project, a supper club that he ran out of his tiny Hollywood apartment for about 8 months. The Vagrancy Project ultimately led to Thompson opening his first restaurant as head chef at the now closed Allumette restaurant in Echo Park, which was selected by Bon Appétit as one of the Best New Restaurants in 2013. After a brief stint away from Southern California, Thompson returned in 2016 to take the helm at Michael's, after founder Michael McCarty's son Chas convinced his father to bring on the young chef, telling him they needed to “take things to the next step” at the venerable restaurant. Two years in, Thompson continues to push forward the restaurant's legacy as an icon of Southern California's restaurant scene, coming up with many of his most innovative recipes while listening to music during his sometimes 90-minute commute from East LA to Santa Monica on the 10 freeway.
