Here on Beer Me! we have a little end-of-year tradition to get some friends in the studio to talk about their favorite beers for the holiday season. We are reviving that tradition, little by little. Today, we welcomed back to the show, Sam Nellis, Bar Director for All-Purpose and Red Hen in DC. We dive into holiday beer, non-alcoholic beers, cocktail traditions, and embracing all beverage preferences. Cheers! and we will see you in the new year!
Things we learned this week: All-Purpose flour doesn't fulfill all purposes. Sometimes it's best not to know how the sausage is made. And John is a sauté pan short of a full set. Take that any way you want.
Ace of Pentacles image: https://en.wikipedia.org/wiki/Ace_of_Coins The Finger card Image: https://images.app.goo.gl/Lsoy5yHaRoLy8Av48 Keep Your Goals SMART: Specific: Make your goals specific. Measurable: Make your goals measurable. "I will create $5,000 a month of gross income within 6 months" is an example. Achievable: Make sure a goal is something you can achieve. Relevant: Setting a target market of reaching "everyone" is not a realistic goal--identify a niche of people whom you want to connect with. Make sure this goal is something that you feel is appropriate, needed or important in your life. Timely: Set a time or "by when" you will reach this goal. Even if you don't make that exact date, you will be more accelerated in your growth than if you had set no goal at all. Affirmations: Divine Connection: I am a clear and perfect channel for Divine Love (Will, Truth). I am always connected to the Divine Money: The more I am willing to prosper others, the more they are willing to prosper me. Money is trying to come to me, and if I open myself, it will happen. I now have a success and surplus consciousness with money. I am one with a tremendous amount of money. Health: My natural state of being is healthy, and I am in perfect health now. My being is always glowing with radiant health. All-Purpose and Ariel's Favorite (for when you forget your other affirmations): All of my affirmations are working for me, whether I am actively using them or not! "Said to clear" is a term that is spoken when we say something to clear our emotions, but we do not want it to manifest into physical reality. The more you vibrate at a higher rate, the more quickly things you say or focus on can manifest, so it is important to clear negative statements! KEY TAKEAWAYS 2020 definitely turned all of our wishes upside down and threw them into the trash, we had to completely let go of everything normal, all of our expectations and how we framed life as normal. But what has 2021 been for you and all of us? We’ve all been affected by the pandemic, by polarizing points of view and arguing different belief systems and viewpoints, you may have lost some relationships this year, money may have been a challenge for you, or not – perhaps you were busier than ever, and your challenge is lack of balance and being overworked. Taking stock of what is and isn’t working in your life and what you can and can’t control is not about writing down a list of complaints. Instead, start using the manifestation approach, one of the powerful four-word phrases ever: What is the workaround? Set intentions around positive improvement and avoid negative statements, instead focus on tangible goals that take you in the direction that makes your life better. BEST MOMENTS ‘"f you don’t care for what’s been in your life in the past year, you can make some choices to change it." "What good has happened in 2021, it must have been better than 2020. Take stock and reflect." ‘"What is the workaround?" "Your energy flows where your attention goes." Good morning, good afternoon and good evening wherever you are in the world, welcome to EV News Daily for Wednesday 29th September. It's Martyn Lee here and I go through every EV story so you don't have to. Thank you to MYEV.com for helping make this show, they've built the first marketplace specifically for Electric Vehicles. It's a totally free marketplace that simplifies the buying and selling process, and help you learn about EVs along the way too. Tom Moloughney from State of Charge YT channel and InsideEVs got an invite to go and drive the Rivian R1T. Here are highlights of his review, but go and read the whole thing and watch his video review. · MOTOR 4 AC Permanent-Magnet (each corner) · OUTPUT 835 Horsepower / 908 Pound-Feet · DRIVE TYPE All-Wheel Drive · TOWING 11,000 Pounds (Max) · GROUND CLEARANCE 7.9 - 14.4 Inches · SPEED 0-60 MPH 3.0 Seconds · CARGO VOLUME Frunk: 11.0 Cubic Feet; Gear Tunnel: 11.6 · HEIGHT 75.7 Inches · LENGTH 217.1 Inches · WIDTH 81.8 Inches · ANGLE OF REPOSE 34.0 Degrees · DEPARTURE ANGLE 29.3 Degrees · WADING DEPTH 3+ Feet · AS-TESTED PRICE $73,000 The average selling price of a new pickup was over $57,000 in June 2021, in fact, according to KBB Range: EPA: 314 miles (505 km) (see details here) 400+ miles (644+ km) version (January 2022) 250+ mile (402+ km) affordable version to follow undisclosed battery capacity 2170-type cylindrical cells (7,776), supplied by Samsung SDI on-board charger: 11.5 kW (AC Level 2); up to 25 miles of range per hour of charge DC fast charging: up to 140 miles of range in 20 minutes On drive modes: "For on-road driving, drivers get to select between the All-Purpose, Sport, and Conserve driving modes. When you set up your profile, you can select which driving mode you prefer the vehicle to default to upon starting. That's a great feature to have, and unfortunately, not all automakers allow the owner to do that. All too often, the vehicle defaults to a set mode every time it turns on and the driver has to then select the mode he or she prefers to drive in." On off-roading: "Rock crawling mode enables a slow, steady ascent or descent. There's no need to play with the throttle to maintain the proper RPMs or even use the friction brakes to slow down. That's because the regenerative braking system holds you back slowly and steadily, even better than the hill descent modes I've used on a variety of gas-powered AWD vehicles." On the ride height: "The R1T's ground clearance can be adjusted by as much as 6.5 inches, from 7.9 to 14.4 inches. For comparison, that's 3.3 inches more ground clearance than the Jeep Gladiator Rubicon, which tops out at 11.1 inches. The R1T isn't hampered with driveshafts and exhaust systems to protect underneath either. Instead, there's a protective shield of high-strength steel, alloyed aluminum, and carbon fiber." On the bed: "The bed is only 54 inches long with the tailgate up and will be a problem for some folks. My Toyota Tacoma has a 60-inch bed and that is, on occasion, too small for some jobs. Yes, it does have an 11.6-cubic-foot gear tunnel that can accommodate cargo, but large items that need to go in the bed may not fit without leaving the tailgate down and that presents its own set of issues while driving." Air compressor for reinflating tyres Will work as FWD to increase range They got rid of Low regen mode to get more EPA range 150kW max regen One pedal driving Auto hold Autosteer works where there is HD maps No Apple Carplay/Android Auto Alexa will be added - unsurprising! John Voelcker for Forbes: "Dimensionally, Rivian's R1T sits comfortably in the midsize pickup class with the Chevrolet Colorado, Ford Ranger and Nissan Frontier. It's the widest of that group by an inch at 79 inches, but its 218-inch length and 72-inch height map neatly with the others. The only sore point, perhaps, is its limited 54-inch long bed. It opens up to 83.6 inches with the tailgate down, but with the gate up it's closer to the compact Ford Maverick's bed compared with most short-bed midsize trucks. I drove the R1T for a lengthy day over a variety of roads and non-roads, at altitudes from 9,000 to 12,000 feet. By the end of the day, it was clear Rivian has a decent shot at being the second EV startup to make it into the big leagues. Buyers looking for a full-size all-electric pickup truck will have to wait until the Ford F-150 Lightning hits the dealers, but this is a legitimate midsize pickup that should do virtually everything owners want trucks to do. " Hannah Elliott at Blolomberg: "My first impression was that Scaringe and his tight-knit team did try to think of everything when they made it. It felt as if they had taken their own notes over many back-country climbing and biking trips, then made a vehicle to suit their own Patagonia-loving lifestyle. With nearly 15 inches of clearance, it had me crawling over gullies and up hard-packed inclines with little effort. I loved the shape and feel of the steering wheel and the craftsmanship of the natural-grain ash-wood trim along the doors and dashboard. The cabin seal proved quiet as I plunged through the wilderness. Rivian's fit-and-finish elements and build quality are better than what Tesla has given us to this point. . Its 800-plus horsepower and 900 pound-feet of torque from four electric motors easily pushed it to 100 mph as I glided past RVs lumbering down Loveland Pass. And that's plenty of power for hauling—more than the F150 and its peers. Rivian says it will hit 60 mph in 3 seconds; it certainly felt so. Top speed will be electronically limited to 110 mph." Read more: https://www.bloomberg.com/news/articles/2021-09-28/rivian-r1t-review-electric-ingenuity-but-don-t-depend-on-it-for-work Tim Levin at MarketsInsider: "Powered by four torquey motors - one driving each wheel - the R1T made light work of any obstacle and steep grade I threw at it during a day of off-roading (on trails Rivian hand-picked to showcase the model's strengths). The R1T promises to put out more than 800 horsepower and over 900 pound-feet of torque between the front and rear wheels. But the truck offers a lot more than just four-wheel drive and a ton of power. Since its motors operate independently, the R1T can instantly deliver more or less power to any wheel at any moment, a huge asset for tackling uneven terrain. Plus, you can toggle between drive modes that change the R1T's ride height, suspension settings, and throttle response for different types of off-roading." Read more: https://markets.businessinsider.com/news/stocks/rivian-r1t-ev-electric-pickup-first-drive-impressions-photos-2021-9 Mitchell Charle at The Verge: "I don't want to pretend like we were doing hardcore rock crawling, but we certainly got to see how the truck handled steep, loose climbs, water crossings, and situations where we were driving at an extreme angle over very uneven ground (though I don't think we ever lifted more than one wheel off the ground). And the R1T handled all those things beautifully. The weight of the R1T's 135kWh battery pack is spread out along the entire length of the truck, helping it avoid some traditional truck problems. I didn't experience any of the fishtails that I used to deal with when I owned a Chevy S10 or when I drove a mid-2000s Ford Ranger. That weight also keeps the Rivian planted when going into curves, without the body roll that sometimes comes with bigger cars. Since Rivian charged the trucks for us overnight, I never had any range anxiety with the R1T, even while we were off-roading. Our test model was capable of going 314 miles on a full charge, but I don't think I ever saw it dip below 90 miles, even after a full day of driving." Read more: https://www.theverge.com/transportation/2021/9/28/22697309/rivian-r1t-electric-truck-test-drive-off-roading-camp-tested Kristen at TechCrunch :"During the off-road section, the independent air suspension proved its worth. Drivers can pick from one of several modes: all-purpose, sport, off-road, conserve and towing. Within the off-road mode, there are even more options, including off-road auto, rock crawl and rally. There's also a drift mode, which I didn't test. The ride height, damping, pedal map that controls regenerative braking and suspension on the vehicle adjust depending on the drive mode. For instance, in conserve mode, the vehicle lowers to about 8 inches; in off-road, it can be as high as 14.9 inches. During our off-road excursion, we put the vehicle up and over steep slopes and even made a shallow ford. The ground clearance, combined with an approach angle of 34 degrees, a breakover of 25.7 and departure angle of 29.3 degrees, meant the vehicle never scraped or stuttered. There were moments when, as I prepared to drive around a particularly large boulder — the standard technique in other vehicles — a Rivian employee would encourage me to just drive over it. And I would, without the negative results." https://techcrunch.com/2021/09/28/first-drive-rivian-delivers-the-electric-truck-weve-been-waiting-for/?guccounter=1 Josh Rubin at Cool Hunting: "Yes, Rivian is a mobility company but the moment we get in to the R1/T it's clear they're also a technology company. Two large screens comprise the entire vehicle interface beyond the steering wheel and stalks on either side of it. While controlling everything—from entertainment to drive mode to air vent direction—through a touchscreen is a paradigm shift from the typical truck, it's commonplace for tech-forward EVs. Plus, keeping as much control on-screen as possible means that new features, updated functionality and evolved interfaces can all be delivered over the air through a simple software update. Driving on the gritty, rocky, steep, muddy, narrow and complicated tracks around Breckenridge and through the White River National Forest with the windows open we hear babbling brooks and the breeze in the trees with the only sound created by the R1/T being the crunch of rocks below the tires." Good morning, good afternoon and good evening wherever you are in the world, welcome to EV News Daily for Wednesday 1st September. FIRST QUARTER-MILE TIME SLIP FOR THE QUICKEST FORD MUSTANG MACH-E - Electric vehicles have one major performance advantage over their ICE-powered forebearers, and that's torque. Electric motors can deliver peak torque from a standstill, giving EVs a serious edge when it comes to acceleration. - Many owners thus enjoy taking their EVs to the drag strip to lay down some fast times. One owner of the new Ford Mustang Mach-E GT Performance Edition did just that, and posted the results online for your reading pleasure. - The GT Performance Edition boasts 480 horsepower, a hefty bump over the 346 hp of the Premium AWD model. - a 12.657 second quarter-mile time at a trap speed of 100.02 mph, and 0-60 mph in 3.89 seconds minus the 1 foot rollout. - The runs were taken with the car at a 72% state of charge - acceleration past 100mph was slow, to the point they suspected some sort of governor was in play. - The runs were made with the "Unbridled Extend" mode turned off, a feature which intends to balance power output for lap-to-lap consistency when racing on track. It's been speculated that pickup buyers are too conservative to embrace electrification, but after our first drive in a pre-production Rivian R1T, both on-road and off-, we think this is the electric truck that will turn them into believers. - The standard on-road drive mode is aptly called All-Purpose, and if you never switched the Rivian R1T out of this default setting, you'd still find it to be remarkably swift and sure-footed. - the R1T can be switched to two-wheel drive—only the front wheels are powered, making it front-wheel drive - The R1T has a separate set of drive modes for off-roading, and they allow the driver to raise the suspension and ease throttle response in various degrees. - Unlike an internal combustion off-roader, the Rivian has no low-hanging bits like driveshafts and differentials and exhaust pipes, just a smooth, flat undertray from which the wheels and their attachments protrude. - There is no crawler gear ratio to engage, no differentials to lock, no anti-roll bars to release; just steer and apply appropriate throttle, - The R1T has four user-selectable levels of regeneration. - We loved the screens' crisp graphics and smooth animations, but the menu system has a high learning curve. On several occasions we found ourselves unable to adjust the cruise control speed because the steering wheel buttons were still set to adjust the mirrors and steering column. It's an important metric for Tesla and it is surprisingly low. Or… is it? - Tesla has increased the price of the FSD package to $10,000 in the US. - Now a survey of over 17,000 Tesla buyers shows that the Tesla Full Self-Driving take rate worldwide is only at about 11% - Also, the increase in sales in China and Europe could be factored in since the FSD features are less useful, and the true full self-driving capability is further out in those markets than in the US. Unsurprisingly, the take rate for Model S and Model X is much higher than for the less expensive Model 3 and Model Y Original Source : https://electrek.co/2021/08/31/tesla-survey-take-rate-full-self-driving-package SUPPLIER FOR AUTO INDUSTRY PREDICTS MASSIVE SALES BOOST FOR ELECTRIC CARS - Magna CEO Swamy Kotagiri had some interesting things to say about electric vehicles and more when I participated in a conversation that will air beginning Sept. 9 on “Autoline This Week” on PBS. - By Mark Phelan - Detroit Free Press - The world's third-largest auto supplier by sales, the Canadian company makes products that range from electric drive systems to body panels - basically everything it takes to make a car but tires and the windshield. Magna even assembles complete vehicles for other manufacturers, including Jaguar, for which it currently builds I-Pace and E-Pace SUVs. - Beyond 2025, 50% of Magna sales will be from electrified powertrains - He also expects Magna's transmission business to benefit, despite the fact that most of today's EVs use a simple single-speed direct drive rather than the complicated gearboxes internal combustion engines need. The National Highway Traffic Safety Administration made the detailed request in an 11-page letter sent to the electric car maker that was dated Tuesday. - The agency wants to know how Teslas detect a crash scene, including flashing lights, road flares, reflective vests worn by responders and vehicles parked on the road. - NHTSA also wants to know how the system responds to low light conditions, what actions it takes if emergency vehicles are present, and how it warns drivers. The agency also added a 12th crash to its probe in which a Tesla on Autopilot hit a parked Florida Highway Patrol cruiser Saturday on an interstate highway near downtown Orlando. In the crashes under investigation, at least 17 people were injured and one was killed. - Tesla has to respond by Oct. 22 or seek an extension. The agency says it can fine Tesla more than $114 million if it fails to comply. With its increased production output at the Zhaoqing factory, Xpeng now expects its monthly delivery volume to hit 15,000 in Q4 - Deliveries of the P7 achieved a record month in August - In August, the company began to transition production for its G3 SUV to the new G3i, a mid-cycle facelift version of the G3 Original Source : https://pandaily.com/xpeng-delivers-7214-smart-evs-in-august-expects-monthly-delivery-volume-to-reach-15000-in-q4 LI AUTO STOCK IS UP AS DELIVERIES SET A RECORD - Li (ticker: LI) delivered a record amount of cars in August. Its result is far better than those of its peers, which tripped up because of shortages of semiconductors. Li delivered 9,433 vehicles in August, up from 8,589 in July. It was the second consecutive month that Li has delivered more cars than both NIO XPeng. - Tesla's Shanghai plant produced about 33,000 vehicles in July. Tesla shipped about 33,000 vehicles from its Shanghai facility in July, roughly the same number it shipped from China in June. The resulting report predicted every car by 2020 would be a hybrid. - "Human beings are terrible at prediction generally, and maybe especially at technological prediction," Lee Vinsel, a historian of technology at Virginia Tech, told Motherboard. "We are just so bad." - There was even optimism that affordable electric vehicles were just around the corner. In 2009, Chrysler said it was going to sell its first EV by 2010 and expected to have 500,000 on the road by 2013. Not only did this not happen, but Chrysler has yet to even reveal a future electric car for sale, much less put one on the market. - At the end of 2008, NPR's Talk of the Nation held a roundtable about the future of electric cars. J.B. Straubel, then CTO of Tesla, was asked if all cars in the U.S. could be plug-ins in 10 years. "Well, I think all cars would be a bit of a stretch within 10 years," he replied. But, he added, "well over a quarter of new vehicles sold could easily be plug-in vehicles of one form or another within 10 years." In 2018, the actual number was less than 2 percent. - Given how wrong most everyone was about what 2020 would look like, should we be equally skeptical of predictions of what 2030 or 2040 will look like? What should we make of widespread predictions of EV-dominated sales by 2035 or 2040? It is believed that Pasta has been around since 4th Century B.C., and the process of making it by hand hasn't changed much. Join us along with our guest Chef Jeremy Lett as we discuss how to improve your store-bought pasta, how to make homemade pasta, and why you don't need any fancy gadgets to make this classic world-renowned staple. Longer pasta dough recipe (Fettuccini, Pappardelle, Tagliatelle): 300gm of All Purpose or Bread Flour (Recommended: Caputo All Purpose Flour) 2 Whole Eggs and 3 Egg yolks (totaling 185gm - if the eggs do not equal 185gm in weight, add water to get to 185gm) Shaped pasta dough recipe (Macaroni, Cavatelli, Orecchiette): 300gm Semolina Flour (Recommended: Caputo brand) 185gm warm water Sift the flour onto a cutting board or counter top and create a well in the center of the flour Add your eggs (or water) to the center of the well and slowly begin incorporating the flour into the liquid until it starts to form into a shaggy dough Continue to mix the dough till it forms the shape of a ball Knead the dough for at least 10 minutes by hand to create the gluten network within the dough If the pasta feels a little sticky, add additional flour until it feels smooth. if the pasta feels too tough, add a little additional water Once the dough feels silky smooth, wrap the dough in plastic wrap for 30 minutes Additional resources on shaping pasta: Orecchiette - https://youtu.be/w3Uz0z9_oOA Pappardelle - https://youtu.be/oQtzr1cCsUQ?t=300 Check out Jeremy's awesome instagram account - https://www.instagram.com/jeremylett/ Have questions or topics you want us to cover in future episodes? DC Beer's Richard speaks with the Brewers Association (BA) Executive Chef Adam Dulye about his work to promote the value and compatibility of craft beer and cuisine. Chef Adam also gives a preview of what to expect at this year's SAVOR (which will be held on May 15 at the Anthem). The Art of Food and Beer PairingsChef Adam is a longtime chef who always had an appreciation for beer. He began collaborating with the BA on food and beer pairings over a decade ago for the annual Great American Beer Festival. His work with BA grew over time, and he eventually became BA's Executive Chef in 2015. As Executive Chef, Adam leads BA's efforts in preparing food and beer pairings for major events across the country. He also engages in educational programs and training sessions to teach craft breweries and restaurants about the art of food and beer pairings. Chef Adam is proud that a growing number of American restaurants now offer beer pairing recommendations on their menus. A New Venue for a Growing EventThe National Building Museum has been a great host for BA's annual SAVOR event over the past several years. With SAVOR's continued growth, however, it needed a location change. This year, SAVOR will take place at the popular DC concert hall, the Anthem. Chef Adam is excited to work in this state-of-the-art building that will allow his team to be more creative and flexible. What to Expect at This Year's SavorSAVOR 2020 will continue the tradition of offering great craft beer paired with great food from across the country. This year, 118 breweries will be represented--an all-time high. What's more, 42 percent of these breweries are joining Savor for the first time. Chef Adam believes that 2020 will be SAVOR's most wide-ranging and creative beer scene yet.Chef Adam is thrilled that the local DC food scene continues to increase its involvement in SAVOR. This year will include participation from Mike Friedman of local DC restaurants The Red Hen and All Purpose. SAVOR is also offering a VIP area, where four chefs (including Friedman) will be making one-off pairings at their own separate stations. Outside of the VIP area, the entire crowd will enjoy a diverse set of about 65 menu items. This year's menu has a heavy focus on vegetable dishes and tropical offerings.SAVOR tickets go on sale to the general beginning Wednesday, February 19. Be sure to buy your ticket for one of the best DC beer events of the year! You can catch up on all the DC Beer Show episodes here, and subscribe to our weekly newsletter, the DC Beer Weekly Pour.
You know those times when something or someone keeps popping up in your life, and you can't help but notice? Well one day my life was joyfully full of Lauren… the he loop kept getting smaller and smaller until suddenly we were (instagram) friends. Lauren's a giver, and an alchemist of sorts. She created a magic potion with a cult following that I predict will be in everyone's home in no time. Out of personal need she made her all purpose salve, a luscious and delicious potion meant to soothe everything from dry skin and burns, to brittle hair and an itchy scalp. I love this story, when a woman creates something special out of a personal need, which results in something so magical she needs to share it with her friends, and by giving it away the demand grows - until she has to make it for the world. And what's the difference between a passion and a job? A dream and a business? I believe the second option in each situation is the applied version of the first. You see you can do anything, and you should do the things that are tugging at your heart. Sometimes that first idea is the seed that will bloom into its own magic, but you'll never know what that will look like until you start... As craft beer continues to grow, the question is, will the bubble burst? Short answer, no, there are so many people that don't drink beer. Sam Nellis, Beverage Director for All-Purpose and Red Hen in DC comes by to chat about what goes into building his list, and how education is the key to growing craft beer enthusiasts. Of course, we get off topic with beer throwdowns, spritzes, orval day, and eggs.
In this week's episode, Stacy takes the reigns as resident science nerd, unmasking the dark side of conventional cleaning products, the disturbing ways they impact your health, and how you can easily transition your home to use non-toxic cleaning supples. Click here to listen in iTunes If you enjoy the show, please review it in iTunes! The Paleo View (TPV), Episode 331: Safer Cleaning Products (0:00) Intro (0:40) News and views Stacy is taking the reigns on today's show! She recently researched and wrote an extensive blog post, 7 Safer Cleaning Swaps, and is going to share what she found out. Stacy's husband, Matt, is a clean freak and was obsessed with Clorox Wipes until she showed him the research. Swapping out your cleaning products can be an overwhelming task, but Stacy and Sarah are here to help you ease into what works for you. A huge thanks to our show sponsor, Branch Basics. Stacy has fallen in love with their safer cleaning products! Their "Starter Kit + Oxygen Boost" makes it so easy to clean up your cleaning products! Once you receive the non-toxic concentrate and cleaning bottles, you simply add specific amounts of concentrate and water to each bottle to create multiple cleaning formulas! The Environmental Works Group recommends Branch Basics, rating their concentrate and Oxygen Boost "A" (which is the highest rating)! Get 15% off Branch Basics' Starter Kit at https://branchbasics.com/partner/paleoview with code PALEOVIEW15. (11:16) The Problem with Conventional Cleaning Products Like personal care products, cleaning products are also full of known carcinogenic and other toxic chemicals that haven't been tested. 85,000 chemicals in existence and only 200 have been tested by the EPA. The use the EWG app to scan a product barcode and find out its safety rating. Ingredients to avoid: 1,4-Dioxane 2-Bromo-2-Nitropropane-1,3-Diol Alkyl Dimethyl Benzyl Ammonium Chloride Alkyl Dimethyl Ethylbenzyl Ammonium Chloride Borax and boric acid Didecyldimethylammonium Chloride Diethanolamine Diethylene glycol monomethyl ether (DEGME) Dioctyl Dimethyl Ammonium Chloride Distearyldimonium Chloride DMDM Hydantoin Ethanolamine Formaldehyde Fragrance** Glutaral Monoethanolamine Citrate Quaternary ammonium compounds, or “quats,” such as benzalkonium chloride (Quaternium-15 and Quaternium-24) Bleach and ammonia (sodium hypochlorite, sodium hypochlorite, and ammonium hydroxide) Sulfuric Acid Triethanolamine volatile organic compounds, or VOCs – include pine- and citrus-based cleaners contain a class of volatile chemicals known as terpenes which combine with ozone to form formaldehyde ** this is the one I so commonly see in products marked as “natural” or cleaner ingredients – it’s also where brands hide ingredients under the “fragrance loophole” These products emit fumes, which we then breath in and that can have a profound effect on your health. Avoid products that include "fragrance" in the ingredients list! This is where unregulated, health-harming chemicals can be hiding. We also want to be mindful of not killing our good bacteria with anti-bacterial wipes. Stacy and Matt compromised with Seventh Generation Disinfecting Wipes because they still kill flu bacteria, but via a plant-based method. Be weary of products scented with essential oils. Just because it's "natural" doesn't mean its been studied and is safe. (25:02) Avoiding "Green Washing" Question terms like "Green," "Natural," and "Biodegradable." These terms do not mean they're non-toxic. One company found more than 95% of "green" consumer products violated at least one of the things Stacy discussed above. It could claim it's "fragrance-free" but if you look closer, another name for fragrance could be hidden in the label. Because there's no regulation for this! (27:32) Potential Health Problems A lot of these health issues are triggered from respiratory issues. Asthma Skin rashes Chemical burns Poisoning One 2010 study showed that people who used these products while pregnant had an increased risk of birth defects. Even if a product is labeled "Formaldehyde-Free," preservatives can interact with 1,4 Dioxide to create and release formaldehyde into the air. Another study showed the fumes of a highly scented laundry detergents or dryer sheets can vent out into the air, creating hazardous chemicals you then breathe. (35:53) VOCs (Volatile Organic Compounds) These can be in a number of different products (beyond cleaning products), but in cleaning supplies, they're known to be released from the chemicals used and contribute to chronic respiratory problems. The American Lung Association says cleaning supplies are affecting your lung health. They recommend avoiding: Aerosal spray products Air fresheners Chlorine bleach (never mix bleach with ammonia!) Detergent Dishwashing liquid Dry cleaning chemicals Rug and upholstery cleaners Furniture and floor polish Oven cleaners Pre-paleo Sarah used to have bad adult asthma and literally could not walk through the fragrance section of a department store. Things are much better now that she's doing Paleo and AIP. (42:02) Stacy's Safer Cleaning Product Recommendations Stacy says go simple where possible! Keep an eye out for B Corps (like Seventh Generation). Certified B Corps not only create safer products, but give back to the environment. Stacy also loves Branch Basics' Starter Kit, which comes with a concentration and an oxygen boost powder. Then it comes with instructions for how to mix the concentrate with water to create 6 different non-toxic cleaning products, including Stacy's favorite All-Purpose cleaner! And Stacy can attest to the fact that Branch Basics' products WORK. You don't have to sacrifice. 7 Safer Cleaning Swaps Seventh Generation Free and Clear Dish Liquid Seventh Generation Disinfecting Wipes Branch Basics All-Purpose Cleaner Beautycounter Hand Wash Branch Basics Laundry Detergent Seventh Generation Dishwasher Detergent Packs Norwex Carpet Stain Cleaner with their Microfiber Variety Set Sarah notes that enzymatic cleaners are pretty cool, too. Enzymes are proteins with various activities, and cleaning-specific enzymes break apart organic material. When the enzyme eventually dries, it degrades. Thanks again to our episode sponsor, Branch Basics! Visit Branchbasics.com/partner/paleoview and use code PALEOVIEW15 for 15% off. UPDATE: Sarah has now used Branch Basics and she's in love! She can totally back up Stacy's love for their non-toxic cleaning products! Get your questions in! We want to hear from you! And there's no end to questions we can answer and topics we can address! Engage on social media! That's how we get feedback! Thank you for listening

How do social change-makers work together to make greater impact? In this episode of Add Passion & Stir, host Debbie Shore talks with KaBOOM! CEO James Siegal and DC Chef Mike Friedman (Red Hen, All-Purpose) about focusing on teamwork and community to help those in need. Siegal speaks of the marginalization of many neighborhood institutions and how successful nonprofits must bring these entities together. “You can’t do it alone… It takes everyone rowing in the same direction to make change happen,” he says. Friedman sees parallels to running successful restaurants. “I fell into cooking because I love the team mentality. Restaurants are a team sport… I was enamored with the idea of being a part of something that was bigger than me,” he recalls. KaBOOM! leverages corporate funding to strengthen communities, building more than 3000 safe playspaces across the country for kids living in disadvantaged communities. Each playground build day brings together community partners and hundreds of local volunteers for a moving community experience. “If you want to get to a place where kids are better off, you need strong communities and strong communities are cohesive, safe, and they have a sense of pride,” says Siegal. For Friedman, giving back is part of the role of being a chef, an active member of his neighborhood, and a successful business owner. “My passions lie with children’s needs,” he says, and demonstrates this by supporting organizations like Share Our Strength’s No Kid Hungry campaign and March of Dimes. Listen to this conversation about how teamwork can build strong communities and create lasting impact.
Mint is a wonderful herb. Not only because of the pleasing scent but because of the benefits it has internally and externally for your body. The plant itself is easy to grow and thrives even in harsh and cold climates. With a pleasing aroma to humans, it is surprising that you can use it as a deterrent to keep animals out of your garden or away from your flowers. Mint has a multitude of varieties and because of this, you'll be able to pick the one that best suits your senses and needs. Along with using the fresh petals, you can also make use of the stem, dried leaves, and oil produced by the herb, mint. USING MINT IN OIL FORM In oil form, mint, and its varieties can be diffused to create a fresh scent which will heighten your senses and fill your home. If you suffer from headaches, then simply take a drop or two of oil and rub it on your temples. Be careful not to use more than 2 drops as the oil will cause your eyes to water. Wash your hands with soap afterward. Do you have sore muscles? Peppermint oil can be rubbed on them to give you a little relief. You can apply it directly or mix it with a carrier oil, like olive or coconut, which will make it a little easier to apply. HOW TO USE FRESH AND DRIED MINT IN CULINARY DISHES AND COOKING With its flavorful leaves, people have used mint in culinary cooking for years. Whether you pluck fresh leaves from the plant or buy them from your local market/store, mint will add a unique and pleasing flavor to your dish. What about the stem? Glad you asked. The stem can also be used for cooking as I will explain below. In Leaf, form infuse blended or individual mints (peppermint or spearmint) to make a tea. Flavor soups, stews, and sauces with fresh or dried leaves and or the stem. Finely chop and add into dips like guacamole or salsa Sprinkle into main courses Infuse the stems in vinegar or oil and let it sit for a few days. Add mint stems to your vegetables when grilling letting their flavor sink into the food. Make a mint sauce and use with chocolate in a dessert. MINT CHOCOLATE CHIP COOKIES By Christina Lane YIELDS 1 DOZEN Chocolate chip cookies made with real fresh mint! 1 hr, 20 Prep Time 11 min Cook Time 1 hr, 31 Total Time Ingredients: Unsalted butter, 1/2 cup (1 stick) Firmly packed fresh mint, roughly chopped, 1/2 cup Firmly packed dark brown sugar, 1/2 cup Granulated sugar, 1/2 cup 1 egg, at room temperature Vanilla extract, 1 teaspoon All-Purpose unbleached flour, 1 1/2 cups Baking soda, 1 teaspoon Fine sea salt, 1/2 teaspoon Semisweet chocolate chips, 1/2 cup Directions: Place the butter and mint in a small saucepan over medium heat. Melt the butter, swirling occasionally. After about 2-3 minutes, when you can smell the mint, turn the heat off and let the butter continue to steep for 30 minutes. Strain the butter, pressing the leaves to extract all of the butter from the leaves. Meanwhile, line two baking sheets with parchment paper, and set aside. In the bowl of a stand mixer, add the butter and sugars. Beat until light and creamy, 3-5 minutes. Next, add the egg and vanilla and beat for an additional minute. In a separate bowl, whisk together the flour, baking soda, and salt. Slowly add the dry ingredients to the mixer while running, stopping to scrape the bowl as necessary. Finally, add the chocolate chips and mix just until combined. Remove the cookie dough from the bowl, wrap in plastic wrap, and press flat into a disk. Chill for 1 hour. Preheat the oven to 350. Divide the dough into 12 equal portions, rolling into 12 balls. Space 6 balls on each cookie sheet (the cookies will spread considerably). Bake for 11-12 minutes, rotating the pans half-way through. Let cool on the baking sheet for 2 minutes, and then move to a cooling rack to cool completely. HOW TO USE MINT AS A DETOXER/CLEANSER

This is Episode Four of Modernist BreadCrumbs: “Milling About,” History Part II, Pre-Industrialization. When we look back on how modern baking came to be, it’s the same old story of craft informing art, and how the artisanal approach was replicated through the aid of mechanization. This episode picks up where Episode One left off, telling bread's life story from All Purpose to Zopf. Modernist BreadCrumbs is a special collaborative podcast series with Heritage Radio Network and Modernist Cuisine, that takes a fresh look at one of the oldest staples of the human diet—bread. Although it may seem simple, bread is much more complex than you think. From the microbes that power fermentation to the economics of growing grain, there’s a story behind every loaf. Each episode will reveal those stories and more, beginning with bread’s surprising and often complicated past, from the perspective of people who are passionate about bread, and shaping its future. Modernist BreadCrumbs is powered by Simplecast
