The temperature rises in this edition of Dig It as Peter Brown and Chris Day chat with passionate chilli grower Jason Breed. Jason, a seed specialist from Moles Seeds, gives a full rundown of the growing of these popular fiery fruits, a look at what makes chillies so hot, plus some insightful advice on getting the best from your plants and using them in the kitchen. Chilli peppers are varieties of the berry-fruit of plants from the genus Capsicum, which are members of the nightshade family Solanaceae, cultivated for their pungency. Chilli peppers are widely used in many cuisines as a spice to add ‘heat' to dishes. There are many health benefits associated with chillies too. The Scoville Scale is a measurement of pungency (spiciness or ‘heat'). Jason famously created a Chocolate Chip Chilli Cookie featuring Habanero chillies at the Garden Centre. Products mentioned: Products derived from chillies including sprays for bears, elephants (using barriers of chilli plants) and as an effective squirrel deterrent. Use Vermiculite at seed sowing time. Use a decent seed and cutting peat-free compost such as Levington's. LED plant lights to help growth. Hydroponic systems lend themselves to chilli production. Use Organic contact sprays for caterpillars, greenflies, flea beetles, sawflies and whitefly control. Fertilisers including Chilli Focus Premium Liquid Concentrated Fertiliser. Chilli varieties mentioned: ‘Apache', ‘Quick Fire' (30k on the Scoville scale), F1 hybrid, is the fastest maturing chilli available from seed with the prolific fiery red fruits produced in as little as 50 days from sowing. ‘Red Air' (Bird's eye type, Scoville Scale 70-80k), ‘Red Flame' (Cayenne type, 30-50k), ‘Rocky', a Jalapeno hybrid, 8k and ‘Santana' (hybrid Anaheim, 2.5-3.5k).Open pollinated types include Scotch Bonnet, Habanero and Tabasco, where seeds can be successfully saved from these plants. Guinness World Records declares Pepper X as world's new hottest chili pepper. A garden axe would be Jason's essential castaway item. The latest Guinness World Chilli eating record. You might imagine that the demise of taste buds would rule out a craving for food. On the contrary, not even nausea can do that, and Lord knows I feel nauseous quite a lot of the time these days. However, nausea is no match for steroids. They have the ability to create feelings of hunger that are unrivalled. I have been, quite literally, shaking with hunger. Round one of chemo, of this new and not so welcome experience resulted in industrial quantities of macaroni cheese being consumed. I would like to say that I never inhaled but it would be an un-truth. I inhaled macaroni cheese until smoke came out of my ears. The scales were brutal in their assessment of my brief addiction and I learnt my lesson. Round two led me to roast a chicken in preparation for the affects of steroids. Protein would surely dampen my enthusiasm for carbs as I lay, quivering with nausea and shaking with hunger, in my sick bed. It did not, and I found myself standing at the fridge eating hot lime pickle out of the jar. When I first went to Chemo, I was checked in by a nurse who made me stand on the scales and noted down my weight, in much the same way as check-in staff at Heathrow weigh baggage. Instead of wrapping ID round the handle of my suitcase, she wrapped in round me. If I'd been fatter than expected she'd have called for extra chemo rather than baggage handling re-enforcements. Weigh-ins have now led me to conclude I am on the cusp of a cry for “more drugs”. As she led me to my allotted spot she told me that “lots of ladies love a curry while they're on chemo”. I snorted with incredulity. Now I know what real hunger is, I'd snort the curry. This obsession with new ways to tickle the taste buds has led me to hunt the net for hot sauces and I'm not bad at making them. Thank goodness for the glut of hot chillies that languish in my freezer, along with the overflow of coriander seeds. Everything else I got in the supermarket. Curry does not do justice to the range of hot and spicey food I currently live on. I eat it for breakfast. This very morning, I consumed a spicey aubergine dish slathered in lime pickle. There is an argument for not bothering with the food preparation and just going for the pickle, but I'm keen on my five a day. All of this has spawned a lot of fart jokes. My chum the Big Cheese does a good line in fart jokes, and while most of his jokes are wincingly wide of the mark, his oh so human observations of excess wind, hit the spot. I confess that I have laughed so hard there was a risk of a slight breeze sweeping across my sofa. The BF suggested that we go the whole hog and order an Indian takeaway. I ordered hot and it was delicious. It was so delicious that I was eyeing up the leftover sauce and thinking how good that would be for breakfast, when the BF stuffed newspaper into the leftovers and threw it in the bin. I thought I showed great restraint in not coming downstairs, in the night, to get it out of the bin and eat it. Gearing up for the last chemo in this particular set of four “mother of all chemo's”, as they were so sweetly described to me, made me wonder what cravings await me. Scotch Bonnet? Jeff's family is originally from Barbados, and that cuisine culture has been a major impact on Jeff's life. He chose to create Island Son Canada by doing what he loves: producing spicy sauces and being an entrepreneur. Island Son's current goods are spicy sauces based on Barbadian recipes - Jeff developed his own formulas based on input from the family. We also spoke about how he promotes his products through e-commerce platforms while primarily promoting them in stores. Jeff is a strong believer in and participant in the movement toward decentralized organizations, and he is actively working with a range of companies that are developing to support decentralized production, logistics, and sales. Island Son Canada is based in Ontario and produces a flavor-first hot sauce prepared in micro-batches using turmeric, mango, Scotch Bonnet, and Ghost peppers that is low in sodium and vegan.

Kimberly set up a charity called Zaagi and, using the material from donated wedding dresses, she creates beautiful nestling blankets, wraps and blessing gowns so bereaved parents can wrap their tiny children. We also hear from Ross Nixon who – when he's not on shift as a Highland fireman – volunteers for Spokes for Folks, taking the elderly on tours of Inverness in a specially designed trike. Plus we've an astonishing story from Jo Cameron who doesn't feel pain but didn't realise she was special or different until recently when she needed a hip operation! She can even eat a Scotch Bonnet raw without feeling anything more than ‘a little bit of warmth'.

Erica says she was the different one. At a young age, Erica loved drawing and art and knew she wanted to end up in NYC. She arrived there for the first time when parents dropped her off for college at FIT. Erica says NYC embraces being different, and early on she found herself drawn into Jamaican music like “Rock Steady”, Ska, and older reggae, building up a record collection. Erica said she knew she’d be doing something creatively and began taking on all types of opportunities from people she met. She was an off broadway stage manager doing lighting, was being trained as a professional makeup artist at Aveda, and ultimately landed as a graphic designer. Her co-worker at the time, Eric, encouraged her to play her record collection with him at locations around NYC. Erica DJs under the name Queen Majesty and never says no to a gig. For Queen Majesty, it’s been all about the focus on the artists and learning more about Jamaican music, culture and of course Caribbean cuisine. Queen Majesty was making her first batches of hot sauce at the same time. She didn’t look for a hot sauce recipe to begin, just adjusted recipes with the basics; salt, vinegar, and fresh peppers. Her first sauce, Scotch Bonnet & Ginger, (also her favorite to make) was honed in to go with Caribbean cuisine. Queen Majesty Hot Sauce uses all fresh ingredients for all their hot sauces. The second recipe came from the spicy margaritas that Erica was fixing up at the time. Jalapeno, Lime & Tequila, a refreshing verde hot sauce was born. Her Red Habanero & Black Coffee Sauce focuses on the habanero, but it’s balanced out with coffee infused white vinegar and sweet onions making a truly unique and wholesome flavor. Queen Majesty Hot Sauce started selling their hot sauce attending farmers markets and going door to door, meeting buyers. By being so connected to every phase of her product and receiving feedback directly from customers, she knew there are people that would appreciate a higher quality hot sauce that is fresh, healthy, and all natural. She sought out those good fits with market grocery shops, health stores, and other partnerships and friendships like with Noah at the Heatonist. Queen Majesty Hot Sauce now has their own facility with their office and kitchen and the hot sauces are still as delicious as I first tried them in 2016! Ting: This carbonated beverage packs the tartness and sweetness of grapefruit into a bottle, a delicious and refreshing taste of Jamaica. Steamed Fish: As an island it’s no surprise we love seafood. Be sure to try steamed fish, cooked in a savoury coconut milk sauce with herbs, spices, and vegetables. Oxtail: Seasoned oxtail cooked till tender in an array of spices and broad beans and served with our traditional rice and peas is a dish that Jamaica knows and loves. Try it and you may find that you’ll fall in love as well. Curried Goat: Taking cues from the Indian elements of Jamaica’s heritage, this succulent dish where the goat meat (mutton) is immersed in spices and curry, is typically served with steamed white rice. Rice and peas: Rice and peas is the combination of red kidney beans and rice cooked to perfection in coconut milk, fresh herbs like scallion and thyme, and spicy Scotch Bonnet peppers. The result is a delightful side dish that serves as the ideal accompaniment to many of Jamaica’s popular meat dishes. Run down: Salted mackerel reduced in coconut milk with fresh local herbs and spices, an unlikely but delicious combination that must be had to be appreciated. Escoveitch Fish: Julienne peppers, carrots and, onions are pickled in a vinegar and salt combination that creates a light sauce typically served with freshly fried fish. Ackee and Saltfish: Jamaica’s national dish is a must-try dish on any visit to the island. Ackee, Jamaica’s national fruit, is sautéed with salt fish (cod) fish, onions, tomato, sweet pepper, and other seasonings after being boiled. This colourful combination is often mistaken for scrambled eggs but is most assuredly a far more savoury and delicious dish. Jan Gleichmar, aka Disrupt, and partner in crime Rootah are leading the way in laptop dub reggae with their mighty fine web label Jahtari. Operated out of Jan's flat in Leipzig, Germany, the Jahtari site is a goldmine of free music from Jan and fellow subscribers to the label's theory. There's tons of cool writing too, about reggae history, the Commodore 64, old bits of music kit... and plenty more besides.   In anticipation of Spannered's forthcoming interview with Jan, we suggest you fill your ears with this hour-long Disrupt set, recorded live in Glasgow on 31 March of this year, when he played for the city's Mungo's Hi Fi crew. Since 2002, Mungo's Hi Fi Soundsystem have been showing big love for all things reggae, dub, ska and dancehall by releasing some seriously high-grade music — not to mention regularly shaking Glasgow's foundations with their lofty speaker stacks.   Following three outings on London's Dubhead label, the lads decided to set up their own imprint in 2005 — the wonderfully titled Scotch Bonnet Records. There's been a slew of 7"s and 10"s so far, all as hot as the label name suggests, with their unstoppable Belly Ska Riddim blazing its way across the UK, America, Germany and Poland. And there's no let up in pressure; next month sees their huge Mary Jane Riddim unleashed on a series of singles that feature vocals from Top Cat, Carl Meeks, Kenny Knots, Mikey Murka, Soom T and El Fata. There's also a Mungo's Hi Fi album on the way, due out on Scotch Bonnet in the not-to-distant future. In fact, they tell us they're sitting on so much new material that they don't know what to do with it all!   For those unable to catch Mungo's Hi Fi on their European travels in the coming months, they've kindly supplied Spannered with this killer studio mix, packed full of unreleased Scotch Bonnet goodness. As you can tell, they've been feeling the current dubstep flavours too — hold tight for releases later in the year!
