Over the years I have had the incredible pleasure of emceeing the Embassy Chef Challenge, and with that came the ability to chat with embassy chefs, ambassadors, their families, and attache's. You may remember during the last round, I went to several of the embassies and cooked with their chefs. Oh my goodness it was so much fun, I learned so much, and it gave me the opportunity to share their histories, culture, and of course, cuisine! If you don't know, Events DC's Embassy Chef Challenge is a gathering of embassy chefs from around the world, showcasing the flavors of their home countries in this delicious culinary competition. And the chefs take it seriously! This experience is so DC … in fact DC is truly the only place in the country where an event like this can be executed with such dramatic flair! Mark your calendars for March 7th! Now… where am I? I'm in the Cuban Embassy. Isn't that amazing? For so long this gorgeous building was not utilized or accessible because of the relations between our two countries. But in 2015 that all changed — I mean isn't this what it is all about? Maintaining diplomatic relations with others? Now, I understand that there is a Hemingway bar in here — so you know we are going to get all into it. The Predators would add another goal before the Sharks would wake up in the 3rd period with Granlund and Zadina getting the Sharks oh so close to tying 3-3. Alas, the Sharks would end up running out of steam surrendering the 4-2 goal on the empty net. Kappo would post a respectable .912 Save % but the goal support has just not been there for him. On what should have been a joyous release of brand new Jerseys, the Sharks would have their hearts broken in the dying seconds of the game to lose 4-3. Duclair would have a 2 goal game scoring on 2 separate break aways while Zetterlund would score his career best 15th goal, unfortunately in a losing effort. Kahkonen would statistically have an average night, but reviewing the goals he let in we can see a pattern of soft goals coming at the absolute worst times. The defense in general seemed disjointed and would allow 41 shots to be directed towards Kappo. Landi and Felix break down the new threads, celebrate a Lunar New Year and talk about the growth of hockey in today's era on this edition of Teal Town USA After Dark.

And it has been a few weeks of incredible eats but I want to tell you about some new restaurants that are opening up … -LITTLE BLACK BIRD Ashok Bajaj will be opening a new wine bar Little Black Bird, in the space formerly home to the original Bindaas in the Cleavland Park neighborhood next month. Executive Chef Ryan Moore will oversee the wine bar menu for Little Black Bird and feature 100 wines on the wine list. -EL PRESIDENTE Stephen Starr's new endeavor, El Presidente, will be opening at Signal House in Union Market. El Presidente will be an ode to Mexico City and will venture beyond the scope of a typical Mexican restaurant. Each bite is a nod to Mexico's diverse cuisine, and menu options are innovative and many can only be found at this new concept. -THE SQUARE  - Mark your calendars. Phase 1 has opened Spanish street-food hot off the open flame. Polynesian fried chicken, deep sea snapper and libations. Oysters, crab cakes, and strong drinks. Churros and soft serve, sweet and simple. Street food treats inspired by the heritage of The Square visionaries, Chefs Richie Brandenburg and Rubén García. Okay let's get into today's show: So a few months back Corey Landolt was featured as the drink segment on Foodie And The Beast. Corey created the cocktail program for and was named Beverage Director of Kappo — a gorgeous little gem of an omakase restaurant that is a collab between Ari Wilder and Adrian Williams. Now, Corey is the Bar Director for Zeppelin & Kappo Makoto. His knowledge of Japanese spirits and his creativity in cocktails had me thinking a 10 minute convo with this guy is not enough. In this episode, we audibly cross the seas to Australia and spend time chatting with Matt Kingsley Shaw, one half of the team that is Melbourne Sake. It seemed only fitting to chat with an Australian guest whilst Simone, (who is based in Melbourne), was traveling in Japan. This is the first episode where we, (Maki and Simone), have been in the same country, let alone the same room, during a recording. We had so much fun chatting with Matt whilst tasting the most recent releases from Melbourne Sake. 'After working together at a Melbourne wine bar in 2014, it didn't take long for Matt Kingsley Shaw and Quentin Hanley to take their first baby steps into the world of Sake. Although a little confused and overwhelmed at first, they were spurred on by a next level meal at the (sadly now closed) Kappo on Flinders Lane. If they were only scratching at the surface of the sake rabbit hole before, this experience sent the boys tumbling down. Amazed by the range, complexity and depth of flavour possible in sake, they were hooked. The next few years were spent exploring new styles and producers, learning as much as they could about both, followed by a tilt at home brewing. Inspired by that experience at Kappo and emboldened by many long nights of sake “research”, they decided they would have to do it themselves and Melbourne Sake was born.' 2001 saw Melbourne Sake celebrate their first commercial release of their brew and in this episode, we get a little further insight into how their story began, what's happening for them right now, and what lies ahead for boys at Melbourne Sake. Sadly, Quentin was in transit during the time of this recording, but we hope to catch up with both Matt and Quentin in a future podcast episode and hear how things are progressing for Melbourne Sake. Owner of Susuru, Juju talks about nostalgia behind his restaurants

Chef Lewis Lin did not plan on being a restauranteur. “I moved here in 2006,” Lin said. “I was coming for my master's degree.” Lin came to Florida from Taiwan, pursuing a master's in finance. Unfortunately, he graduated in 2008, just as the recession hit the U.S. “I gotta find a job and I love food. I love food — always have. Old foods connect me to family and friends,” he said. So, Lin started working in restaurants. Eventually, he purchased his first restaurant, Jade Sushi & New Asian in College Park. Jade remains a fairly traditional sushi restaurant, but Lin was looking to bring something more unique to Orlando's dining scene. “Back then, all the restaurants in Orlando, especially Japanese restaurants, they only did sushi rolls, nothing else but sushi rolls,” Lin said. “I was thinking there is something better I can serve to friends or customers — bring some different culture, food to the city.” This led Lin to open Susuru, a Japanese-style izakaya restaurant decked in Showa-era pieces of pop culture. “It's more close to where I can always go when I go to Japan (or) when I go to Taiwan,” he said. Susuru sells Japanese-style street food such as yakitori, which is skewered chicken grilled over coals, and ramen. The name actually comes from the sound people make while slurping noodles. The Showa era refers to a period in Japanese culture following WWII that saw the creation of Japan's popular culture that persists to this day, such as Godzilla, Ultraman and Power Rangers. “I grew up in Taiwan. We've been influenced by Japan so much — the culture, the pop culture, the anime, those things — when I grew up, it was everything,” Lin said. “Showa was so different compared to the history of Japan.” Lin is keeping a similar aesthetic as he opens his third restaurant, Juju, which is now in its soft opening. “Soft opening will be August,” said Lin, the chef and owner of Juju. “After soft opening, when we are fully staffed, we will probably announce the grand opening.” Juju is opening up at 700 Maguire Blvd., a building that used to house a Pizza Hut, right across the street from the Fashion Square Mall. The construction saw the former Pizza Hut transformed to have the appearance of a Shōwa period-style Japanese house. “We separate the whole restaurant into three different areas,” Lin said. “First, we have a really more high-end Kappo bar, a chef's table — six seats, reservation only, serving 10 courses with a premium sake pairing option.” The other sections are a traditional izakaya setting, which will serve drinks and snacks for a more casual dining experience, and another section focused on serving a late-night crowd. Lin said he wanted to make Juju distinct from his other two restaurants. “The reason for doing that in the Milk District is because I want to bring different concepts and share different kinds of food themes with (the people there),” Lin said. Our guest is Takashi Miyazaki, who is the chef/owner of ichigo ichie in Cork, Ireland. Takashi moved to Ireland in 2008 where Japanese food was yet to be more deeply discovered. Also, he was met by the global financial crisis shortly after his arrival in Ireland. Si quieren emprender pongan atención a las cosas que los molestan. Es allí donde se esconden grandes oportunidades de solucionar problemas reales y que, eventualmente, nos podría traer grandes retornos (no solo en dinero, también en conocimiento, oportunidades, contactos y desarrollo personal). En mi caso personal, al comenzar @kappobike , me molestaban dos cosas fundamentalmente: 1. Que mis hijos no pudieran ir al jardín infantil en bicicleta de forma segura. 2. Ver noticias de qué "FarmVille", o "Angry Birds", tenían 40 / 50 millones de usuarios que dedicaban 2 horas al día a jugar estos "jueguitos tontos y poco importantes". No fue hasta que me hice la pregunta clave: ¿Qué pasaría si pudiera hacer que esos 40 / 50 millones de personas dedicaran 2 horas al día a usar su bicicleta como transporte en las ciudades del mundo? Que la respuesta se convirtió en reveladora y lo entendí todo: El mundo que hoy conocemos sería completamente distinto. Mucho más amigable con las bicicletas, donde mis hijos podría ir al jardín disfrutando de la experiencia y no poniendo en peligro sus vidas en cada momento! De ese momento en adelante lo convertí en mi misión de vida, lograr que las personas se motiven a usar la bicicleta, se sientan seguras y retornen a sus casas al final del día sanos y orgullosos de hacerlo. Esto es, actualmente, la visión de Kappo. Al día de hoy, hemos logrado impactos importantes a nivel mundial: - En Dinamarca, aumentamos un 23% la cantidad de niños que va al colegio en bicicletas, gracias a Kappo Kids. - En Chile, logramos que 200 empresas (y creciendo exponencialmente) incentivaran el uso de la bicicleta en sus trabajadores, gracias a Cool Place to Bike. - Nos integramos con Waze, para que los automovilistas fueran alertados de zonas de alto flujo, o en doble sentido, de ciclistas urbanos. - Entre muchos otros! No hay ideas tontas, hay tontos que no las entendemos. Y en este caso, era yo el tonto que no entendía el potencial que escondían estos "jueguitos tontos y poco importantes" para poder cambiar el comportamiento de las personas. Una vez que lo entendí y lo usé a mi favor, todo cambió. Y lo que antes me molestaba, hoy me apasiona!

Algunas reflexiones importantes que encontrarán: - "Los momentos perfectos para comenzar, no existen. Solo comienza ya, pero de a poco. Salta a la piscina, pero no con los dos pies al mismo tiempo". - “Quería hacer algo distinto a lo que estaba haciendo y renuncié a un trabajo soñado, donde teníamos la vida resuelta”. - “Nadie nos apoyaba, por lo que decidimos empezar a postular a fondos. Llegué a dedicar 1 hora al día a postular a todos los fondos que encontraba por internet, y eso fue clave. Pero internamente el equipo se quebró y debía salir de eso”. - "La clave de Kappo es no tomar decisiones basados en dinero. Piensa primero en lo que quieres entregarle al mundo, súper claro, algo específico. El dinero llegará como resultado de tu propósito en cantidades que nunca imaginaste”. - "Primer prototipo y Estudio de Mercado. La Validación no tenia login, no tenía regístrese, ninguna de las capas obvias de una aplicación, registraba el viaje, pero lo hacía súper mal. Pero No tengan miedo a lanzar una aplicación o un producto el día 1, puede que falle o se vea mal, pero lánzala!”. - “Cuando hablas de tu visión y para donde vas tu atraes a la gente que le gusta la visión, no la app”. - “Nos comparan con Strava, para gente menos competitiva. (En Dinamarca) logramos aumentar un 23% la cantidad de niños que va al colegio en bicicleta de forma segura. Todas las ciclovías nuevas de la comuna de Santiago, que se han construido en el último tiempo, fueron diseñadas y planificadas con la información de un juego, el de nosotros”. Toro is located in the old Nabisco Factory (85 10th Avenue at 15th Street) and helmed by Co-Chef/Owners Ken Oringer and Jamie Bissonnett along with partners Doug Jacob and Will Malnati. South Chelsea’s incarnation of Boston’s Barcelona-style tapas bar features an eclectic menu focusing on both traditional and modern tapas, combining regional Spanish flavors and techniques with local and market-fresh ingredients. The Spanish-focused beverage program from Caitlin Doonan features a cocktail menu with a dedicated section of Gin Tonic variations like Nuestra Casa with Oxley gin, allspice and pear and Atencion Gratuita with Bols Genever gin, thyme and lavender, sherry-centric cocktails like Sherry Julep with Amontillado sherry, curaçao and mint, and others such as Verdad y Amor with tequila, hibiscus and ginger and the Rosarita’s Fire with mezcal, pomegranate and cava. The wine list emphasizes Spain and the old world, with a focus on small producers and growers, and features an extensive sherry section. Additionally, seasonal sangrias are available on tap, along with a selection of beer. Caitlin began her career as an actress, but quickly found that her energy and passion were better suited for food and wine than for the stage. Caitlin trained under some of the biggest names in wine, including Theresa Paopao, former wine director at Momofuku. As the beverage manager for Má Pêche, she designed the drinks component of Kappo, the restaurant’s renowned omakase menu, working alongside Paul Carmichael, to help earn the team at Má Pêche a spot among Wine Enthusiast’s Top 100 Wine Restaurants of 2013. After a stint at Boston’s Market by Jean Georges, Caitlin was thrilled to join the team at Toro, where she focuses on varieties from Spain and the old world, with an emphasis on small producers and growers.
