In today's episode, Kelley and Chad talk to Jeff Nobbs, restraunteur and founder of Zero Acre Farms. In 2017, Jeff started a good for you restaurant called Kitava, which serves healthy options like cauliflower rice, zucchini noodles, and kombucha. From there, he started Chipotle-backed Zero Acre Farms, which is a company that is designed to help eliminate seeds oils which currently make up 20% of the American calories. Zero Acre Oil uses a process of fermenting sugar cane to produce a cooking oil that is far healthier, more sustainable, and tastier than any other vegetable oil. It has a high level of heart-healthy mono unsaturated fats and a low level of inflammatory fats like omega-6 fats. On today's show, Chad and Kelley learn a lot about the detriment of inflammatory seed oils and why they need to be replaced for the sake of our health. Through this conversation you will hear insights on why seed oils are so harmful for our health and the types of diseases they can cause, how seed oils are problematic for the environment, the importance of cooking with high smoke point oils, and how eating these inflammatory seed oils can actually cause you to eat more food than you actually need. To connect with Kelley click HERETo connect with Jeff click HERETo connect with Zero Acre Farms click HERE

Usually when you hear about meat's connection to methane, it's about all the methane that cows are emitting into the atmosphere, accelerating climate change. What if, however, you could capture methane before it goes into the atmosphere, and feed it to microbes which in turn convert it into protein-packed ingredients to make alt-meat? Sounds like magic, but it's not magic, it's science! And it's a science that Dr. Ezhil Subbian and her team at String Bio are advancing right now. The India-based company in 2022 closed its $20 million Series B round and is now scaling up to commercialize its microbial protein ingredients. In this interview, Dr. Subbian and I talk about how she started the company, why she moved it from Silicon Valley to Bangalore, India, where they get the methane to feed their microbes, and much more. It's a fun conversation with someone passionate about fermentation and seeking to scale it in a part of the world where it's desperately needed—where meat demand is rising the fastest: Asia. So enjoy this conversation with a real pioneer in the microbial fermentation space as she tells you her story of going from biotech researcher to startup CEO. Discussed in this episode Our past episode with Zero Acre Farms. Today's guest is Sarah Richardson, CEO and co-founder of MicroByre, which is domesticating novel bacteria and using biology to produce chemicals that can supplant petrochemical production methods.Only a small portion of a barrel of oil is responsible for its petrochemical outputs. Most of a barrel is what you'd expect: fuel that's converted to gasoline, diesel, jet fuel, etc. But that small portion of petrochemical feedstocks is really valuable; by some estimates, it makes up to a quarter or more of the value of a barrel of oil. If we want to reduce our dependence on fossil fuels to slow down climate change, one of the ways to do that is to lessen the value of a barrel of oil.MicroByre does this by looking to the natural world. There are microbes and bacteria all around us, eating things, producing things, and living in all sorts of environments, from the highest mountains to the deepest sea vents. There may be a trillion or more bacterial species out there, with 99.99% of them undiscovered by humans. And yet when it comes to domesticating microbes, the technology world has turned almost exclusively to yeast and E. coli.We typically think of microbes as something to which you feed sugar and it outputs alcohol. That's fermentation and it's how we make sourdough bread, beer, kombucha, kimchee, etc. But on this show, we've covered other input/output combinations such as Zero Acre Farms which uses bacteria to produce cooking oils. So what combinations of bacteria, feed, and environment can produce valuable chemicals? And can these bacteria be genetically modified to do this even more efficiently? These are the things that MicroByre is focused on. When we first started asking people about Sarah, more than one person told us that she was among the most intelligent people they'd ever met. Someone even said that they thought she'd win a Nobel Prize someday. After listening to her climate journey with bacteria, you'll quickly realize why she's highly regarded. We're thrilled to be investors in MicroByre at MCJ and hope you enjoy this conversation. In this episode, we cover: [3:10] Sarah's background and early lab experience [7:15] Her cross-disciplinary work at Johns Hopkins and the Department of Energy [16:55] Differences between biology and chemistry in trying to manipulate and grow organisms[21:33] An overview of biotechnology vs. industrial biotechnology [22:37] Petroleum's role in chemical production [24:40] Sarah's motivation for working on climate [27:40] An overview of MicroByre [31:49] The role of genetic modification in MicroByre's solution [37:12] MicroByre's commercial business model [40:07] The company's flexible approach to working with clients and managing uncertainty [43:56] Some of the chemical compounds MicroByre is solving for[47:22] The company's four client categories [55:22] The types of talent working at MicroByre [1:00:05] Funding to date and plans moving forwardGet connected: Cody SimmsSarah Richardson / MicroByreMCJ Podcast / Collective*You can also reach us via email at info@mcjcollective.com, where we encourage you to share your feedback on episodes and suggestions for future topics or guests.Episode recorded on November 4, 2022.

Dr. Anthony Gustin is a man leveraging his curiosity to find opportunities in the problems of our modern age. He started as a chiropractor working with elite level athletes and saw the need for education around nutrition. That first crossover led him into founding Perfect Keto, Equip Foods, and helping put together Zero Acre Farms. He's as much of a disruptor as he is a dreamer - and lately, he's been getting into farming on his small farm, Joyfield Farms, outside of Austin, Texas. In this conversation, we explore modeling life after Wendell Berry and having a balance between intellectual and more physical and farm-related pursuits. We talk about the natural state of humans and whether or not we can get back to it, and if we can't, what might come next and how in order to build it we have to start trying to solve some problems of progress. Anthony shares how to get people engaged with everything from eating real food to buying directly from farms and how some of his companies have served as stepping stones in that space. We dive into the scale of agriculture currently and what it's going to take to get smaller farms in financial shape to begin to provide a viable alternative to the corporate organism. Anthony also shares some of his big questions about farming, as a self-professed novice, and how people have reacted to his viewpoints. This conversation asks big questions but also posits big solutions. Zero Acre Farms is on a mission to remove vegetable oils from the food system. Vegetable oils are the most consumed food in the world after rice and wheat, and are leading drivers of chronic disease and deforestation. At Zero Acre Farms, they make healthy oils and fats from fermentation, not cleared rainforests. Their first product, which they call Cultured Oil, has the highest level of good fats, lowest levels of bad fats, and a 90% smaller environmental footprint than vegetable oil. I've tried the new Zero Acre Farms Culture Oil. On today's episode, Dr. Jaime interviews entrepreneur and possible robot, Jeff Nobbs.Jeff Nobbs is an entrepreneur (he likes being called that because it allows him to occasionally be unemployed while still sounding like he's on top of everything) and thinker (his wife calls him a robot programmed to act human, but he thinks “thinker” sounds more profound than “robot”, and the title allows him to lounge around doing nothing claiming to be “thinking”).Now it's 2022 and Jeff has decided, of all things, to enter the oil business. After realizing that nobody else was insane enough to try and replace one of the most consumed foods in the world, Jeff co-founded a new food startup called Zero Acre Farms with exactly that mission: to remove destructive vegetable oils from the food system.Jeff has realized that he gets very frustrated when there are very important problems that aren't being addressed or solved in the way that he thinks they should be. At age 18, Jeff Nobbs founded an ecommerce company, building it into a valuable enough startup that it was acquired in what Jeff calls a “life-changing” event. After then opening a restaurant that now has two locations in the Bay Area, Jeff decided that there'd be a third entrepreneurial act in his life, this time focused on fixing fat. What's wrong with fat today? Well, Jeff argues that the way we grow plants to make oils like palm, soy, coconut, canola, and more is just pretty taxing on the planet. It's often not that good for us, either. So instead of farming plants to extract the tiny amount of fat that's in them, why not just farm microbes that produce vast quantities of fat and save a lot of land in the process? It would be especially beneficial if these microbes were adroit at making monounsaturated fats, or the so-called “good fats” we associate with avocados, olives, and so on. It turns out that producing fat via microbial fermentation is pretty efficient. A life cycle analysis conducted by Jeff's new company, Zero Acre Farms, found that their fermentation process uses far fewer resources than farming soybeans, which are a pretty efficient plant. Founded in 2020, Zero Acre Farms now has three dozen employees and just closed a $37 million dollar financing round. Its first product, a cultured oil, is now available to purchase from their web site. I tried it in my own kitchen and can attest that indeed, the oil performed and tasted quite good. It's an impressive journey that Jeff's been on, and with tens of millions of dollars now at the mid-30s CEO's disposal, it's sure to be quite a ride as they scale up and see how many acres they can free up by switching the world to their lower-footprint fats. In this episode, Jeff recommends  Dale Carnegie's books Peter Drucker's books Think and Grow Rich Scaling Up High Growth Handbook   More about Jeff Nobbs Jeff Nobbs is the co-founder and CEO of Zero Acre Farms, a food company replacing destructive vegetable oils with healthier, more sustainable oils and fats made by fermentation. On today's episode we're talking about cooking oils. Thank you Craig Shapiro for the introduction to our guest today is Jeff Nobbs, who is the founder and CEO of Zero Acre Farms. Zero Acre Farms is on a mission to remove destructive vegetable oils from the food system. Zero Acre Farms is an oil that's instead made from fermentation. Some of the questions I ask him: When did you start to care about health and the science of nutrition? You've started quite a few businesses before and you've been very successful. When did you start thinking about alternatives to vegetable oil? What is the origin of vegetable oil? How did you land on microorganisms and fermentation? What were other processes you were considering? Can you walk us through the process? What's been the challenging part on the R&D side? How do you think about your competitive advantage? Why did you choose to raise $37 million? How were you able to raise it? What resonated with investors? What's the most expensive part to Zero Acre Farms? Have you seen tech investors shift away from investing in CPG or only in CPG where there isn't product innovation? How do you approach the price point? With innovation comes a premium. How do you think about premium pricing vs. maximum impact? There's kind of a bifurcation within better for you products – do you value products that are better for the planet or products that are better for your body, It's hard to create products that can fill both those requirements. How do you think about it since you've been an entrepreneur within health and wellness for a long time? What were some of your lessons learned since you started a CPG brand before and a restaurant before that has impacted how you think and operate Zero Acre Farms? What's the company you most admire (Craig Shapiro asked this question)? How do they impact you? What is the vision for Zero Acre Farms? What will be the most challenging to fulfill that vision? What's one book that has inspired you personally and one book that's inspired you professionally? The Three-Body Problem Think and Grow Rich The History of the World What's the biggest piece of advice to founders?

As a raw milk drinker, I try to avoid pasteurized milk in my coffee. Oat milk so effectively replaced it, there had to be a catch. Indeed there was. Spin around a box of Oat Drink Barista Edition and you'll find it's made of rapeseed oil, AKA canola oil. Imagine guzzling canola oil straight from the bottle—totally disgusting, no matter how cute Oatly's copywriting might be. Originally developed as engine lubricants, seed oils like soybean oil, corn oil, rapeseed oil, grapeseed oil, cottonseed oil, safflower oil, sunflower oil are unhealthy for many reasons.Once you've been redpilled, the rabbit hole goes deep. At a bar in Athens a couple of years ago, I talked with a guy who sold industrial seed oil expellers. He explained that expellers are responsible for all the soy cake and seed oil that form the basis of globalist serf cuisine—“sustainable” meat and cheese replicas we're supposed to eat to show how much we care. Business was booming. The soy boy concept owes a lot to expeller pressed seed oils, as does “You WILL eat the bugs,” a mocking rallying cry against the World Economic Forum's apparent plan to preserve “our global resources”—like meat, oil, and land—so the elites can have more of them.Among the poison and propaganda, a hero arose. Last November, a young doctoral resident created a Twitter account. As a budding doctor already obsessed with the seed oil problem, he had toyed around with memes before. “I had made the decision for myself that seed oils were going to be my main intervention,” says Twitter influencer Seed Oil Disrespecter. “This is the most significant change in diet. This is the primary food change that has led to so much disease and this is what I need to do for myself and for my wife and my daughter. And then I saw it hit Twitter.”It was time to enter the fray. “A lot of people were making accounts saying, ‘Oh I'm a hiking enjoyer and I'm a nature respecter.' So I just married the two and wrote Seed Oil Disrespecter. And within the first 24 hours I had 1000 followers. I was like, ‘Oh wow, this is branding!'”As his meme-craft improved, Seed Oil Disrespecter's account grew past 40k followers. Vice, propaganda spreaders on behalf of those who want us to eat the bugs, of course painted him as a paranoid conspiracy theorist. Katherine Dee covered him in Unherd, and Killstream had him on as a guest. His wife built a following as Healthy Oil Respecter, offering a more normie-fied, mommy-blogger version of the same message. On Killstream, he admitted to being vaxxed and having heterodox politics, which disappointed some factions of his growing following. Rumors started that he was in fact a corporate shill; an astroturfer for Silicon-Valley-insider startup Zero Acre Farms. Zero Acre Farms— “Let's Give the World an Oil Change”—plans to disrupt big seed oil with creepy fermented oil of its own (the exact product details remain unclear). Did Seed Oil Disrespecter hijack the authentic anti-seed oil movement on behalf of the very corporate overlords it opposed?I ask about these accusations and much more during the second episode of The Carousel podcast. I will admit that the audio is worse than seed oils because I'm still working on my setup. So if you can't stand it and want to skip to the part where he talks about how to spread your message, it's at about 42:00. And here's his advice in easy-to-digest listicle form: How to spread your message according to Seed Oil Disrespecter!Hijack Humor. “What are people already laughing at? Be new and funny. The -er at the end of Disrespecter is kind of wrong. Having little mistakes here and there is funny [right now].”Move with the Memes. “Memes are punk rock. Make sure you're not too stale and always switch things up. I'm a meme guy, so what do I do? I just steal other memes and reword them. Or I think of something new. It's very simple stuff.”Use the In Between Times. “I do it in between things. You just look at your phone, I look at memes, I see one and I go, "Ooh, I can change that to a seed oil meme." I do it. I repost it. Done. It'll be minutes.”Save Raw Materials. “As a meme person, I always save raw materials. I'm always thinking, oh, I can use that later. You just download it and open it in the Photoshop Express app.”Make it Sticky. “Is it something that people remember? Does it stick to the wall? SeedOil Disrespect is a sticky name, it's funny. But the more you look into it, you're like, holy s**t, it's true. People around the world are saying, ‘Disrespecting seed oils,' and they might not even follow my account.”Build a Squad. “My wife knows nothing about Twitter, right? She's not a meme war veteran and she doesn't get Pepe. We're married a little over 15 years. That first year of marriage, we were like buying vegetarian Morning Star nuggets and trying all sorts of different stuff. But within a year or so we learned about paleo, right? So that first year of marriage, we made a lot of changes. So one of the big changes we made was changing the oils that we were eating, the fats. So I told her, I got this thing going on, right? My Twitter is exploding. I was like ‘Hey, I'm the Seed Oil Disrespecter.' She was always doing something on Instagram. Never anything too big. You know, you get 10 likes or whatever. Your bangers get 30. Because we were into this stuff, we're talking about this stuff, I was like, I'll make you an account. I said, Healthy Oil Respecter, but that was taken, or too long. So I was like, Real Oil Respecter. And it worked. So we both had these accounts, we're both doing it. And we just blew up.”Make Lists: “We have the simple six [good oils], which is tallow, butter, ghee, coconut oil, real avocado oil, and real olive oil.” Don't Gatekeep: “I'm getting messages from people that are like, ‘Hey, you know, I'm not right-wing, and I've seen that the people are associating this with that.' But you know, it's just food, right? And that's why I made posts today, like you can't gate keep this stuff.” Get full access to The Carousel at thecarousel.substack.com/subscribe

Timestamps: [02:05] Greg, can you talk us through your journey?  Currently, I co-head the climate investment team at Fifth Wall.  I set up and founded the climate investing team for BMW.  Prior to BMW, I was an Elon Musk world for a number of years. I was head of finance and operations at two of his companies.  I started my investing career at a fund called Battery Ventures. [06:10] John, can you talk us through your journey?  I didn't set out to be a climate tech investor. I have a law degree from Stanford.  I started several companies that were venture-backed, the first was Coldwatt.  I started my first asset management company as an investor in India and set up a permanent capital vehicle for investing.  I partnered with Stephen M. Ross, Jeff Blau and Harvey Spievak and we turned around Citi Bike.   Finally, I set up Footprint Coalition with Robert Downey Jr.  [14:20] Greg, can you talk us through impact investing and how it's going affect our built environment?  Impact investing has historically gotten little bit of a negative connotation to it because in the capital markets people have always said there's real investing and then there is impact investing. A lot of these technologies that people used to think were expensive are now incredibly cheap. [16:50] John, in your 20 years, what major changes have you seen?  We've had a wash out of clean tech, 1.0 companies that weren't sustainable without subsidy. Technology is accelerating, the world looks nothing today, like it did 15 years ago. The talent that has followed the capital that is flooding into this market is truly amazing. [22:30] With technologies such as Carbon Cure and cross-laminated timber, it is expensive for buildings to put into practice and will the cost of these building be higher?  This technology is safer because these things are lighter and they're easier to transport. You need smaller foundations for the buildings and they naturally are able to band with the wind and high-rise buildings.  It's cheaper, it's better for the planets, your buildings go up faster and they weigh less.  We've got to climb up a little bit of a mountain when it comes to training engineers and getting permitting done. [24:50] John, you have experience in alternative proteins, can you expand on that and give an example of a technology in that space?  People are really looking and examining the food supply and thinking about how we can scale in a way that's compatible with the planet. We look for investments in areas where through alternative methods of production, we can create more denser sources of the very things that we need to eat and that are healthier and just better alternatives. Zero Acre Farms ferment in this case, vegetable oil and if you're able to do that you have a much more energy dense way of producing that food without having to go and cut palm forest.  [28:00] Is there something our audience could be looking in to play their part in the future of the built environment?  The simplest thing you can do, inside buildings is turning your thermostat down. What we need is to allow people to voice their opinions and give CEOs and the people who make policy decisions, the power and the space to change how they do business. [30:55] The ‘LMRE' part, Louisa asks the guests to talk about;  Lessons learned in your career Greg:  Catch me if you Can and Inventing Anna, these people were to do outstanding things because they had the moxie and the guts to try.  Greg: You fail at a 100% of the things, you don't try. John:  Never underestimate the power of human incentives. Mention a person, product or service Greg: Sealed.com John: My wife Rewarding parts of working in the space: Greg: When you work on anything in climate tech it is quite rewarding inherently because the, technologies you're working on are here to try and save the world. John: I love the community feedback.    What are you most Excited about for the future of the space?: John: I drove a 1968 Volkswagen bus and this one was kitted with a salvaged Tesla engine. Episode #32 Choosing a Healthy Cooking Oil - An Important Part of an Anti-Inflammatory Diet with Jeff Nobbs

Body of Wonder

Vegetable oils are the most consumed food in the world second only to rice and wheat. Cooking oil now accounts for 20% of our daily calories, representing the greatest increase in the sources of calories since the globalization era. Today, cooking oils are a staple in our diets, with canola, sunflower, soy, peanut, and palm oil being the most consumed. A growing number of studies demonstrate that many vegetable oils are pro-inflammatory and linked to disease. Research has shown that they are particularly harmful when heated or consumed in large quantities. Our guest this episode is Jeff Nobbs a food and technology entrepreneur. Jeff is the co-founder and CEO of Zero Acre Farms, a company producing cooking oils made by fermentation, called “cultured oil.” In this episode, we explore the best and worst oils for health, as well as other important considerations like taste, smoke-point, and sustainability. Jeff discusses the challenges of conventional oils and the exciting possibilities of cultured oils. Dr. Weil explains why certain oils are pro-inflammatory and carcinogenic. Dr. Maizes points to food policy to understand why these vegetable oils dominates commercial food production. We discuss the good oils, the emerging world of cultured oils, and which oils to avoid.
