Before I dive into our main topic, I want to highlight something I find truly ridiculous: the “Beefless ground beef” I saw on a Trader Joe's shelf. If someone wants to eat plants infused with toxic seed oils and preservatives, that's their call, but let's call it what it is, and that ain't beef! I also am not personally shopping for cheese-less cheese, grape-less wine nor olive-less olive oil. What is it with humans?!! Why do we take what Nature perfectly made, much with it, and listen to those who claim it's healthier?Another mini rant I discuss in this episode: the new USDA dietary guidelines (ahem, conflict of interest ridden same ole hot mess) set to come out in 2025. Nutrition Coalition's Dr. Nina Teicholz is one of my heroes for highlighting these conflicts of interest and lobbying to get better people who aren't owned by Big Food onto this committee whose “work” drives what's available in anything our massively obese government touches — for example, schools, hospitals, prisons, etc.Alright! Let's get down to biznass: avoiding the holi-daze and cultivating a nourishing, meaningful season. This starts with mindset, y'all! Ask yourself what is most important to you, how you'd like to spend your precious time. I can guarantee that you'll feel a lot better come January if you set some parameters as for how you will spend your time, money and of course nourish yourself.We discuss that Big Food is happy to offer you even more conveniences which will cost you more AND inevitably contain toxic seed and vegetable oils. While it might take 10 more minutes to wash and cut veggies and make your own quick dip — two dip recipes coming in November (!), you'll save money and have a healthier veggie platter, for example.I recommend four main tips for nourishing yourself while enjoying the holidays: 1) Nourish thyself with sleep, hydration, quiet time each day and of course nutrients; 2) establish a game plan for your non-negotiables such as sleeping 7 hours per night, moving 3-5 days per week (even if it's shorter than your traditional routine), a five minute calming practice when stress appears; 3) come up with some quick go-to menus for those busier nights; and 4) remember, it's ok to say NO or make a quick appearance at an event and then retreat. Think about what's important and honor what is best for yourself. This will help you glide into the New Year nourished, energized and ready for what 2025 will bring. Why are we talkin' about breathing, something we do automatically? There are a lot of different types of breathing. What is your breath like when you're nervous? Contrast that with how you're breathing at the end of a delicious meal filled with laughter and pause. Or as you're reading and beginning to doze off. It's true that most of the breaths we take are autonomic unconscious processes. And true that we can improve our cardiovascular, immune and psychological functioning with intentional breath work. I started researching breathing techniques while pregnant with my son, specifically enrolling in a HypnoBirthing class. Over the years I've expanded my practice to include a number of different practices for different reasons. Today, I'll share three techniques with you: three breathing exercises for relaxation, resolving a blocked nostril and strengthening your system, respectively. 1. Parasympathetic relaxation technique: here we slow down the breathing and use a simple counting technique to inhale and pause, then exhale and pause. 2.Soma Breath Unblock: here you learn how to unblock your nostril(s) when you awaken congested. 3. Wim Hof mini class: and finally we explore a method for strengthening your cardiovascular and immune systems developed by the Ice Man! In closing, I offer some general advice I give clients: think of your health journey as a walking path where you're generally headed forward, one foot in front of the other. If you're holding yourself to a really strict “tight rope",” it's very hard to find self grace. Remember, every time you do something healthy — take a walk, get some natural light, eat a nourishing meal, you are investing in your health bank account. If and when you decide to take a withdrawal, this doesn't negate all of the deposits you've made. The aim is to make more deposits than you do withdrawals. [04:49] What's the importance of LDL Cholesterol to our body? LDL cholesterol is highly conserved across different species, indicating its importance for life. The immune system uses LDL cholesterol. Low levels of LDL can lead to susceptibility to bacterial infections and cancer. There is ongoing research into the connection between low LDL levels and illness in people, and it has been discovered that some ICU patients have lower LDL levels. Drugs like Repatha and Praluent can drastically lower LDL levels. Still, no long-term safety data has yet to be available, and adverse effects may not always be reported to the database for post-marketing research. [09:17] What are some risks of having high or low LDL levels? Statins have been prescribed for decades, but adverse effects may not be reported until years later. LDL has many functions in the human body, some of which may not have been discovered yet. Studies have shown that people with the lowest LDL levels have higher cancer rates, infectious death, and autoimmune conditions. Some healthcare providers may not understand the human body's basic physiology of LDL cholesterol. [13:57] What's the benefit of presenting research studies to your doctor? Patients can bring research studies to their doctor to start a meaningful dialogue about their medication. Doctors may not be aware of certain research studies due to a lack of time to research every single topic. Pharmaceutical representatives may only present the benefits of medication without mentioning potential side effects or risks. Patients who bring in research studies may see positive results, such as doctors being more willing to adjust their medication dosage or prescribe a different medication. Patients can use their knowledge of research studies to have informed discussions with their doctors about their treatment plans, which could change the trajectory of medical practice. [22:19] Are healthcare and health insurance for better or worse? The healthcare and health insurance business model are not designed to profit from metabolically healthy people who eat a proper human diet. · The origins of health insurance can be traced back to the Nixon administration's wage freeze, which led to companies offering it as a fringe benefit to attract employees. Insurance companies saw an opportunity to make millions and created health insurance products with raised deductibles and lower coverage for profit. The current healthcare system in the United States faces challenges, including rising premiums and the debate over universal healthcare. [40:20] Cooking and Nutrition: Does Cooking Take Away the Food's Benefits? Cooking above 120 degrees Fahrenheit can denature some vital vitamins, polyphenols, and phytonutrients in food, but it is typically a small amount. Minerals and electrolytes are not affected by cooking, as they are elements on the periodic table. Cooking unlocks a bunch of nutrients that are not accessible in raw food. The raw food movement failed because it was difficult to consume enough raw plants to provide the body with sufficient nutrition, and people lost weight to the point of becoming unhealthy. Humans have been cooking food for at least 1 million years, and our bodies have evolved to optimize digestion with cooked food. Cooking meat for a medium rare or medium level of doneness mimics our ancestors' ways and provides many benefits with few drawbacks. During her research, Nina came across studies pointing out the flaws in a low-fat diet. However, so many scientists at universities were terrified to talk to Nina about fat. Why? Because people in the food industry were paid to give scientists a hard time. Nina realized there was something really wrong going on here that had such enormous implications. Nutrition science from the very beginning has been heavily influenced by the food industry. For instance, the vegetable oil industry wanted to go after people for attacking vegetable oils in any way. You see the same tactics happening today on social media. [08:55] Polyunsaturated Fats vs. Saturated Fats vs. Monounsaturated Fats Fatty acids are long carbon chains. Poly means many. Polyunsaturated fats have many double bonds. Each time there's a double bond in the chain, it kinks the chain. Some examples of polyunsaturated fats: Corn oil Safflower oil Sunflower oil Canola oil Monounsaturated fats are the same carbon chain but with one double bond. If you want to use oil, it's better to use olive oil because it only has one double bond. Saturated means that the carbon chain is statured with hydrogen, and there is no double bond. It is a flat chain, and it makes a solid like butter. Saturated fats are actually the best for cooking, and they're the healthiest for eating because they do not oxidize or cause inflammation. [17:55] What Went Wrong In The 1950s With Ancel Keys and President Eisenhower The idea that fat, cholesterol, and animal foods are bad for health began in the 1950s. The US was really in a panic over the rising tide of heart disease, which had been virtually nonexistent in the early 1900s. In the 1930s, heart disease became the number one killer. A panic started when President Eisenhower himself had a heart attack in 1955. Eisenhower's doctor was convinced by Ancel Keys that saturated fats and dietary cholesterol cause heart disease. Plus, Ancel Keys got his ideas adopted by the American Heart Association. Ancel came out with a statement saying to avoid saturated fat and cholesterol in order to prevent heart attacks. We are still dealing with this in 2021. [23:00] Why Are Seed Oils Approved by the American Heart Association? How is it possible for the American Heart Association to continue to ignore so much scientific literature? More than 20 papers published in the field have concluded that we got it wrong on saturated fats. There is no data to justify the authorities' limits on these seed oils. It's challenging to trust the government with our health when they recommend seed oils. [31:00] Sorry Vegans, Meat-Eating Is Healthy For Humans Nina did not know how controversial red meat was until she put a picture of it on the cover of her book. Sadly, many people think that if you eat meat, you're a bad person, you don't believe in climate change, and you're not doing your part to protect the climate. There's this moral revulsion that has been created against meat. Influencers in the spheres of science and public health have vilified one of the healthiest foods on the planet. Meat was developed by humans in order to have a convenient and cheap source of protein. [33:15] Myth: Meat Causes Diabetes Diabetes is caused by elevated blood sugars. Sugar causes elevated blood sugars, so do carbs. Where's the sugar in meat? It's just nonexistent. It's impossible that meat would cause diabetes. Red meat consumption has gone down around 28% since 1970. Whereas, diabetes has skyrocketed out of control. [34:15] Myth: Red Meat Causes Colorectal Cancer The WHO decided that red meat and processed meats cause colorectal cancer. This decision was based on these kinds of weak science called epidemiological or observational studies that show associations instead of causation. The data they used was self-reported dietary data, and we all lie about what we eat. There needs to be a more significant discussion about the bias against red meat. [38:30] Why People Are Pushing Vegetarian and Vegan Diets The animal rights movement does not want people eating animals. The Seventh Day Adventist Church has a religious belief that people should eat a vegan diet.Plus, the food industry has an enormous investment in plant-based foods. Also, many companies want to hop on the climate change bandwagon. Many vegan burgers have vegetable oils that are not healthy. [41:30] Myth: There's a Correlation Between Red Meat Consumption and Heart Disease The original reason that red meat was thought to cause heart disease was based the fact that it contains saturated fat and cholesterol. However, research shows that saturated fat and cholesterol do not cause heart disease. Therefore, foods containing saturated fat and cholesterol don't cause heart disease. The correlation between saturated fat, cholesterol, and heart disease has been more rigorously and extensively studied than almost any other scientific question in the history of nutrition science. [47:15] Which To Cut First: Smoking Cigarettes, Processed Sugars, or Vegetable Oils People smoked historically for hundreds of years tobacco, but they did not get cancer or heart disease until the introduction of sugar. Nina says that smoking is probably safer than processed sugars or vegetable oils. Between sugar and vegetable oils, Nina says that vegetable oils are safer. People who go low-carb will see massive improvements even if they continue to use vegetable oils. AND MUCH MORE! During her research, Nina came across studies pointing out the flaws in a low-fat diet. However, so many scientists at universities were terrified to talk to Nina about fat. Why? Because people in the food industry were paid to give scientists a hard time. Nina realized there was something really wrong going on here that had such enormous implications. Nutrition science from the very beginning has been heavily influenced by the food industry. For instance, the vegetable oil industry wanted to go after people for attacking vegetable oils in any way. You see the same tactics happening today on social media. [08:55] Polyunsaturated Fats vs. Saturated Fats vs. Monounsaturated Fats Fatty acids are long carbon chains. Poly means many. Polyunsaturated fats have many double bonds. Each time there's a double bond in the chain, it kinks the chain. Some examples of polyunsaturated fats: Corn oil Safflower oil Sunflower oil Canola oil Monounsaturated fats are the same carbon chain but with one double bond. If you want to use oil, it's better to use olive oil because it only has one double bond. Saturated means that the carbon chain is statured with hydrogen, and there is no double bond. It is a flat chain, and it makes a solid like butter. Saturated fats are actually the best for cooking, and they're the healthiest for eating because they do not oxidize or cause inflammation. [17:55] What Went Wrong In The 1950s With Ancel Keys and President Eisenhower The idea that fat, cholesterol, and animal foods are bad for health began in the 1950s. The US was really in a panic over the rising tide of heart disease, which had been virtually nonexistent in the early 1900s. In the 1930s, heart disease became the number one killer. A panic started when President Eisenhower himself had a heart attack in 1955. Eisenhower's doctor was convinced by Ancel Keys that saturated fats and dietary cholesterol cause heart disease. Plus, Ancel Keys got his ideas adopted by the American Heart Association. Ancel came out with a statement saying to avoid saturated fat and cholesterol in order to prevent heart attacks. We are still dealing with this in 2021. [23:00] Why Are Seed Oils Approved by the American Heart Association? How is it possible for the American Heart Association to continue to ignore so much scientific literature? More than 20 papers published in the field have concluded that we got it wrong on saturated fats. There is no data to justify the authorities' limits on these seed oils. It's challenging to trust the government with our health when they recommend seed oils. [31:00] Sorry Vegans, Meat-Eating Is Healthy For Humans Nina did not know how controversial red meat was until she put a picture of it on the cover of her book. Sadly, many people think that if you eat meat, you're a bad person, you don't believe in climate change, and you're not doing your part to protect the climate. There's this moral revulsion that has been created against meat. Influencers in the spheres of science and public health have vilified one of the healthiest foods on the planet. Meat was developed by humans in order to have a convenient and cheap source of protein. [33:15] Myth: Meat Causes Diabetes Diabetes is caused by elevated blood sugars. Sugar causes elevated blood sugars, so do carbs. Where's the sugar in meat? It's just nonexistent. It's impossible that meat would cause diabetes. Red meat consumption has gone down around 28% since 1970. Whereas, diabetes has skyrocketed out of control. [34:15] Myth: Red Meat Causes Colorectal Cancer The WHO decided that red meat and processed meats cause colorectal cancer. This decision was based on these kinds of weak science called epidemiological or observational studies that show associations instead of causation. The data they used was self-reported dietary data, and we all lie about what we eat. There needs to be a more significant discussion about the bias against red meat. [38:30] Why People Are Pushing Vegetarian and Vegan Diets The animal rights movement does not want people eating animals. The Seventh Day Adventist Church has a religious belief that people should eat a vegan diet.Plus, the food industry has an enormous investment in plant-based foods. Also, many companies want to hop on the climate change bandwagon. Many vegan burgers have vegetable oils that are not healthy. [41:30] Myth: There's a Correlation Between Red Meat Consumption and Heart Disease The original reason that red meat was thought to cause heart disease was based the fact that it contains saturated fat and cholesterol. However, research shows that saturated fat and cholesterol do not cause heart disease. Therefore, foods containing saturated fat and cholesterol don't cause heart disease. The correlation between saturated fat, cholesterol, and heart disease has been more rigorously and extensively studied than almost any other scientific question in the history of nutrition science. [47:15] Which To Cut First: Smoking Cigarettes, Processed Sugars, or Vegetable Oils People smoked historically for hundreds of years tobacco, but they did not get cancer or heart disease until the introduction of sugar. Nina says that smoking is probably safer than processed sugars or vegetable oils. Between sugar and vegetable oils, Nina says that vegetable oils are safer. How Are We to Interpret the New Dietary Guidelines for Americans? The United States government recently issued its Dietary Guidelines for Americans. This happens every five years so we are now going to have these guidelines in place until 2025. Unfortunately, as you will see, these guidelines are profoundly insufficient as they relate to nutrition. They are administered to all Americans and become the backbone of nutrition for schools and the military and the general population of our country. In fact, the diet that is recommended is designed only for healthy people, and ultimately that represents only about 12% of our population. This is a one-size-fits-all diet that does not reflect the diversity of our country in terms of race, culture, and importantly, variations in metabolic health. The diet recommends greater than 50% of calories coming from carbohydrates and includes three servings of refined grains per day and up to 10% of calories coming from pure sugar. And all this despite the fact that an expert committee provided incredibly robust science, accumulated over the past decade, showcasing the profoundly detrimental health effects of the very diet that was approved. Today we will spend time with Nina Teicholz as we explore and deconstruct these new guidelines. We’ve had her on the program before, and let me tell you a little bit more about her. Although she had no idea what trans-fats were at the time, she took the piece on, and interviewed people about trans-fats. What surprised her was that when she started talking to research scientists, she discovered that as early as the 1970s, people had already started talking about the potential dangers of trans-fats. Nina was told about the researcher’s experiences of attempts to get their research suppressed or of people yelling at them and trying to intimidate them off the stage when they spoke about their findings at meetings. Nutrition Coalition to bring an alternative point of view to Washington to try and get government support to change the dietary guidelines Turns out Americans follow the dietary guidelines, but are still getting sick Consumption of red meat, butter, and whole milk are down Consumption of grains and vegetable oils are up Ever since the dietary guidelines were introduced in the 1980s diabetes and obesity rates have exploded No one can prove that the guidelines caused these epidemics, but we have a body of science that show if people ignore the guidelines and eat high fat low carb they can manage and reverse their diseases suggesting that the guidelines are no promoting health Quote from Nina’s book: “But like lost languages, lost skills, and lost songs, it takes only a few generations to forget” It seems normal that everyone has a disease, but it’s not normal Challenging the idea of low-fat plant-based diets is extremely difficult because it is enshrined at the highest levels and there is a lot of corporate interest behind it The main ingredients in the grocery stores are sugar, grains, and vegetable oils Food only became medicalized in the 1950s when people were suffering from heart disease Diet-Heart Hypothesis introduced by Ancel Keys claiming that saturated fat and cholesterol would clog your arteries like hot oil down a cold pipe and that would lead to a heart attack The first dietary recommendation in the world was to limit saturated fat issued by the AHA in 1961 It wasn’t until 1970 that all fats were demonized and not just saturated fats The AHA recognized that they didn’t have all the answers but they couldn’t imagine any negative unintended consequences but in reality, the unintended consequences were two-fold By cutting down on saturated fats we shifted to PUFA vegetable oils which turned out to cause higher death rates from cancer Since 1960 we have increased carbohydrate consumption by 30% and have decreased fat since 1965 by around 30% and protein has stayed relatively constant They tested the diet-heart hypothesis after the dietary recommendations had already been made, and were never able to support it by science The majority of studies that couldn’t confirm any health benefits to low-fat diets were largely ignored and considered “silent studies” it was too uncomfortable for anyone to admit they might have got things wrong The Minnesota Coronary Survey study wasn’t published for 16 years because the researchers weren’t happy with the results since they didn’t support a low-fat diet for reducing risk of heart disease [29:51] The demonization of cholesterol has been one of the greatest mistakes in human history All of the trials that swapped out saturated fats for polyunsaturated fats showed increased death rates from cancer but they were so convinced that lowering cholesterol was the answer so they accepted it One of the scariest parts of her book was researching the detrimental effects of vegetable oils which didn’t even exist in the food supply until the early 1900s The types of fats in vegetable oils can replace the stable fatty acids in our cell membranes, there are significant effects of these fats on our health There are over 100 clinical trials showing the benefit of carbohydrate restriction We need to ask what diet can people stick to in the real-world The metabolic ward studies are flawed because they are short-term Type-2 diabetes is reversible [41:31] Nina tried to get media coverage on type-2 diabetes remission with a ketogenic diet and the on air doctor wouldn’t allow it because it contradicted everything he had been promoting over the years Institutions have been promoting low-fat diets for so long that people can’t go back on their word Much of the media are funded by pharmaceutical companies so ads aren’t going to promote lifestyle factors that can get people off their medications There is huge corporate investments in meat replacements Nina is open minded to the carnivore movement based on the nutrient density of animal foods and the various toxins that can be in plant foods We are moving in the right direction by removing the caps on dietary cholesterol and dropping language around low-fat diets We need better science and grass-roots movements to continue this paradigm shift We need our doctors to be educated on this because no one wants to feel like they can’t trust their doctor, and we shouldn’t have to [51:18] The foods that are in institutions are determined by the dietary guidelines [52:02] If you belong to a large medical practice, you risk medical malpractice if you teach people a low-carb diet if it’s not standard of care, until it’s included in the dietary guidelines its not available as an option The focus of the Nutrition Coalition is about doing proper science and reviewing it properly and not ignore science and if the science is done correctly and not ignored we can get answers The current dietary guidelines for vegetarianism, mediteranean diet, and DASH diet are supported by almost no evidence We are dealing with politics not evidence We need more people spreading this message because everyone shares in a different way Few people in this world have done more to unearth the fallacy and shoddy evidence behind our dietary guidelines than Nina Teicholz. Her book The Big Fat Surprise is one of the seminal books opening our eyes to the problems the dietary guidelines have caused and their complete lack of quality evidence. But Nina didn't stop there. As director of the Nutrition Coalition, Nina is spearheading the effort to make sure nutritional recommendations are based on quality science or aren't made at all. On the surface it makes sense that we would all agree on that. Yet there is no shortage of controversy and deception still happening and the 2020 guidelines committee may not help matters much. It seems to be dependent on how soon you’re going to train again. If it’s only once per day it seems carbs aren't really necessary. 2 sessions per day, probably yes. He only needs carbs when doing intensity plus high volume. Either one separately he doesn't. How he got into the carnivore world He’s done 73 podcast episodes with various experts and has learned a lot 2 big things are that vegetables aren’t really necessary it seems and there’s a lot of myths about protein that are turning out to not be true. There’s probably no such thing as too much protein My ultra simplistic theory is that animal foods are +1, processed foods are -1, and plant foods are just neutral (or 0). Plant foods aren't doing much for you other than taking up space in your stomach from things that could be worse. The real nutrition is from the animal foods.
