EPISODE SUMMARYAfter a successful career in clinical practice, Dr. Chris Knobbe's personal experience with dietary changes led him to investigate the root causes of AMD, the leading cause of irreversible vision loss in people over 50. His research revealed a startling pattern: age-related chronic disease was extremely rare before the widespread introduction of processed vegetable oils into the food supply. Through analysis of data from 25 nations, he found that as vegetable oil consumption increased, all age-related chronic disease rates rates rose in parallel. NOTABLE QUOTE"Between 1851 and about 1930, there were no more than about 50 cases of AMD in all the world's literature. And just to put that in perspective, in 2020, it was estimated there were 196 million cases of AMD."Website: https://chrisknobbemd.com Instagram: @ancestralhealthfoundation Book: "Ancestral Diet Revolution"Send Dr. Ovadia a Text Message. In this conversation, Dr. Chris Knobbe discusses his journey from being an ophthalmologist to a public health advocate focusing on the dangers of processed foods and industrial seed oils. He highlights the relationship between the rise in use of seed oils and the increase in chronic diseases such as obesity, diabetes, and heart disease. Dr. Knobbe emphasises the need for a shift in dietary guidelines to eliminate seed oils and promote ancestral diets, arguing that the current reliance on processed foods is detrimental to public health.
Did you know that the more you wear your glasses, the stronger prescription you'll need?Contrast sensitivity loss is an eye problem doctors don't commonly check for. This condition affects the ability to differentiate between shades of grey, causing blurry vision, especially in low light. Carotenoids are antioxidants that protect the eyes against blue light, chemicals, damage from diabetes, and more. However, as we age, carotenoids decrease, so eye protection also decreases. Full-spectrum light can be helpful but will not solve the problem. To improve eyesight, you need to increase the efficiency of the retina. Sunlight is vital for eye and retina health. It allows UV and infrared light into the eye and can also help build up the eye's melatonin. You can increase carotenoids in the eye by consuming foods with lutein and zeaxanthin. Both carotenoids are found in egg yolks. If you choose supplements with lutein and zeaxanthin, look for one with at least 10 mg of lutein and 2 mg of zeaxanthin. Research has shown significant improvement in macular degeneration and contrast sensitivity loss in people who took lutein and zeaxanthin for 12 weeks. Ophthalmologist Dr. Chris Knobbe stresses the importance of removing seed oils from the diet and moving towards an ancestral diet for improved eyesight and eye health. Fatty fish like salmon contain omega-3s, which support eye health and reduce inflammation. DHA is vital for the brain and retina and is found in fish oil and cod liver oil.Vitamin D is critical for every part of the eye and can help with conditions like glaucoma, macular degeneration, and retinopathy. Take at least 10,000 IU of vitamin D every day. Vitamin A is essential, especially for night vision. Zinc can also help!DATA:https://www.sciencedirect.com/science... It's a pleasure to welcome Dr. Chris Knobbe back to the show. He is a physician, ophthalmologist, nutrition researcher, author, speaker, public health advocate, and the founder of two nonprofit organizations: Ancestral Health Foundation and Cure AMD Foundation. Since 2015, Dr. Knobbe has given scores of presentations and achieved international academic recognition for his work on the dangers of highly polyunsaturated vegetable oils. Dr. Knobbe's goals are altruistic and humanitarian; he accepts no compensation for his work in this field. In this episode, Dr. Knobbe argues that seed oils are hazardous, contributing significantly to obesity and chronic diseases. He explains that the high Omega-6 fatty acid content in these oils accumulates in our body fat and cell membranes, creating a pro-oxidative and pro-inflammatory environment. This oxidative stress, rather than inflammation, is the primary issue, leading to cellular damage, particularly in mitochondria, which disrupts energy production. Tune in as Dr. Knobbe argues that diabetes prevalence isn't primarily linked to sugar consumption, contrary to common belief. He highlights historical data showing minimal correlation between sugar intake and diabetes rates, noting that while sugar intake increased modestly, diabetes rates skyrocketed. Instead, he points to the dramatic rise in vegetable oil consumption, describing these oils as chronic metabolic poisons that cause insulin resistance by damaging mitochondria through oxidative stress. IN THIS EPISODE According to Dr. Knobbe, at the end of the American Civil War: Only about 1% of the population was obese Heart disease was almost unheard of Cancer and diabetes were exceedingly rare Alzheimer's and age-related macular degeneration were unknown In other words, chronic disease was rare in America, which is not the case today. Although animal fats, sugar, and carbohydrates often take the blame for our rising disease rates, Dr. Knobbe's new book, The Ancestral Diet Revolution, argues that the real dietary villains are the vegetable oils that have replaced traditional animal fats. Tune in to this week's podcast to uncover why seed oils might be more critical to avoid than sugar, along with these fascinating insights: What seed oils were used for before they became food Why sugar consumption (and maybe even carbs) may be less dangerous than seed oils The two mechanisms by which vegetable oils cause issues in the body What OXLAMS are and why they should concern us How vegetable oils can lead to fatigue and weight gain What to eat on a truly ancestral diet How to choose healthful animal products And so much more! Dr. Knobbe's extensive research into this subject blew me away, and I sincerely hope you enjoy this podcast as much as I did. Please join me in welcoming Dr. Chris Knobbe! Dr. Knobbe is an ophthalmologist who has been working on seed oil research for the past 13 years. His research investigates industrial seed oils and their connection to obesity, diabetes, and almost all the chronic diseases that plague us today. Sugar consumption levels did not change much between 1922 and 1987; however, obesity increased by 600%! During this time frame, vegetable oil consumption went from 78 calories per person per day to 497 calories, respectively! The average American gets around ⅓ of their calories from seed oils. In 1890, diabetes was incredibly rare, affecting around 0.0028% of the population. By 2016, 13% of the population had diabetes. How do seed oils contribute to diabetes? Simply put, seed oils drive mitochondrial dysfunction, inhibiting the body's ability to burn fuel properly. Seed oils are rich in omega-6 fatty acids that accumulate in our body fat, cell membranes, and mitochondrial membranes. These polyunsaturated fats cause oxidation and inflammation in the body. They are also nutrient deficient. When you consume nutrient-deficient foods like seed oils or sugar, your body has to pull from nutrient reserves, creating deficiencies. Cottonseed oil was the first seed oil introduced into the food supply. It was initially manufactured as machine oil and lamp oil. It was also used as fertilizer and cattle feed. The goal was to make money and outsell butter and lard, and the manufacturers were very successful. By 2010, the average American consumed 80 grams of seed oils daily. One of the easiest ways to eliminate seed oils from your diet is to stop purchasing food with a label! Focus on whole foods like meat, eggs, dairy, and produce, and avoid processed foods. Dr. Chris Knobbe joins host Doug Reynolds on the LowCarbUSA® podcast to discuss his work researching the impacts of Westernized diets and highly polyunsaturated vegetable oils on health. Dr. Knobbe, an internationally recognized expert on diet and health, will deliver a presentation titled “Omega-6 Apocalypse: Vegetable Oils, Overweight, and Chronic Disease – What's the Evidence?” at the 8th Annual San Diego Symposium for Metabolic Health held August 17-20, 2023. In this engaging interview, Dr. Knobbe talks with Doug about the seed oils and other dietary culprits behind the growing epidemic of obesity and metabolic disease. He discusses his research linking processed foods and vegetable oils to not only widespread chronic diseases such as coronary heart disease, hypertension, stroke, cancers, type 2 diabetes, metabolic syndrome, obesity, Alzheimer's disease, and autoimmune diseases, but also age-related macular degeneration (AMD), the leading cause of irreversible vision loss and blindness in people over the age of 50, globally. If you're interested in the intersection of diet and disease, or simply want to better understand the true impact of your food choices, this episode is not to be missed. Dr. Knobbe dissects the potentially catastrophic effects of modern dietary habits and offers insightful perspectives that could change the way we view our plates – and our health – forever. Dr. Knobbe discusses the deleterious effects of seed oils, particularly their contribution to chronic diseases like obesity, diabetes, coronary heart disease, and more. He argues that while refined sugars and flours are problematic, he is especially concerned with the role of seed oils in the worsening health statistics we're seeing. Doug pushes back on Chris's view that seed oils may have an even bigger role in our metabolic health crisis than even sugar and other processed carbohydrates, and a fascinating discussion ensues.
Ash enjoyed sitting down with our friend, Dr. Chris Knobbe, to discuss PUFAs (polyunsaturated fatty acids). We dive into the specific health consequences that occur when PUFAs become a high % of your diet. These fats aren't toxins, but the dose makes the poison. We discuss why you should not try to increase your Omega 6 or Omega 3 consumption - prioritize saturated fats! Chris Knobbe, MD, is a physician, researcher, ophthalmologist, public health advocate, and Associate Clinical Professor Emeritus, formerly of the University of Texas Southwestern Medical Center in Dallas, Texas. Dr. Knobbe's research has focused greatly on the “vegetable oil hypothesis” as the primary driver of overweight and chronic disease. In 2016, Knobbe formally introduced the hypothesis that processed foods and vegetable oils are the primary drivers of AMD, which is the leading cause of irreversible vision loss and blindness in people over the age of 50, worldwide. Vegetable oils (A.K.A seed oils) are pro-oxidative, pro-inflammatory, toxic, and nutrient-deficient. And they are virtually everywhere--used for cooking meals in restaurants, in our processed foods, condiments, and more. These oils create mitochondrial dysfunction that inevitably leads to different health conditions, including obesity, coronary heart disease, cancers, type 2 diabetes, dementia, Alzheimer's, age-related macular degeneration, autoimmune conditions, and more. Dr. Chris Knobbe, author of "The Ancestral Diet Revolution," sounds the alarm that seed oils are the primary driver of these health issues. He points to countless studies and data that make this case. And he also offers solutions, pointing out what foods to avoid (like pork and chicken from Concentrated Animal Feeding Operations, for example, and certain nuts and seeds) and other strategies to help reduce omega-6 fatty acids in the body and restore our health. [03:51] How does consuming vegetable oil affect your risk of developing a chronic illness? · People with arthritis are discovering the profound impact of dietary changes, particularly the Paleo Diet, on alleviating symptoms. This led to a deeper exploration of nutrition and chronic diseases. The exploration of correlations between vegetable oil consumption, high omega-6 diets, and the prevalence of chronic diseases such as heart disease, diabetes, cancer, Alzheimer's, and macular degeneration. · The four pillars of hazard include pro-oxidative and pro-inflammatory effects, direct toxicity to cells, accumulation in the body and mitochondrial membranes, and nutrient deficiency. Understanding these hazards helps explain the detrimental impact of vegetable oils on overall health. · High omega-6 fatty acids, particularly linoleic acid found in vegetable oils, accumulate in our body fat, cellular membranes, and mitochondrial membranes. This accumulation sets the stage for a biological milieu that is pro-oxidative, pro-inflammatory, directly toxic to cells, and nutrient deficient. · Vegetable oils can be regarded as chronic metabolic, biological poisons rather than acute poisons. While consuming a large quantity of vegetable oil in a single day may not cause immediate harm, the gradual and consistent consumption of these oils over time leads to various diseases due to their chronic toxic effects on the body. · Genetic susceptibility plays a role in determining the diseases individuals may be prone to when consuming a diet high in vegetable oils. However, it is primarily the dietary environment, accounting for approximately 99% of the risk, that triggers the manifestation of these diseases. Dr. Knobbe's new book The Ancestral Diet Revolution on Amazon: https://amzn.to/3Wy4AY8 [22:50] What are the challenges of controlling a diet for an extended period? · Controlling a diet for an extended period is costly and logistically challenging, requiring a metabolic ward and strict monitoring. This restricts the number of participants and the duration of the study, limiting the ability to test hypotheses adequately. · While animal studies have explored the effects of omega-6 fatty acids, there is a need for more human trials investigating their impact over an extended period. · Despite the absence of randomized controlled clinical trials, data from decades provide meaningful evidence. · Trends in obesity rates and the prevalence of conditions like heart disease, Alzheimer's, and macular degeneration indicate a strong correlation with dietary factors, even if direct causal links are challenging to establish without long-term trials. [32:27] The Detrimental Effects of Excessive Omega-6 Linoleic Acid Consumption · High levels of Omega-6 fatty acids in body fat contribute to a pro-oxidative, pro-inflammatory, nutrient-deficient environment, which sets the stage for conditions like heart disease, cancer, diabetes, and metabolic disorders. · The accumulation of these fats creates an environment conducive to chronic diseases. · Vegetable oils, rich in Omega-6 linoleic acid, have numerous parallels with toxic substances like arsenic. Both are pro-oxidative, leading to oxidation within the body, a primary driver of chronic diseases. · The oxidation of Omega-6 and Omega-3 fatty acids produces harmful byproducts, such as advanced lipid oxidation end products (ALEs), which are cytotoxic, genotoxic, mutagenic, carcinogenic, atherogenic, thrombogenic, obesogenic, and diabetogenic. · High doses of vegetable oils can expose individuals to these harmful compounds, surpassing the levels found in cigarette smoke, making vegetable oil consumption more detrimental than smoking. [45:05] Understanding Omega-6 Linoleic Acid: Importance, Optimal Levels, and Health Implications · Omega-6 linoleic acid is crucial for our survival and overall health. Early research in the 1930s demonstrated that animals require linoleic acid in their diet to prevent various health issues, such as skin and dental deterioration. · Maintaining appropriate levels of Omega-6 linoleic acid is crucial for preventing diseases like cancer, heart disease, and metabolic disorders. · Vegetable oils, abundant in Omega-6 linoleic acid, are a significant component of processed foods. Despite the consensus that processed foods contribute to poor health, the focus often overlooks the primary culprit—vegetable oils. · These oils are unnaturally abundant in processed foods and can have detrimental effects when consumed in high amounts, making them a significant factor in developing various health issues. [52:28] Ancestral Diets and Body Fat Analysis · Following an ancestral diet low in vegetable oils for an extended period can significantly reduce Omega-6 linoleic acid levels in body fat. The half-life of linoleic acid in body fat is approximately two years, meaning it takes time to decrease and reverse its accumulation. · Eliminating vegetable oils from the diet can immediately improve inflammatory factors, reducing the risk of heart attack, stroke, and inflammation-related issues. · Adopting an ancestral diet low in Omega-6 linoleic acid, which involves eliminating highly polyunsaturated vegetable oils and consuming animals not fed corn and soy (like chicken and pork), can lead to a significant reduction in linoleic acid levels in body fat over three years. Eye physician and surgeon, Chris A. Knobbe, MD, had been in practice nearly 20 years when, in 2013, he asked himself the question, “Could macular degeneration be a ‘Westernized disease'? Could AMD be a disease that is the result of a Westernized diet?” That question would forever change his life. Dr. Knobbe began his practice of ophthalmology in 1994, after completing his residency training at the University of Colorado Health Sciences Center, in Denver, Colorado, USA. He was certified by the American Board of Ophthalmology in 1997 and has remained board-certified since then. You can find Chris on https://www.cureamd.org/. ORN Dr. Lisa Wiedeman show notes 8/30/22 Are vegetables not good for us to eat? Why can't the body get used to eating things like wheat or corn? They're not species specific and require processing. Meat doesn't need processing, The elite eat meat. The masses eat mush, grains and vegetables which don't make you strong. If viewing the diet as a pyramid, the bottom part should be meat, the top part fat and eggs. Kellogg's cereal– the intention was to make people infertile. Our bodies are geared to health and survival. Removing toxins allows our bodies to heal. Probiotics target the digestive tract, which is where nutrition comes into our body. Undigestable parts of plants like fiber are abrasive. See Fiber Menace by Konstantin Monastyrsky. It's not that you can't have a food, it's that you are choosing to not have it. Meat, fat and eggs are so usable to the body that there is not that much waste. Do a trial of at least 90 days on carnivore. Will see improvements continue for months onward. Dr. Wiedeman does one-on-one and group coaching for clients around the world. HbA1c should be under 5.2. Even vegetables like broccoli have carbohydrate in them. Anything over 5.2, you're on the diabetes spectrum. Morning glucose should be between 72-84. Fat is important. Don't want to be eating skinless boneless chicken breasts. If it was once alive, it's okay to eat. Want fat:protein ratio skewed to the fat side - 80:20. Regular grocery store meat is good enough. Ribeye is one of the fattiest cuts of beef. She adds butter or fat cracklings to it. Search on CarnivoreDoctor for her video on brown butter. She doesn't eat organs. Doesn't find them palatable. She uses Pluck as a seasoning, which contains powdered organs. Listener has CSR- central serous chorioretinopathy - a bubble of fluid on her retina. Dr. Wiedeman says meat is not a cause of it, but removing all but fatty meat and eggs will remove inflammatory or degenerative agents. Glaucoma, dry eye, myopia, macular degeneration – all improve. Dr. Chris Knobbe says its dietary related. AMD Cure Foundation. Seed oil, canola oil, palm, cottonseed oils are all toxic to the body. Don't eat anything from a box, bag, bottle or jar with a bar code. These oils take 8 years to clear out of your body. Want fatty pork belly. She salts it, drys it in frig, cooks it in an air fryer, makes food sizzly and crackly. See her “Bacon Knot” video. It's a good snack. Want chewy, fatty, not overcooked bacon. Olive oil, avocado oil – what are you putting them on? Not eating salads anymore. 80% of olive oils contaminated with other oils. Doesn't meat have bacteria in it if not cooked properly? How much to cook it depends on your comfort level. She believes in seared rare meat. Listener who is trying carnivore has cravings for potatoes, pasta, bread. Recognize that this is an addiction requiring abstinence. Don't have fruit, stevia, monk fruit, anything sweet – don't feed the drug. She hosts Meata gatherings as she travels around the country. See her YouTube channel. The Keto movement has gone astray. It's very low carb, high fat, but commercial keto products feed the addiction. Don't eat grains. If on metformin or drugs, will need to deprescribe. Monitor with your doctor. How much to drink? Drink when thirsty. Eggs are good. Yolk has most of the benefits. Any research on blood type with carnivore? Think - were there ancestral humans that did not eat meat? What about grains that are soaked, sprouted, dehydrated? Maybe for times when animals were scarce and people needed to make do. We have the ability as omnivores to eat nonmeat. Is it optimal and necessary? No.

He runs a not-for-profit organisation called CureAMD.Over the last few years, Dr Knobbe has extensively researched the effects of vegetable oils on our health. I am sure all the listeners will learn a lot from this podcast. I highly recommend sharing this with your GP. This is the kind of information we need more widely understood in the community. We have also included a link to Dr Knobbe's book Ancestral Dietary Strategy to Prevent and Treat Macular Degeneration on our website. I thank Dr Knobbe for taking the time to talk with me. Dr Knobbe begins with his personal health journey and explains how this led to his Omega-6 research. He discusses the following:- What prompted him to learn about nutrition, Western A Price and becoming an advocate of ancestral eating- The cause of our health crisis and what drives our increasing chronic disease- How he came to investigate macular degeneration- Becoming an advocate for preventing macular degeneration- Starting a non-profit foundation, writing a book and going pubic- Developing an interest in seed oils since 2016 and going public with the information- Hi goal is to reach people with a healthy lifesaving disease prevention message- CureAMD Foundation Links: Website: https://www.cureamd.orgLink to book and YouTube video can be found on our website resources page: https://www.susanbirch.co.nz/resources/Biography: Chris A. Stephanie Seneff is a senior research scientist at MIT, where she has had continuous affiliation for more than five decades. After receiving four degrees from MIT (B.S.. in Biophysics, M.S., E.E., and Ph.D. in Electrical Engineering and Computer Science), she has conducted research in packet-switched networks, computational modeling of the human auditory system, natural language processing, spoken dialogue systems, and second language learning. Currently a Senior Research Scientist (MIT's highest research rank) at the Computer Science and Artificial Intelligence Laboratory, she has supervised 21 Master's and 14 Ph.D. students. For over a decade, since 2008, she has directed her attention towards the role of nutrition and environmental toxicants on human disease, with a special emphasis on the herbicide glyphosate and the mineral sulfur.Glyphosate is a tricky word that doesn't exactly roll off the tongue. It's not a common point of conversation that people have heard about. But everyone has heard of Roundup. Drive across the United States and you'll see vast fields with crop labels that say “Roundup Ready.” Glyphosate is the active ingredient in the pervasive herbicide Roundup. Monsanto, its original manufacturer, claims it is a wonder chemical for agriculture that effectively kills essentially all plants, while leaving humans and other animals unscathed. But Monsanto's argument is fatally flawed.
