I wanted to write an episode for a while now, but the more I looked for information about his life and works the more unanswered questions I have had! Admittedly, countless classicists, historians and food writers have been puzzled through the ages too, with the same burning questions.Imagine the worst foodie hipster (I zest here, I am one!) friend you have; The one that visits the local farmers market every weekend, goes to Borough Market as if on a religious pilgrimage at least once a month and also on top of that knows every single Vietnamese store in Hackney or the South-American food stall in Seven Sisters Indoor market. He also seem to know the food trends, the new ingredients and read the reviews on Eater for the cheapest eats at the outskirts of South-East London for some reason! (as if he or she will ever visit south east!)Well your friend doesn't compare to Archestratus little finger! If you thought your friend was bad for visiting the mercado de san martin in San Sebastian, mercado San Miguel in Madrid and La Boqueria market in Barcelona, mercato delle embre in Bologna, Grand Bazaar in Istanbul or Varvakios Market in Athens spending hours looking at fish that cannot buy...you know the friend who watched all the episodes of Anthony Bourdain's "Parts Unknown" and can quote all his lines...Well, our dude Archestratus, was a lot worst!New tastes, the freshest ingredients, so local and seasonal and simple, that even the inhabitants of the nearest town wouldn't have heard them, well he would have been there first, straight to the local fishermen begging them for a fish. Well this is Archestratus! The tourist who went to every food market on every city he visited; only he accomplished your feat 2500 years ago and all by sail!In the interconnected world of the ancient Mediteranean we then find Archestratus, a Sicilian who circumnavigated the world to satisfy his hunger - and even lower appetites, as a Roman scholar said once quite disparagingly. He was though an inveterate traveller. How else could he have found out about the specialities of all these places, small seaside cities over 50 of them from Sicily to the Black Sea? Remarkably what he writes rings true, as sometimes their specialities are exactly the same now as they were 2400 years ago. Archestratus loved the taste of Lesbian wine but also praised the aroma of the Phoenician wine that came from Byblos. (Although he though it to go off quickly)"When a libation to the gods you make, Let your wine worthy be, and ripe and old; Whose hoary locks droop o'er his purple lake, Such as in Lesbos' sea-girt isle is sold. Phœnicia doth a generous liquor bear, But still the Lesbian I would rather quaff; For though through age the former rich appear, You'll find its fragrance will with use go off." We know almost nothing about him, apart that he was a Sicilian Greek from Gela (or Syracuse) and that he wrote a now lost, remarkable and unique poem "The Life of Luxury" (Hydipatheia). The poem is dated variously around 350BCE.What we know of the poem, is mostly from Athenaus from his work "Deipnosophistai" -Philosophers at Dinner- which was composed in about AD200. This, is our only source for Archestratus work, which is telling. Lost works of ancient literature - poetry, drama etc- are usually reference by multiple ancient authors; however this lack of interest demonstrates the status of food and recipe books. Not high literature and therefore not carefully preserved for posterity.What would I give for the chance to glance upon the book on bread-making by Chrysippus of Tyana or the book on salt fish by Euthydemus of Athens! Sadly both are lost completely and only know of their existence through second -hand passing accounts from other authors! Lost masterpieces!Archestratus cooks the fish simply, boiling roasting or grilling with light seasoning and oil added if its quality fish. Freshness and quality are his watchwords and these features mustn't be damaged by strong sauces based on cheese and pungent herbs. His favourite fish tend to have firm-textured and strongly flavoured meat; rather than mild tasting flesh like the white fish we are now used in French cooking as the vehicle for sauces. He also shows much interest in eels; common, conger, mooray. He emphasizes flavour and the oil/fat of the fish, where the taste and interest is to be found. There is much interest in texture of the fish, the different cuts and parts, from head meat, fin, tail, belly as well as in the varieties of fish.OK I will stop now and let the audio do the talking! Our guest is Patrick Mellor: biological scientist, philosopher, geological climatologist (we may have invented this title), researcher, journalist and poet. Needless to say, we had a blast chatting with him. This conversation feels like it lasted for days with all the ground we covered, but we had to cut it down to just the best nuggets. We discuss Earth before life, the wild changes the planet has endured, and how the planet has evolved over time because of life. The impact has been profound, and continues to be today as humanity faces one of its greatest challenges with anthropogenic climate change. Patrick brings a perspective to our study of Earth and its climate that's truly hard to come by. We share a concern for the current situation, but Patrick also shares a perspective of true beauty with us, and one that has stuck with us since the episode. Life on Earth has caused mass extinctions before, but NEVER before has that life been so aware of what is going on and so able to affect positive change. The Holiday season is cranking. Today, I’m going to be speaking to you about the COLOR of your Poop. That’s right….the COLOR of your Poop. It’s important to know about what the color of your Poop means. We all are familiar with the shades of Brown Poop. The oh-so-familiar brown poop. Brown Poop is NORMAL! But…….what about the other colors Poop can be? Let’s take a look at some other colors your Poop may be. Yellow If you see that your Poop has some shades of Yellow, you may have eaten a meal that was extremely high in fat. Yellow Poop could also mean your intestine is not absorbing nutrients properly. You could also have Celiac Disease or another Digestive issue. Call your Doctor if you see Yellow Poop more than one time. White, Pale or Clay colored Poop Your Bile Duct could be blocked or you may not be producing enough Bile. If you see White Mucos on top of the Brown colored stool, this could be normal or …….. it could also be a sign of a Crohn’s Disease Flare-Up. Crohn’s Disease can cause ulcers in your intestine, which causes an over production of mucus. The mucus may be present in your stool. If you see Mucus in your stool every once in awhile, that could be normal. But……if you see Mucus in your stool more than once in a while, you should contact your Doctor. If you have whitish, bland looking Poop…….Combined with Abdominal Pain, Fever with or without vomiting…..You should seek medical attention right away! That could be a sign of Appendicittis….or some other type of serious digestive issue. Green A little Green color in your Poop……is just fine. If you see very Green Poop…you may have eaten lots of Green Vegetables……OR……you could be passing your stool too quickly through your intestine, which means the Bile is unable to break down the fats properly. Certain Infections …..like those caused by the Bacterium – Salmonella or the parasite “Giardia,” can cause your stool to be green in color. If you haven't eaten anyting "Green" and you see Green Poop, Contact your Doctor. Black If you have taken “Iron” tablets…..or……you have taken “Pepto Bismol,” you’ll likely see “Black” colored Poop…..which is a harmless side effect. If there was a time you were having an emotional overload and you gave in and ate a bag of Oreo’s……you may possibly see Black colored Poop. So……if you ate Dark Brown or Black Colored foods…..you may see Black Poop. But……if your Poop is Black, which has a more liquidy and “Tarry” looking Stool consistency.... and has a strong smell……This is a sign of bleeding in your gastrointestinal system and you should call your Doctor ASAP. Red If you had Beets with Dinner or you drank a glass of Tomato Juice last night, you may see the color “Red” in your Poop. If you see Redish colored Poop and you DID NOT eat Red colored food or drinks, you could be Bleeding! You could have Hemorrhoids, colon polyps or Anal Fissures. Anal Fissures are small tears in the lining of your Anus, which are caused by straining during a bowel movement. You are literally trying to pass a large, hard stool and it may cause tearing of the lining. If you have large amounts of blood in your stool or you see a large amount of blood in the toilet, you may require immediate Medical attention. Contact your Doctor. Eating foods with colored “Dye” may cause your Poop to have that color in it. Be aware of what you have eaten and start noticing the color of your Poop! Hey Weight Loss Nation! Weight Loss Nation It's 5 Minute Snack Day! Boy.....Do I have an AWESOME Snack for you today! I made Chipotle Sweet Potato Wedges with Lime, and they are Fantastic! It's Football Season, and ........it's getting close to the Post Season for Baseball. That means, I'll be socializing more on the weekends and....it means.....being surrounded by "Trigger" Foods. I LOVE Burgers and Fries. Since I've been Living a Healthier LIfestyle, French Fries are not something I normally eat. As a matter of fact, I do not ever have fries out. I do eat Burgers, but they have to be Grass-Fed, Organic Beef Burgers. There is nothing wrong with eating Grass-Fed Burgers Nation! So.....how did I come up with a solution for eating Burgers & Fries together? I decided to find a "Fries" recipe that uses "Sweet Potatoes," instead of "White" Potatoes, and I wanted to Bake them instead of frying them. Voila! I am thrilled to present to you ....... Chipotle Sweet Potato Wedges with Lime! An awesome, healthier snack that satisfies your cravings for fries. Here's what you need: Ingredients 4 Medium sized Sweet Potatoes Olive Oil 1/4 Cup of unsalted Butter (REAL Butter) 1 teaspoon of Chipotle powder 1/2 Cup of Raw, Unfiltered Honey 1/3 Cup of Fresh Squeezed Lime Juice 1 teaspoon of "Sea Salt" (Any Color) How to Make it 1. Preheat the oven to 450 degrees. 2. Peel the Sweet Potatoes 3. Cut the Sweet Potatoes "lengthwise" into about 8 Wedges per potato. 4. Brush your pan or baking sheet with Olive Oil. 5. Put the potato wedges in a large bowl. 6. Melt the butter in a saucepan over low to medium heat. 7. Whisk in the chipotle powder, honey, lime juice and sea salt. 8. Stir "A LOT." 9. Bring to a "Simmer,"about 3 minutes. 10. Pour the mixture over the potatoes in the bowl. 11. Mix well to ensure all potatoes are covered. 12. Place wedges on the baking sheet. Single layer. Don't overlap or touch the other wedges. 13. Bake for about 30 minutes. 14. After 15 minutes, turn the sweet potatoes over. 15. Around the 30 minute mark, check to make sure the potatoes are soft and lightly browned. If not, Keep them in till they are. 16. Take potato wedges out of oven and serve immediately. This goes great with nothing other than a Grass-Fed Beef or Bison Burger! Eat the Burger plain, or on Dave's Killer Bread or Elzekiel Bread. Use Sugar-Free Ketchup and a hard cheese like cheddar. Hey Weight Loss Nation! www.TheWeightLossNation.com It's Tuesday......and that means it's a Tampa Bay Tuesday! Today.....I'm doing a restaurant review! I visited the Bamboozle Cafe. in downtown Tampa. I was with my friend Jason Hewitt, who hosts The History of Branding Podcast. We had been out all day taking pictures and I was STARVING! Luckily, Jason says to me....."Hey.....are you hungry?" I quickly reply, "I'm starving!" Then Jason says, "What do you feel like?" I tell him...."I don't care, as long as it's healthy." So Jason says....."Let's have Pho." I'm like....."What the hell is Pho?" It's Vietnamese soup." I'm like is it healthy?" Yes! I'm like....ok...let's go. We head over to the Bamboozle Cafe which is located at 516 N. Tampa Avenue, Tampa, FL. It was a beautiful day in Florida, so we ate outside at a cafe table. Our waitress, her name is "Bee" just like a Bumble Bee, comes out and hands us a menu. I look inside the menu and I have no idea what the hell any of the dishes on the menu is. I see chicken, pork and beef on the menu, but the other ingredients..I have no idea. Our waitress Bee comes out and Jason tells Bee this is the 1st time I've ever been to a Vietnamese restaurant and what would she reccommend that I have to eat? Without hesitation....Bee says...."Definitely the Pho Bo with Oxtail." I'm like what is Pho Bo? Bee tells me it's a Vietnamese Beef Broth Soup with long, rice noodles, spices, bean sprouts, chilis and jaleopena peppers. I'm like...."ok....I'll go for it." The Pho Bo was actually very good! Hard to describe! It has an Earthy, savory, sweet at the same time kind of taste. Can't put my finger on it. The Pho Bo was fresh, the basil was on a sprig and the noodles were just made that afternoon. The Pho Bo was very, very healthy! Very good! I have to give Bamboozle Cafe a BIG 2 Weight Loss Nation Thumb's Up! Great job Bamboozle Cafe! I am going to go back and order an entree and interview the owner for a future podcast.
