This week on Three Kitchens Podcast, Heather makes vanilla extract at home. All you need is vodka, vanilla beans and patience while you wait for it to be ready. If you're like us, and tend to be generous with vanilla in your recipes, you might like to make your own vanilla too. As you use your extract, add a little more vodka to keep it going for a few months. You'll save money on this expensive ingredient by making it yourself. Heather also tried a quick Instant Pot method for making vanilla in under and hour. It's not her preferred method and she'll tell you why. But if you need vanilla today, it just might work out for you. We also get a little history lesson on vanilla courtesy of Heather's son, who sums up a Food Theory episode all about vanilla. Find the link to that below. Heather then uses her homemade vanilla extract to bake mini vanilla scones with a vanilla bean glaze. They're a delicious, sweet treat and a great way to showcase your homemade vanilla. Include them on a dessert spread or brunch table, or maybe for afternoon tea. They're easy to make and this is a great basic scone recipe - flavour them however you like (white chocolate raspberry are favourites around here). Well, the Georgia Senate Runoffs are over, and the democrats won. And so, just as the movie Independence Day predicted, the unstoppable team-up of a cool black guy and the geeky Jewish guy has once again saved the day, and America. In democracy news, a leaked audio tape shows Trump acting like a mob boss, pressuring the Georgia Sec of State to "find votes" and "recalculate" the election results in his favor. I guess Georgia can now change their nickname to the "Im-PEACH" State. Did you guys catch this? Trump was so ashamed of his election loss that he ditched his own New Years party, leaving guests who paid thousands of dollars a ticket to party maskless with Rudy Giuliani and Vanilla Ice. In their defense, for people who love Trump, that probably sounds like a great time. I mean, with all that coronavirus in the air, Vanilla could literally play that funky music til they died. Apparently Vanilla liked Rudy's dripping hair dye so much, they're forming a new duo act called "Vanilla Extract". In case you missed it, the day after Congress failed to pass $2,000 stimulus checks, the homes of both Mitch McConnell and Nancy Pelosi were vandalized. From what I've heard, they struck a surprise truce and got together to clean each other's doorways, in what's being called the year's most unlikely romance. In festival-of-lights news, Massachusetts Republican Tom Mountain tested positive for Coronavirus after attending a maskless White House Hanukkah party, and says he's now "paying the price". Looks like that "price" is the cough that lasts 8 nights. Here's something pathetic. Congressman Louie Gohmert tried to file an election lawsuit but his lawyers said they had trouble with Microsoft Word and "incompatible software versions". Uh, I think you've got a bigger problem, Louie-- your entire case is incompatible with reality. I just find it hard to believe these lawyers were stumped by copy-paste when their entire lawsuit seems to be plagiarized from "Mein Kampf." Finally, a Michael Cohen interview is sparking questions after he made new friends in prison named "Tony Meatballs and Big Minty". When Trump heard about it he immediately pardoned them so they can be his science advisors.

We will be reviewing Aged Eggnog Recipe: Whisk together 12 Egg Yolks & 1 Cup of Sugar until ribbony. Then mix in 1 pint each of Heavy Cream, Half & Half, and Milk. Follow up by adding 1 Cup each of Cognac, Rum, and Bourbon. Finish off the batch with 1 tsp Vanilla Extract and 1 tsp grated nutmeg. Move to an airtight container and refrigerate. Did you know that vanilla extract only has two ingredients? You heard right, two parts, vodka, and vanilla beans. My sister in law told me how to make the recipe years ago, and I couldn't believe how easy it was. There I was traipsing into the liquor store trying to find an 8 oz. glass bottle of vodka. The salesclerk immediately saw I was not in my element or a usual customer, and politely asked if I needed any help. I must have had the OMG look on my face-scanning all of the shelves. "Yes," I responded. "I'm looking for a smaller bottle of vodka, preferably in glass that is at least 80 proof.""Oh, I bet you're having a party.""Um, actually, I just want to make some vanilla." The young clerk stared at me and didn't speak for a moment."What do you mean vanilla?""You know, vanilla extract like you use to bake with?""I didn't know you used vodka."I proceeded to explain how you make it, and the clerk seemed extremely excited."I'm going to try it!""You should, oh, and it's great to give away as a gift for the holidays."Her mouth dropped open, and I'm not sure if it was the fact she gets a discount, so she was thrilled with the idea of a cheap gift or the fact she could give lots of alcohol away. I never did ask. As I like to think the best of people, I'm sure she was thinking about what a unique and brilliant idea:). We visited a little more, but to finish my story, with her help, I ended up finding what I wanted — a 375 ml glass bottle of Absolut Vodka 80 proof. To be honest, you don't need to buy expensive vodka as the vanilla bean is what gives the exact flavor. Speaking of taste, avoid flavored vodka. Extracts are made with alcohol because it's the best way to exact flavors out of food. Why make Vanilla Exact at home? Well, for the same reasons we make everything else at home; To keep synthetics, artificial flavors, and colorings out of your food. The taste is unbeatable when you use pure ingredients.And last, your cost goes way down as you can reuse your vanilla beans. What is the ratio of beans to vodka? A great question. The ratio all depends on your taste and what you're using the vanilla in. If you plan to use it in a lot of desserts, then I would opt for a stronger flavor; 5-6 vanilla beans per 8 oz. of vodka. For everyday baking at home, I think the flavor of 2-4 beans per 8 oz. of vodka is perfect. Again, it all depends on your taste. What is the best type of vanilla bean? Madagascar - rich and creamy.Indonesian - well balanced and mild.Indian - full, chocolate How long do I brew the mixture before using it? You can leave your bottle with your beans sitting for as little as 12 weeks; this is the minimum time I would allow. Although, to enhance your flavor or darken your extract, leave for six months or up to a year. Think of it like a fine wine that will only get better with age. Recipe For Homemade Vanilla Extract This recipe is straightforward. Take your preferred bottle of vodka and open the lid.Next, you can pour the contents into a pretty jar using a funnel and then label it, or use the vodka jar and mark the date on the lid with a marker.Take your desired number of vanilla beans and slice them down one side.Place them in your jar.Store in a dark, cool location until they have brewed to your desired amount of time. The flavor will improve with time. A Special Note: Brew several batches at one time, so you never run out. If you're planning on giving the extract away as a gift, start early or let the person know their present needs to brew for a few months. You are now a vanilla expert! The One Cookie Recipe: 1 cup of brown sugar (Or white sugar & 4 tablespoons of molasses) 1 stick of butter 1 tsp of salt 1 tsp baking soda 1 tsp baking powder 1 tbsp of vanilla bourbon (or vanilla extract) Blend until a creamy whipped consistency. Then add 1-1 1/2 cups of flour followed by 1 cup of semi-sweet chocolate chips Add walnuts if desired. Bake at 375 for 8 minutes Creamy Potato Bisque: 1 large sweet onion 4 cloves of garlic 2 quarts of vegetable stock 8 medium sized red potatoes 3 cups of arugala 2 tbsp butter Sea salt to taste (2 tsps?) Creme Fraiche In a large stock pot, sauté chopped onions on low in butter until clear or caramelized. Add vegetable stock and salt, bring to boil. Quarter potatoes and add them to the stock. Reduce heat to simmer. Cook potatoes for 20-25 minutes until soft. Turn off heat. Add chopped garlic and 3 cups of arugula. Blend with an immersion blender until smooth and creamy. This week, I am rounding out the recovery series with one final episode. I have been so blessed to have nine amazing conversations with women in recovery. You can catch up on all of the episodes here. In this episode, I read two blog posts I wrote on the 2nd and 3rd anniversaries of my sobriety. Plus, I include some new insights along the way. From my 2 year sober anniversary on September 27th, 2013. I want to start this post by telling a story that is really hard for me to tell– and I tell it in hopes that it helps someone else. In May of 2011 I made my first attempt at sobriety. I made until September 26th of that year. I was active in my recovery, but in hindsight, a few things happened that were slowly chipping away at me. I kept hearing the voice that “I wasn’t that bad”…that I wasn’t like “those people”. Those alcoholics that told their stories, that had been arrested, had DUI’s, etc. The voice whispered that since that wasn’t me, surely I could moderate and drink like a normal person. On September 26th, 2011 I got into an argument with my husband. We don’t argue often, so when we do, I can tend to slip quickly into this-is-it-it’s-over-he’s-going-to-leave-me land. It’s one of those really vulnerable places for me where I feel I’ve lost control over a situation– a situation that is very important to me. In that late afternoon, he left the house to go for a drive. I sat at home alone and desperately wanted to drink. I called a friend in recovery. She talked me through it. I sat again alone in my glass case of emotions. I didn’t want to drink because I didn’t want to break my sobriety and have to start over. Plus the shame of relapse was too much to bear. But, I remembered hearing that if you drank enough NyQuil, you could get a buzz. And since it’s not technically “drinking”, it’s like a loophole, right? 10 seconds later I was in the bathroom chugging a bottle of cherry NyQuil. A few minutes later the buzz hadn’t reached me yet. I then remembered hearing that Vanilla Extract could do the same thing. I went to the pantry and took a drink of putrid tasting Vanilla Extract. I looked closely at the bottle to see that not only had murky sediment gathered all along the bottom, but it had expired in 2005. And to think I was trying to convince myself that I wasn’t an alcoholic. As I type this, I’m embarrassed to admit this. But, now I understand just how cunning, baffling, and powerful alcohol is to an alcoholic. I didn’t think clearly and rationally at that time. I remember thinking, “Okay, I’m an educated person. I’ve done YEARS of my own personal development. I’m in the helping profession for pete’s sake”. And the reality is that none of that matters at all if you are truly an alcoholic. You don’t get extra credit for that. I don’t care how smart you are. We can’t think our way out of it. I truly believe I needed that short relapse to prove to myself that I truly am an alcoholic. If the whisper ever comes back that I’m not that bad and maybe not a “real” alcoholic, I think back to my Vanilla haze (as my friend Courtney so lovingly puts it) and I’m back to reality. And if I’m being really honest, I don’t want to drink like a normal person. I don’t want just one glass of wine. I want at least three. In a big ass glass. And if there’s white and red, I just can’t decide, so I’ll have a few of each. This is insanity. I tell my story not for the pats on the back or congratulations, but to show others that even people like me are alcoholics and that there is hope in recovery. I tried to quit by myself back in 2011. I strung together 6 miserable days. It wasn’t until I reached out for help and started a recovery program was I able to not just stop drinking, but stop obsessing on alcohol and being able to feel my feelings without resorting to drinking.

Pour eggnog into a heatproof bowl. Sprinkle unflavored gelatin over the eggnog and let sit for a minute. Stir until gelatin is dissolved; allow to cool. Add rum, coconut milk, vanilla extract, and cinnamon; stir until well combined. Pour the mix into shot glasses and refrigerate until firm.

All that plus Ento News and Events from around the globe, and another exciting episode of “As the Crickets Chirp”. … Maple Mealworm Energy Balls (makes 16 energy balls) 2 TBSP Butter ½ cup Mealworms (thawed) 2 TBSP Maple Syrup 1 cup Quick Oats 2 tsp Chia Seeds 2 TBSP Psyllium Husks ¼ cup GrioPro Cricket Powder ½ tsp Cinnamon ¼ tsp Sal de Gusano or Himalayan Pink Sea Salt ⅓ cup Chocolate Chips ¼ cup Sunflower Seeds ½ cup Medjool Dates ½ cup Nut Butter ¼ cup Honey 1 tsp Vanilla Extract Melt Butter in a skillet over medium-high heat then add Mealworms and saute about 5 minutes. Mix in Maple Syrup and saute 1 minute more. Remove from heat onto a plate and set aside. In a medium-sized mixing bowl, stir together the Oats, Chia Seeds, Psyllium Husks, Cricket Powder, Cinnamon and Salt. Add Chocolate Chips, Sunflower Seeds and Medjool Dates. Stir again making sure to separate the date pieces. Add the Nut Butter, Honey and Vanilla Extract. Stir the ingredients together until well combined. Once combined, roll into bite-sized balls using your hands. Lightly press caramelized Mealworms on top of the energy balls. Place the balls on a parchment-lined baking sheet or dinner plate. Place the baking sheet/plate into the freezer for about 20 minutes until the balls are firm. Remove from freezer and store in an airtight container in the fridge until ready to eat.

It's Memorial Day and, for many, that means it's the kickoff to summer: beach, pools, barbecues, and heaping helping of Vitamin D. In this episode, I discuss how to make your own homemade sunscreen and highlight brands that actually work, without all of the bad stuff. The problem with commercial sunscreens is that they often contains toxic ingredients and endocrine-disrupting chemicals that, in many cases, can actually promote skin cancer growth and free radical production in the body. In fact, in the years since sunscreen use began, skin cancer rates have actually increased. Homemade Sunscreen Many of the ingredients in this recipe have a natural SPF (sun protection factor). This is a natural recipe and has not been tested by a regulatory organization for exact SPF. For this reason, I can't (and don't) make any claims or even guesses as to the combined SPF. Ingredients: ½ cup almond or olive oil (can infuse with herbs first if desired) ¼ cup coconut oil (natural SPF 4) ¼ cup beeswax 2 Tablespoons Zinc Oxide (This is a non-nano version that won't be absorbed into the skin. Be careful not to inhale the powder). Up to 1 teaspoon Red Raspberry Seed Oil – optional Up to 1 teaspoon Carrot Seed Oil – optional 2 tablespoons Shea Butter (natural SPF 4-5) - optional Optional: Essential Oils, Vanilla Extract or other natural extracts to suit your preference (Do not use citrus essential oils as they increase sun sensitivity) Instructions: Combine ingredients except zinc oxide in a pint sized or larger glass jar. I have a mason jar that I keep just for making lotions and lotion bars, or you can even reuse a glass jar from pickles, olives, or other foods. Fill a medium saucepan with a couple inches of water and place over medium heat. Put a lid on the jar loosely and place in the pan with the water. As the water heats, the ingredients in the jar will start to melt. Shake or stir occasionally to incorporate. When all ingredients are completely melted, add the zinc oxide, stir in well and pour into whatever jar or tin you will use for storage. Small mason jars (pint size) are great for this. It will not pump well in a lotion pump! Stir a few times as it cools to make sure zinc oxide is incorporated. Store at room temperature. Additional Notes: This sunscreen is not waterproof and will need to be reapplied after sweating or swimming. Make sure not to inhale the Zinc Oxide– use a mask if necessary! Add more beeswax to make thicker sunscreen, less to make smooth sunscreen I recommend coconut or vanilla extract or lavender essential oils for fragrance Store in a cool, dry place or in the fridge I prefer to store in a small canning jar and apply like a body butter. It will be thicker, especially if you use coconut oil in the recipe. Remove the Zinc Oxide and this makes an excellent lotion recipe! I've also gotten some questions about pre-made sunscreen options for those who don't have the time or desire to make a homemade version of their own. Recipe: Yogurt Cake (gâteau au yaourt)--Great for younger children Summary: adapted from Bringing Up Bébé Ingredients 2 (6oz) containers of plain yogurt (keep containers for measuring the other ingredients) 2 eggs 2 containers sugar 1 tsp vanilla just under 1 container of vegetable oil 4 containers flour 1 1/2 tsp baking powder 1 container mini chocolate chips or 2 containers of frozen berries (optional) Instructions Preheat the oven to 375 F Coat a LARGE loaf pan or 9″ round cake pan with cooking spray or oil. In a large mixing bowl, combine the yogurt, eggs, sugar, vanilla, and oil. In a separate bowl, combine the flour and baking powder. Add the dry mixture to the wet mixture, stir until just combined. You can now add the chocolate chips or berries if using them. Scoop it all into your baking pan, bake for 45 to 55 minutes or until golden and the cake springs up when touched (and when a toothpick inserted is pulled out clean). Let it cool on a rack. Recipe: One bowl chocolate cake (Better for older kids and to practice fractions!) Ingredients 1 2/3 cups Flour 1 ½ teaspoons Baking Soda 1 teaspoon Salt 2/3 cup Quality Dutch-Processed Cocoa Powder 1 1/2cups White Sugar ¼ cup Olive Oil 2 ounces Unsalted Butter, softened 2 Eggs 1 teaspoon Vanilla Extract 1 1/4cups Milk Instructions: Preheat the oven to 350 degrees Fahrenheit and grease and line an 8 inch springform cake tin with baking paper. For the cake: sift the flour, baking soda, cocoa and sugar into a mixing bowl (you can mix vigorously by hand). Add the salt and stir. Whisk the eggs lightly before adding them to the mixing bowl with the softened butter, oil, vanilla extract, milk. Beat the mixture on low speed for 30 seconds. Scrape the bowl to ensure all the mixture is being incorporated then beat on high for 3 minutes. Pour the mixture into your prepared cake tin. Bake in your hot oven for about 60 minutes, until a skewer inserted in the middle comes out clean. Depending on the strength of you oven, you might like to check it at 50 minutes. Let cool for 10 minutes or so and release from pan and allow to cool completely Dust with powdered sugar, and drizzle with Glaze if you wish. Glaze Ingredients: 3/4 cup Semi Sweet chocolate chips (or good quality dark chocolate bar chopped) 3 tablespoons of butter 1 tablespoon corn syrup 1/4 tsp vanilla extract Instructions: 1. In a double boiler over hot but not boiling water, combine chocolate, butter, and syrup. Stir until the chips are melted and mixture is smooth, then add vanilla 2. Fresh vanilla beans are delicious and you can make your own easy vanilla extract as a holiday gift. Here’s how you do it. Buy a fresh vanilla bean, slice it in half lengthwise and scrape the seeds and pulp into a jar. Add a cup of any vodka or bourbon. Write a card that says, “Shake every week; ready in 8 weeks.” Wrap the jar in burlap cloth and tie it with ribbon. And you’ve done it. You’ve made a homemade gift (REAL vanilla extract!) in minutes that any cook would love.
