Big Game Canadian Whiskey 100 Proof This started out as an experiment. We were going to take 3 year old Canadian Whiskey and age it in Taxman Belgian Style Dubbel barrels for 6 months. Well, projects and schedules intervened and we never quite got around to bottling it. Fast Forward 3 YEARS, and what we have today might be the most perfectly engineered flavor-forward Canadian whiskey we've ever tasted. For starters it spent 3 years in Taxman freshly dumped Belgian Dubbel barrels. Secondly, we bottled it at 100 proof, not very common for a Canadian whiskey, and third, it's completely unfiltered, so what you're getting is a masterclass in Canadian and local craft beer barrel ageing. Bottom line, it's damn good with sweet caramels and vanilla dominating the nose, then exploding with juicy Canadian rye flavor complimented perfectly by the rich sweet maltiness from the dubbel casks. This stuff is LEGIT, and once it's gone, it's gone!

Canadian whiskey is produced by blending the ingredients after each one is distilled separately, adding a hint of caramel color and only after that is done, do they age it in wooden barrels. Everyone else distills all of the ingredients together, ages them in barrels and then blends the final product. Tasting Notes: As mysterious as a snow-bound yeti and as dazzling as the northern lights, comes Sazerac's single-barrel Canadian Whiskey...Caribou Crossing, is a playful twist on "Buffalo Trace" with the silly sculpted animal on top to match. What's the real story though? This is an 80-proof Canadian whisky single barrel with no age statement (other than for legal purposes 3 yr. requirement) with no known origin distillery. It's truly one of the LEAST transparent and most popular products on the market. Why? Because Sazerac fanatics love the Buffalo Trace connection, but when they actually TASTE a Canadian whiskey for the first time, they kind of love it. And what's not to love? Canadian whisky is good. Really good. It's usually lighter than bourbon, smoother than bourbon, and generally lower proof, which makes the complexity more subtle, and oftentimes more pleasurable. This particular single barrel 167 presents fresh-cut oak, vanilla bean ice cream, and butterscotch on the nose. On the palate a creamy vanilla and citrus pairing, crème brulee, then a touch of spice. It's a refined sipper, with a unique profile, and an exceptionally smooth finish.

What is amaro? But of course there's a Melik sidebar that happens first. He talks about date night that had an enjoyable meal. Amaro has a simple meaning of bitter. It is a bitter liqueur. Grappa based spirit that has herbs, spices, botanicals added to it that is reduced from a 'brandy' to an amaro. This is a followup of "booze can be medicine". A lot of amaros were made to be medicinal. "Holistic medicine is that amaro is all about", Keith. Keith adds Fernet Branca to the mix with a flavor of spice melange. [Melange, often referred to as simply "the spice", is the name of the fictional drug central to the Dune series of science fiction novels by Frank Herbert, and derivative works.] Melik talks about the treatment of people in the service industry. Amaro is a digestif that can be defined as "the end of the end". The recipe for this is simple - Fernet Branca and Coca-Cola, as the Argentinians do. There's also Branca Menta which goes well with a little bit Sprite. The Coca-Cola Company are not paid advertisers. If you can find Art of the Age - "Root", you'll find a special treat. Cocktail Recipe: The Toronto - 2 oz of Canadian Whiskey, 1/4 oz of Fernet Branca, 1/4 teaspoon of sugar, and a dash of Angostora bitters. Shake, pour on the rocks, and orange peel as the final ingredient. Anyone have thoughts on it yet? Jefferson's also released their 16year Presidential Selection. I heard about this release almost a year ago and completely forgot about it. But this is a unique one because it's not like any other Presidential release. this one has some of the Jefferson's flair where its been double barreled and they call it Twin Wood. Twin Wood got its name after Master Distiller Trey Zoeller chose an 11-year Bourbon to be re-barreled in freshly charred oak for another 5 years. Around 10,000 bottles are available today in markets across the country at an MSRP of $199. The bloggers on the roundtable did their sleuthing and found out that PVW15's red foil this year was a bottling line mistake. Blake had a special name for it. The holidays mean one thing, as "the bourbon connoisseur" of your family, your obligated to bring a few bottles over to share with family. What are those bottles?
