This week, Tony and Fingers review the K by Karen Berger Connecticut Toro, a silky Ecuadorian Connecticut with Nicaraguan binder and filler. Connecticut cigars get dismissed too easily, and this one makes the case for why that is a mistake. The Karen Berger Connecticut brings creaminess, cedar, a touch of white pepper, some sweetness, and an easygoing profile that works in the morning, at night, with coffee, or whenever you feel like smoking a Connecticut because you are an adult and can live your life. They also review Mayor Pingree Red Label Bourbon from Valentine Distilling in Ferndale, Michigan. It is a 94-proof bourbon that brings vanilla, oak, honey, spice, pepper, and a little orchard fruit — especially after adding water or putting it over a cube. Also discussed: the best way to reheat pizza, using leftover pizza toppings in an omelet, Tony’s toaster paranoia, Subway closing hundreds of locations, Eric Clapton ending a concert early after being hit by a thrown record, whether Malört should be reviewed on the show, the strange human desire to eat painfully hot wings, and which cars thieves love to steal. Featuring Colorado Restaurant Association President & CEO Sonya Riggs In this episode, Ryan sits down with Sonya Riggs from the Colorado Restaurant Association for a real-time update on the state of Colorado's restaurant industry and the growing pressure restaurants are facing from rising costs, shrinking margins, and credit card swipe fees. The conversation centers around Colorado Senate Bill 134, a proposed piece of legislation aimed at eliminating credit card processing fees on sales taxes collected by restaurants and retailers. Sonya breaks down how restaurants are currently paying swipe fees not only on food and beverage sales, but also on the taxes they collect and remit to the government. Ryan and Sonya unpack: Why restaurants say the current system is unfair How Visa and Mastercard dominate the payment landscape Why restaurants are operating on razor-thin margins The hidden costs consumers are already paying How rising labor, food, rent, insurance, and utility costs continue to squeeze operators Why surprise service fees frustrate diners How Colorado restaurants continue to show resilience despite economic pressure The impact GLP-1 medications may already be having on restaurant traffic and spending Why local restaurants matter culturally and economically to Colorado communities The episode also highlights exciting developments in Colorado's food scene, including Michelin expanding coverage statewide and upcoming events like Drink Red Wear Red and Denver Food & Wine Festival. This week on The Go-To Food Podcast, we're joined by one of the most important voices in pizza culture: Frank Pinello. The founder of Brooklyn's legendary Best Pizza, host of The Pizza Show and now Pizza with Frank, Frank joins us fresh from a huge week eating across London — and gives an unfiltered verdict on why the city has quietly become one of the great pizza destinations in the world. From Vincenzo's and Dough Hands to New York aesthetics taking over London, Frank explains why British pizza makers are now genuinely earning respect from New Yorkers. But this episode goes way beyond pizza rankings. Frank tells the unbelievable story of almost becoming a stockbroker straight out of school — working in a real-life Wolf of Wall Street-style boiler room on Long Island, standing all day cold-calling strangers about fake IPOs while managers shouted slogans like “motion creates emotion.” He talks about turning up in suits thinking he'd made it, only for the entire operation to eventually get raided by the feds. Before pizza fame, before Vice, before Williamsburg — there was Frank trying to survive among future federal inmates. We also go deep into old New York food culture: growing up in Bensonhurst, the smell of Sunday sauce hitting the hallway before you even reached his grandmother's basement, annual tomato canning traditions, animal heads in the kitchen, Sicilian cauliflower pasta with cinnamon breadcrumbs, and learning early that food meant love. Frank opens up about his first pizzeria jobs, burning his leg so badly on his first day in a serious kitchen that the skin peeled off — but hiding it for 12 hours because he didn't want chefs to think he was weak. He talks about culinary school feeling like military training, becoming obsessed with Thomas Keller and Ferran Adrià, and then slowly realising pizza could be treated with the same seriousness as fine dining. There are incredible stories throughout: consulting on pizza at Chiltern Firehouse before it opened, meeting Nuno Mendes and Patrick Powell, seeing Roberta's completely change global pizza culture, and building Best Pizza during the wild early Williamsburg years of artists, hipsters and old Italian families living side by side. We get Frank's thoughts on Dave Portnoy, hot honey, pizza dips, New York slice etiquette, why ketchup should never touch a hot dog after the age of 10, and the exact technique for folding and attacking a slice. Plus Ben cooks a full Sunday sauce for Frank on the studio floor — ribs, sausages, chops and meatballs included — while the conversation descends into debates about crust strategy, baguettes, greasy pepperoni cups and whether pizza should ever be taken too seriously at all.Watch and Subscribe To Our Youtube Videos Here - https://www.youtube.com/@gotofoodOrder Ben's Incredible Book - All You Can Eat - By Clicking Here - https://www.amazon.co.uk/All-You-Can-Eat-British/dp/1805221523Get 2 Months of Blinq For Free - With Code - GOTOBLINQ - https://blinqme.com/Order The Greatest Meat In The Country From HG Walter Here & Have Restaurant Quality Meals From Home - www.hgwalter.com Hosted on Acast. Celebrate Milestones:** Share your history and milestones with your customers—they want to be part of your story. 2. Customer-Centric Mindset: Listening, Adapting, and Earning Loyalty Anthony credits much of Wayne's success to a relentless focus on customer feedback and satisfaction. Key Takeaways: Active Listening:** Anthony encourages customers to bring issues directly to him so he can address them immediately. Adapting to Feedback:** Menu changes and service tweaks are often made in response to customer suggestions. Actionable Advice: Create Feedback Loops:** Make it easy for customers to share their thoughts—whether in person, by phone, or online. Respond Quickly:** Address complaints or suggestions promptly and publicly when appropriate. Reward Loyalty:** Specials like the two-slice lunch deal and teacher discounts show appreciation for regulars. 3. Navigating Challenges: Adaptability in the Face of Adversity The restaurant industry is notoriously tough, and Wayne's has faced its share of challenges—from the COVID-19 pandemic to staffing shortages and supply chain disruptions. Key Takeaways: Quick Pivots:** During COVID, Wayne's moved their counter to the front door, spaced out tables, and even set up outdoor dining. Staffing Flexibility:** Family members stepped in when hiring was tough, and hours were adjusted to match available resources. Actionable Advice: Be Proactive:** Don't wait for problems to escalate—adapt quickly and communicate changes to your customers. Cross-Train Staff:** Ensure team members can fill multiple roles in a pinch. Stay Transparent:** Let customers know why changes are happening; most will understand and support you. 4. Smart Marketing: Leveraging Social Media and Storytelling Anthony has embraced social media, particularly TikTok and Instagram, to showcase the behind-the-scenes magic of pizza-making at Wayne's. Key Takeaways: Authenticity Wins:** Videos showing the real process of making pizza have gone viral, with millions of views. Consistency Matters:** Even when busy, Anthony makes time to create content, knowing it pays off in customer engagement. Actionable Advice: Show, Don't Just Tell:** Use video to highlight your process, your people, and your passion. Engage with Trends:** Don't be afraid to try new platforms or formats—short-form video is especially powerful. Share Your Story:** People connect with stories, not just products. Let your personality and history shine through. 5. Menu Innovation and Value: Balancing Tradition with Modern Needs Wayne's menu is rooted in tradition but adapts to modern dietary needs and customer preferences. Key Takeaways: Signature Specials:** The two-slice lunch special is a local favorite, offering value and speed for busy customers. Dietary Options:** Gluten-free cauliflower crust, salads, and unbreaded wings cater to a wider audience. Seasonal Offerings:** Breakfast pizzas for holidays create excitement and drive sales during special occasions. Actionable Advice: Know Your Audience:** Offer core favorites but be open to adding new items based on customer demand. Create Limited-Time Offers:** Special menu items for holidays or events can boost business and create buzz. Balance Quality and Value:** Don't compromise on quality, but find ways to offer deals that make sense for your margins. 6. Handling Feedback: Turning Criticism into Opportunity Anthony's approach to reviews and feedback is refreshingly mature and constructive. Key Takeaways: Direct Resolution:** He prefers customers bring issues to him directly rather than venting online. Balanced Perspective:** Anthony reads all reviews but doesn't let negative ones define his business or his mood. Actionable Advice: Encourage Direct Communication:** Post signs or reminders asking customers to talk to you first if there's a problem. Respond Graciously:** Thank customers for feedback, even when it's critical, and outline steps you're taking to improve. Don't Take It Personally:** Use criticism as a learning tool, not a personal attack. 7. Managing Costs and Pricing: Transparency and Flexibility Rising food costs are a reality for every restaurant, and Wayne's is no exception. Key Takeaways: Supplier Relationships:** Anthony shops around for the best prices and isn't afraid to temporarily drop menu items when costs spike (like tomatoes at $137/case!). Transparent Pricing:** He explains price increases to customers, emphasizing the value they still receive. Actionable Advice: Monitor Costs Closely:** Stay on top of supplier prices and be ready to adjust your menu or pricing as needed. Communicate Changes:** Let customers know why prices are changing—they'll appreciate your honesty. Offer Value:** Specials and combos can help customers feel they're still getting a good deal. 8. The Human Side: Respect, Teamwork, and Community Spirit Anthony's message to the community is simple but powerful: treat service workers with respect. Key Takeaways: Team Appreciation:** Positive feedback from customers is shared with the whole team, boosting morale. Community Engagement:** Wayne's supports local teachers, participates in events, and remains a visible, positive force in Third Lake. Actionable Advice: Foster a Positive Culture:** Recognize and reward your team for their hard work. Give Back:** Support local causes, offer discounts to community members, and participate in local events. Lead by Example:** Treat everyone—staff and customers alike—with kindness and respect. 9. Rapid-Fire Wisdom: Personal Insights from Anthony The "Grayslake Hot Seat" segment offers a glimpse into Anthony's personality and values, which are deeply woven into the fabric of Wayne's Pizza. Highlights: Attention to Detail:** First impressions matter—notice the little things. Resilience:** Turning personal loss into motivation to carry on a family legacy. Openness to Change:** Willingness to try new things, travel, and embrace life's changes. Work-Life Balance:** Recognizing the need for breaks and self-care, even in a demanding business. 10. Final Thoughts: Supporting Local, Building Community Wayne's Pizza is more than a place to grab a slice—it's a testament to the power of family, the importance of community, and the resilience
