Humans have preserved food to make it last longer for thousands of years. In this programme Ruth Alexander learns about different methods of food preservation used around the world, including pickling, dehydrating and canning. Food historian and writer Darra Goldstein in the US explains the history of this art. Yukari Sakamoto is a trained chef and sommelier who leads food tours in Tokyo, she explains why people in Japan take the idea of a well stocked pantry seriously. And Usha Prabakaran in Chennai, India talks about her love of the Indian pickle and its role in Indian cuisine. There are some important safety considerations if you want food to last longer, particularly if you want to store it at room temperature. There is a risk of botulism if food is not heated to the correct temperature for the correct amount of time, particularly for foods that are low in acid. Ruth hears about the laboratory testing done by Carla Schwan, Director at the National Home Food Preservation Centre based in Georgia, United States which tests recipes that can be used safely for home preserves. Canning – storing food in glass jars and heating it – has seen a resurgence recently. Some enthusiasts refer to themselves as ‘rebel canners', which in general refers to people wanting to use recipes other than those that have been lab tested and approved. The ‘Canning Diva', Diane Devereaux a food preservation educator and blogger in the United States explains what motivates rebel canners, and the recipes she thinks are missing for consumers. Cookie Washington, born in Morocco, is a fourth-generation needle worker, award winning textile artist and guest curator of the African American Fiber Arts Exhibit which is part of the North Charleston Arts Festival. Her passion for fiber art is infectious and she comes from a long line of sewists dating back to her great-grandmother. She's been selected as one of 44 master quilters to create a quilt for Barak Obama's inauguration and has been featured in documentary films. (2:28) At four years old, Cookie was paid 50 cents by her grandfather for sewing her first Barbie dress - she shares this story. In addition, she talks about the female lineage in her family that inspired, mentored, and encouraged her sewing. She also talks of her sewing plans for her three granddaughters. (7:00) Then, Cookie transitioned to fabric art during a difficult time in her life - she shares this story.  A Communion of Sprits; African American Quilters, Preservers, and Their Stories by Roland Freeman created a tipping point in her creativity and she opens up about how this happened.(10:46) Cookie talks about her personal connection to the attack at Mother Emanuel Church and how she used her quilts to help heal the city. Her art to her is a meditative prayer.  (13:21) What's the Divine Feminine and what does it mean to her? She shares the meaning of this and how it led to her work with mermaids. (16:15) Cookie does a lot of curatorial art to foster introspection, communication and provide education. She walks us through her process for this, and how we can celebrate our sameness and be inquisitive about our differences. She shares stories about her work “A Dialog in Black and White” and how she believes her ministry is to bring people together. (10:25) “I want to make art that challenges people to feel. Art that makes them soar and annoys.” Cookie explains how this drives her creations. She also talks about Henrietta Lacks and “The Immortal Cell” and the art she created to celebrate this amazing woman. She also talks about how she artistically captures the physicality of Serena and Venus Williams, and Simone Biles in her work. (32:58) In addition to her work, she donates her time and talent to serve in many ways which she tells us about. She also shares news about her current project “Quilted Hugs”.(39:20) Cookie believes that there is a shift in the art community and sewing that is moving from utilitarian out of necessity to art that celebrates. She explains her position on this shift invoking Bisa Butler and Michelangelo! (46:00) Right before the podcast was recorded, Cookie had the “Best Weekend Ever” in her curating the exhibit “Celebrating Black Mermaids from Africa to America”. This is a wonderful story here about the genesis of this exhibit of 150 pieces and the effect is had on the art community. This week, Bella McCreary, president and CEO of High Maintenance Trim Co. talks about her transition from the banking industry to leading a company that provides onsite harvesting, bucking, trimming and packaging services.McCreary has several years experience working with cultivators of all sizes. She's overseen trimming operations for harvests as small as 12 pounds as well as clients with rolling 500-pound harvests. Cultivators often have difficulties staffing trim teams. While some operators are harvesting every week, some operations only need help every eight to 12 weeks, which is typically when they call in Bella. With the onset of the COVID-19 pandemic, trimming has only become more difficult, mostly as a result of social distancing restrictions. In an effort to keep both her client's staff and her own employees safe, McCreary has had to cut down the size of each team sent to cultivation sites. For example, to harvest 500 pounds, she would typically send a team of 18 to 20 people. Now, she can only send ten. McCreary sees her business as a service for cultivators that have had problems staffing the positions in the past. Traditionally, the part-time/seasonal work lacks a decent wage, which also results in dips in both professionalism and product quality. McCreary has not only served as a bridge for staffing, but when a client has found a good trimmer and doesn't want to lose the employee, High Maintenance Trim will offer the worker a job in the interim. Unlike a staffing agency, McCreary's workers are full-time employees with perks that include productivity bonuses. McCreary sees her staff not just as trimmers, but as trichome preservers. While some clients have semi-automated harvesting and bucking, many still ask for 100 percent hand trimming. There are many differences between a machine-trimmed and hand-trimmed bud and though machines pump out a lot of product, McCreary says that quality is sacrificed. High Maintenance has stayed busy throughout the pandemic and has even had to turn down work, particularly at facilities under construction or those that don't provide a safe working environment. She often finds herself dealing with quality issues as well. A little bit of mold or a bug here and there isn't necessarily a bad thing, but her teams have run into moldy products. She's had to leave jobs in the past because they were not only a risk to her staff, but she's had to tell some clients that they shouldn't even sell the product. Currently, High Maintenance only trims in California, but McCreary has consulted in other territories and is looking to expand her business model into other states. She thanks that one day her trichome preservers could become a franchise, like the Molly Maids of Weed.

First Class: Greetings, Cadets. I say this while many of you now outrank me, due to battlefield promotions and the like. We also are greeting those joining us via subspace like across several dozen planets, starbases, several hundred starships currently on assignment, as well as our new colleagues joining us remotely from New Talax and Kobali Prime. The purpose of this class is to gain familiarity with a few of the thousands of humanoid, sentient, and sapient beings so far encountered. We'll work from the inside out, and please let me know if there are any species you want to know more about sooner. We'll eventually get to them all, even if we have to involve Temporal Affairs. That was a joke, class; just in case any of you are here from the future, please excuse yourselves or wipe the next hour or so from your integration, and kindly don't go to the Temporal Affairs Office to report me for muddling the timestream. Class business: we meet once a week; assignments are collected at that time. If you're watching via subspace or delayed transmission, your assignments are due 170 hours after the receipt of the transmission of the class here. You should all have my contact information; Please see myself, Commander Lurrie or Lieutenant Commander Polk with any questions or concerns between classes. This class schedule is intended as higher-level Academy credits for those whose terms at the Academy were suspended due to the recent military activity and for those looking to earn additional course credits and commendations while on assignment away from planetside tasks. This is the first of a multi-semester course; We'll cover principles of humanoid lifeforms in this galaxy, as well as other sentient and sapient life forms who have been encountered by Federation ships or members, and then those whose reports have come secondhand from other species and powers with whom we have current correspondence. And now, here we cover the breadth and length of what to expect this term. We'll cover the definitions of the following terms and how they relate to exploration, interaction, and diplomacy: Humanoid Sentient Sapient Once these terms are defined, we'll discuss what is known about ancient humanoid species, the Preservers, and how these ancient races made sure that bipedal, two-armed species with a generally discernable neck and head structure housing a brain became the dominant spacefaring species type. We'll begin with the first Federation species - Humans, Vulcans, Andorians, Tellarites - and work towards other major species. Federation species we look forward to learning about include Betazoids, Deltans, Denobulans, Rigellians, Benzites, Bolians, Caitians, Halliians, Ktarians, Risians, Trill, Zakdorn, and several others. We'll also look at our newly-former foes, the Klingons, as well, as their allies the Gorn, Orions, Nausicans, Letheans, and others Other notables species of the quadrant include the Romulans, Remans, Cardassians, Bajorans, Ferengi, and Tzenkethi, after which we'll discuss various Gamma Quadrant and Delta Quadrant species encountered in the last half-century. We'll then delve into species that depart from the humanoid definition and how that changes the equations. Examples of these species include Tholians, Horta, Q, Bzzit Khaht, Changelings, Devidians, Crystalline Entity, and the Undine. We'll also compare and contrast various species and how small genetic and morphological changes interact with their home planets, other species, and how inter-species breeding is achieved with help from our colleagues in the sapient genetics section. For your first assignment, you are to spend around 250 words - or between 200 and 300 for the pedantic among you - describing your own species or background of species. For your second assignment, you are to describe in detail the first experience you had with a member of a species that is not your own. This species should not be from your homeworld or...
