I have attempted a favourite song from the Hindi film Junoon (1979), which evokes some.charming scenes traditionally associated with a North Indian monsoon, especially in rural communities. Set to a lilting folksy melody, the lyrics in the colloquial Hindi of Uttar Pradesh describe the feelings that the dark clouds and cool breezes of the monsoon evoke in a young woman, after the searing heat of the Indian summer. The monsoon weather makes her romantic and playful. The singer describes how the buds of the jasmine and bela flowers begin to open in this season and release their heady fragrance. Tree branches sway with the movement of rope swings as the singer and other young women swing joyfully, their green 'chunaris' refusing to stay demurely on their heads, while their bangles tinkle as they move. The singer can't escape the rain and doesn't want to. Apparently complaining, she actually is enjoying getting drenched in the courtyard and terrace of her home. What is more, her lover's bed (placed in the courtyard or terrace as was the practice in the warm weather) also gets soaked in the gently falling showers of the monsoon along with her crisp, dry cotton chunari.
Born in Queens, Akshay Bhardwaj studied business at Fordham University and Baruch College, and then pivoted to his passion: cooking. His ascension in the culinary world was extraordinary; between 2012 and 2017, he worked his way from working the line to executive chef at Junoon. Junoon was awarded one Michelin Star eight consecutive years from 2011, and held the title of the only Indian restaurant in New York City with a Michelin Star from 2018-2019. He was also selected as a Gohan Society Culinary Scholar — and traveled to Japan to study the delicate art of omakase — and became the first Indian chef to be selected for the Forbes “30 under 30: Food & Drink” list. Born in Mumbai, Chintan became interested in the culinary world at a young age. When of age, he enrolled in one of the most prestigious culinary schools in India, the Oberoi Centre of Learning & Development where he trained under the finest chefs from Oberoi Hotels. His professional career began at a hotel restaurant in Mumbai, where he spent eight years in the kitchen learning traditional Indian cuisine and techniques. During this time, Chintan traveled throughout the sub-continent in order to develop a deeper connection with the way locals ate and became well versed in the bold spices and dishes he came across. Eventually Chintan left India for bigger opportunities. His culinary career took him to an extremely diverse set of locales including Singapore, Cleveland, Atlanta, and finally New York. It was in New York that Chintan joined the Michelin-starred Junoon for a brief stint before he met restaurateur Roni Mazumdar in 2017 and became the chef at the modern and upscale Rahi, followed by Adda Indian Canteen for which Chintan was the winner of the 2019 StarChefs New York Rising Star and within a year after Adda opened the restaurant was on the short list to be nominated for a James Beard Foundation award for “Best New Restaurant” Food & Wine Magazine's "Top Ten Best New Restaurants 2019", Eater National's Best New Restaurants 2019” and Bon Appetit's "Top 50 Best New Restaurants of 2019". In 2020, Chintan was looked at as a finalist for the James Beard Foundation Awards "Best Chef in the NY Region". In 2021 the duo opened Dhamaka, for which Chintan won The James Beard Foundation Award for Best Chef New York State. The first win in this category for an Indian chef. Dhamaka was also named the #1 restaurant of the year by The New York Times, Esquire Magazine, and one of the top 50 restaurants in the country by The New York Times. Dhamaka was also nominated for the James Beard Foundation “Best New Restaurant of 2021” award. Chintan has also taken cuisine to the next level by partnering with artist Mattia Casalegno in Aerobanquets RMX, a virtual reality experience combining food and fantasy, which took place at the James Beard House, and continues to tour the globe. In 2022, he and partner Mazumdar opened the quick service eatery Rowdy Rooster serving Indian spiced fried chicken for which Food & Wine Magazine named them as one of 16 people and companies changing the way we eat and drink in 2022. The pair will soon open Kebabwala celebrating India's long tradition of fresh, and flavorful, kebabs which vary across the country, and Masalawala located in Park Slope, Brooklyn featuring regional Indian cuisine. Chef Pandya's mission is to push the boundaries of what Indian food means in America. He continues to break new ground on an under-appreciated but phenomenal cuisine. U n' I with Rashmi Shetty will be Celebrating Women and the amazing work that they do all of March. The first in the series is the inspirational Haimanti Sen- a 25 yr old social entrepreneur who is a psychology and sociology graduate from Mumbai University. She founded an NGO named Junoon in 2018, with the aim of helping underprivileged children to avail of basic education. Junoon is a team of 9 members today and 30 volunteers, and they provide basic education to children living in streets and slums through music, art, dance, plays, and other educational trips. Obviously, the execution of this idea was a challenge for Haimanti. Where would she teach the children? Would their parents allow them to come? Would any school offer help? But despite all of that, she figured her way out. But it did not end there. Whenever she would sit on the skywalk to teach the kids, local commuters would criticize her, one of them even called the cops. She wanted to give up too sometimes, but the enthusiasm in the children's eyes is what kept her going. She and her team recognized the main areas that were affecting the overall development of a child, which were nutrition, healthcare, education, and family dynamics. So they look for innovative ways to deal with the challenges like daily meals, health check-ups, and family counseling to name a few. Today Haimanti is a speaker at World Tolerance Summit, has won the Rex Karamveer Award 2019, Teacher Warrior Award 2019, and has also been a TEDx speaker. She has also worked with chefs at the James Beard Foundation, events at Huffington Post and a number of exclusive cooking festivals. This podcast is an inspirational talk given to students by Dr. Rajvanshi at the 70th foundation day of Savitribai Phule Pune University (SPPU) held on 10th February 2019. Dr. Rajvanshi was the chief guest at the function and there were about 1500 students of various colleges of Pune University present. In the talk, he spoke about various topics like nation building, Junoon, happiness ethics of work and how to become a good human being.
In a wide-ranging conversation, we talk to Pranav Jani about Marxism and colonialism. Pranav is an associate professor of English at Ohio State University and a long-time activist and organizer with the International Socialist Organization (ISO). Pranav describes his evolution from an apolitical college student to his first encounters with the writings of Marx on India—and how he went beyond a few selected excerpts to a deeper engagement with Marx’s thought and its evolution. We also talk about postcolonial theory, and Pranav explains what insights he gained from that field of study as well as the limitations he ran up against working within it. Another theme running throughout our interview is the importance of combining activism and theory for Pranav’s understanding of and commitment to socialism. He talks about how it was the anti-colonial revolt against the British that began to shift Marx’s own ideas about India. In Pranav’s own life and political outlook, the importance of struggle is paramount. We talk about his experience as an Indian revolutionary moving from the East Coast to Columbus, Ohio, and what he learned from helping to build a strong presence for the ISO in Ohio. One of the themes of our discussion about his work in Ohio is a critical examination of some of the punditry about “red-state America” and the 2016 elections. Pranav describes the political picture in central Ohio and the importance of a more nuanced understanding of the working class as well as the socialist commitment to fighting both exploitation and oppression. In our opener, we talk about a major opus on climate change published recently in the New York Times Magazine, titled "Losing Earth," whose conclusions we deem essentially reactionary. The author, Nathaniel Rich, has compiled a dense history of a decade of climate summits, high-level boardroom meetings and political hearings, but somehow concludes that human nature—and our failure to sacrifice for long-term needs—is to blame for the failure to act to prevent climate catastrophe. We reach a different conclusion: that capitalism is to blame. Sisters is an all-female, work-in-progress, by British-South Asian and Indian artists, which explores what it means to be a South Asian woman in the UK/Wales and India/Mumbai today. Sisters is a collaboration between National Theatre Wales and Junoon Theatre Mumbai, and is part of India Wales, a major season of artistic collaboration between the two countries to mark the UK-India Year of Culture and is supported by British Council Wales, the Arts Council of Wales and Wales Arts International. While the music from Indian film industry dominates the popular culture, other forms for music like classical, sufi, folk and regional are also equally popular and recognized parts of the mainstream music. But as creativity and desire to express has no limits or boundaries there have always been independent groups and musical bands from Indian subcontinent which have stretched the imagination of masses and the boundaries of the music. Last few years the independent music scene has witnessed the transformation on a more rapid pace. More and more musicians are interested in creating original material and there is a new spirit of innovation and creativity. This has also fuelled by availibitiy of platforms like MTV, Coke Studio, Dewarists as well as ability to distribute music directly on the Internet. In this Chaitime we celebrate the free spirit of some old and some new muscians, groups and bands. We will enjoy music from : Strings, Indian Ocean, Raghu Dixit Project, Junoon, Zeb aur Haniya, Kailasa, Mukti and Revival, Fuzon, Agnee, Swarathma and Advaita.
Jay Dittamo (born May 30, 1959) is a drummer, percussionist, music composer and producer. He has played with acts such as Junoon, Band From Utopia, Willie Colón, Jimmy Webb, Chuck Berry, The Duprees, The Crests, The Marvellets, Bucky Pizzarelli, and Gloria Lynne. He has performed at the Rock and Roll Hall of Fame, the United Nations and for the 2010 New Jersey Hall of Fame as well as played on TV and movie soundtracks. Dittamo also owns The Cave Studio. A Waldwick, New Jersey resident, Dittamo finished composing playing and producing the music for the classic 1931 Frankenstein movie.

Gluten-free, dairy-free, soy-free, nut-free, vegan and vegetarian — has your Thanksgiving menu being undermined by food allergies and ethical objections? Tell us about what you don’t eat in the comments below. Or share the extraordinary lengths you’ve gone to in catering to the dietary restrictions of your friends and family. Here’s what three chefs and one caterer had to say about the subject. “I grew up in Maryland and on our way to the beach every year, we would see the poultry farms, or some of them, and they just really disgusted me,” confessed Jacques Gautier, the chef and owner of the Brooklyn restaurants Palo Santo and Fort Reno. “That was the one thing that led me as a teenager to become a vegetarian.” He’s no longer a vegetarian, but he still makes it a point to stay away from brands like Perdue or Tyson — all because of that childhood memory. This year, he’s hosting Thanksgiving at his restaurants, where he’ll serve heritage turkeys raised on small farms. When it comes to the sweet stuff, Chef Peter Berley, the author of The Flexitarian Table, draws the line at refined sugar. “I avoid white sugar because it has disastrous effects on the body,” he said. “Really — it’s something that I’m pretty adamant about. And so I replace it with natural sweeteners that are loaded with minerals and also are whole foods, such as maple syrup. I like maple syrup a lot and one of the reasons I why love it is because of the Maillard reaction, which creates a synergized form of umami, which is the fifth taste, which is the experience of something yummy.” Berley added that sweet potatoes are one of the few vegetables that have naturally occurring umami, so adding maple syrup to your sweet potato casserole will make it doubly delicious. For those who avoid dairy, Aliya Leekong, a chef at the restaurant Junoon and author of the cookbook Exotic Table, has several suggestions on how to replace the flavor of butter with other vegan ingredients. “I think you could easily replace flavors like butter in your cooking using just great market vegetables, aromatics like shallots and garlic,” she said. “Nuts add depth of flavor and fat to a dish. And just bright herbs like parsley and mint and cilantro can really sort of round out a dish, and you don’t really need a butter.” Leekong says the only thing she tries to avoid are processed foods. Liz Neumark, the CEO of the catering company Great Performances, has a longer list of foods she doesn’t eat. Neumark stays away from dairy, meat, and octopus. She took the octopus off of all of the menus at Great Performances after reading articles about how smart and sentient they are. This Thanksgiving, Neumark will be in Israel, where she’ll celebrate Hanukkah, too. The rare overlap of the two holidays won’t happen again until 2070. But there’s one vegan and vegetarian Hanukkah food that Neumark would like to see every Thanksgiving. “There’s no reason to think that latke couldn’t be a part of Thanksgiving tradition in general because it’s a great seasonal vegetable that really complements everything else that you’re eating,’ she said. “And you can really have fun with them because you can make them out of potatoes, you can make them out of sweet potatoes, you can make them with carrots, zucchini. You can do them so many different ways.” So sometimes it just takes a little creativity and merging of cultures to find foods that everyone can enjoy this Thanksgiving. And remember, if you have dietary restrictions, one great way to work around that is to bring a dish that everyone can eat. Who knows? You might just make a dairy-free, nut-free, gluten-free convert out of your friends. Potato, Yam & Carrot Latke with Honey, Preserved Lemons & Yogurt Sauceby Einat Admony, chef and owner of Balaboosta and Taïm 1 cup grated potato 1 cup grated yams 1 cup grated carrot 1 1/2 cup grated onion (after having the liquid squeezed out) 1/2 cup grated peeled granny smith apple 1 egg 1 tbs chopped thyme 4 tbs AP flour 1 tbs salt Pinch black pepper Pinch sugar Canola oil Method: Mix all in a mixing bowl. Heat up sauté pan with 1/2" oil. When the oil is hot, around 370 degrees, create a 2-inch patties and fried them on both sides until they are golden brown. For the yogurt sauce: Simply mix chopped preserved lemons with enough honey to balance out the bitterness. Gently fold in plain yogurt until you have a homogeneous mixture. You can add turmeric for color if you wish. Season with salt and pepper. Dollop on your lovely little latkes and let the holiday feasting begin!
