Entrevista en Castellano. Esta semana contamos con el investigador medieval y culturas ancestrales Jaume Cluet y nos contará las actividades y conferencia que se dierón en Montsegur. La leyenda del grial cátaro va íntimamente ligada al episodio del acecho y posterior rendición del castillo de Montsegur en el año 1244, cuando varios fugitivos pudieron evadirse del cerco y asedio de las tropas del senescal francés, llevándose consigo un valioso tesoro, tal como consta en las actas inquisitoriales. Mucho se ha escrito respecto al tema del tesoro de Montsegur en cuanto si era puramente material, o bien, si se trataba de otra clase de objeto, quizás de carácter espiritual. Realmente ninguna evidencia objetiva ha podido aclarar la naturaleza de dicho tesoro hasta el presente. En cambio, sí que en las actas inquisitoriales medievales queda reflejada una primera evasión de un tesoro pecuniario efectuada unos pocos meses antes de la rendición del castillo y una segunda misteriosa fuga, todavía más sorprendente, la noche antes de la quema de los cátaros en la hoguera en el conocido Prat des Cremats en el mes de Marzo de 1244. La primera evasión se constata según declaraciones recogidas en las Actas de la Inquisición (Tomos de la Colección Doat francesa), realizadas por el sargento de armas Imbert de Salles, faidit o protector de los cátaros, en la que testifica que una primera parte del tesoro fue sacada antes de la Navidad del 1243 por el perfecto Mateu i el diácono Peire Bonet portando ambos oro, plata y monedas, gracias a la complicidad de los hombres de Como (militar asediante del ejército francés pero nativos, él y sus hombres del pais occitano), hasta llegar a las cuevas del Sabartés (detrás del monte Tabe o Saint Barthelemy) que estaban custodiadas a cargo de Ponç Arnau de Castel-Verdun (según consta en la Colección Doat, Nº XXIV 171b). Esta operación fue realizada con absoluto éxito ya que el perfecto Mateu estaba de regreso en Montsegur entre el 14 y el 21 de febrero de 1244. La segunda evasión se halla recogida según las declaraciones efectuadas por los sargentos de armas Bernart de Jocó, Guilhem de Boan de Lavelanet y Berenguer de Lavelanet. Así los tres sargentos mencionan que el noble faiditPeire Roger de Mirepoix, la noche del 15 al 16 de Marzo correspondiente a la anterior quema en la hoguera de los perfectos, organiza de forma secreta la salida de cuatro personas (los perfectos Amiel Aicart y Peire Sabater, el diácono Arnau Huc junto con Peitavi Laurent), quienes se deslizaron por el precipicio mediante la ayuda de cuerdas por el paso de Portelh, situado en la dirección NE del castillo, contorneando el Roc de la Tor hasta el río Lasset (ver: respectivamente Colección Doat, XXII 275ab, XXIV80b-81a y XXIV61b-62a). Sobre el trayecto de la huída se han barajado diferentes conjeturas, aunque es probable que el hipotético itinerario fuese a través del Puerto de la Peira (ladera del monte Tabe) hasta llegar posiblemente a Causson. L'affaire « des disparus de Mirepoix » a été jugée fin novembre par la cour d'assises de l'Ariège, à Foix. Marie-José Montesinos, la principale suspecte de cette affaire, ainsi que son ex-compagnon ont été condamnés à 30 ans de prison.Ils ont été reconnus coupables du meurtre particulièrement barbare de Christophe Orsaz, un homme a priori sans histoire, un jardinier de 46 ans, et de sa fille de 18 ans Célia, en Ariège, le 30 novembre 2017. Leur Renault Kangoo avait été découverte incendiée quelques heures plus tard. Mais leurs corps n'avaient été retrouvés que 6 mois plus tard, quand le tueur est passé aux aveux en garde à vue. Rodeado de todas aquellas personas que imponían tanto y eran tan singulares, miraba a su alrededor con un asombro circunspecto. Todo contribuía a que aquella estupefacción fuera a más. Había en el salón de la señora de T. damas nobles y ricas, muy venerables, que se llamaban Mathan, Noé y Lévis, que se pronunciaba Lévi, y Cambis, que se pronunciaba Cambyse. Esos rostros antiguos y esos apellidos bíblicos se le mezclaban al niño con el Antiguo Testamento que se aprendía de memoria, y, cuando estaban todas sentadas en corro alrededor de un fuego agonizante y las iluminaba apenas una lámpara velada de verde, con aquellos perfiles severos, aquel pelo gris o blanco, aquellos vestidos tan largos y de otra época, de los que sólo se veían los colores lúgubres, diciendo muy de vez en cuando palabras a un tiempo majestuosas y hoscas, Marius las miraba con ojos asustados y le parecía que estaba viendo no mujeres, sino patriarcas y magos, no seres reales, sino fantasmas. Con esos fantasmas se mezclaban varios sacerdotes, visitantes habituales de aquel salón viejo, y unos cuantos caballeros nobles; el marqués de Sassenaye, secretario al servicio de la señora de Berry; el vizconde de Valory, que publicaba con el pseudónimo Charles-Antoine odas monorrimas; el príncipe de Beauffremont, que, aunque era bastante joven, tenía el pelo gris y una mujer bonita e ingeniosa cuyos vestidos de terciopelo escarlata con bordados de oro espantaban aquellas tinieblas; el marqués de Coriolis d'Espinouse, el hombre que más sabía en Francia de «cortesía proporcional»; el conde de Amendre, de barbilla benévola, y el señor de Port-de-Guy, puntal de la biblioteca del Louvre, llamada el gabinete del rey. El señor de Port-de-Guy, calvo y más envejecido que viejo, refería que, en 1793, a los dieciséis años, lo mandaron a presidio por insumiso; iba aherrojado con un octogenario, el obispo de Mirepoix, también insumiso, pero en su calidad de sacerdote, mientras que él lo era como soldado. Era en Tolón. Su cometido era ir por las noches a recoger al cadalso las cabezas y los cuerpos de los guillotinados del día anterior; se llevaban, cargados a la espalda, aquellos cuerpos ensangrentados y tenían en la nuca, en los blusones rojos de presidiarios, una costra de sangre que estaba seca por la mañana y húmeda por la noche. Esos relatos trágicos abundaban en el salón de la señora de T.; a fuerza de maldecir a Marat, acababan por aplaudir a Trestaillon. Unos cuantos diputados de la «cámara inencontrable» jugaban al whist: los señores Thibord du Chalard, Lemarchant de Gomicourt y el célebre burlón de la derecha, el señor Cornet-Dincourt. El juez ordinario de Ferrette, de calzón corto y pantorrillas flacas, pasaba a veces por aquel salón de camino hacia el del señor de Talleyrand. Había sido compañero de francachelas del señor conde de Artois y, a la inversa que Aristóteles haciendo de caballo para Campaspe, puso a cuatro patas a la Guimard y enseñó así a las edades cómo venga un juez a un filósofo.

Le jeudi 30 novembre 2017 au soir, tout le monde est sans nouvelles de Christophe Orsaz, 46 ans, et de sa fille Célia, 18 ans. Ce père de famille devait amener sa fille jusqu'à la gare de Pamiers. Il était prévu qu'elle prenne un train pour retrouver son petit ami à Toulouse. De toute évidence, le conducteur a fait un crochet puisqu'il a été aperçu dans le secteur de Lavelanet, au sud de Mirepoix, pas du tout la direction de Pamiers. La possibilité d'un accident sur une petite route n'est alors pas exclue. Les portables du père et de la fille sont aux abonnés absents, impossibles à localiser. Trois jours plus tard, à quelques kilomètres de Lavelanet, un chasseur tombe sur une voiture totalement calcinée, en bordure d'un chemin de terre. Elle est vide de tout occupant. SAVITHA: Hi Zak. My name is Savitha Viswanathan and my Food Friday good advice is how to make Indian mirepoix. For people who like to cook Indian food or would like to try cooking Indian food, it's a great shortcut and before I start cooking any Indian dish, I make batch. Mirepoix term for chopped celery, carrots and onions. And it's used as a base in a lot of dishes. And my Indian style mirepoix has four ingredients, onions, garlic, ginger and green chile. I use these ingredients in just about any dish I cook from vegetable curries to meat dishes to spiced-lentils. To make a batch I chop one onion, four cloves of garlic, two inches of green chili and two inches of fresh ginger. You can make double and triple batches and keep them in the fridge and use as needed. It's really helpful when you're trying to cut back on time but don't want to cut back on flavor. One of the first skills a professional chef will learn is the production of ‘Mirepoix’. It’s correctly pronounced ‘meer-pwa’ because the ‘x’ is silent. I can’t help but smile when someone pronounces it ‘miri-pocks’. Mirepoix is a French term used to describe a mixture of aromatic vegetables which impart their flavour into stocks, sauces, stews or braises. Vegetables, such as onions, carrots and celery are roughly cut up and slowly cooked into a recipe to improve its flavour. They are often strained out and discarded prior to serving the dish. However, there is also a myriad of other aromatics that may sometimes find their way into a Mirepoix, such as leeks, garlic, ginger, tomato and mushrooms. Ultimately it’s the desired flavour profile that dictates which aromatic vegetables are chosen. The cooking time also plays a role in the size of the mirepoix. A smaller cut of mirepoix will impart its flavour faster in a dish that requires shorter cooking time (e.g. braises) and a larger cut is less likely to disintegrate over a longer cooking time (e.g. beef stock). Also, the colour of the mirepoix is important. A white stock or sauce wouldn’t contain any carrots or dark green celery, whereas brown gravy would. Mirepoix provides an important depth of flavour to savoury dishes – and I consider it the culinary ‘X’ Factor in any recipe.
