To hear more, visit public.substack.com“People get fat because they eat too many calories.” “A calorie is a calorie.” “Saturated fats are bad.”America's leading dietary experts, the US government, and food manufacturers agreed on the above for decades. During that time, rates of overweight, obesity, and diabetes skyrocketed. Either the experts are wrong or people didn't follow the advice of experts. Two journalists, Gary Taubes and Nina Teicholz, say the experts are wrong. Saturated fats are good, not bad, and a calorie is not a calorie. The body doesn't process a 60-calorie serving of bacon the same way it does a 60-calorie slice of cake. Obesity and diabetes are a result of a hormone imbalance caused by eating more carbohydrates than the body can handle, they say. When we eat carbohydrates, they believe, the body works to keep the fat locked away in storage. The best diet is a high-fat, high-protein, and low-carb diet known as the keto diet.Naturally, many in the diet establishment, including at academic institutions like Berkeley and Harvard, have taken issue with the conclusions of Taubes and Teicholz. Mainstream experts argue that Taubes and Teicholz have misunderstood or misrepresented the science and downplayed the difficulty of sticking to the keto diet.Teicholz and Taubes have responded at length to their critics at their terrific Substack, Unsettled Science. And, now, Taubes is out with a response to his critics in the form of a major new book, Rethinking Diabetes: What Science Reveals About Diet, Insulin, and Successful Treatments. At 750 pages, Taubes clearly intended for this to be the best available review of the scientific evidence and history published to date. Any serious person who disagrees with Taubes' unorthodox views on diet and diabetes will need to contend with it. I interviewed Taubes about it for today's podcast. We talked about his critics and the challenge of sticking to keto, including for me. He told me that the book on diabetes flowed out of his 2016 book, The Case Against Sugar. “The liver has never evolved to see the doses of fructose that they get today… Biochemistry in the 60s and 70s demonstrated how fructose could cause this condition called ‘insulin resistance,' which is the fundamental disorder of type 2 diabetes.”

During her research, Nina came across studies pointing out the flaws in a low-fat diet. However, so many scientists at universities were terrified to talk to Nina about fat. Why? Because people in the food industry were paid to give scientists a hard time. Nina realized there was something really wrong going on here that had such enormous implications. Nutrition science from the very beginning has been heavily influenced by the food industry. For instance, the vegetable oil industry wanted to go after people for attacking vegetable oils in any way. You see the same tactics happening today on social media.  [08:55] Polyunsaturated Fats vs. Saturated Fats vs. Monounsaturated Fats Fatty acids are long carbon chains.  Poly means many. Polyunsaturated fats have many double bonds. Each time there's a double bond in the chain, it kinks the chain. Some examples of polyunsaturated fats: Corn oil Safflower oil Sunflower oil Canola oil     Monounsaturated fats are the same carbon chain but with one double bond. If you want to use oil, it's better to use olive oil because it only has one double bond. Saturated means that the carbon chain is statured with hydrogen, and there is no double bond. It is a flat chain, and it makes a solid like butter. Saturated fats are actually the best for cooking, and they're the healthiest for eating because they do not oxidize or cause inflammation. [17:55] What Went Wrong In The 1950s With Ancel Keys and President Eisenhower The idea that fat, cholesterol, and animal foods are bad for health began in the 1950s.  The US was really in a panic over the rising tide of heart disease, which had been virtually nonexistent in the early 1900s. In the 1930s, heart disease became the number one killer.  A panic started when President Eisenhower himself had a heart attack in 1955. Eisenhower's doctor was convinced by Ancel Keys that saturated fats and dietary cholesterol cause heart disease.  Plus, Ancel Keys got his ideas adopted by the American Heart Association.  Ancel came out with a statement saying to avoid saturated fat and cholesterol in order to prevent heart attacks. We are still dealing with this in 2021.  [23:00] Why Are Seed Oils Approved by the American Heart Association?  How is it possible for the American Heart Association to continue to ignore so much scientific literature? More than 20 papers published in the field have concluded that we got it wrong on saturated fats.  There is no data to justify the authorities' limits on these seed oils. It's challenging to trust the government with our health when they recommend seed oils. [31:00] Sorry Vegans, Meat-Eating Is Healthy For Humans  Nina did not know how controversial red meat was until she put a picture of it on the cover of her book.  Sadly, many people think that if you eat meat, you're a bad person, you don't believe in climate change, and you're not doing your part to protect the climate. There's this moral revulsion that has been created against meat. Influencers in the spheres of science and public health have vilified one of the healthiest foods on the planet.  Meat was developed by humans in order to have a convenient and cheap source of protein. [33:15] Myth: Meat Causes Diabetes   Diabetes is caused by elevated blood sugars. Sugar causes elevated blood sugars, so do carbs.  Where's the sugar in meat? It's just nonexistent.  It's impossible that meat would cause diabetes. Red meat consumption has gone down around 28% since 1970. Whereas, diabetes has skyrocketed out of control.  [34:15] Myth: Red Meat Causes Colorectal Cancer The WHO decided that red meat and processed meats cause colorectal cancer. This decision was based on these kinds of weak science called epidemiological or observational studies that show associations instead of causation. The data they used was self-reported dietary data, and we all lie about what we eat. There needs to be a more significant discussion about the bias against red meat. [38:30] Why People Are Pushing Vegetarian and Vegan Diets The animal rights movement does not want people eating animals. The Seventh Day Adventist Church has a religious belief that people should eat a vegan diet.Plus, the food industry has an enormous investment in plant-based foods. Also, many companies want to hop on the climate change bandwagon.  Many vegan burgers have vegetable oils that are not healthy.  [41:30] Myth: There's a Correlation Between Red Meat Consumption and Heart Disease The original reason that red meat was thought to cause heart disease was based the fact that it contains saturated fat and cholesterol. However, research shows that saturated fat and cholesterol do not cause heart disease.  Therefore, foods containing saturated fat and cholesterol don't cause heart disease. The correlation between saturated fat, cholesterol, and heart disease has been more rigorously and extensively studied than almost any other scientific question in the history of nutrition science.  [47:15] Which To Cut First: Smoking Cigarettes, Processed Sugars, or Vegetable Oils  People smoked historically for hundreds of years tobacco, but they did not get cancer or heart disease until the introduction of sugar. Nina says that smoking is probably safer than processed sugars or vegetable oils.  Between sugar and vegetable oils, Nina says that vegetable oils are safer.  People who go low-carb will see massive improvements even if they continue to use vegetable oils.  AND MUCH MORE! During her research, Nina came across studies pointing out the flaws in a low-fat diet. However, so many scientists at universities were terrified to talk to Nina about fat. Why? Because people in the food industry were paid to give scientists a hard time. Nina realized there was something really wrong going on here that had such enormous implications. Nutrition science from the very beginning has been heavily influenced by the food industry. For instance, the vegetable oil industry wanted to go after people for attacking vegetable oils in any way. You see the same tactics happening today on social media.    [08:55] Polyunsaturated Fats vs. Saturated Fats vs. Monounsaturated Fats Fatty acids are long carbon chains.  Poly means many. Polyunsaturated fats have many double bonds. Each time there's a double bond in the chain, it kinks the chain. Some examples of polyunsaturated fats: Corn oil Safflower oil Sunflower oil Canola oil     Monounsaturated fats are the same carbon chain but with one double bond. If you want to use oil, it's better to use olive oil because it only has one double bond. Saturated means that the carbon chain is statured with hydrogen, and there is no double bond. It is a flat chain, and it makes a solid like butter. Saturated fats are actually the best for cooking, and they're the healthiest for eating because they do not oxidize or cause inflammation.   [17:55] What Went Wrong In The 1950s With Ancel Keys and President Eisenhower The idea that fat, cholesterol, and animal foods are bad for health began in the 1950s.  The US was really in a panic over the rising tide of heart disease, which had been virtually nonexistent in the early 1900s. In the 1930s, heart disease became the number one killer.  A panic started when President Eisenhower himself had a heart attack in 1955. Eisenhower's doctor was convinced by Ancel Keys that saturated fats and dietary cholesterol cause heart disease.  Plus, Ancel Keys got his ideas adopted by the American Heart Association.  Ancel came out with a statement saying to avoid saturated fat and cholesterol in order to prevent heart attacks. We are still dealing with this in 2021.    [23:00] Why Are Seed Oils Approved by the American Heart Association?  How is it possible for the American Heart Association to continue to ignore so much scientific literature? More than 20 papers published in the field have concluded that we got it wrong on saturated fats.  There is no data to justify the authorities' limits on these seed oils. It's challenging to trust the government with our health when they recommend seed oils.   [31:00] Sorry Vegans, Meat-Eating Is Healthy For Humans  Nina did not know how controversial red meat was until she put a picture of it on the cover of her book.  Sadly, many people think that if you eat meat, you're a bad person, you don't believe in climate change, and you're not doing your part to protect the climate. There's this moral revulsion that has been created against meat. Influencers in the spheres of science and public health have vilified one of the healthiest foods on the planet.  Meat was developed by humans in order to have a convenient and cheap source of protein.   [33:15] Myth: Meat Causes Diabetes   Diabetes is caused by elevated blood sugars. Sugar causes elevated blood sugars, so do carbs.  Where's the sugar in meat? It's just nonexistent.  It's impossible that meat would cause diabetes. Red meat consumption has gone down around 28% since 1970. Whereas, diabetes has skyrocketed out of control.    [34:15] Myth: Red Meat Causes Colorectal Cancer The WHO decided that red meat and processed meats cause colorectal cancer. This decision was based on these kinds of weak science called epidemiological or observational studies that show associations instead of causation. The data they used was self-reported dietary data, and we all lie about what we eat. There needs to be a more significant discussion about the bias against red meat.   [38:30] Why People Are Pushing Vegetarian and Vegan Diets The animal rights movement does not want people eating animals. The Seventh Day Adventist Church has a religious belief that people should eat a vegan diet.Plus, the food industry has an enormous investment in plant-based foods. Also, many companies want to hop on the climate change bandwagon.  Many vegan burgers have vegetable oils that are not healthy.    [41:30] Myth: There's a Correlation Between Red Meat Consumption and Heart Disease The original reason that red meat was thought to cause heart disease was based the fact that it contains saturated fat and cholesterol. However, research shows that saturated fat and cholesterol do not cause heart disease.  Therefore, foods containing saturated fat and cholesterol don't cause heart disease. The correlation between saturated fat, cholesterol, and heart disease has been more rigorously and extensively studied than almost any other scientific question in the history of nutrition science.    [47:15] Which To Cut First: Smoking Cigarettes, Processed Sugars, or Vegetable Oils  People smoked historically for hundreds of years tobacco, but they did not get cancer or heart disease until the introduction of sugar. How Are We to Interpret the New Dietary Guidelines for Americans? The United States government recently issued its Dietary Guidelines for Americans. This happens every five years so we are now going to have these guidelines in place until 2025. Unfortunately, as you will see, these guidelines are profoundly insufficient as they relate to nutrition. They are administered to all Americans and become the backbone of nutrition for schools and the military and the general population of our country. In fact, the diet that is recommended is designed only for healthy people, and ultimately that represents only about 12% of our population. This is a one-size-fits-all diet that does not reflect the diversity of our country in terms of race, culture, and importantly, variations in metabolic health. The diet recommends greater than 50% of calories coming from carbohydrates and includes three servings of refined grains per day and up to 10% of calories coming from pure sugar. And all this despite the fact that an expert committee provided incredibly robust science, accumulated over the past decade, showcasing the profoundly detrimental health effects of the very diet that was approved.  Today we will spend time with Nina Teicholz as we explore and deconstruct these new guidelines. We’ve had her on the program before, and let me tell you a little bit more about her.  Nina Teicholz, a science journalist, is author of the New York Times bestseller, The Big Fat Surprise, which upended the conventional wisdom on dietary fat–especially saturated fat—and spurred a new conversation about whether these fats in fact cause heart disease. Named a *Best Book* of the year by the Economist, Wall Street Journal and Mother Jones, among others, it continues to be called a must-read for anyone seeking to understand the amazing story of how we came to believe fat is bad for health—and what a better diet might look like. Keto and polycystic kidney disease [10:15] Megan Hi, my name is megan, I'm a 30 year old female with an inherited disease called polycystic kidney disease. I have many large cysts covering my kidneys and liver and with an MRI scan I have an 80 percent chance of reaching kidney failure before I turn 40. There is no cure for it, my grandfather passed away from it at 47 and my mom is on dialysis waiting for a transplant. There were some studies showing previously that calorie restriction and low body weight can slow cyst growth (I'm 5'4 and 126 pounds) and Recently, the Weimbs lab has done studies in rats and cats that have shown that the Keto diet with IF is reversing the disease completely.  The pkd foundation is wanting to start human studies but it wont be for a while. My nephrologist called keto the starvation diet when I approached him about it and told me it was too restrictin, would take too long to see  he would rather me eat less meat and more grains. I have experimented with keto and overall feel better with less flank pain. So my question is, I know that animals and humans react differently to these studies, but wondering if I should do the keto diet long term anyways, instead of wait for human trials to come out, or if it may do more harm than good with my low body weight and kidney issues. Amenorrhea after two years on Keto [16:04] Kate says:: Hi, Robb and Nicki, I’m a big fan of the podcast and have had a dilemma weighing on me and wondered what y’alls input would be. See I have been on a the standard macro keto diet 70%fat 25%protein and 5%carbs for the past two years. I went keto after to my alarm going to the doctors finding my fasting blood sugar at 124mg/dL. I have experienced all the benefits of keto from normalized glucose levels throughout the day to mental clarity. My  fasting glucose is now 80mg/dL and goes into the 70s three hours post meals. My only problem is that period has completely stopped since going keto. I don’t restrict calories, only lift 4 times a week for around 45minutes and I don’t do any high intensity exercise or running. I also meditate daily and even use a red light to combat daily inflammation and stressors in life. To add to this I also am at a healthy weight for my height and have never had any weight problems all my life, I just had “metabolic syndrome” at a healthy weight. To take a deep dive I ran a ultrasound and found that I have a small cyst on my liver as well as a small amount of biliary sludge on my liver. I then proceeded to get a HIDA scan, a MRI of my abdomen, and pelvic area. Every came back normal so I then proceeded to run a hormone panel which then led me to get diagnosed with Hypothalamic Amenorrhea. I then decide that my HPA-axis most likely needs stimulation so I had a sweet potato consisting of 25grams of carbs with ground beef for lunch one day. The problem is after the meal I began having to urinate around every 15 to twenty minutes for the next two hours. I then proceeded to feel very jittery and anxious quickly following the meal. This led me to have a crash later in the day and I had to have a snack as I became profusely famished. I have never had to snack before I I eat a three large meals a day filled with whole keto foods and plenty of protein. I believe I still have insulin resistance but I want to be able to transition to a low carb style diet in order to stimulate my LH, HPA-axis, thyroid, and increase my estrogen levels in order to menstruate to protect my body from osteoporosis and other side effects of amenorrhea. We are made up of trillions of cells; every day, 70 billion cells need to be recycled. Powerful refrigerator analogy on autophagy.  05:28 How not achieving autophagy leads to cancer and disease. Relate this analogy to the process of autophagy.  11:44 When does autophagy start during a fast? It depends on the person, it ranged from 12 hours to 24 hours. A general answer is that most people should be getting autophagy at the 16 hour fasting mark. 12:30 Dr. Thomas Seyfried saw cancerous tumors shrink before his eyes when his patients achieved maximum autophagy during a block fast. Here is how you test for max autophagy; take your blood glucose, divide by 18, and compare to your blood ketones. If you have a 1:1 ratio or higher, you are in max autophagy. 14:47 Achieve 3x the autophagy with a dry fast. This is extreme so work with a health practitioner.  15:15 Exercise increases autophagy. So do these specific ingredients. Add them to your daily diet; coffee, olive oil, coconuts, green tea, turmeric, ginger, sulforaphane (broccoli sprouts), mushrooms. Here are a list of the things I'm reading as I seek to understand obesity, and maintain optimum health on my Adventure in Wellness. In episode 001, I shared with you how I was recently diagnosed with several obesity related health problems, high blood pressure and borderline type 2 diabetes. Obesity FINALLY caught up with me, so I decided the medical path of medication, followed by managed decline of progressively deteriorating health, is not for me. I decided to explore, embrace, and embody TRUE Health for the first time in decades. I am a life coach who built my practice by empowering obese women to love themselves AS IS. After losing over 100 pounds several times before, only to windup fat again, I ditched the "diet mentality" years ago, but, in doing so, also gave up on the notion that a healthy relationship with food while trying to get healthy was even possible.
